Keto 2-Minute Protein Bread & A Ham Sandwich#SundayFunday

This is a Microwave Keto 2 Minutes bread, so quick and easy to make. It taste like real bread. 
Add lots of filling for the sandwich, which will eliminate the smell. It's also very filling, makes you satisfied.
This bread turns out beautifully! Lovely crumb, it looks just like wheat bread and taste like real bread! 
Made a Ham Sandwich with this bread, added lots of lettuce, you will love the crunch of lots of lettuce in this sandwich.
Serves One
Ingredients

1 Large Whole Egg
1 Large Egg White Only
18 Grams Raw Whey Protein Powder
1 Tablespoon Psyllium Husk Powder
1 Teaspoon Baking Powder 
¼ Teaspoon Organic Stevia
¼ Teaspoon Salt
A Dash Of Black Pepper Powder
Method
Mix all the ingredients in a Pyrex square dish 5 x 5 inch (13 x 13 cm) or a microwave safe glass bowl.
Microwave for 2 minutes on high powder. The bread is ready!
So how soft and spongy it is!! This bread turns out beautifully! Lovely crumb, it looks just like wheat bread and taste like real bread! 
To Make the Sandwich
Slice the bread into two or three slices (I made two slices) 
slather both sides it with cream cheese, place 3 -4 lettuce leaves, top it with 2 slices of ham, then add 2 slices of tomato, place a slice of cheese
cover it with the other slice of bread.
Filling and yummylicious!!
Wrap it in a sandwich paper, cut it into half. 
Enjoy.. this filling and delicious sandwich. I had this for lunch.

Bauernfrühstück (German Farmer’s Breakfast)#SundayFunday

Bauernfrühstück is a German country breakfast. A Farmer's breakfast which simple & filling dish made from fried potatoes, eggs, onions and bacon or ham, pan fried as an omelette. . The Berlin version of the same is called “Hoppel Poppel”. This can be had for lunch or dinner!
I made a vegetarian version to for my hubby, with an addition of cottage cheese and minus the ham rest ingredients and method the same.

Serves One
Ingredients

2 Medium Potatoes - skinned & sliced in roundels
2 - 3 Tablespoons Duck Fat /Bacon Fat or Olive Oil
1 Large Onion - sliced
2 Scallions/Spring Onions - roughly chopped
4 Tablespoons Each Red & Green & Yellow Bell Peppers - diced
2 Big Slices Ham  - chopped
4 Tablespoons Chopped Celery Ribs
1 Teaspoon Dried Chives
2 Tablespoons Chopped Parsley
2 Eggs- whisked
Salt to taste

Method

Slice the potatoes in roundels and boil the potatoes in a saucepan of lightly salted water till just cooked. Drain, rinse with cold water to cool and set aside.
Heat olive oil in a large skillet on medium high heat. Add the onions and sauté till they are golden brown. Then add the potato roundels and sauté till they too start to brown, 
now add in the ham and sauté for a minute 
then add the bell peppers, celery, chives and spring onions and sauté for 2 minutes or till they soften a little. 
Now spread it evenly and then add the whisked eggs, evenly distribute it. 
As soon as eggs begin to firm up, switch off the flame.


Serve and Enjoy!! We had this with ga
rlic bread.

Herbed Whole Wheat Piadinas & Sandwiches#SundayFunday

Piadina or Piada is a thin Italian flatbread. When we visited Italy, we enjoyed having these sandwiches. This was on my to do list, for a long time. Thanks to our Sunday Funday event wherein each Sunday a theme is chosen, we prepare dishes what our family loves. Today our host for Sunday Funday is Sue of Palatable Pastime and the theme is Roman or Italian Recipes.

Makes 9 - 10 Flatbreads - depending on the size
Ingredients

2 Cups Whole Wheat Flour
2 Cups All Purpose Flour
1 Teaspoon Sea Salt
2 Teaspoons Baking Powder
1⁄4 Teaspoon Baking Soda
1 Teaspoon Mixed Italian Herbs
½ Teaspoon Dried Basil
1⁄4 Teaspoon Dried Thyme
2 Tablespoons Olive Oil
1½ Cold Water
For the Sandwiches
Butter as required 
Vegetarian
Mayonnaise
Lettuce Leaves
Tomato Slices - deseeded
Broccoli Tater Tots
Cheese Slices
Non Vegetarian
Mayonnaise
Thousand Island
Lettuce Leaves
Tomato Slices - deseeded
Ham Slices
Cheese Slices

Method
Mix all the dry ingredients well. Now add the oil and again mix till the olive oil is well incorporated. Add water a little at a time and knead into a soft dough. Keep the dough aside covered for at least 15 minutes to rest.
After 15 minutes divide the dough into 9 - 10 equal balls.
Take one ball of dough and on a well dusted work surface roll it into a thin circle approximately 8 -9" round. Like wise roll all and keep aside.
Bake the bread on a medium hot skillet till golden spot appear on both side on medium low flame. 
Wrap them in a cloth and store them in a container. You can also use olive oil for frying.  These are really soft to enjoy!! 
Serve with any dish. I love them with soups or make sandwiches or enjoy them with grilled veggies.

Made sandwiches and enjoyed them for dinner. For my hubby veg, with broccoli tater tots and cheese for me with ham and cheese. 
For the Veg Sandwich 
Apply mayonnaise on the piadina, then lettuce leaves, sliced and de seed tomato , broccoli tater tots
Top it up with cheese, fold it
Grilled them in the sandwich toaster with butter.
For the Non Veg
Applied mayo, then thousand island , lettuce leaves, tomato slices, ham slices and top it with cheese then grilled them in sandwich toaster with butter.
These are yum.. yum !!

Dumplings In Ham Soup With Leftover Colcannon#Soupswappers


This Colcannon is become are favorite salad at home. We often make this salad. I had remaining colcannon, decided to make a soup, with ham and dumplings. It's filling soup on it's own, requires no accompaniment.

Serves 2 
Ingredients
750 Ml Chicken Stock
4 French beans - cut in 2 or 3 pieces
1 Large Carrot - chopped into dice sized pieces
1/4 Cup Shredded Purple Cabbage
3 Tablespoons  Leftover Colcannon
1 Leek - finely chopped
200 Grams Ham - finely chopped
For the Dumplings
1 Cup All Purpose Flour
2 Tablespoons Leftover Colcannon
½ Teaspoon Heaped Baking powder
¼ Teaspoon Pepper Powder
1/3 Cup + Butter Milk

Method
Take a large, saucepan , pour in the stock, colcannon, bean sprouts and chopped vegetables and mix it well, then place the pan on medium low flame bring to a simmer. Place the lid on and let it simmer for 10 minutes stirring in between.

In a mixing bowl, combine the flour, baking powder, pepper powder and colcannon. Then slowly pour in the buttermilk to bind the mixture into a
biscuit dough ( do knead the dough too much).
Once the vegetables in the pot are cooked and tender, stir in the shredded ham. Wet your hands a little and shape the dough into small ping-pong sized balls. Drop them on top of the soup. Put the lid back on the pot and simmer for 10 minutes. After 10 minutes with a spoon, gently turn the dough over and simmer for a further 10 minutes.
Serve them large soup bowls and enjoy with a spoon, it make a complete and filling meal.

Homemade French Onion Soup Bundt Meatloaf With Ham & Sausage#BundtBakers

We always make meatloaf in a loaf pan. Making a meat loaf in a bundt pan is so cute, you get a perfect ring slice of meat loaf to enjoy. The meat loaf also looks fancy when placed on the dinning table. 
For this month's event for Bundt Baker's the theme is Meat Loaf Bundt and  I am the host.

Ingredients250 Grams Beef Mince
2 Ham Slices
3 Cocktail Sausages
1 Small Onion - finely chopped
2 Cloves Garlic - minced 
2 Tablespoons Homemade French Onion Dry Soup Mix 
2 Tablespoons Hot & Sweet Sauce 
1 Slice Small Bread - make into crumbs 
1 Egg 
Salt to taste 
1 Tablespoon Butter

For the Glaze1/3 Cup Ketchup
1 Tablespoon Hot & Sweet Sauce
1 Tablespoon Chipotle Sauce
1/4 Teaspoon Smoked Paprika


Method
Chopperize the mince, sausages, ham, onion and garlic. Take this into a bowl and add rest of the ingredients. Shape into a ring. 
Place this into a greased bundt pan and bake in a preheated oven for 30 minutes at 180°C  for 20 minutes and 140°C for 10 minutes skewer inserted comes out clean. 
Let it cool. When still warm un mould it on to two layers of aluminium foil.

For the Glaze
Mix all ingredients well. Keep aside.
Brush  the glaze on the meat loaf and bake again for 10 minutes.
 Cool

Enjoy.
