Instant Onion Bread Uthappam

A simple instant breakfast or an quick easy dinner made with leftover bread, semolina  and buttermilk.

Ingredients 

7 Big Bread Slices - Used the sides slices of bread 
A Pinch Baking soda 
1/2 Cup Fine Semolina 
1/2 Cup All Purpose Flour 
1 Cup Water 
1 Cup Buttermilk 
Salt to taste 
1 Medium Onion - finely chopped 
5 -6  Curry Leaves - finely chopped 
1 Green Chilly- finely chopped  
2 Tablespoons Finely Chopped Coriander leaves 

Method 
Cut the the bread slices into small pieces and grind in a blender to make bread crumbs. Take this out into a big bowl, add pinch of baking soda in the bread crumb mixture and mix well. Keep aside.
In the same blender, add semolina, all-purpose flour, water, buttermilk, salt and grind to make batter to make it lump free. Keep this covered in the blender itself for 30 minutes or more.
After the soaking time blend the breadcrumbs into the semolina mixture to make a nice slightly thick batter. If necessary add more water.
Mix the onion, curry leaves, green chilly and coriander leaves with salt to taste and keep aside. 
Heat a hot griddle and drizzle little oil on it . 
Pour one or two ladles full of batter and spread the mixture gently in circular motion to make round uthappam. 
Immediately spread a little of the onion mix and press it with a spatula. Cover and cook the bread uttappam until done or golden brown at the bottom. 
Drizzle some oil on the sides and over the top of the uthappam.  
Flip the utthappam. and cook till the onion sides browns nicely. 
Serve hot with chutney, yogurt or sauce of your choice. This was our quick easy and light dinner.

Vegan Whole Wheat Crackers#BreadBakers

In bread bakers this month our host Sue Lau, asked us to bake "Crackers".  Thank you Sue for hosting this month's event. 

If you are vegan then these cracker's are excellent for you to snack on. They have a hint of saltiness and are crisp. You do not require any dip or any accompaniment to snack these. They are so addictive that you will not be able to stop eating.
Made these for my vegan guest and they enjoyed snacking on them as they were busy chatting with each other. They didn't realize that they had nearly finished them. Got few to enjoy for myself. 

Ingredients
1 ½ Cups Whole Wheat Flour
1 ½ Cups All Purpose Flour
1 Teaspoon Salt
1/3 Cup Oil
1 +1/3  Cup Water
Fine Sea Salt for sprinkling

Method

In a  bowl, stir together the both the  flours and 3/4 teaspoon salt. Pour in the oil and water; mix until just blended and forms a soft dough. Wrap this dough in a cling film and keep it in the refrigerator to rest for an hour at least.
On a lightly floured surface, roll out the dough as thin as possible - no thicker than 1/8 inch. 

Place dough on an greased baking sheet. 
Mark squares out with a knife, but don't cut through. 
Prick each cracker with a fork a few times, brush it water and then sprinkle salt. Keep it t again in the refrigerator to cool, for 15 to 20 minutes at least then only take the tray out to bake. These will turn nice and crisp when baked.
Preheat the oven to 180 degrees C.
Bake for 15 to 20 minutes or until crisp and light brown. When cool, remove from baking sheet and separate into individual crackers.
Enjoy these addictive vegan crackers.
These low in calorie and healthy too.

Cajun Tortilla Chips - For Soup or As Appetizer



Serve this as a a
ppetizer or with a Dip  or  with a bowl of  Soup.  This is a great accompaniment for parties or as a healthy snack too.
I served these for a small party with A Chunky Peanut Butter Dip and  Cajun Seasoned Broccoli & Cheese Soup.  These were delicious with both.

Yield: 32 chips

Ingredients
Homemade Cajun Seasoning - as required
4 Flour Tortillas - cut into 8 wedges - I made this fresh
Oil or Cooking spray
For the Tortillas

2 Cups Heaped All Purpose Flour
1/4 Teaspoon Coarse Sea Salt
1/2 Teaspoon Level Baking powder
Water as kneaded to make a soft dough

Method 
To make  Tortillas

Mix the ingredients well , add water as required and continue kneading to make a soft dough.  Cover this dough and keep it aside  for 15 minutes.
Flour your work surface and divide the dough into four parts.  Roll each ball of dough into dinner plate  size   circles or rotis.  

Bake them on a heat griddle / tawa 

Till light brown spots appear. Likewise bake the other three and keep aside

Preheat oven to 180° C.

Take a tortilla and brush it  with oil or cooking spray.  
Sprinkle  a  teaspoon of Homemade Cajun Seasoning over  it. 
Cut the tortilla into wedges with a  pizza cutter.  
Place them on a baking tray lined with aluminum foil. 
 Bake chips at 180° for 10 minutes then switch on the top element and bake again for just 3  to 4 minutes.  
Switch off the oven and let it remain in the heat  until crisp.
Store Cajun Tortilla Chips in an airtight container.  
Ready to be served

I served them as accompaniment  as an appetizer with  Peanut Butter Dip or  with Cajun Seasoned Broccoli & Cheese Soup, for a small party. 
 These are great party pleasers.  Do try them.

Healthy Granola Cakes #FoodieExtravaganza


This month our Host Caroline Williams, for this month's Foodie Extravaganza, choose the theme "Nuts " . Made these Healthy Garnola Cakes for my daugther to snack whenever she does not have time to have a proper breakfast.

A granola taste and texture in a form of a healthy cake! These baked cakes are perfect for a diet plan or after a gym work, or, even perfect to have as a healthy snack. The granola cakes are made of oats, nuts and dried fruits.

Ingredients

60 Grams Almonds - sliced
60 Grams Golden Raisins
60 Grams Melon Seeds
60 Grams Apricots - chopped
60 Grams All Purpose Flour
60 Grams Oats
2 Tablespoons Heaped Honey
4 Tablespoons Apple Sauce
1.1/2 Tablespoons Olive Oil

Method

Preheat the oven to 180 degrees.
Line and grease a baking tray.
Mix all of the ingredients together and form into thin small cakes. Arrange in the prepared tray and bake for 25 minutes.
Cool and store in an airtight container. Enjoy whenever hungry ... happy and healthy eating!

Air Fryer Nachos


These  crisp air fryer nachos with a tablespoon of oil,  are such a healthy treat.  Made these for a get together of my daughter friends.  Served them with Salsa Sauce they vanished in minutes. Today's diet and health conscious children these were just what they wanted.  




Ingredients
1.1/4 Cup Makki Ka Atta / Cornmeal flour
1 Cup All Purpose Flour
1/2 Teaspoon Salt
1 Tablespoons Oil
1/4 Teaspoon Oregano
1/4 Teaspoon Chilly Flakes
Warm Water as required to make a dough



Method

In a bowl add makki ka atta, all purpose flour, salt, chilly flakes, oregano and oil, make a dough with warm water, knead it to a smooth dough. Let the dough rest covered for 15 minutes. 
Divide the dough  and roll into a thin circle. 


Trim the sides and cut into a square.  Cut into strips
Then flour them well and place them over each other. 



Cut into triangles, prick it with a fork. 


Preheat the airfryer at 200 degrees and then arrange the triangles in the basket for 8-10 minutes.

My Notes:

When I baked the first lot in the air fryer they changed shape, i.e they started folding at the edges. 


I, then heated a tava/ girdle and place the triangles on it and baked it for a minute on each side on low flame.  Then cut it into triangles and place them in the air fryer basket, these retained their shape see pic,
