Homemade Jujube /Jelly Sweets#SundayFunday

Jujube or Jube, is the name of jelly candy or gummy sweets. Jujube's are sweet in taste, colorful, made with different flavors using the corresponding essences, like orange color and orange essence. Jujubes are light and melt in the mouth. These have a shelf life of a month or more.
Ingredients
4 Oz Citrus Juice - see notes
5 Pouches Unflavored Gelatin - see notes
5 Oz Water
500 Grams Granulated Sugar
Color & Essence - of your choice

Method
Most important
- keep the well oiled tray's with a drop of color and essence ready.

Soak Gelatin in the citrus juice.
In a heavy bottomed pan add the water and water and keep this on medium flame stirring till the sugar dissolves. Once the sugar dissolves add the soaked gelatin, increase the flame to high and with a wooden spatula stir it continuously breaking the lumps of the gelatin for exactly 4 minutes ( set a timer). Once 4 minutes are up. Switch off the flame.
Divide this into the oiled trays accordingly, remove the layer of scum from top so that you get clear jelly sweets/candy.
Let this set covered with a lid taking care that it does not tough the candy layer. Keep it over night on your counter top. Do not refrigerate this.
Then next morning. Take a cutting board and spread a generous layer of caster sugar on top. Then loosen the sides of the tray with a well oiled knife. Unmold on to the caster sugar and cut into desired size and shape of your choice. 
I have also set them in silicone molds that are well oiled. These too keep overnight to set.
Take a bowl filled with caster sugar as required for coating the jujube's.
Once you cut the desired shape that immediately place them into the bowl of caster sugar and roll them well so that the are well coated with caster sugar. Shake them afterwards in a colander to remove any excess sugar coating.
Store them in a airtight container for a month or more.
Kid's and adults too love these candies, do try them.

My Notes
One pouch of gelatin is 10 grams. So you require 50 grams unflavored gelatin.
For the Citrus Juice - Use one Large orange and one large lemon to extract the juice.
Add the gelatin as soon as the sugar melts, do not bring the sugar syrup to a boil.
Set a timer once you add the gelatin to the sugar syrup and increase the flame to high.
I have used pizza cutter to cut the candy.

Lobster Melt English Muffin Sandwich#FishFriday

These cheesy lobster melts are my favorite with a creamy lobster mixture. They’re wonderful when you want a little something different for brunch or a snack and it take a few minutes to make from a few simple ingredients. Here I have used ready to used lobster bites.

Serves Two
Ingredients
2 Tablespoons Heaped Mayonnaise
1 Tablespoon Celery - finely chopped
2 tablespoons Onion - finely chopped
1 Clove Garlic - minced
½ Teaspoon Tabasco Sauce
4 -5 Lobster Bites - minced
2 - 3 Tablespoons Shredded Cheddar Cheese
Chopped Fresh Parsley, Fresh Thyme & Oregano
1 Teaspoon Oil
2 English Muffins - split - these are homemade

Method
To make the lobster mixture
Sauté a small onion in a teaspoon of oil, add the minced lobster bites ( you can used canned is fine, or use fresh lobster meat if you have access to it), add chopped celery and tabasco sauce.   
When it's well heated switch off the flame. Let it come to room temperature. Mix in the mayonnaise, cheddar cheese, fresh thyme and oregano, 
then spread the mixture on split English muffins and enjoy!!

Chicken & Cheese Open Sandwiches#Improv

Like to have something good and delicious with breakfast or for an evening snack, then these quick and easy sandwiches are easy to make.
Ingredients
1 Tablespoon Butter
1 Tablespoon All Purpose Flour
1 Cup Milk
2 Cubes Processed Cheese - grated
1 Cup Grilled Chicken - I used rotisserie
Salt & Black Pepper to taste taste
1 Spring Onion/Scallion - finely chopped
1 Green Capsicum - chopped
½ Teaspoon Red Chilly Flakes
1 Teaspoon Butter
Bread Slices - as required

Method
Melt butter in a saucepan. Add flour, sauté for a minute then add milk a little at a time, make sure to stir well so that no lumps form. Bring the mixture to the boil, stirring constantly, so that the mixture thickens and becomes glossy. Add grated cheese, mix well , switch off the flame.

In a another pan add the butter when melted just toss the chopped capsicum, spring onion, shredded chicken and chilly flakes for a minute. Switch off the flame. Mix this with cheese sauce.
Apply this mixture to the bread slices and grill it in a sandwich toaster or apply this to a toasted slices of bread and Enjoy!!
I have make these both ways they both taste awesome.
They were so..ooo good.

Potato Cheese Samosa#SundayFunday

Make the perfect Potato Cheese Samosas for snack time or kid's lunch box. These are crispy, crunchy pockets filled with potatoes and cheese . These samosas are perfection in every bite. Eat them on their own or dunk them in a hot & sweet ketchup or any sweet or spicy chutney of your choice.

Cup Measurement 250ml
Ingredients
For Dough
1 Cup All Purpose Flour
½ Teaspoon Sea Salt
2 Tablespoons Ghee - melted
¼ Cup + 1 Tablespoon Water - I used
For Filling
½ Boiled Potatoes
¾ Boiled Green Peas
8 - 10 Mint Leaves
2 Tablespoons Green coriander Leaves
3 Green chilies or to your spice level
¼ Teaspoon Red Chili Flakes or to your spice level
½ Teaspoon Salt or to taste
100 Grams Grated Mozzarella Cheese
Oil for frying as required

Method
For The Dough 
Mix all the ingredients in a bowl and knead to a stiff dough. Take it out on to a work surface and again knead for 2 minutes till smooth. Cover and let it rest for at least 15 minutes.

In the meantime let's make the filling
In bowl add all the ingredients as mentioned except the cheese. Mix well, taste for salt and spices add according to your taste if required. 
Then add the cheese and again mix well.
Filling is ready.
Look at this post to make the Samosa.
Place the filling and seal the samosa. 
Heat the oil in a kadai, and deep-fry the samosas on a slow flame till they turn golden brown in color. Drain on absorbent paper. Keep aside. 
Serve. Eat them on their own or dunk them in a hot & sweet ketchup or any sweet or spicy chutney of your choice.

Eggless Jam Shortcake Swirls#SundayFunday

These shortcakes are so delicious and buttery. To make these I used aluminum muffin mold, would suggest that you use a silicon muffin/cupcake molds to make these. While un molding these tend to break. Felt sorry for not using my silicon cupcake molds to make these delicious shortcakes, no doubt the broken ones my hubby enjoyed. The good ones I took for our Hi Tea Party with friends.


Makes 13 -14 Shortcake Swirls
Ingredients

200 Grams Butter - I used salted butter
75 Grams Icing Sugar
220 Grams All Purpose Flour
2 Tablespoons Jam or as required
½ Teaspoon Vanilla Essence
Icing sugar as required for dusting - optional

Method

Grease silicon cupcake molds and place them in the muffin tray (do not use liners).  
Beat butter and icing sugar well until creamy, stir in the flour, mix gently. Refrigerate this batter for at least 20 minutes. In the meantime preheat the oven to 180°C.   
Pour the mixture into a large piping bag with a large piping nozzle. Pipe swirls of mixture into the molds. Bake for 18 to 22 minutes ( depending on how many swirls you make into the molds).    
Once the they are golden, take them out of the oven and keep them on a wire rack to cool.
Un mold each shortcake gently, sprinkle with icing sugar, put a small spoon drop of jam into center of each.   
Serve with tea or coffee. These got over in one go for our party.

Keto 2-Minute Protein Bread & A Ham Sandwich#SundayFunday

This is a Microwave Keto 2 Minutes bread, so quick and easy to make. It taste like real bread. 
Add lots of filling for the sandwich, which will eliminate the smell. It's also very filling, makes you satisfied.
This bread turns out beautifully! Lovely crumb, it looks just like wheat bread and taste like real bread! 
Made a Ham Sandwich with this bread, added lots of lettuce, you will love the crunch of lots of lettuce in this sandwich.
Serves One
Ingredients

1 Large Whole Egg
1 Large Egg White Only
18 Grams Raw Whey Protein Powder
1 Tablespoon Psyllium Husk Powder
1 Teaspoon Baking Powder 
¼ Teaspoon Organic Stevia
¼ Teaspoon Salt
A Dash Of Black Pepper Powder
Method
Mix all the ingredients in a Pyrex square dish 5 x 5 inch (13 x 13 cm) or a microwave safe glass bowl.
Microwave for 2 minutes on high powder. The bread is ready!
So how soft and spongy it is!! This bread turns out beautifully! Lovely crumb, it looks just like wheat bread and taste like real bread! 
To Make the Sandwich
Slice the bread into two or three slices (I made two slices) 
slather both sides it with cream cheese, place 3 -4 lettuce leaves, top it with 2 slices of ham, then add 2 slices of tomato, place a slice of cheese
cover it with the other slice of bread.
Filling and yummylicious!!
Wrap it in a sandwich paper, cut it into half. 
Enjoy.. this filling and delicious sandwich. I had this for lunch.
