SPICED BESANI PARATHA #BREADBAKERS


Our Host Pavani of Cook's Hideout decided to start the new year with a "
Healthy" Bread -- with or without yeast   for our group Bread Bakers. 

This is healthy paratha that I,  made has a combination of Whole Wheat Flour and Besan - which is called Chick Pea Flour or Gram Flour in English.

These parathas are a great choice for breakfast or lunch. Gram flour is gluten free and hence whole wheat flour is added to make the dough for paratha. If you have gluten allergy then instead of wheat flour you can add mashed boiled potato to form the dough.


Makes  8 - depending on the size and thickness.
Ingredients
2 Cups Besan / Chick Pea Flour
1  Cup Wheat Flour
1/2 Teaspoon Salt or to taste
1/2 Teaspoon Red Chilly Powder
2 Tablespoons Heaped Ghee - melted
1 Teaspoon Coriander Seeds - coarsely crushed
2 Teaspoons Anardhana / Pomegrante powder
2 Green Chillies - finely chopped
2 Tablespoons Coriander leaves - finely chopped
1 Medium Onion - finely chopped

Water as required  for the dough
Desi Ghee as required

Method



Seive the wheat flour and besan together. In a bowl add in  flour and 
ghee mix it till resembles bread crumbs, then add rest of the ingredients and mix well,   add in water little by little and knead to form into a soft and smooth dough. 


Let the dough rest for at least an hour covered with a damp cloth. Divide the dough into 6 to 8 equal balls, roll to a quarter plate size using dry flour for rolling. Make the parathas a little thin.


Heat a griddle pan or tawa, place the paratha and cook one side for a few seconds, then flip and  cook till brown spots appear, flip again and cook the other side too, spread a teaspoon of desi ghee on top and on the sides, cook till brown spots appear.  Like wise prepare rest of the parathas. 


Serve hot with any gravy dish, or have it hot for breakfast.. I made this for our breakfast, its crisp and delicious, spread a little desi ghee on top and enjoy... does not require any chutney or pickle.

Stuffed Aloo Parathas #BreadBakers


When I, visited Himachal for holidays  recently with my friends, these 
luscious Aloo Parathas were an integral part of our meal whether breakfast  or lunch.   

These parathas are stuffed with a succulent mixture of mashed potatoes, green chillies and onions ..,  stilll remember the taste and how we  relished these parathas , which is an indispensable part of North Indian cuisine.   

When  November's theme - root vegetables was shared by our Host  Karen , the first thing that came to my mind was these luscious Aloo Parathas.  
Ingredients
For The Dough
2 Cups  Whole Wheat Flour
1 Tablespoons  Ghee - melted
1/4 Teaspoon Sea Salt

For The Stuffing

5 Medium Potatoes -  boiled , peeled and mashed
1 Medium Onion -  finely chopped 
2 - 3 Green Chillies - finely chopped 
1/4 Teaspoon Sea Salt or to taste
1/4 Teaspoon Turmeric powder
1/4 Teaspoon Sendav Namak
1/2 Teaspoon Heaped Chat Masala powder
2 Tablespoons C
oriander  leaves - finely chopped 

Other Ingredients

Whole Wheat Flour - for rolling
Desi Ghee as required

Method 
For the dough

Combine the whole wheat flour, ghee and salt in a bowl and mix well.
Add enough water and knead into a lightly soft dough. Keep aside covered for at least half an hour.


For the stuffing




In a bowl add the  potatoes, turmeric powder, 
 green chillies, salt, coriander leaves,  chat masala powder, mix well and form  a ball
Divide the stuffing into equal portions and keep aside.

To make the parathas




Divide the dough into equal portions according to the stuffing.




Roll a portion of the dough into a small circle.



Place a little stuffing in the center of the circle.



Bring together all the sides in the center



Close it  tightly



Remove the excess dough from the top and roll it lightly to make a ball .



Roll again into a  slightly thick circle / paratha,  dusting the work surface with a little flour.  



Keep them a side on a paper towel, cover and keep.  In the meantime place the tava / griddle  to heat on low flame.  Like wise prepare the  remaining parathas.  



When the  tava / griddle is heated, place a paratha  and let it cook on low flame till one side is done.  



Then flip and cook this sided too.  



When both side are done then spread  a little ghee of top and the sides and let it cook  until golden brown spots appear on both the sides.



Serve immediately.  Enjoy it fresh with curds and pickle.

Green Garlic Parathas - Flat Bread # Bread Bakers


For  April bread bakers event the theme is Garlic, since I had already made Garlic Knots , decided to make a flat bread with fresh green garlic.  


As many are aware that Green Garlic is available in India only during winters, so if you do not get it, you can still make these yummy flaky Garlicky Parathas, with garlic cloves.  In this paratha,  have used fresh green garlic as well as dried garlic cloves.

Try these parathas , you'll fall in love with them and make them often like I do.

Ingredients:
2 Cups Wheat flour
2 Tablespoons Rice flour
1/2 Teaspoon Salt or to taste
1/2 Teaspoon Cumin powder
1/2 Teaspoon Amchur powder
1/2 Teaspoon Green chilly paste
2 Springs Green Garlic - finely chopped (optional)
6 Cloves Garlic paste
2 Tablespoons Ghee - melted
1 Tablespoon Oil

Method




Take a bowl and add whole wheat flour, green garlic, salt, oil, water and knead to form soft dough. Keep it aside.



In a another bowl, add ghee, salt, rice flour and mix well. To this add cumin powder, green chilly paste, amchur powder, garlic paste and mix well to smooth paste.



Divide the dough into equal portions. Roll out each portion into thin round roti. Spread the garlic mixture evenly over the roti and fold the paratha




fold it like a fan fold (pleates) and press with your plam. 



Then turn it into a round ball.



Using rolling pin, roll the paratha into a thin round flatbread.



Make all the parathas and stack them by dusting flour on each before placing the other one.




Heat a girddle / tawa




Cook the paratha till you can see brown spots on the bottom side flip it over and cook the other side of the paratha. Then with both your hand hold the parathas and the folds will open.



Serve hot with curd or any sabji .  Since this is loved by my family,  we have this for breakfast,  with a hot cuppa of chai....

Methi Parathas / Fenugreek Parathas




These parathas are made with finely chopped methi / fenugreek leaves and spices. This paratha is a nice way of sneaking vegetables like methi leaves by stuffing it in rotis or parathas since in my house they do not like leafy vegetables. Methi paratha is a quick breakfast recipe.  Methi parathas are healthy alternative to plain parathas and are packed with more flavors and nutrition. Fenugreek leaves or methi leaves are very good for health as they are rich in antioxidants, iron and are also a good source of dietary fiber. 


Ingredients

2 Cups Whole wheat flour
2 Tablespoons Chick pea flour/ Besan
2 Tablespoons Rice flour
1 Cup Methi leaves -  finely 
chopped 
1 Large Potato - Boiled and mashed
1 Green Chilly
1 Teaspoon Ginger

1/2 Teaspoon chilly powder
1/2 Teaspoon turmeric powder
1 Tablespoon Coriander leaves - finely chopped
1 Tablespoon Sugar - powdered
2 Tablespoon Curds
1 Tablespoon oil or ghee

Salt to taste
Ghee/Oil for frying 


Paratha Masala
1/2 Teaspoon Ajwain seeds - lightly roasted
1/2 Teaspoon Cumin seeds - lightly roasted
1 Tablespoon Coriander seeds - lightly roasted 

1 Teaspoon Saunf - lightly roasted


Method

Grind the ajwain, cumin, coriander seeds and saunf to a fine powder  the paratha masala is ready.  Then add the green chilly , ginger, curds, sugar, salt, oil, chilly and turmeric powder, make a fine paste.

Mix the all the flours together well. Then combine the ground paste and rest of the ingredients, mix well. Add water as required and knead to a soft dough. Divide the dough into equal portions and roll out each portion into a circle. Heat a girdle and fry each paratha on medium flame using little ghee/oil, till golden brown spots appear on both the sides. I used pure ghee to fry the parathas as they taste yummy and also gives a lovely aroma. 

Serve these healthy and yummy methi parathas topped with white butter or chilled yogurt or a pickle of your choice. These can be packed as tiffin to kids as they remain soft. The potato in this paratha makes it soft and  the paratha simply melts in your mouth. 




My Notes:

This paratha  masala I make and store, and use it to make parathas of any type,  this masala give a nice aroma and taste to the parathas.

Stuffed Gobhi (Cauliflower) Parathas


Gobhi paratha is a type of paratha that is stuffed with flavored cauliflower. It is a bread with North Indian origin, and is predominantly popular in the Indian Subcontinent. It is made especially by Punjabi's in Delhi. Crisp and tasty parathas that none can refuse. This is a one dish meal, it is very filling. This can be had for breakfast or dinner or packed as tiffin.

Ingredients


For The Dough

1 Cup Wheat flour
1 Tablespoon Oil
Salt to taste
Water for kneading


For the stuffing


1 Cup  Cauliflower - 
grated
1 Medium Onion  - finely chopped
1 Teaspoon Ginger-Garlic paste
1 Tablespoon Oil
Salt to taste
1 Teaspoon Kacha masala
1/4 Teaspoon Garam masala
2 Tablespoon  Coriander leaves- 
finely chopped
2 Tablespoon Mint leaves - 
finely chopped
1/2 Teaspoon  Green Chilly - 
finely chopped

Other Ingredients


Whole wheat flour for rolling
Oil/ ghee for greasing and cooking

For Serving


Fresh curd / chutney / tomato sauce/pickle

Method
For the dough


Combine the wheat flour, oil and salt in a bowl, mix well and knead into a stiff dough using enough water. Cover with a lid and keep aside for 15 minutes.

For the stuffing

Heat the oil in a broad non-stick pan, add the onions,green chilly and cook till onions are light brown add the  ginger-garlic paste and fry well. Then add cauliflower, salt, kacha masala powder and mix well cover and cook on a medium flame for 2 to 3 minutes. Open and dry the water if any add the garam masala powder,the coriander, mint leaves, mix well and cook on a medium flame for another minute.
Divide the stuffing into equal portions and keep aside.


Method
Divide the dough into equal portions as the cauliflower mixture.

Roll a portion of the dough into a circle using a little wheat flour and place a portion of the stuffing on the roti, close the edges and roll it into a paratha lightly so that the stuffing does not spill out.


Cook the paratha, using a little ghee till it turns golden brown in color from both the sides. Repeat the same method and make the remaining parathas.


Serve hot with fresh curds, chutney, sauce or pickle. H and I had with curds and sauce for dinner.

Pudina Parathas / Mint Leaves Parathas


These mint leaves are from my kitchen garden.   I had plenty of  these growing, so on Sunday these went into the  chapatti dough.  Making these are so easy and these parathas are so aromatic.  

This goes to BM week 3, day 3, under the theme Indian Bread Baskets.
Ingredients

1 Cup Pudina/Mint leaves - finely chopped
2 Cups Wheat flour
1/2 Teaspoon Cumin  seed
2 Green chillies -  chopped

1/2 Teaspoon Turmeric powder
1/2 Teaspoon Red Chilly powder
1 Teaspoon Lemon juice
1 Tablespoon Oil
Salt to taste


Method
Grind  cumin and green chillies into a paste without adding water. Add lemon juice to this.
Add the paste, turmeric, chilly powder oil, pudina and salt to wheat flour and knead into a  soft dough.
Make parathas roast them on a hot griddle and apply ghee.
Serve it with ketchup, curd or raita or sabji

Potato Rice Paratha

This my another recipe of leftover rice and potato.  These parathas are so soft and tasty.  You can have this plain also, but we had it with sabzi.  These parathas remained the next day they were still soft and delicious.  This also can be given as tiffin to children.  Do try this recipe.



Ingredients
1 Cup All purpose flour
1/2 Cup Cooked Rice
1/2 Cup Mashed Potato
1 Teaspoon Mint Chutney
1 Green chilly - chopped finely
1 Teaspoon Salt
1 Teaspoon Coriander Leaves - chopped finely
1 Tablespoon Malai/oil ( I used malai)
Kalonji seeds /Onion seeds - as required
Ghee  as required


Method 
Grind the rice in mixer without using any water, and grind it coarsely.
In a bowl mix the Mint Chutney and mashed potato and mix well. Add the chilly, coriander leaves, salt, malai, all purpose flour, ground rice, knead into a soft dough not add any water. Leave the dough to rest for 10 minutes.  
Divide the dough into equal size ball and roll it into a paratha, sprinkle kalonji seeds and with the rolling pin roll it again so that the seeds get well pressed.
Heat a tava and fry with little ghee till pinks dots appear on top.  Serve hot with mint chutney, sauce or any sabzi.  We had this with sabzi.  These parathas are soft it is even good to give to the kids for the school tiffin.
