Keto Peach Iced Tea#SundayFunday

Peach iced tea is a perfect and ultimate summer time drink specialty, and it's so easy to make! I am using fresh peach to make this , but can use canned peach nectar, a few bags of black tea, an easy method to make a small batch of iced tea. It's a perfect early morning or late afternoon treat. Peaches are rich in vitamins A and C, fiber, and carry antibacterial and anti-inflammatory properties.
Serves 2
Ingredients
For The Peach Nectar

2 Ripe Peaches
1 Cup Water
For The Tea
2 Cups Boiling Water
4 Black Tea Bags
4 Teaspoons Sugar -optional- I did not use
Method
Remove pits from peaches and chop.
Place in a saucepan with water and simmer ten minutes or until soft.
Mash pulp and strain contents of saucepan, discarding solids.
To Make The Tea
Into each glass, add two tea bags and pour a cup of the boiling water into each . Steep uncovered for 3-4 minutes.
Remove tea bags, stir in peach nectar and sugar (if using) into each, then fill the rest of the glass with the chilled water. Cover on the lid and refrigerate at least 4 hours before enjoying or if you want to have it immediately then Serve the tea over ice.
Taste the freshness of peach in every glass of Peach Ice Tea. Packed with the goodness of Vitamin C to boost your mood & energize you throughout the day. 
My Notes
Four regular-sized (single-serving) bags of black tea; two per cup. Since iced tea is, well, iced, it can be watered down, so we use two tea bags per serving instead of one.
I don't drink sweetened drinks so I did not add any sugar to my iced tea.

Flan Entremets & Peach Jelly Dessert - Vegetarian#SundayFunday

A fresh, homemade creamy dessert that is easy to prepare! This flan entremets mix gives a fantastic texture for a gourmet dessert and a perfect party dessert. 
Agar-agar, vanilla custard mix and peach juice. Refreshing, summery and easy-to-make. This delicious recipe makes the perfect party dish. I have added a pinch of orange color to the peach juice. Have two layers of jelly and for each layer of jelly I used the same ingredients
Serves 10 - 12
Ingredients
For The Layers Of Jelly

2 Cups Homemade Peach Juice 
10 Grams Veg Gelatin/Agar Agar powder
For The Flan Entremets Layer
500 Ml Milk - I used Full Fat Milk
1 Packet Flan Entremets Mix
Method
For First Jelly Layer
Take ½ cup peach juice and mix in veg gelatin well.
In a large pan take 1½ cup peach juice , bring this to boil when it boils add the gelatin mix and give it a good stir and let is cook on low flame till the gelatin melts well.
Pour this in a lightly greased pyrex dish and let is set at room temperature.
For The Flan Entremets Layer
In ½ cup milk mix in the flan entremets mix to make a smooth mix. In a large pan add the remaining milk and slow add the flan entremets mix stirring as you are pouring it so that it does not clump. When well mixed, place the pan on medium low flame and let it cook till it thickens.
Pour this mix over the jelly layer evenly and cover this with a lid and refrigerate till it sets. 
Now make the next layer of peach jelly, just when this flan entremets sets. Pour this jelly layer over it. Let is cool and set then refrigerate. Since I was in a hurry I did not wait for flan layer to set completely, hence you can see the flan part on top.
Nevertheless it tasted just superb and yummy. My guest couldn't stop eating this dessert.

Mint & Peach Raita#SundayFunday

This is delicious raita, which can be enjoyed as a fasting food too.

Serves 2 - 3
Ingredients

250Ml Thick Yogurt
1 Tablespoon Milk
½ Teaspoon Roasted Cumin - coarsely crushed
2 Teaspoon Sugar
½ Teaspoon Red Chili powder
¼ Teaspoon Sendhav Namak
¼ Teaspoon Salt
2 Tablespoons Mint - torn
2 Fresh Peaches - cut into cubes

Method
In a bowl whisk yogurt and milk with all the dry spices, mix well, add chopped mint, peaches, serve garnished with more mint leaves and peach slices, serve chilled.

Homemade Fresh Peach Nectar#SundayFunday

Peach nectar is just a juice made with the pulp of the peach and it usually has a bit of sugar and lemon juice thrown in for flavor. You can drink peach nectar on its own or add it to other drinks and dishes for extra flavor. It's a deliciously satisfying drink made with fresh peaches!
Updated recipe to this I added a pinch of orange color.
Ingredients 
7  Fresh Peaches
1 Lemon Juice
 1 Cup Granulated Sugar 
6 Cups Water

Method
Fill a large pot with water and bring to a boil. Clean your peaches and cut an "X" in the bottom of each peach. (Makes for easier peeling later). Place the peaches in the water and cook for 2 minutes. Remove the peaches and put them in a large bowl filled with ice water to stop the cooking process.
When the peaches are cool enough to handle, peel off the skins, cut in half and remove the pit.
Add two peaches at a time into the blender, with a cup of water. Let the blender run on high until you have peach juice. Pour into a fine mesh strainer and with a spatula push out as much liquid as possible. Put the strained juice into a pot for cooking the juice in the next step. Repeat the same process till the remaining peaches are blended.
Add all the blended juice into a large pot, add the lemon juice and sugar if necessary and bring to a boil. Once the juice boils, remove from the heat to let cool.
Once cool, pour into airtight containers (I used mason jars) and store in the refrigerator until ready to use. It can also be frozen or canned for later use.

Single Serving Baked Peach Crisp#BakingBloggers

This single serving Peach Crisp is made with a fresh peach and topped with a buttery crumb topping. This recipe can be used with any stone fruit like nectarines, plums, cherries, apricots or mangoes. It’s an easy to make dessert which can be ready in minutes.
Ingredients
For The Filling

1 Large Peach -  diced
1 Tablespoon Packed Brown Sugar
1 Teaspoon All Purpose Flour
1/8 Teaspoon Ginger powder

For The Topping  
3 Tablespoons All Purpose Flour
3 Tablespoon Oats
1 Tablespoon  Packed Brown Sugar
2 Tablespoons Butter  -  melted 

Method 
Preheat  the oven to 180°C degrees
For The Filling 
Mix together the diced peaches, brown sugar, flour, and ginger in a small bowl. 
Transfer peaches to a ramekin. For The Topping  
In another small bowl, mix together the flour, oats, brown sugar and melted butter.  Spread the topping over the peaches evenly. 
Bake in the oven for 30-35 minutes or until topping is golden.
Enjoy this delightful peach crisp with a scoop of ice cream. I am sure you’ll want to make over and over again.

Baked Creamy Rice Pudding With Peaches For Two#BakingBloggers

When my hubby is not well, then he eats, healthy and oil or butter free food and he is not a lover of fruits.  Made this healthy, gluten and butter free yet delicious fresh peaches filled pudding with toasted almonds on top for him.  
For this recipe you can use leftover rice  and canned peaches  to make it, but, I made it with freshly cooked rice and peaches.
He relished this for his lunch and dinner with a glass of milk.  This is real comfort food, satisfying and filling.

This month theme of Baking Bloggers is Baking with Peaches and Nectarines.


Serves 2

Ingredients
1 Large Egg
3/4 Cup Whole Milk
3 Tablespoons Packed Brown sugar 
¼ Teaspoon Salt 
¼ Teaspoon Cinnamon  powder
½ Teaspoon Vanilla essence
1 Teaspoon Lemon zest
1 Big  Peaches - diced 

¼  Cup Toasted Almonds -sliced
1/3 Cup Rice - boiled (made 1 Cup packed cooked rice)

Method

Preheat oven to 170 degrees C. 
Lightly butter a small Pyrex dish. In a large bowl, whisk together the egg, milk, sugar, salt, cinnamon, vanilla and lemon zest. Stir in the peaches, toasted almonds and cooked rice. 
Pour into prepared baking dish. Top it with some more sliced toasted almonds. 
Bake over water bath ( bain marie (ban mah-ree, is the fancy term for a hot water bath) and  bake for 55 minutes,
 until lightly browned and set. 
Cool slightly and Enjoy.

Peach And Orange Smoothie # FoodieExtravaganza

This tropical smoothie will make you feel like you're on an island sitting on beach of white sand and surrounded by tall palm trees. This is a perfect healthy breakfast to start the day, it also makes a refreshing drink for a hot summer afternoon or even a dessert. I used fresh preaches to make the smoothie you can use frozen peaches too. 
Servings: 2 Glasses
Ingredients
4 Peaches -  peeled and sliced
1.1/2 Cup Fresh Thick Yogurt
2 Cups  Orange Juice
2 - 3 Tablespoons Sugar or Honey - optional
1 Cup Ice Cubes

Method

Combine all  the ingredients in a blender jar and blend until  smooth. Strain it in a fine sieve ( If you want it grainy than do not strain ).  Pour into a tall glasses and enjoy chilled.

My Notes : I have used honey just a tablespoon.
