Broccoli & Oats Sandwich Bread - Gluten Free#BreadBakers

This is a delicious and healthy bread. Perfect for sandwiches . This bread taste so good and quick to make. You just required 3 florets of broccoli and oats, quick grind and your will have a beautiful healthy bread baked in minutes. This bread is so often made by me. Do try this quick recipe!
Ingredients
3 Broccoli Florets
3 Eggs
Salt to taste
60 Grams Gluten Free Rolled Oats
½ Teaspoon Baking powder

Method
In large blender jar add the salt, baking powder and oats. Blend this well till the oats are powdered. Then add the broccoli florets, eggs and pulse the blender once or twice only. The batter should be well mixed.
Pour this into a greased and lined loaf pan and level it well. 
Bake it in a preheated oven at 180°C for 20 -25 minutes or till a toothpick inserted comes out clean. 
Once baked lift the paper and place it on a wire rack to cool. 
When cooled slice it into two halves each half into two slices and use this to make an healthy sandwich.

Keto Fried Fish In Whey Protein Powder#FishFriday

This is crisp, flaky, low carb, gluten free version of fried fish, which we would normally use flour to coat the fish. This keto version is delicious on it’s own right, perfect for an easy, yet super comforting keto meal!

Serves One
Ingredients 
For The Marination 

200 Grams Fish Fillet 
¼ Teaspoon Turmeric Powder 
¼ Teaspoon Red Chilly Powder 
1 Tablespoon Lemon Juice 
Salt to taste 
For The Coating 
½ An Egg - beaten 
Unflavored Whey Protein Powder - as required 
Coconut Oil - as required for frying

Method 
Marinate the fish with all the given ingredients and refrigerate it for at least 20 minutes.
Heat coconut oil in a cast iron skillet for shallow frying.
Dip the marinated fish in egg then sprinkle whey protein powder on each side of the fish, pressing it lightly so that the fish is well coated with it on each side.
Fry it on medium flame till golden on each side. Just poured the remaining egg on top (did not want to waste it).
Enjoy with salad at the sides.

    Farfalle Pasta With Pesto Alfredo Sauce#Improv

    Can I tell you how I am so happy that my plants are thriving, I have many herbed plants in balcony garden, basil, tomato, oregano, thyme, celery, mint, peppermint, kafir, lemongrass, curry leaves, betel leaf, colocasio / taro, ginger, wild garlic, turmeric, bitter gourd and many others. My baisl plant it thriving , so much that it has started to flower. So I trimmed it and made again this Pesto, all the flowers I have made basil flower oil. I made more than a cup of pesto.
    Today I, made this wonderful flourless Farfalle Pasta Alfredo Pesto Sauce, its was so delicious, finger licking.
    Serves 2
    Ingredients

    2 Cups Farfalle Pasta
    2 Tablespoons Salted Butter
    ¾ Cup Milk
    ¾ Cup Fresh Cream
    2 Cubes Cheddar Cheese
    ¾ Cup Basil Pesto With Almonds & Walnuts
    1 Green Chilly Paste
    2 Large Tomatoes - seeded and diced

    Method
    Cook the pasta until al dente and drain.
    While the pasta cooks, in a large pan add the butter, cream and milk, green chilly paste and pesto , mix this well. Cook this over medium low heat till it comes to a rolling boil, stirring continuously, now grate one cube of cheddar cheese and add to the mix.   
    When it starts to just thicken add the pasta and diced tomatoes, give it a good mix and cook till the pasta is just heated. Remove from heat and serve this hot with grated cheese. This pasta dish is saucy, tasty and super delicious.

    Keto 2-Minute Protein Bread & A Ham Sandwich#SundayFunday

    This is a Microwave Keto 2 Minutes bread, so quick and easy to make. It taste like real bread. 
    Add lots of filling for the sandwich, which will eliminate the smell. It's also very filling, makes you satisfied.
    This bread turns out beautifully! Lovely crumb, it looks just like wheat bread and taste like real bread! 
    Made a Ham Sandwich with this bread, added lots of lettuce, you will love the crunch of lots of lettuce in this sandwich.
    Serves One
    Ingredients

    1 Large Whole Egg
    1 Large Egg White Only
    18 Grams Raw Whey Protein Powder
    1 Tablespoon Psyllium Husk Powder
    1 Teaspoon Baking Powder 
    ¼ Teaspoon Organic Stevia
    ¼ Teaspoon Salt
    A Dash Of Black Pepper Powder
    Method
    Mix all the ingredients in a Pyrex square dish 5 x 5 inch (13 x 13 cm) or a microwave safe glass bowl.
    Microwave for 2 minutes on high powder. The bread is ready!
    So how soft and spongy it is!! This bread turns out beautifully! Lovely crumb, it looks just like wheat bread and taste like real bread! 
    To Make the Sandwich
    Slice the bread into two or three slices (I made two slices) 
    slather both sides it with cream cheese, place 3 -4 lettuce leaves, top it with 2 slices of ham, then add 2 slices of tomato, place a slice of cheese
    cover it with the other slice of bread.
    Filling and yummylicious!!
    Wrap it in a sandwich paper, cut it into half. 
    Enjoy.. this filling and delicious sandwich. I had this for lunch.

    Gluten Free Flourless Carrot Cake#BundtBakers

    There is a bite of goodness in every piece of cake that you enjoy. This cake is so light, moist and nutty. Made this cake with Cashew Meal.. yes.ss you have read it correctly cashew meal. So easy to make. 

    Not like Almond Meal, wherein it requires soaking, peeling and drying. There is no such process in making cashew meal, more so ever this is widely and easily available all over India and comparatively cheaper too. You can substitute this for any recipe that calls for Almond Meal

    In this recipe I left it coarse and did not sieve it to make cashew flour. But if you wish you sieve it to get a fine powder / flour. Read the process carefully before you began to make it or else it turn to cashew butter.


    Cashew flour is used in gluten-free cooking and baking. Since it is free of gluten, it can be used in much the same way almond flour or almond meal is used in cookies, muffins, and breads.

    When Stacy our Host for this month's  Bundt Bakers asked us to bake a gluten free cake.  I, was very happy since this cake was on my to do list.  

    In India, we get beautiful sweet, soft and juicy reddish pink carrots in winter.  These are apt for making a cake or sweet dishes.

    Another note of caution when making this cake, please do not try to over turn this cake.  It just slipped off my mind that I, should not overturn this cake and it broke at the bottom.  Flourless cakes should not be overturned.  Slice them in the pan itself and then serve.  

    If you  make it in a bundt pan use a loose bottom pan,  angel pan or any other loose bottom pan.  Most of all do not forget to warp the bottom with a aluminum foil right up to rim.  Since this batter is wet and slightly watery it will leak from the bottom and will cause fire in oven, so be very very cautious.  Place this pan in a tray and then bake.

    Ingredients
    140 Grams Grated Carrot- this weight is after grating
    125  Grams Cashew Meal -  see recipe below
    110 Grams  Brown Sugar
    3 Small Eggs
    1/4 Cup Chopped Walnuts 
    1/4 Cup Oil
    1/2 Teaspoon Level Baking powder
    1/4 Teaspoon Level Baking soda
    1/2 Teaspoon Cinnamon powder
    1/2 Teaspoon Ginger powder
    1/2 Teaspoon Vanilla Essence
    A Pinch of Nutmeg powder.

    Method
    In the cashew meal  mix in  cinnamon. nutmeg,ginger, baking  soda and baking powder.   Keep aside.
    In a bowl, break the eggs, add the oil and essence and whisk till nice and frothy. 
    Now add the sugar and continue whisking for 2 minutes.  Use a spatula and fold  in the cashew mix and carrot till well incorporated.   Sorry do no have a pic of the batter since my camera battery died down.

    Pour this in an well greased bundt pan and bake in a preheated oven  at 180 degrees,  set the timer for 30 minutes. Leave this in the hot oven for 5 minutes. Take it our and let it cool overnight and then serve it the next day.  

    Hubby and I enjoyed  this cake, a goodness in every bite.. awesome..
     Please to do frost this cake with cream cheese or anything else, it ruin the actual taste to this cake.
     Some cakes need to enjoyed just how they are.
    How to Make Cashew Meal / Flour
    Take the cashew nuts into a food processor or high-powered blender and pulse it at intervals until they're coarse and crumbly, but just make sure to stop before it turns to cashew butter.
    The slightly coarse one is is cashew meal and for cashew flour this is fine just sieve it in a fine atta / flour sieve .. that's it ... cashew meal /cashew flour is ready to use.
