Milk Cream#SundayFunday

A dainty, delicate, taste so good, looks elegant , melt in mouth and is irresistible milk sweet. Milk cream is a must Christmas sweet in every East Indian household. Loved by all - children as well as adults. Its a sweet made with milk, the process is tedious and requires lots of patience but the end product is really worth the effort taken. Again this is another sweet which has no eggs, a complete vegetarian, eggless and gluten free.
Ingredients
A Liter Of Milk - (I used Full Fat milk)
400 Grams Tea Sugar
2 Tablespoons Cashew nut powder
1 Tablespoon Rose water
1 Tablespoon Ghee

Method
In a heavy bottomed base kadai or pan boil the milk and stir continuously till it reduces half of its quantity on a very low flame stirring constantly with a wooden spoon, taking care it doesn't stick to the bottom. 
Add the sugar, continue stirring till the sugar melts and again reduces , half of its quantity.
Now add the cashew powder and keep stirring it continuously, till it thickens, add ghee, continue stirring.
Once it starts leaving the sides take a teaspoon full and check if you can roll it into a soft ball if its rolled easily, the mixture is now ready or when touched does not stick to your hand.
Transfer to the greased plate and before it cools completely.
Form small balls and press into silicon moulds - shapes of your choice.
Take them out of the mold.
Store in a container, 4 to 5 days at room temperature and then refrigerate (not in the freezer).
My Notes
Stir this continuously on very low flame, to achieve a beautiful white color. Do not add too much of cashew powder if you want it white and creamy.

Brazilian Brigadeiros(Fudge Balls)#Eattheworld

This Brigadeiro recipe is so easy to make they are fudgy and melt in the mouth! All you need are just few simple ingredients and this Brazilian candy goodness will be ready in few minutes to satisfy all your sweet cravings!
Medium Size 16-18
Ingredients
1 (14-ounce) Can Sweetened Condensed Milk
¼ Cup Unsweetened Cocoa Powder
1/2 Cup Milk
2 Tablespoons Unsalted Butter
1 Teaspoons Vanilla Extract
Chocolate Vermicelli or Chocolate Sprinkles

Method
Whisk the milk and cocoa powder together until obtaining a homogeneous mixture (without lumps of cocoa powder). Then, add in the condensed milk stir in the butter.
Cook in a medium non-stick saucepan over medium low flame, stirring constantly, until the mixture thickens and starts to peel away or show the bottom of the pan when you scrape it with your wood spoon (about 15 to 20 minutes). 
The chocolate fudge mixture should be thick enough to show you the bottom of the pan for a couple of seconds before the mixture levels out again. Grease you hands with a little butter then touch it if it still sticks to you hand it's not yet ready. When nearly done switch off the flame, add the essence with the heat of stove and pan keep stirring for another 4 to 5 minutes scrapping all the sides.
                            
Remove this on to a greased plate. Let cool to room temperature before starting to roll them into balls with greased hands. Use a tablespoon as measurement.  
Then dredge gently in the chocolate vermicelli until totally covered, place into paper cups.
These fudgy Brazilian treats are perfect for special occasions or for gifting!

My Notes
These chocolate fudge balls can be stored in an airtight container at room temperature for up to 2 days. The mixture can be also stored, covered well, in the refrigerator for up to 4 days, brought to room temperature, and rolled into balls.

Homemade Jujube /Jelly Sweets#SundayFunday

Jujube or Jube, is the name of jelly candy or gummy sweets. Jujube's are sweet in taste, colorful, made with different flavors using the corresponding essences, like orange color and orange essence. Jujubes are light and melt in the mouth. These have a shelf life of a month or more.
Ingredients
4 Oz Citrus Juice - see notes
5 Pouches Unflavored Gelatin - see notes
5 Oz Water
500 Grams Granulated Sugar
Color & Essence - of your choice

Method
Most important
- keep the well oiled tray's with a drop of color and essence ready.

Soak Gelatin in the citrus juice.
In a heavy bottomed pan add the water and sugar, keep this on medium flame stirring till the sugar dissolves. Once the sugar dissolves add the soaked gelatin, increase the flame to high and with a wooden spatula stir it continuously breaking the lumps of the gelatin for exactly 4 minutes ( set a timer). Once 4 minutes are up. Switch off the flame.
Divide this into the oiled trays accordingly, remove the layer of scum from top so that you get clear jelly sweets/candy.
Let this set covered with a lid taking care that it does not tough the candy layer. Keep it over night on your counter top. Do not refrigerate this.
Then next morning. Take a cutting board and spread a generous layer of caster sugar on top. Then loosen the sides of the tray with a well oiled knife. Unmold on to the caster sugar and cut into desired size and shape of your choice. 
I have also set them in silicone molds that are well oiled. These too keep overnight to set.
Take a bowl filled with caster sugar as required for coating the jujube's.
Once you cut the desired shape that immediately place them into the bowl of caster sugar and roll them well so that the are well coated with caster sugar. Shake them afterwards in a colander to remove any excess sugar coating.
Store them in a airtight container for a month or more.
Kid's and adults too love these candies, do try them.

My Notes
One pouch of gelatin is 10 grams. So you require 50 grams unflavored gelatin.
For the Citrus Juice - Use one Large orange and one large lemon to extract the juice.
Add the gelatin as soon as the sugar melts, do not bring the sugar syrup to a boil.
Set a timer once you add the gelatin to the sugar syrup and increase the flame to high.
I have used pizza cutter to cut the candy.

Shengdana Chikki / Peanut Brittle#FantasticalFoodFight

Peanuts in Maharashtra is also know as Shengdana.  This  chikki  / candy / brittle is a quick and easy snack from Maharashtra a winter special sweet, crisp made with just two main ingredients - peanuts and jaggery. 
This an easy candy is very popular in India during winter months.  It is a perfect snack to gorge on in winters to keep your body warm.  It's made specially during the festival season of Lohri, Pongal and Makar Sankranti.
Ingredients 
200 Grams Peanuts
200 Grams Jaggery
1 Teaspoon Desi Ghee(optional) - this is used to give a shine

2 Teaspoons Water

Method
First keep all the essentials ready. 
Grease the tray or board the rolling pin with oil or ghee and keep aside.
Grate the jaggery and keep aside.
Roast and skin  the peanuts, separate them into two.
Keep a small bowl of water.
Heat jaggery  with  water   in a pan until it melts on medium low flame. 
Boil the jaggery  and keep stirring it continuously until
 it starts to bubble,  changes color and turns into hard crack consistency. (test its consistency by putting a drop in cold water- it should form a ball crack after you take it out).  Add the ghee and peanuts and mix thoroughly.  
Spread the mixture immediately and use the rolling pin, roll  to a centimeter thickness 
give cuts. Let it cool completely 
Take a knife and lift them up then break  into squares.  
Store them in an airtight container.
