Keto Cauliflower Mac & Cheese

Creamy, cheesy and super delicious Keto Cauliflower Mac and Cheese, it's so good that you can't even taste the cauliflower in this recipe! I love making this cauliflower mac n cheese because it's actually easier, low carb and a super comfort food. You won't miss the pasta in this dish.

Serves 4
Ingredients

500 Grams Cauliflower - cut into small florets
2 Tablespoons Almond Flour
3 Tablespoons Butter
200 Ml Fresh Cream
Salt to taste
½ Cup Shredded Cheddar Cheese
3 Slices Cheese or 1/3 Cup Shredded Mozzarella

Method
To a large pot filled with an inch of water, place a steamer basket. Bring the water to a boil. Add the cauliflower florets to the steamer basket, cover and let steam for 3 -4 minutes or until cauliflower is fork tender. Remove the strainer basket from the pot let any excess water drain.
To a sauce pan, melt butter over medium heat. Sprinkle in almond flour and stir for a minute. Slowly add the cream while stirring constantly. Add salt. Let mixture come to a boil and let simmer for 5-7 minutes or until mixture has thickened enough to coat the back of a spoon.

Once cream base has thickened, slowly add in shredded cheese, adding in a little at a time and stirring until smooth. Continue until all the cheese has melted and cheese sauce is smooth and creamy. Remove from heat, add cauliflower florets into the cheese sauce and stir until florets are well coated. Pour this into a butter baking dish. 
Place cheese slices on top and bake in a preheated oven @ 190°C until the cheese has started to melt and turned golden.  
Enjoy, this cauliflower mac and cheese is creamy, cheesy and will leave you wanting more!

Cauliflower Curry Pathare Prabhu Style#SundayFunday

This is a quick and delicious Vegan & Gluten free Cauliflower Curry.  Perfect mildly spiced curry that can be enjoyed with rice or phulkas. 
Ingredients 
1 Medium Cauliflower - cut into florets
1 Medium Potato - cubed
2 Tablespoons Heaped Pathare Prabhu Masala - Homemade
1 Medium Onion - finely chopped
1 Medium Tomato - finely chopped
4 Tablespoons Freshly Grated Coconut
1 Teaspoon Heaped Ginger Garlic paste
Salt to taste
4 Tablespoons Oil

Method
Immerse the cauliflower florets in warm water and a tablespoon of sea salt, Keep it aside for 15 minutes. After 15 minutes wash in fresh running water 2 -3 times. Keep it to drain in a colander.
 Grind the coconut to a fine paste add the pathare Prabhu masala and grind again it well mixed. 
In a kadai heat oil , add the ginger garlic paste and saute for 2 minutes , then add the onion and fry till starts to turn golden.
Now add the ground masala paste and  ¼ cup water fry the masala till oil starts to leave the sides. 
Add the cauliflower, potato and fry 
till the masala coats it.
Add a cup of water and salt to taste, mix it well, bring it to a rolling boil. 
Cover with a lid and cook till the potato and cauliflower is  cooked and oil surfaces. Add the chopped tomato and mix well, let it simmer for 2 minutes . Taste for seasonings.
 Serve garnished with fried curry leaves. Enjoy with rice or phulkas.

Grilled Cauliflower Tikka Masala#SundayFunday

This dish is so delicious and creamy, you will love this dish.
For this recipe if have used mustard oil, this oil gives a delicious and nutty flavor to the dish. Mustard oil is also a healthy oil. Once you acquire a taste of the oil you will love using it in cooking. Do try this recipe with this oil. I have made the gravy thick to enjoy it with chapatti, if you want to have with steamed rice then add more hot water and adjust the gravy consistency accordingly. This crowd-pleaser of a dish for vegetarians, a perfect, warming bowl of comfort food.
Serves 4 - 5
Ingredients

1 Medium Head Cauliflower - cut into florets
1 Teaspoon Sea Salt
For The Cauliflower Marination
150 Grams Yogurt -whisked
½ Teaspoon Sea Salt
¼ Teaspoon Black Salt
1 Tablespoon Kashmiri Red Chilly powder
½ Teaspoon Amchur powder
½ Teaspoon Cumin Powder
½ Tablespoon Lemon Juice
1 Tablespoon Chutney Chana - grind to a fine powder
½ Teaspoon Kasuri Methi
1 Teaspoon Ginger Garlic Paste
2 Tablespoons Mustard Oil 
For The Tikka Masala Gravy
1 Medium Onion - chopped
3 Cloves Garlic - chopped
1" Piece Ginger - chopped
2 Medium Tomatoes - blanche & peeled
2 Tablespoon Mustard Oil
1 Teaspoon Red Chilly Powder
½ Teaspoon Turmeric Powder
1 Teaspoon Cumin Powder
2 Teaspoons Coriander Powder
½ Teaspoon Garam Masala Powder
¼ Cup Yogurt
½ Teaspoon Sea Salt
½ Teaspoon Sugar
For Garnishing
Coriander Leaves
¼ Cup Fresh Cream

Method
For The Cauliflower/Gobi Florets
In a large pot or kadhai, pour water add a teaspoon of salt bring it to a boil. Once the water comes to a rapid boil, add the cauliflower floret. Bring this to a boil and switch off the flame. Drain the water and let it cool down completely.

For The Cauliflower Marination
In a large mixing bowl combine, all the given ingredients to a smooth mixture, add in the cooled cauliflower florets, mix well. Set it aside for 30 minutes. 
In the mean time let's prepare the gravy
In a large pan / kadai, heat mustard oil, when it comes to a smoking point, switch off the flame let is cool for a minute or two. Now switch on the flame and fry the chopped onions, ginger and garlic till it just starts to turn golden, add the blanched and chopped tomato, sauté it for 2 minutes. Switch off the flame and let it cool.
Let's get back to the cauliflower
Heat the oven to 200°C, with both the elements on. Arrange the marinated cauliflower in a lined tray. Do not add the marinade, keep this aside, we will use it in the gravy.
Place the tray in the oven and let it grill for 15 minutes.
  
After 15 minutes, remove the tray out and turn the sides of the florets. Turn the oven setting to grill only and place the tray on the top rack and grill it for 10 minutes, half way through change the sides of the tray.    
They will be slightly charred see pic.
Back To The Gravy
In blender jar add the sautéed onion and tomato along with the oil, all the given spices and yogurt, grind this to a fine paste.
Pour this back into the same kadai without adding any oil.
Wash the blender jar with little water, pour this also into the kadai. Add the all the remaining cauliflower marinade and wash that bowl too with little water. Add another cup of water and mix all this well, add salt and sugar and give it good mix. Now switch on the flame and on medium high flame stir it continuously till the gravy comes to a rolling boil. Once it comes to a rolling boil, cover with a lid and reduce the flame to low and let it simmer till oil surfaces. 
  
Once the oil surfaces our gravy is done. Now add the garam masala, crushed kasuri methi, cream and give it good mix, let is simmer for a minutes. Switch off the flame add the grilled cauliflower florets and mix. Serve hot garnished with coriander leaves and a drizzle of cream.
Enjoy with chapatti or naans.

Doi Gobhi/Yogurt Cauliflower#SoupSwappers

This is a Bengali cuisine dish which is a mildly spiced. In Bengal cauliflower is also called fulkopi. This is a very different way of preparing the regular cauliflower for a main course meal and the fried cauliflower with curd/yogurt combination tastes great. In this dish there is no onion or garlic and still taste delicious. Do try this you will definitely love this dish.

Ingredients
To Boil The Cauliflower
1 Medium Head Cauliflower
¼ Teaspoon Salt
¼ Teaspoon turmeric powder
Other Ingredients
3 Tablespoons Oil
3 Green cardamom
1 Bay leaf
3 Cloves
1 Small Stick Cinnamon
2 -3 Green Chillies
½ Teaspoon Garam Masala powder
1 Tablespoon Desi Ghee
To Make A Paste
1 Cup Yogurt/Curd - whisk it well
1 Cup Water
1 Teaspoon Red Chilly powder
½ Teaspoon Cumin powder
¼ Teaspoon Cumin seeds
1 Teaspoon Coriander powder
1 Teaspoon Sugar
Salt to taste

Method
In a pan of water add the turmeric powder and salt bring this to a boil, when the water boils add the cauliflower florets and boil it for 3- 4 minutes. Strain the cauliflower in a colander and keep aside.
Heat oil and add all the whole spices, when they start to sizzle add the boiled cauliflower and fry for 2- 3 minutes in medium high flame till the cauliflower get slightly charred. Take out the cauliflower on to a plate and keep it aside. 
Whisk the ingredients of the paste well in a bowl.
In the same pan add the paste to the pan on low flame. Stir it with a whisk continuously for 3 - 4 minutes or until this mixture comes to a rolling boil. 
Now add the fried cauliflower and mix it well.
Add the slit green chillies. Cover with a lid and let it boil for 5 minutes on low flame. 
Then add in garam masala powder and the desi ghee, give it good mix, let it simmer for a minute or two. Switch off the flame. 
Garnish with coriander leaves.
Enjoy hot with steam rice or crusty bread or roti.

BBQ Whole Cauliflower Tikka#SundayFunday

This marinated cauliflower tikka I took it for our homestay at Lonavla with my family. The manager arranged a grill for us with all necessary accessories. The smoky flavor was awesome in this and was relished by all. If you do not have a grill then bake it in the oven and give the flavor of liquid smoke or smoke it with charcoal.

Ingredients
To Blanche The Whole Cauliflower
1 Medium Whole Cauliflower
1 Teaspoon Heaped Turmeric Powder
½ Teaspoon Heaped Sea Salt
For  The Marination
½ Cup Greek Yogurt/ Hung Curd
1 Tablespoon Vinegar Or Lemon Juice
1½ Teaspoons Ginger Garlic Paste
1 Teaspoon Heaped Homemade Tandoori Masala
½ Teaspoon Fennel Powder
1½ Teaspoon Roasted Chana Powder
Salt to taste
1 Cube Vegetable Seasoning
2 Tablespoon Olive Oil 0r Mustard Oil
2 Tablespoons Mustard Oil
½ Teaspoon Ajwain / Carom seeds
1½ Teaspoon Kasuri Methi
2 Green Chilies- finely chopped

Method
In a large pot/kadai heat water with salt and turmeric powder. When the water comes to boil add the whole cauliflower and blanche is for just 10 minutes.
Heat mustard oil or olive oil or any vegetable oil of your choice in a pan, then switch of the flame in a pan, add carom seeds and the chopped Green chilies sautĂ© for a minute. Let it cool. Mix all ingredients in yogurt along with this flavored oil well. Pour this into a piping bag and pipe it into the crevices from the bottom of cauliflower then rub the marinade on the top too. Marinate this for at least 30 minutes. I left it overnight to marinate in the refrigerator. 
Now grill it on a charcoal grill or bake it at 200°C in a preheated oven with both the elements on for for 20-25mins.
Serve this with coriander chutney and a sprinkle of lemon juice.

Tandoori Gobhi/Cauliflower Made On Gas Stove#SundayFunday

Tandoori Gobhi is a popular Indian appetizer, full of flavor, delicious and mouthwatering. Since I do no have a tandoor at home this my take on the the traditional tandoor cooking. I have made this on a gas stove and given it smoked flavor.
Ingredients
For The Cauliflower/Gobi Florets 

20 Florets Gobhi/Cauliflower
1 Teaspoon Lemon Juice or White Vinegar
Salt to taste
Water as required - to boil the florets
6 -7 Baby Potatoes - cut into half and boiled till done
For The Marinade 
200 Grams Yogurt -whisked
Salt to taste
Black Salt to taste
1 Tablespoon Kashmiri Red Chilly powder
½ Teaspoon Amchur powder 
½ Teaspoon Cumin Powder 
½ Tablespoon Lemon Juice 
1 Tablespoon Chutney Chana - grind to a fine powder
½ Teaspoon Kasuri Methi
1 Teaspoon Ginger Garlic Paste
2 Tablespoons Mustard Oil 
For The Smoked Flavor 
A Piece of Charcoal
1 Teaspoon Ghee
Melted Butter as required or to baste

Method
Boil the baby potatoes with salt till firm and done. Drain and let is cool completely.
For The Cauliflower/Gobi Florets
In a large saucepan or kadhai, pour water and bring it to a boil. Once the water comes to a rapid boil add the vinegar.

Add the cauliflower floret. Boil for about 2-3 minutes or until the stalks turn translucent. Please retain the stalks of the florets.  Once done, turn off the flame and strain the florets and keep it aside to dry and cool down.

For The Marinade
In a large mixing bowl combine, yogurt, cumin powder, black salt, Kashmiri red chili powder, chutney chana powder, salt, lemon juice, amchur powder, kasuri methi and ginger garlic paste.

In a tadka pan pour the mustard oil and over high flame heat the oil until smoky. Once done pour the oil into the marinade mixture, combine everything well.


For The Tandoori Gobhi
Add the florets and baby potatoes to the marinade and then using a spoon; start to coat them very well. Using you hand mix until all the florets are well coated with the marinade. 
To give them a smoky flavor, make a small katori and keep it in the center. Place a hot piece of charcoal in the center and pour the ghee on top.
Immediately cover the mixing bowl and leave it covered for 20 minutes. After 20 minutes remove the lid and the charcoal, a beautiful aroma of smoke it emitted from them.
You will also notice some excess water from at the bottom of the bowl, add the boiled baby potatoes and using your hand simply mix everything once again very well.

For this the use of metal skewers recommended.
Skewer the gobi pieces on the metal skewers, piece by piece, starting with a piece of potato and then followed by the gobi. 
Insert from the stalk side and remove from the other edge, towards the end add another potato piece and your Tandoori Gobhi is ready.
Once all the skewers are done, cook the tandoori gobhi over direct heat for 2-3 minute or until you see black spots.
Once all the skewers are done, baste the gobhi with oil. Cook the gobhi over high flame once again for about 30 seconds.
Remove the gobhi and potatoes using a knife and place them on a serving plate.
Serve the Tandoori Gobhi with green chutney.
