Air Fryer Coriander & Parmesan Roasted Baby Red Potatoes#Improv

These are crispy on the outside, soft and succulent inside. This makes a perfect side dish or a diet meal. 
Ingredients
500 Grams Red Potatoes, scrubbed and halved (quartered if extra large)
2 Tablespoons Olive Oil
5 Cloves Garlic -  minced
½ Teaspoon Sea Salt
1/2 Teaspoon Black pepper powder
1/2 Teaspoon Lemon Pepper seasoning
1 Teaspoon Dried Thyme
½ Teaspoon Dried Oregano
8  Fresh Basil Leaves - torn
2 Tablespoons Grated Parmesan cheese
1 Tablespoon Chopped  Coriander leaves
2 Fresh Red Chilly - de seeded n slit- for color n freshness. 

Method 

In a large bowl, combine all the ingredients, mix well, except the potatoes, red chilly  and coriander.  
Toss the potatoes, in this marinade so that they are evenly coated.  
Add the red chilly and coriander , toss again. Keep them aside for at least 10 minutes.
Then preheat an air fryer to 175 degrees C for 3 minutes.
Pour potatoes into the air fryer basket, cook, tossing occasionally, until golden brown, for about 20 to 25 minutes. Test for doneness by piercing them with a knife until tender. Serve immediately..

Roasted Coconut Chutney

This is  a delicious and easy chuntey to make.  Perfect with snacks or Idli, dosa.  Dip and enjoy.   We had this with Kuthiraivali Thinai Crisp Dosa - Instant, Vegan & Gluten Free.
Ingredients

1/2 Teaspoon Oil

1 Green Chilly or to taste
1 Tablespoon Chutney Chana / Roasted Gram / Phutane
Little Tamarind or to taste
Handful Coriander leaves
1/2 Cup Packed Grated Coconut
1/2 Teaspoon Cumin Seeds
Salt to taste

Method

In a pan heat oil 
add the green chilly and chutney chana and stir fry for a minute 
add the tamarind
Cumin seeds and fry till 
Chutney chana  turn golden and green chilly is fried
Take this into small blender jar and add rest of the ingredients and grind to a fine paste. 
 Ready to enjoy with Idli, dosa or any snack.  
Delicious and yum.

Instant Onion Bread Uthappam

A simple instant breakfast or an quick easy dinner made with leftover bread, semolina  and buttermilk.

Ingredients 

7 Big Bread Slices - Used the sides slices of bread 
A Pinch Baking soda 
1/2 Cup Fine Semolina 
1/2 Cup All Purpose Flour 
1 Cup Water 
1 Cup Buttermilk 
Salt to taste 
1 Medium Onion - finely chopped 
5 -6  Curry Leaves - finely chopped 
1 Green Chilly- finely chopped  
2 Tablespoons Finely Chopped Coriander leaves 

Method 
Cut the the bread slices into small pieces and grind in a blender to make bread crumbs. Take this out into a big bowl, add pinch of baking soda in the bread crumb mixture and mix well. Keep aside.
In the same blender, add semolina, all-purpose flour, water, buttermilk, salt and grind to make batter to make it lump free. Keep this covered in the blender itself for 30 minutes or more.
After the soaking time blend the breadcrumbs into the semolina mixture to make a nice slightly thick batter. If necessary add more water.
Mix the onion, curry leaves, green chilly and coriander leaves with salt to taste and keep aside. 
Heat a hot griddle and drizzle little oil on it . 
Pour one or two ladles full of batter and spread the mixture gently in circular motion to make round uthappam. 
Immediately spread a little of the onion mix and press it with a spatula. Cover and cook the bread uttappam until done or golden brown at the bottom. 
Drizzle some oil on the sides and over the top of the uthappam.  
Flip the utthappam. and cook till the onion sides browns nicely. 
Serve hot with chutney, yogurt or sauce of your choice. This was our quick easy and light dinner.

Hirva Vatan ( Green masala paste)




The specialty of CKP cuisine is fish, chicken and meat dishes. Hirva vatan (green masala paste) is the pungent and aromatic ginger-garlic, green chilies and fresh coriander leaves paste .Hirva Vatan is must for most dishes in every Maharashtrian home.

Ingredients
10 Grams Garlic
10 Grams Ginger
1 or 2 Green chillies
2 - 3 Tablespoons Coriander leaves- with the stems
1/4 Teaspoon Salt


Method 



The preparation is pretty basic -peel the garlic pods, and peeling the ginger. Add all ingredients into a mixer/blender and blend to a fine paste. Add a little water (enough to grind everything together).  That's it. For the color not to change add a little oil and then store it in the container, put it into the freezer and use as needed.
