Non Alchoholic Spiced Sangria#SundayFunday

When we visited Spain, enjoyed having different flavors of sangria, they were all alcoholic. Sangria is a typical Spanish beverage and it’s usually made with wine red or white, chopped fruit and some sweetener. Once you taste this drink your hooked to having more than glass at a time. Here I am making this awesome drink spiced nonalcoholic with  apple juice.    Let me tell you this is also divine and irresistible. 


Had guest for breakfast who do not have tea or coffee, hence decided to make this drink. Made it the previous evening and kept it in the refrigerator to chill. But as this was brewing , the house was full with aroma of spices and sweetness ... that was drawing me to kitchen to taste it. Oh My God! it tasted divine. You must try this. My guest were flabbergasted after tasting this drink.

Ingredients


A Liter Apple Juice
6 Whole Cloves.
2 Cinnamon sticks
1/2 cup Orange Juice or 2 Tablespoon Heaped Orange Powder ( I added orange powder)
2 Tablespoons Apple - finely diced per glass
Juice from 2 Limes or as per taste
2 Tablespoon Fresh ginger - peeled and thinly sliced

Method



In a large pot , add apple juice, orange juice or powder, cloves , cinnamon stick and ginger, give it a quick stir, bring it to a boil, then cover let it simmer for 5 minutes on low flame. Cool, strain the juice, add lemon juice, taste and adjust sweetness or tartness by adding orange / lime juice as per your taste. Cover and chill in refrigerator for few hours before serving. 



 Serve chilled with diced apples and enjoy.....

Air Fryer Roasted Red Pumpkin Bharta/Kaddu Ka Bharta

This Red Pumpkin Bharta/Kaddu Ka Bharta With Orange is a very quick and easy to make recipe and will be loved by all. I have added orange juice in the recipe, this renders such a beautiful taste to the bharta.

Seves 2 As a Side Dish
Ingredients
250 Grams Red Pumpkin
1 Medium Onion - finely chopped
2 Big Cloves Garlic - finely chopped
¼ " Piece Ginger - finely chopped
6 Tablespoon Orange Juice 
¼ Teaspoon Turmeric powder
½ Teaspoon Coriander powder 
1 Teaspoon Red Chilly powder
2 Tablespoons Oil
½ Teaspoon Cumin Seeds
1 Small Tomato - finely chopped
Salt to taste 
Method
Remove the skin of the pumpkin and then cut it into bits
or keep it whole, with the skin. I preferred chopping them into pieces.
Wrap this into two sheets of aluminum foil and place it in the basket of the air fryer at 180°C for 20 - 25 minutes
till they are 3/4 cooked only.
In a kadai/wok heat oil add the cumin seeds when they crackle add chopped ginger and garlic saute till it starts to change color, now add the chopped onions and saute them till they are soft only
Add the all the dry spices - turmeric, coriander and red chilly powder with 2 tablespoons water and saute them for a minute 
add the pumpkin and saute mashing it for a minute. Cover with a lid and cook till it softens for 2 minutes,on medium low flame. 
Open add the half the quantity of orange juice and mix well mashing the pumpkin as you mix. Again cover with a lid and let it cook for another 3 minutes. 
After 3 minutes open add salt and the remaining orange juice and salt to taste, now mash the pumpkin very well. 
Here it's mashed
add tomato mix it lightly . Cover and let it simmer for another 3 minutes. 
Open and mix well. Our Air Fryer Roasted Red Pumpkin Bharta/Kaddu Ka Bharta is ready. 
Garnish with coriander leaves and enjoy with rotis or parathas.

Eggless Orange Bundt With Orange Glaze#BundtBakers

This is soft and moist delicious cake.  Sent this for my Delhi family, they were very happy to receive an homemade Eggless delicious cake.
Ingredients 
1 Cup All Purpose Flour
½ Cup Caster Sugar
¼ Cup Thickened Orange juice - see method
¼ Cup Oil
½ Teaspoon Baking powder
½ Teaspoon Baking Soda
¼ Cup Yogurt
1 Teaspoon Orange zest
¼ Teaspoon Orange Essence
For The Glaze
½ Cup Orange juice
½ Cup Granulated Sugar
1 Tablespoon Orange zest - cut into thin strips

Method 

Take 1/2 cup fresh orange juice and place it on medium flame till it reduces to half by boiling or till it is only ¼ cup. Cool this completely, then only use it. 
Grease and dust a bundt pan with flour and keep aside.
 In a big bowl add the  yogurt and add the baking soda in it and stir well and Keep aside  for 5 minutes

In the meantime, sieve the all purpose flour and baking powder together. Then add the  orange zest mix this well into the flour and keep this aside

Now to the yogurt baking soda bowl, add the caster sugar and oil, orange essence and mix well.
Now dd the dry ingredients  with the reduced orange juice  make a smooth batter. 

Pour the batter in a greased bundt pan  and bake in a  preheat oven at 180 C for  for 30-35 minutes or till a toothpick inserted comes out clean.
Remove the cake from oven and let it stand for about 5 minutes. 
Then un-mould and cool it.
As the cake is cooling let's make the  Orange Glaze
In a sauce pan add the orange juice, sugar and  orange zest  strips and bring to boil. Cook till the syrup thickens and reduces to almost half.  It should be a  thick syrup with glaze like consistency.
Use a thin skewer or toothpick to poke holes in the top of the cake, then pour the warm s syrup all over the cake so that it soaks through.
Spread the thick glaze over the top of the cake. Add the orange strips also on top and leave to cool. 
Enjoy with a hot cuppa of tea ️ or coffee

Choco Orange Brownies#BakingBloggers

Brownies are the quickest to make. Not too much of washing to be done. Just one bowl and that's it. Our friends whenever their visit is pre planned they will ask me to bake brownies for them. They love brownies, but, do you know I, am not a brownie fan. I love cakes that too without any icing, like to have them with a cuppa of tea or coffee.

Ingredients
3/4 Cup Butter
150 Grams Dark Chocolate chips - chopped
3 Eggs
1 ½ Cup Caster Sugar - I used Brown Sugar
¼ Teaspoon Vanilla Essence
1 Teaspoon Orange zest
1 Cup All Purpose Flour
1 Teaspoon Baking powder 1 tsp
100 ML Orange juice 


Method
Mix all together in a bowl beat for 3 minutes, pour in a greased 8 x 8 inches square pan, and bake on 180 degrees for 25 minutes. 
Cool, cut it and enjoy.

Peach And Orange Smoothie # FoodieExtravaganza

This tropical smoothie will make you feel like you're on an island sitting on beach of white sand and surrounded by tall palm trees. This is a perfect healthy breakfast to start the day, it also makes a refreshing drink for a hot summer afternoon or even a dessert. I used fresh preaches to make the smoothie you can use frozen peaches too. 
Servings: 2 Glasses
Ingredients
4 Peaches -  peeled and sliced
1.1/2 Cup Fresh Thick Yogurt
2 Cups  Orange Juice
2 - 3 Tablespoons Sugar or Honey - optional
1 Cup Ice Cubes

Method

Combine all  the ingredients in a blender jar and blend until  smooth. Strain it in a fine sieve ( If you want it grainy than do not strain ).  Pour into a tall glasses and enjoy chilled.

My Notes : I have used honey just a tablespoon.
