Keto Salami & Egg Cups#SundayFunday

An easy keto one net carbs per serving for breakfast or brunch, can be meal prepped in minutes! Keto egg cups are a perfect egg muffin replacement. Salami and eggs - such a great combination, and these tasty cups are so much fun to make and eat! What I like about these egg cups that you can have fun with the toppings.
Just add whatever you like to spice up these muffins. They are so fun to make and then enjoy!! They're delicious, filling, festive and pretty.
Ingredients
Olive Oil spray
Salami slices
10 Eggs
Salt & Black pepper to taste
Optional Garnish
Chorizo slices
Sliced Black Olives
Fresh Basil
Pinch red pepper flakes
Pinch dried parsley
Shredded Cheddar Cheese
Method
Preheat the oven to 180°C. 
Lightly grease the bottom and sides of a muffin pan with olive oil and place them on a baking sheet.
Place one salami slice on the bottom of each ramekin, then arrange more slices around the sides, overlapping. 
This will be the salami "cup" that holds the eggs. Add a little shredded cheese at the bottom. Break an egg into each "cup." 
Season the cups with salt, pepper. 
Sprinkle a little cheese on top, garnish with olives, basil leaves.
Bake until the whites are set, about 20 minutes. Gently run a knife around the edges of each cup. Slide a spoon underneath each egg to release it. 
Serve immediately.
My Notes 
This is one of those recipes where it's best to make only as many as you think you'll be able to eat right away. However, if you end up with leftovers, you can keep them in the fridge in a sealed container for up to two days. Reheat them in the microwave or enjoy them cold. I don't recommend freezing the leftovers.

Keto Spiced Omelette Waffles#SundayFunday


I given a little twist to everyone's favorite omelette with these Spiced Omelette Waffles! These are wonderful light, fluffy and net omelette. Kid will love this, not oily. Though I have said spiced but add the spices according to your taste. We enjoyed this for our dinner. Have this garlic bread and make a perfect meal or a breakfast or a lazy Sunday brunch. 
Make 6 waffles
Ingredients
 
4 Large Eggs
¼ Cup Milk 
2 Tablespoons Onion - finely chopped
2 Tablespoons Capsicum - finely chopped 
2 Tablespoons Red Capsicum - finely chopped
1 Small Tomato - de seeded and finely chopped
1 Tablespoon Finely Chopped Coriander Leaves 
½ Teaspoon Red Chili powder
½ Teaspoon Cumin powder 
½ Teaspoon Coriander powder
¼ Teaspoon Turmeric powder
Salt to taste
Butter as required
Method 
Break the eggs, add milk, red chilly powder, cumin powder, coriander powder, turmeric powder, salt to taste and give it a nice whisk. Add the onions, tomatoes and capsicum. Preheat the waffle maker. Brush it with butter. 
Slowly pour the whisked egg mixture into the waffle maker, just enough so that it fills up. 
Close the waffle maker and let it cook till done and risen and golden brown. 
Slowly lift the egg waffles and serve.

Keto Chinese Steamed Buns#BreadBakers

If you are on Keto and longing for Chinese steamed buns ,then these are for you which are not only gluten free, but pillow-soft, delicious and will go well with any Asian food. You can also make a sandwich with whatever filling you want. 
These also freeze very well. If you want them sweet, then you can increase the sweetener in the batter. I enjoyed them as a savory sandwich and also make these to enjoy with gravy instead of rice. These do not have an egg taste or flavor. To cut that flavor, have added a teaspoon of apple cider vinegar. Do try these they are soo..oo.. good!
Ingredients
½ Cup Almond Flour
⅛ Teaspoon Stevia powder
1 Teaspoon Baking powder
⅛ Teaspoon Salt
4 Large Eggs
1 Tablespoon Mayonnaise
1 Teaspoon Apple Cider Vinegar
Method
Mix all dry ingredients together and mix well then add the eggs and mayonnaise mix till combined.
Place a 2 tablespoons of batter in each silicone mold and steam it for 10 minutes on high flame or on a water bath in the oven 180°C for 13 minutes. 
Cool  & unmold.
Slice and  make sandwiches with the filling of your choice 
or dunk them in any gravy.
My Notes
I used an aluminum cupcake tin and they didn't stick at all. I used steel plates to make large ones, but batter did stick to the bottom. Make them in silicon mold or place a greased parchment paper before adding the batter to the steel plates.

Indo Chinese Style Chilly Omelette Stir Fry#SundayFunday

This stir fried Chilly Omelette made Indo Chinese Style, is a change from the regular and monotonous omelette.  This is very quick to put up and will go very well with fried rice or as a side dish.
Serves 2 -3 
Ingredients

4 Large Eggs
¼ Teaspoon Pepper powder
¼ Teaspoon Red Chilly Flakes
¼ Teaspoon Salt
1 Tablespoon Oil

For The Sauce
3 Tablespoons Oil
1 Teaspoon Chopped Ginger
1 Teaspoon Chopped Garlic
1 Spring Onion - white & green chopped
1 Small Onion - cut into cubes  
1 Small Capsicum – cut into cubes
2 Tablespoons Red Chilli sauce
1 Tablespoon Light Soy sauce 
1 Tablespoon Tomato Ketchup
1 Teaspoon Vinegar
Method
Beat the eggs in a bowl, add in red chilly, pepper powder and salt to taste. Whisk them.
Heat oil into a hot pan ( used grill pan) on low flame and pour  little of  the egg mixture to make a thin omelette. 
While the omelette is still not cooked completely, roll it gently into then center 
Again pour a little mixture on to the empty side and swirl it to come to the bottom of the fold, again start to roll.
Do this process till all then egg mixture used. Make a thick roll.
Cut it from the center, see the layers!!
Then into cubes. Keep aside.
In another pan heat oil  add chopped ginger and garlic, sauté on high flame for a minute. Now add finely chopped white part of the spring onion. Sauté on high flame.
Add diced  onions and capsicum. Continue to sauté on the high flame. Add  all the  sauces and tomato ketchup ,vinegar and salt to taste and continue sautéing for a minute, Add the  egg pieces into the sauce and mix it so that the y are coated with the  sauce.
Finally add some finely chopped  spring onion green and serve hot.  Enjoy!!

Stuffed Makhani Anda Paratha With Homemade Frankie Masala#SundayFunday

Paratha is an easy breakfast, lunch or dinner recipe. Have a Stuffed Makhani Anda Paratha which is protein packed and super healthy, it as has eggs, made with whole-wheat flour and a Homemade Frankie Masala which adds an extra oomph, what would one want more for a nice breakfast or a meal in itself. Stuffed Makhani Anda paratha, is stuffed buttery egg paratha, an easy Indian brunch or meal in itself made with egg-stuffed in chapati dough rolled and cooked on a griddle.

Ingredients
For the Dough
2 Cups Whole Wheat Flour 
Salt to taste
Water as needed
For the Stuffing
3 Egg - boiled , peeled & grated
2 Medium Boiled Potato - Grated - for binding 
1 Teaspoon Heaped Homemade Frankie Masala
1 Green Chilly - finely chopped 
2 Tablespoon Chopped Coriander leaves 
Salt To Taste 
½ Teaspoon Roasted Cumin powder 
¼ Teaspoon Garam masala powder
1 Tablespoon Heaped Mayonnaise 
1 Teaspoon Chilled Butter - grated 
Method
For The Stuffing
Boil the eggs and refrigerate them for 2 hours at least ( this makes a it easy to grate it).
Grate boiled eggs and potatoes. Mix all the given ingredients for the stuffing well. Taste for seasonings or add as required according to your taste. 
Make equal size balls.
For The Dough
Take the flour, salt into a large bowl, mix well, add water little at a time and knead it into soft smooth  dough. Keep it covered for at least 20 minutes. Then divide the dough into ball smaller than the size of the filling.
Take a ball of dough roll it into a small circle add the stuffing in between
then close it remove any excess dough.
Press the edges using hands and just roll edges of the paratha.
Roll it into a medium thick paratha, dusting the work surface with flour generously. Place each paratha on a parchment paper or a brown paper ( this become easy to lift and place it on the griddle, chances of the paratha breaking is nil).
Heat a griddle / tawa, when the griddle is hot then just the paper along with paratha and place it on the griddle and take off the paper. Let this cook on medium low flame till one side is done then flip it and and cook the other side, brush a little butter on both sides, till golden brown spots appear. 
Take this on to a serving plate. 
Enjoy with yogurt, pickle or ketchup. A delicious and filling brunch.
Homemade Frankie Masala
2 Tablespoon Red Chilly powder
2 Tablespoon Amchur powder
1 Tablespoon Chaat Masala
2 Tablespoon Coriander Powder
1 Tablespoon Cumin Powder
1 Teaspoon Garam Masala Powder
½ Tablespoon Salt
Method
Mix well and ready. I use this in many of my recipes, this is as good as an all purpose chapati masala which adds an extra oomph to any dish you prepare.
Refrigerate this masala for better shelf life, to retain it flavor and color.

Egg Jalfrezi#Alphabet Challenge

Egg Jalfrezi is a unique, delicious and quick to make. Its different and taste great. 
Ingredients
4 Hard Boiled Eggs
1 Green Capsicum - cut in cubes
1 Onion - cut in cubes
½ Cup Tomato Ketchup
½ Cup Tomato Chilly Sauce
1 Teaspoon All Meal Sauce - optional
2 Tablespoons Red Chilly Sauce
½ Teaspoon Red Chilly Flakes
½ Teaspoon Cumin Powder
1 Teaspoon Ginger Garlic paste
½ Cup Water
2 Tablespoons Oil
Method 
Heat oil in a pan , add ginger garlic paste sauté for a minute add the onion and fry till light pink, add the capsicum and the ketchup, tomato chilly sauce, red chilly sauce, all meal sauce, salt to taste, red chilly flakes, cumin powder and water, stir well and cook for till it comes to a rolling boil, add the egg and stir fry for 2 minutes. 
The egg jalfrezi is ready to serve garnish with chopped coriander. Enjoy!!
