2 Ingredients Bagels#BreadBakers

These homemade bagels are just 2 ingredients which are plain thick yogurt/Greek yogurt and self-rising flour! The recipe doesn’t require any yeast or proofing. You can have fresh chewy and soft bagels in less than an hour.
These bagels have a thicker chewy skin and an airy and chewy interior. They do have a slight tangy taste from the yogurt. It makes them taste almost like sourdough bagels. These bagels don’t expand to be quite as large as traditional flour yeasted bagels but they are a great personal size. You can top with whatever toppings you like. I actually love my bagels plain but made a quick everything bagel seasoning and topped them with it and then baked them.
Served these warm homemade quick bagels with some Nutella and they vanished in a jiffy.

1 Cup Measurement =250Ml
Makes 5 Bagels
Ingredients

1 Cup Thick Yogurt / Greek yogurt
1½ Cup Self-Rising Flour
For The Toppings
Everything Bagel Seasoning
1 Egg yolk - whisked

Method
Preheat oven to 175°C. Line a large baking sheet with parchment paper or silicone baking mat.
In a large bowl, add yogurt and flour. When measuring out the yogurt, make sure that you strain out any extra liquid. Any extra liquid sitting in your yogurt will cause the dough to be too wet.
Using a large spoon or spatula, mix together flour and yogurt until it begins to form a crumbly dough. Use your hands to push the dough together into one ball. The dough will be very sticky. Take this dough into a lightly floured surface and knead till it forms a smooth dough.
Oil your hand a little and cut into 5 equal parts.
Dust the work surface with flour. Roll them into round ball. Flatten it lightly and poke a finger into it and roll it in floured surface to make a nice big hole.
Place them in a lined tray and brush them with egg ( I had an egg white used that to brush but didn't then rich brown color had I to use an egg yolk only), sprinkle bagel seasoning.
Bake in a preheated oven at 175°C for 20 - 25 minutes or until golden. 
Let bagels cool a few minutes before slicing and making a sandwich with the filling of your choice. 
Served them with Nutella. These are perfect quick breakfast or an snack.

Bermuda Johnny Bread#EatTheWorld

Bermuda Johnny cakes are a popular traditional Bermudian breakfast snack. A scone like sweet breads which are cooked in a cast iron pan over the stove and served up with butter and jam or cheese. There are many Bermudian’s who also fry their Johnny cakes, however the majority of them half cook them in a floured cast iron pan then bake them so that they are fully cooked inside.
This sweet bread has a golden-brown exterior and tender, fluffy crumb. For my recipe, I baked the bread for a few minutes after frying.

1 Cup =250Ml 
Makes 8 breads
Ingredients
2 Cups All Purpose Flour
50 Grams Caster Sugar
1 Tablespoon Baking powder
¼ Teaspoon Pink Himalayan Salt
58 Grams Salted Butter - chilled & cubed
100Ml +- Whole Milk
1 Large Egg

Method

Preheat oven to 200°C. Line a baking sheet with parchment paper or a silicone mat.
In a large bowl, whisk together flour, sugar, baking powder, and salt. Using a pastry blender, cut in cold butter until mixture is crumbly. In a small bowl, whisk together milk and egg. Gradually add milk mixture to flour mixture, stirring just until dry ingredients are moistened.
Them lightly spread the dough with your hands and fold it. Do this three to four times. Lastly again flatten and cut it into 8 equal portions. Shape each portion into a ball and gently flatten to ¾ inch thickness.
In a 12-inch skillet, heat a tablespoon of butter or oil over medium heat. Place Johnny bread in skillet; cook until lightly browned, about 2 minutes per side. Transfer to prepared pan.
Bake in a preheat oven until centers are set, 10 to 12 minutes.
Serve warm with honey, jam, butter or any main course meal or boiled potatoes, bananas, and codfish. Store in an airtight container for up to 1 week.

Broccoli & Oats Sandwich Bread - Gluten Free#BreadBakers

This is a delicious and healthy bread. Perfect for sandwiches . This bread taste so good and quick to make. You just required 3 florets of broccoli and oats, quick grind and your will have a beautiful healthy bread baked in minutes. This bread is so often made by me. Do try this quick recipe!
Ingredients
3 Broccoli Florets
3 Eggs
Salt to taste
60 Grams Gluten Free Rolled Oats
½ Teaspoon Baking powder

Method
In large blender jar add the salt, baking powder and oats. Blend this well till the oats are powdered. Then add the broccoli florets, eggs and pulse the blender once or twice only. The batter should be well mixed.
Pour this into a greased and lined loaf pan and level it well. 
Bake it in a preheated oven at 180°C for 20 -25 minutes or till a toothpick inserted comes out clean. 
Once baked lift the paper and place it on a wire rack to cool. 
When cooled slice it into two halves each half into two slices and use this to make an healthy sandwich.

Coconut Flour Banana Bread - Gluten & Sugar Free#BreadBakers

This is a gluten free banana bread so light and delicious. Use over ripe bananas. I made it without any additional sugar coz my bananas were so ripe and the result came out well and its too good! 
If in case the bananas are not over ripe then you can add ¼ cup caster sugar. Weigh the bananas without the skin then mash it up.

Makes 7 -8 slices
Ingredients

3 Eggs
70 Grams Coconut Flour
2 Teaspoons Baking powder
1/8 Teaspoon Salt
65 Ml Coconut Oil
200 Grams Mashed Bananas

Method
Grease a pan size - 18 x 13cm.
Mash the bananas well. Beat the egg , add the oil and salt beat well. then add the coconut flour and fold it in with a spatula. Add in baking powder and mashed bananas. Fold it well. 
Pour this into a greased pan. 
Bake in a preheat oven at 180°C for 40 minutes. 
Ta da.. a delicious gluten and sugar free bread is ready to.

Fresh Strawberry Bread#BakingBloggers

If you love fresh fruit breads then this quick bread recipe comes together in just 10 to 15 minutes. Make this with fresh or frozen strawberries, a prefect tea loaf or breakfast bread. It's soft and delicious.

Makes One Loaf
Ingredients

1 Cup Frozen or Fresh Strawberries - sliced
1½ Cups All Purpose Flour
1 Cup Caster Sugar + 1 Tablespoon
½ Teaspoon Level Salt
½ Teaspoon Level Baking soda
½ Cup Melted Butter
2 Tablespoons Oil
2 Eggs
½ Cup Chopped walnuts
Method
Preheat oven to 180°C.
Butter and line one 9 x 5-inch loaf pan.
Slice strawberries and place in bowl. Sprinkle lightly with one tablespoon sugar and set aside while preparing batter. 
Combine flour, sugar, salt and baking soda in large bowl, mix well.
Blend oil and eggs into strawberries. Add the flour mixture, blending until dry ingredients are just moistened. Stir in walnuts (reserved a few to sprinkle on top). Pour the batter into pan sprinkle the walnut. Bake in preheated oven until a tester inserted in the center comes out clean, 45 to 50 minutes.
Let cool in pan on wire rack for 10 minutes. Turn loaf out of pan and allow to cool before slicing.

Quick Pumpkin Bread#BakingBloggers

This is a quick bread, since it uses a baking powder, it has to be baked immediately, so it can be used for a little bread on holiday mornings. It's a perfect bread when you want to eat something light yet filling. 
You do not require any special baking pan. Since I had a mini pancake pan used it. But it can make only 4 at a time. The remaining I made them on small square parchments paper. You can top it with onions, tomatoes or add any leftover meat, the choice is endless! Since the star ingredient for baking blogger's this month is baking with pumpkin, used it.

Makes 6 - 7
Ingredients

100 Grams All Purpose Flour
50 Grams Bread flour
1 Teaspoon baking powder
3/4 Teaspoon Caster Sugar
1/4 Teaspoon Salt
140 Grams Fresh Yogurt - at room temperature
50 Ml Milk
50 Grams Fried Bacon
60 Grams Boiled & Diced Pumpkin
80 Grams Mozzarella Cheese
Pizza seasonings and Black pepper powder to taste


Method

Preheat the oven at 190°C.
Cut up the bacon and fry it in olive oil.
Boil a pumpkin and cut into small pieces.
Line the Baking tray with parchment paper.
Sieve all dry ingredients in a bowl, add in the yogurt and milk, whisk it together with a hand whisk. 
Scoop the batter onto the lined baking tray. (About 3 tablespoons). 
Top with the boiled and diced pumpkin, fried bacon
Top it with pizza cheese. 
In some, added bacon and rest were vegetarian for hubby dear.
Bake at 190°C for 15 minutes. 
Sprinkle pizza seasonings and pepper powder. 
Enjoy these while its hot!

Zucchini Bread#BreadBakers

In this Zucchini Bread have grated zucchini and an apple. Zucchini does not add any flavor to the bread but give a moist texture to it. This quick bread is easy to make with a crunch of  nut and coconut.
Zucchini, also known as a courgette, has a smooth dark green skin that isn't removed before grating as we want to see its pretty shreds of green running through the bread. 
This bread is very tasty plain/without any frosting, but you may frost with the cream cheese frosting or any other frosting of your choice.
It has a moist texture, a wonderful aroma of ground cinnamon and nutmeg.
Makes One - 9 x 5 x 3 inch loaf.
Ingredients
1/3 Cup Toasted Walnuts - or any other nuts
140 Grams Green Zucchini/Courgette
1 Medium Apple
200 Grams All Purpose Flour
1 Teaspoon Baking soda
¼ Teaspoon Baking powder
¼ Teaspoon Salt
½ Teaspoon Cinnamon powder
¼ Teaspoon Freshly Grated Nutmeg
125 Ml Vegetable Oil
1 Cup (200 Ml Cup) Granulated Sugar
2 Large Eggs
1 Teaspoon Vanilla essence
½ Cup (100 Ml Cup) Desiccated Coconut

Method
Preheat your oven to 180°C , Spray or oil an 9 x 5 x 3 inch (23 x 13 x 8 cm) loaf pan and dust it with flour.
Toast the walnuts for about 5 minutes or until lightly browned and fragrant in the oven. Let cool and then chop coarsely.
Grate the zucchini, and then peel and grate the apple.
In a large bowl, sieve together the flour, baking soda, baking powder, salt, ground cinnamon, and nutmeg.
In the bowl, beat the oil, sugar, eggs, and vanilla extract until well blended (about 1 minute). Add the flour mixture, beating just until combined. Now add in the grated zucchini and apple and beat lightly till combined .Then fold in the nuts and coconut.
Pour the batter into the prepared pan, and tap it lightly. 
Bake it in the preheated oven until the bread has risen ( half way through I found the bread has browned so I tent it with an aluminium foil, about an hour and 10 minutes or until a toothpick inserted into the center comes out clean. 
As this bread was baking a wonderful aroma filled my house.
Place on a wire rack to cool for about 20 minutes and then remove the bread from the pan. 
This bread can be frozen. If, well wrapped, this bread will keep for several days at room temperature (if unfrosted) or for several days in the refrigerator (if frosted). 
This bread was so delicious, that, I, made it twice in a span of 15 days.  
My hubby friends didn't even know that it had zucchini, it was so good.
