Leftover Rice and Poha Pilaf

Sometimes there are left over's little of this and that, you wonder now what can you do with it. Since it is so little that is not sufficient of satisfy your hunger. That when your minds starts thinking out of the box. That how this pilaf created. This pilaf is made from left over steamed rice of the previous day and some poha of today's breakfast, add some veggies and a meal was ready. This was a tasty pilaf. Had this for lunch and enjoyed it. 
Ingredients
1/2 Cup Steamed rice
1/2 Cup Poha
1/4 Cup Boiled Corn kernels
1/2 Capsicum - chopped
1/2 Tomato - chopped
1 Small Onion - chopped
1 Green Chilly - chopped
1/2 Teaspoon Pepper powder
1/4 teaspoon Salt 
A pinch of Turmeric powder
1 Tablespoon Oil
1 Cube Grated Cheese

Method 
Heat the oil in a pan, add the onions and fry till translucent, add the tomato, green chilly, capsicum and saute till capsicum is soft. 
Add the corn and saute for a minute, add the poha and rice,and a pinch of turmeric, fry for 3 - 4 minutes.   
Grate cheese over it and serve hot. Enjoy !!!!

Chapatti Noodles - Chinese style - A quick breakfast snack





This is healthy recipe for kids tiffin box, with chapatti and lots of vegetables. It gives feel of noodles which is favourite of kids. The kids will not know that they are made of left over chapattis. This recipe I, saw on cookery TV show and was quite trilled to see that this humble and bland chapatti could transformed in such an awesome dish. This is quick and easy. You can add whichever vegetable you want. Since kids love noodles this an apt and healthy recipe.




Ingredients


4 - 5 chapattis
1 Tablespoon  Oil
1 Teaspoon Ginger - finely chopped
1 Teaspoon Garlic  - finely chopped
¼ Cup Onions  - sliced
¼ Cup Red and Yellow Capsicum -  julienne
1 Tomato  - julienne
1 Teaspoon Soya sauce

1 Teaspoon Red Chilly sauce
1 Tablespoon Spring onions - chopped
½ Teaspoon Vinegar

Salt to taste
1 Tablespoon coriander - finely chopped


Method
Roll the chapattis and finely chop them in the shape on flat noodles.  In hot oil deep fry them till crisp, keep aside.


Heat oil in a aonther pan, add chopped ginger, garlic, sliced onions, red and yellow bell pepper julienne saute for a minute on high flame.  Then add  salt, soya, chilly sauce and let it cook for some time. Add chapatti noodles, spring onions, coriander and add vinegar, toss it.
Serve it in a bowl and garnish it with coriander leaves.

Breakfast - Leftover Rice & Sabzi - Quick Schezwan Rice

This is first recipe of the left over series.    I had some Carrot and Potato Sabzi, boiled Rice left of the previous day.  This how the recipe is invented.  I always keep Schezwan sacue in the fridge.  This is a home made schezwan sauce, will post the recipe soon.  Let me tell you that I, enjoyed this breakfast.  It was quick to make that even after coming from my walk, I made this in just matter of 10 minutes .  It turned out so yum and  wanted to eat more but that was all that was there left of the previous day, had to be satisfied. A hassle  free recipe here it is  for you.



Ingredients
1/4 Cup Leftover Carrot and Potato Sabzi
1   Cup Leftover Boiled Rice
2  Tablespoons Schezwan Sauce.
1   Tablespoons Oil
Salt to taste

Method
In a pan heat the oil add the schezwan sauce and a tablespoon of water and mix well till it boils.  Then add the sabzi and rice and toss it on high flame.  Add salt to taste.  Serve hot.  Enjoy this breakfast.  This can be given  to children in tiffin box.  If  you want to add any other vegetables be free to do so and make it even more healthy.

Cooked Rice Cheese Patties (Leftover Series)

This is a part of the Leftover food series that I have  been blogging about.  There was left over rice and potatoes and that how this recipe came to be born.  These are delicious patties.  Do give it a try.



Ingredients
For the Patties
1 Cup cooked rice
1/4 cup Boiled and  Mashed potatoes
1/2 Teaspoon Chilly flakes
1/2 Teaspoon Coriander chopped
Salt to taste



For Stuffing
Cheese cubes cut into small pieces
Ghee and Butter for frying



Method
Grind the rice in a mixer coarsely. In a bowl add all the ingredients along with the ground rice and mix well.  Divide it into even size balls and keep a side.  Press each ball into a thick small puri, place a cheese piece in the center  and cover it. Roll it using light pressure to form a patties and keep aside.
Heat a frying pan and add ghee/butter and fry the patties till golden in color.



These patties were so soft and tasty that H enjoyed them with tomato ketchup.  The cheese was oozing out from the pattice as you can see from the pics.

Potato Rice Paratha

This my another recipe of leftover rice and potato.  These parathas are so soft and tasty.  You can have this plain also, but we had it with sabzi.  These parathas remained the next day they were still soft and delicious.  This also can be given as tiffin to children.  Do try this recipe.



Ingredients
1 Cup All purpose flour
1/2 Cup Cooked Rice
1/2 Cup Mashed Potato
1 Teaspoon Mint Chutney
1 Green chilly - chopped finely
1 Teaspoon Salt
1 Teaspoon Coriander Leaves - chopped finely
1 Tablespoon Malai/oil ( I used malai)
Kalonji seeds /Onion seeds - as required
Ghee  as required


Method 
Grind the rice in mixer without using any water, and grind it coarsely.
In a bowl mix the Mint Chutney and mashed potato and mix well. Add the chilly, coriander leaves, salt, malai, all purpose flour, ground rice, knead into a soft dough not add any water. Leave the dough to rest for 10 minutes.  
Divide the dough into equal size ball and roll it into a paratha, sprinkle kalonji seeds and with the rolling pin roll it again so that the seeds get well pressed.
Heat a tava and fry with little ghee till pinks dots appear on top.  Serve hot with mint chutney, sauce or any sabzi.  We had this with sabzi.  These parathas are soft it is even good to give to the kids for the school tiffin.
