This delightful board has, veggies, chutney's, hummus, sauces, jam, different cheeses, wafers, and assorted breads. 
This board is made from scratch except for the butter and cheese. Invited my friends for this party and they thoroughly enjoyed this unique concept. This is a vegetarian board, you can always add whatever you want if you are not a vegetarian. Loved this concept and its great to see a table with full of goodies.

Homemade Pink Dragon Fruit Jam

A beautiful looking and easy jam made from pink dragon fruit or pitaya fruit. Dragon fruits have either white flesh or pink/deep magenta  colour flesh, with tiny edible black seeds similar to that of kiwi fruit. This jam that gets ready with just 3 ingredients. 

1 Cup = 200 Ml
Ingredients
350 Ml Dragon Fruit Puree
1 Cup Granulated Sugar
1 Teaspoon Lemon Juice
Method 
Cut the dragon fruit into two halves and scoop out the flesh using a spoon. Take scooped flesh in a mixer grinder and blend to a pulp.
In a thick bottomed non-stick pan, combine dragon fruit pulp and sugar. Cook on a medium flame and simmer until it has a thick jam like consistency. Keep on stirring occasionally. This will take about 20-25 minutes.
Once you notice that it has begun to thicken, add lemon juice to it. Stir well and cook for about a minute.
Remove from flame and allow it to cool. Store it in a sterilized jar in refrigerator.

Jamun/Indian Blackberry Chia Jam#SundayFunday

Jamun/Indian Blackberry is summer fruit and love eating it. Wanted to make a jam so made this with chia seeds. A delicious jam. 

Jamun, or Indian blackberry, is highly regarded for its benefits to diabetics, stomach pain, arthritis, certain digestive issues, and diabetes. Improvement in the hemoglobin level of the blood. It contains compounds like jamboline and jambosine that help regulate blood sugar levels.
Ingredients2 Tablespoons Chia seeds
4 Tablespoons Water
1 Cup Water
1 Cup De Seeded Jamun
½ Cup Sugar

Method
Soak chia seeds in 4 tablespoons water and let it sit for about 10 to 15 minutes or until the chia seeds have swollen up.
In a large sauce pan, add the jamun pulp & water. Turn on the flame and let the pulp simmer until it thickens.
Add sugar and mix while it simmers. Use the stick blender and blend. Place it back on the low flame Then add the chia seeds and cook till it thickens. Let this cool.
It will thicken further as it cools. Once it reaches room temperature, pop it in the fridge and serve chilled on slices of bread. Enjoy!!

Homemade Strawberry Crush#SundayFunday

The Strawberry Crush is fresh strawberry cooked in with sugar, to use when strawberries are not in season throughout the year. This can be used in both sweet and savory recipes like milkshakes, ice slush and teas, kulfi, drinks, cocktails, waffles and pancakes. This homemade crush is cheap and easy to make, contains no preservatives or color. It stays good for a year if stored in the freezer, as it does not crystallize / form ice.
Ingredients
400 Grams Strawberries - chopped
1½ Cup Sugar
1 Tablespoon Lemon juice
½ Cup Water


Method
Heat water in a deep pan. add the water and sugar, keep stirring till the sugar dissolves completely. Remove scum floating on top with a spoon. Now add the strawberries and cook till they soften and become a thick paste . Take off flame add the lemon juice. mix well and keep it cool completely.
Pour into sun dried, clean, food grade storage bottles and keep it in the freezer. When you want to use it just spoon out the quantity required and use.

Eggless Blueberry Preserve Bundt Muffins

Easy, 15 minutes jam/preserve muffins which are 100% eggless and perfect breakfast recipe. My hubby as usual tells me in morning that today afternoon my music group is meeting for tea, bake me a cake. These muffins were baked just in time for his departure, there were so hot that I could not unmold them. Sent this to my husband's friends get together. Made remaining in a muffin pan since I do not have that many bundt molds. 

Makes 16
Ingredients

1½ Cups All Purpose Flour
1 Teaspoon Baking Soda
1½ Teaspoon Baking powder
150 Grams Salted Butter
¼ Cup Water
⅓ Cup Milk
¾ Cup Caster Sugar
½ - ¾ Cup Blueberry Preserve Or Jam - I used Preserve

Method 
Preheat oven at 180˚C. 
In a bowl and sieve flour, baking powder, baking soda.
In a another bowl, cream butter and sugar till fluffy and creamy. Now, fold in add flour mixture in batches alternating with water and milk and blueberry preserve. Mix it well.
Scoop the mixture into bundt molds. Fill each 2/3 the way up.
Bake it at 180˚C for 12 to 15 minutes. 
Check with toothpick, if it comes out clean, muffins are ready.
Serve warm.
These were super delicious!!

Eggless Jam Shortcake Swirls#SundayFunday

These shortcakes are so delicious and buttery. To make these I used aluminum muffin mold, would suggest that you use a silicon muffin/cupcake molds to make these. While un molding these tend to break. Felt sorry for not using my silicon cupcake molds to make these delicious shortcakes, no doubt the broken ones my hubby enjoyed. The good ones I took for our Hi Tea Party with friends.


Makes 13 -14 Shortcake Swirls
Ingredients

200 Grams Butter - I used salted butter
75 Grams Icing Sugar
220 Grams All Purpose Flour
2 Tablespoons Jam or as required
½ Teaspoon Vanilla Essence
Icing sugar as required for dusting - optional

Method

Grease silicon cupcake molds and place them in the muffin tray (do not use liners).  
Beat butter and icing sugar well until creamy, stir in the flour, mix gently. Refrigerate this batter for at least 20 minutes. In the meantime preheat the oven to 180°C.   
Pour the mixture into a large piping bag with a large piping nozzle. Pipe swirls of mixture into the molds. Bake for 18 to 22 minutes ( depending on how many swirls you make into the molds).    
Once the they are golden, take them out of the oven and keep them on a wire rack to cool.
Un mold each shortcake gently, sprinkle with icing sugar, put a small spoon drop of jam into center of each.   
Serve with tea or coffee. These got over in one go for our party.

Baked Apple Roses#Improv

Apple Roses baked in homemade puff pastry. Apple Roses are made by rolling a row of half apple slices with a strip of pastry into a spiral. The end result is that your get a shape of natural rose flower petals.  

Ingredients
2 Medium Apple - sliced
2 -3 Tablespoons Sugar
2 -3 Tablespoons Water
1 Tablespoons Lemon juice
1 -2 Tablespoon Strawberry jam
Puff Pastry Sheet - as required - this is my homemade sheet

Method
Core apples. 
Cut in to halves and cut thin slices. Add this to a bowl add the lemon juice, water and sugar mix it well then microwave for 2- 3 minutes or till they just soften ( do not overcook or else you will not be able to roll them). 
Remove all the slices on to paper towel,
let them dry spread on a plate.
Dust the board with flour generously. Roll the pastry sheet and cut broad strips.
Add 1 to 2 teaspoons of water in strawberry jam mix it well to make it a spreading consistency.
Spread jam on a sheet strip, 
now place slices on it. 
Fold on side of the sheet on to the apple to hold them in place.
Roll it into a rose shape.
Here the rose is ready, like wise make the rest. 
Place them into lightly greased cupcake pan.
Bake at 180°C for 35-40 minutes.
Sprinkle icing sugar after baking( this is optional which I did not use).
Beautiful apple roses are ready to serve. These are gorgeous looking and very delicious apple roses. A must try recipe. Enjoy!

Aam ka Murabba / Raw Mango Chunda - India

Murabba as savory jam or pickle prepared with raw mangoes, sugar and spices. It can be even compared to marmalade or jelly. Use of grated mango or sliced mango and the type of spices used may vary region to region. Raw mango is known as Mangai in Tamil and as Aam in Hindi and Aamba in Marathi.
For the marathon this week the theme is Condiment from Countries, wherein we have to choose condiments, sauces, spreads or seasonings - its week 3 - day 17.
Condiment - Pickle
Country - India  
Ingredients
4 Cups  Grated Raw Mango - packed
4 Cups Sugar  - I used unrefined sugar
1 Teaspoon Red chilli powder
1/2 Teaspoon Cardamom powder
1/4 Teaspoon Salt  

Method
Wash, peel and grate raw mangoes. 
Heat a thick bottom pan or non-stick pan; add grated mango, sugar and keep cooking in moderate heat by stirring in between.
When the mixture is reduced to half by volume, add the spices and keep cooking till the mixture thickens to a jam like consistency and all the moisture from the sugar and mangoes evaporates.After cooling it fully, store in sterilized glass bottle. Store it in the fridge since I have not used any preservative.
