Keto Strawberry Microwave Muffin#Improv

This Keto Strawberry Muffin fits perfectly into that sweet spot for a sweet craving. It makes a perfect muffin for quick breakfast or dessert.
This muffin is moist, top it with whipped cream and you have a delicious dessert.
It’s no dissimilar to a mug cake (it is, in fact, a mug cake) and you can make this in your oven or microwave.
Serves 1
Ingredients

30 grams Almond Flour
½ Teaspoon Baking Powder
1 Egg
15 Grams Butter - melted
2 Teaspoons Keto Sweetener
½ Teaspoon Vanilla Extract
¼ Teaspoon Cinnamon powder
20 Grams Strawberries -1 Big chopped

Method
In a bowl, add in the melted butter (or microwave for 15 seconds to melt it), add the Keto sweetener, vanilla extract, and the egg and give it all a good mix till well combined.

Now add your dry ingredients to the bowl - the almond flour, baking powder and cinnamon powder and mix well.

Add in the chopped strawberries and gently fold through the mixture.  
Grease an microwave proof ramekin with butter and pour in the batter. Top with a couple of strawberries.  Microwave on high for 90 seconds. If a toothpick poked through the center comes out clean, your muffin is done.
Serve warm or chilled, depending on your preference.

Lemon Blueberry Muffin #BundtBakers

This Lemon Blueberry Muffin is loaded with plump, sweet blueberries and tart lemon juice, if you love the tartness of lemon then this is for you. This makes two muffins or one large jumbo muffin. If you are making one large jumbo muffin then the baking time will differ accordingly.

Makes 2 Muffins
Ingredients

½ Cup All Purpose Flour
½ Teaspoon Baking Powder
1/8 Teaspoon Salt
2 Tablespoons Heaped Butter - melted
3 Tablespoons Heaped Caster Sugar
1 Large Egg Yolk Only
½ Teaspoon Lemon Eest
¼ Teaspoon Vanilla Extract
3 Tablespoons Milk
2 Tablespoons Lemon Juice
½ Cup Blueberries - I used frozen
Method
Preheat oven 190°C. Grease 2 (250ml) molds. Set aside.
In a small bowl, mix together the flour, baking powder and salt.
In a separate medium-sized bowl, stir together the melted butter and sugar. Add in the egg yolk and whisk until completely blended. Whisk in the lemon zest, vanilla, milk and lemon juice.
Stir the dry ingredients into the wet ingredients and mix until combined.
Gently fold in the blueberries.
Pour batter into prepared molds. Bake until top is golden and center is completely cooked when a tooth pick is inserted in the center comes out clean. Place them on a rack to cool. 
Serve warm with a cup of tea or coffee.

Eggless Blueberry Preserve Bundt Muffins

Easy, 15 minutes jam/preserve muffins which are 100% eggless and perfect breakfast recipe. My hubby as usual tells me in morning that today afternoon my music group is meeting for tea, bake me a cake. These muffins were baked just in time for his departure, there were so hot that I could not unmold them. Sent this to my husband's friends get together. Made remaining in a muffin pan since I do not have that many bundt molds. 

Makes 16
Ingredients

1½ Cups All Purpose Flour
1 Teaspoon Baking Soda
1½ Teaspoon Baking powder
150 Grams Salted Butter
¼ Cup Water
⅓ Cup Milk
¾ Cup Caster Sugar
½ - ¾ Cup Blueberry Preserve Or Jam - I used Preserve

Method 
Preheat oven at 180˚C. 
In a bowl and sieve flour, baking powder, baking soda.
In a another bowl, cream butter and sugar till fluffy and creamy. Now, fold in add flour mixture in batches alternating with water and milk and blueberry preserve. Mix it well.
Scoop the mixture into bundt molds. Fill each 2/3 the way up.
Bake it at 180˚C for 12 to 15 minutes. 
Check with toothpick, if it comes out clean, muffins are ready.
Serve warm.
These were super delicious!!

Milk Chocolate Bundt Muffins#BundtBakers

My Mom would be delighted to have these chocolate muffins. They are dense but delicious.
Makes 5 Small Muffins
Ingredients

60 Grams Egg - See Notes 
30 Grams Caster Sugar 
50 Grams Butter - melted 
100 Ml Milk 
1 Teaspoon Vanilla essence 
140 Grams All Purpose Flour
10 Grams Corn Flour
1 Teaspoon Baking powder 
¼ Teaspoon Sea Salt 
50 Grams Milk Chocolate - chopped 
Method
In a bowl sieve all the dry ingredients- flour, corn flour, baking powder and salt
In another bowl, add all the wet ingredients, sugar, egg, melted butter, milk, vanilla essence, with a hand whisk, whisk all lightly till well incorporated. Add all the dry ingredients and mix lightly till no traces of flour is seen. Do not over mix. 
Pour little of the batter into the silicones then place chopped chocolate pieces
again fill the batter on top, place chocolate pieces.
Bake in a preheated oven at 170°C for 20-22 minutes.
Enjoy them with your tea or coffee!!

My Notes
For the egg. I took one small egg and one small egg yolk only it weighed around 63 grams, which is added to the muffin batter. If you have a large egg that will do.

Jambul/Java Plum Giant Bundt Muffins#BundtBakers

I made Jambul/Jamun Giant Bundt Muffins to celebrate my friends birthday. They  turned out crispy on the outside and soft on the inside. I just frosted them with icing sugar and the Jambul puree .  We enjoyed these freshly made.


Bundt pan size 5½"x 2"
Makes 2 Giant Muffins
Ingredients 
65 Grams Salted Butter
80 Grams Caster Sugar
65 Grams Egg - see notes 

½ Teaspoon Vanilla essence
150 Grams All Purpose Flour
½ Teaspoon Level Baking powder
60 Grams Milk
125 Grams Jambul /Jamun - see notes


Method 
Sift together the flour and baking powder, keep aside.
In a large bowl add the sugar,  slighlty melted butter, egg, milk and beat until light and fluffy. Add the essence and mix.
Add sieved  flour combine lightly using a spatula till well incorporated. 
Add the chopped jambuls  
lightly mix it
Pour  the batter into the bundt pans. 
 Bake in a 170℃ oven for 35 minutes
When cooled the de- mould them
For the frosting
Just mix in the jambul puree and icing sugar. Pour it over.
My Notes
Cracked 2 small eggs and lightly beat them , then weighed it 65 Grams.
These were frozen jambuls - squeezed out the syrup and then weighed.

Whole Wheat Pear Muffins


Muffins with pears! This is what my friends said with I told them as they were enjoying it. These are made with ripe pears and whole wheat flour, these muffins are healthy and delicious.  These are prepared for the Blogging Marathon.

Ingredients

2 Eggs
1 Cup Fresh Yogurt
1 Cup plus 2 Tbsp light brown sugar
1/3 Cup Vegetable oil
2 Cups Whole Wheat Flour
1 1/2 Teaspoon Baking powder
1/2 Tea
spoon Baking soda
1/8 Teaspoon Salt
1 Teaspoon Vanilla essence
2 large Pears -  peeled, cored and diced
1 Teaspoon Cinnamon powder


Method


Preheat the oven to 180 degrees.

Grease the muffin cups with oil or butter.

In a large mixing bowl, whisk together the eggs, yogurt, a cup of the brown sugar, and oil until smooth. Sift together the flour, baking powder, baking soda and salt. Add the dry ingredients into the bowl with the egg mixture. With a wooden spoon or spatula, gently mix together just until combined. Add the vanilla and diced pears and mix again. Spoon the batter into the prepared muffin cups, dividing it evenly among the cups. 

In a small bowl, mix together the remaining 2 Tbsp brown sugar and the cinnamon.  Sprinkle this mixture on top of the batter in each muffin cup. Bake the muffins about 15 to 20 minutes, or until a toothpick comes out clean. I wish you could smell these muffins in my kitchen right now. 


Cool the muffins in the pan for 5 minutes, then unmould and cool them the rest of the way on a rack. Serve warm or at room temperature.  I got 18 muffins.



These muffins are delicious! The crunchy topping is a perfect and soft. Enjoy these muffins for breakfast with a glass of cold milk or a steaming cup of coffee or anytime you feel like a snack.

Notes:
Use ones that are just starting to go soft and juicy. These will hold their shape during cooking and will dissolve in your mouth.

Kiwi Choco Muffins - Eggless


These Kiwi Choco Muffins are perfect for tiffin, brunch or a picnic. Soft and moist, these muffins have all the delicious flavor of the kiwi and choco chips. They  smell delicious while baking, that  it's a long wait for it to be out of the oven. I love muffins! Do you then try these muffins and you too will love them.



Ingredients
200 Grams Condense Milk
40 Grams Butter
1 Cup Kiwi Green or Gold
1/4 Cup Choco Chips
140 Grams All Purpose Flour
1.1/2 Teaspoon Baking powder
1/2 Teaspoon Baking soda
1 Teaspoon Water - if necessary

Method

Chop the kiwi in big pieces and keep aside. I used both kiwi green as well as gold.

Sieve the flour, baking powder and baking soda and keep aside.

In a bowl beat the condense milk and butter till light and color turns cream.  Then add the kiwi, all purpose flour and mix well, then add the choco chips ( reserve few for the topping).  Check the consistency of the batter and the  add the water and mix well.

Fill the muffin moulds and decorate it with choco chips , lightly press the choco chips with a spoon and then bake in  a preheated oven at 180 degrees for 20 - 25 minutes.

Then just take a muffin, a mug of coffee and simply relish the muffin enjoy!  because I did just that.

Eggless Cantaloupe Muffins / Musk Melon

Cantaloupe Muffins is one of my experiment that turned out awesome. This is a Egg free, Vegan muffins made using whole wheat flour and fresh Cantaloupe Puree. Cantaloupes or Musk Melon are low in Saturated Fat and Sodium, and very low in Cholesterol. It is also a good source of Dietary Fiber, Niacin, Vitamin B6 and Folate. It is also a very good source of Vitamin A, Vitamin C and Potassium. Its always good to consume the fruit as such fresh way but once in a while can also make such delicious bakes with such healthy fruits or veggies.Last week I went with my friends to the APMC Market at Vashi and we picked many types of fruits at wholesale rates and shared it among us. Cantaloupe was one of them each of us got 3 each. Now what do I do with so many melons so I Google and found this recipe, the original recipe is here. These muffins turned out so good. I made some changes in this recipe. I used Jaggery and cinnamon which is not used in the original recipe.
These Muffins were soft, moist and delicious. Loved the muffins, The next day the muffins were soft, my hubby and friends loved it. This jaggery my friend Sweety brought from Himachal. Do give these muffins a try and you will not regret making them. Now to the recipe.



Ingredients

Whole Wheat Flour                    1 cup
All Purpose Flour                        1/2 cup
Baking Powder                             2 tsp
Baking Soda                                  1 tsp
Ground Ginger                             1/2 tsp
Ground Cinnamon                      1/2 tsp*
Unbleached Sugar/Jaggery      1/2 cup*
Salt                                                   1/2 tsp
Cantaloupe Puree                        2 cups (I used )
Vanilla Extract                              1/2 tsp
Oil                                                     2 tbsp
Walnut                                             1/4 - 1/2 cup 

Preheat Oven to 180 degrees C for 10 mins. Line Muffin pan with paper liners or grease pan with oil or cooking spray and keep ready.
Wash cantaloupe well and cut into two half and remove the seed portion and scoop out the pulp and blend it to a smooth puree and measure 2 cup and keep aside.
In a large mixing bowl add all dry ingredients i.e. flours, baking soda, baking powder, ground ginger, salt and mix well.
In another bowl combine cantaloupe puree, oil, jaggery and vanilla extract. Now incorporate the dry ingredients and mix well. Pour into the muffins pan and bake.
Cool on wire rack and serve.

* This the change that I made from the original recipe.
I have made these muffins twice, This a tried and tested recipe.
