Fluffy Yummy Banana Pancakes#SundayFunday

These pancakes were really yummy! Perfectly fluffy and delicious, has a perfect amount of banana and sweetness.
I made exactly 6 large pancakes (about the size of a saucer each) and I could only eat about two. You do have to make sure you cook it long enough on the second side when you make them this large.
You can also switch out half of the flour for whole wheat for an extra healthy option. I made these for Sunday Brunch and we loved them.

Ingredients
For The Wet Ingredients
1 Cup Milk
1 Large Egg - lightly beaten
2 Tablespoons Melted Butter - I used salted
1 Teaspoon Vanilla Extract 
For The Dry Ingredients
1½ Cups All Purpose flour
3 Tablespoons Brown Sugar
1 Tablespoon Baking powder
¼ Teaspoon Salt
1 Cup Mashed Bananas
For The Topping
Maple Syrup
Mini Chocolate Chips

Method 
To Make the Batter
In a blender jar, blend together the wet ingredients along with the banana and pulse it 2 or three times.
In a larger bowl, combine the dry ingredients and mix it well. Add the wet ingredients to the dry and fold together gently until just combined (do not over mix the batter).
Heat a nonstick skillet over medium heat. Heat a teaspoon of butter. Add pancake batter ½ cup per pancake in the center (do not spread this batter). Cover with a lid and cook until bubbles form on top when the top is cooked then flip . Cook for another minute or two or until golden brown.
Serve with maple syrup and chocolate chips to your pancake stack. Devour ...Enjoy!!

Instant Noodles Egg Masala#Foodieeextravaganza

Instant maggi noodles recipe is an easy and quick with eggs. This recipe has maggi noodles tossed with chopped eggs and vegetables to make it filling and tasty. You can have this for brunch or give it to the kids as a evening snack.
Single Serving
Ingredients

1 Packet (75 Grams) Instant Maggi Noodles
2 Boiled Eggs
1 Tablespoon Chopped Coriander Leaves
1 Tablespoon Oil
1 Tablespoon Butter
1 Small Onion - finely sliced
2 Cloves Garlic- finely chopped
½ Cup Shredded Cabbage
1 Fresh Red Chilly - finely chopped
Salt to taste
1 Teaspoon Black pepper powder
1 Packet Maggi Masala


Method
Boil the noodles and drain.
Heat oil & butter in a pan, add garlic sauté till it start to change color add the onions and chillies & sauté for a minute or two.
Add the cabbage, fry till the cabbage for a minute. Add the maggi masala, mix well cover and cook for 2 minutes.
Add boiled maggi noodles, eggs to the mixture & stir well.
Add black pepper powder, to this egg masala mixture & toss well. 
It's ready.
Serve garnished with chopped coriander leaves or shredded cabbage, a slice of boiled egg and enjoy.

Waffles

A perfect crisp breakfast or brunch, this is a simple basic waffle which are homemade from-scratch. They  are ready in less than 30 minutes.

Makes 7, Serves 2
Ingredients

2 Eggs
1 Cup (250ML Cup) All Purpose Flour
1 Tablespoon Heaped Caster Sugar
25 Ml Oil
1 Cup Milk
½ Teaspoon Vanilla Essence
Pinch of Salt
¼ Teaspoon Baking Powder
1 Tablespoon Corn Flour

Method 
Beat eggs and sugar, add milk and vanilla essence. Add in salt, flour, corn flour and baking powder, slowly add oil and beat till smooth. Beat egg whites till stiff, slowly fold in the batter. The batter should be free flowing. Let stand for a while and then heat up the waffle iron. 
When hot, grease the waffle iron plates with butter pour a ladle of batter in the iron (do not spread it once you close the lid it will spread on it own) close and let cook takes around 3 to 4 minutes for the first batch, the rest are done even more quickly. 
They are done, flip the sides and keep it for a minute to get even more crisp. 
Let them cool on wire rack. Grease the waffle iron plates, well, each time you ladle the batter for the next batch of waffles. 
Serve with honey or any sauce or your choice, as a dessert with ice cream.
My hubby had with his favorite Maple syrup. I had with Peri Peri Sauce and maple syrup mixed a classic combo of sweet and spicy.

Savory Aloo Masala French Toast Rollups #SundayFunday

Desi version of the Savory French Toast Rollups filled with a flavorful potato masala is easy to make, delicious, and perfect for Sunday brunch or an high tea party, or even more so pack these for your kids tiffin.

Ingredients
For filling

1 Large Potato - boiled and mashed
½ Teaspoon Oil
1 Small Onion - finely chopped
1 Green chilly - finely chopped
A Pinch of Turmeric powder
Salt - to taste
A Dash of Black Pepper powder
2 Tablespoons Finely Chopped Coriander Leaves
½ Teaspoon Mustard Seeds
A Sprig Curry Leaves
Other Ingredients
6 Bread slices
2 Eggs
2 Tablespoons Milk
Salt & Black pepper - to taste
2 Tablespoons Finely Chopped Coriander Leaves
Oil for frying as required
Mint Chutney for serving

Method
For the filling
Boil the potatoes, peel them and mash well. Set aside.
Heat oil in a skillet over medium heat, add mustard seeds, when they splutter add the curry leaves, onions and green chilies. Sauté till onions soften and turn translucent. Now add turmeric, salt and pepper, mix well. Add in the mashed potatoes, combine everything well to make sure there are no big lumps. Well well mixed take off flame, mix in the coriander leaves and let the filling cool. 
In a bowl beat the eggs in a shallow plate and keep aside.

To make the rollups
Remove the crust from all the bread slices. 
Roll each slice of bread with a rolling-pin to flatten it. 
Place a tablespoon or more of filling on one end of a slice of bread and roll it up tightly. 
With a pastry brush apply egg on the other end of the bread slice to seal the edges nicely. Place on a large plate or tray, with sealed side down. 
Make all of the rollups the same way. Cover these with a damp cloth and keep aside Now in the remaining egg add, milk, salt, pepper and coriander leaves in a shallow plate. 
Heat oil in a large skillet over medium heat. Dip each rolled up bread slice in the egg mixture and place in skillet, seam side down. Fry on each side for 2-3 minutes or till golden and crisp on medium high flame. Remove to a plate and keep warm. 
Do the frying in batches if you have to, dipping the bread only just before frying them.
Serve hot with Mint Chutney Oh! these are so yum, delicious taste awesome.

My Notes
You can prepare these rollups a day in advance and keep them in an airtight container in the refrigerator. Just before serving remove them out, dip in egg mixture and fry.

If you want to make them without egg. then prepare a slurry of a teaspoon of all purpose flour, 2 tablespoons of corn flour, water, make a thick slurry then add all the seasonings. Stir this mix before coating the rollups in it.

Stuffed Potato Kulcha#BreadBakers

Warm melt-in-the mouth, pillow soft stuffed Kulcha, with potato filling. Makes a perfect brunch or dinner meal! A lighter healthier alternative to deep fried Puris or Bhatura, they are also a great option for lunch boxes, picnics or traveling as they can be enjoyed even at room temperature.
Makes 2 Kulchas
Ingredients  
2 Cups All Purpose Flour 
¾ Cup to 1 Cup Warm Milk
7 Grams Fresh Yeast
1½ Teaspoon Sugar
3/4  Teaspoon salt
1 Tablespoon Ghee or Olive Oil
For the Filling
2 Large Potatoes
2  Green Chillies - finely chopped
Salt to taste
1 Tablespoon Finely Chopped Coriander Leaves
For Topping
Finely Chopped Coriander Leaves as required
Sesame seeds as required
Butter to brush after it's out of the oven
Method
For the Filling
Boil the potatoes with turmeric. Cool them, peel and mash them well. Then add in the green chillies, salt and coriander leaves, mix it well. Divide into 2 portions, keep aside.
For the Dough
Add in the yeast, ½ cup milk and sugar in a big mixing bowl, mix it well and cover. Keep it aside for 10-12 minutes till it is frothy/bubbly.
Now add flour, salt to the bowl, keep adding warm milk a little at a time, till it forms a sticky dough.
Take this dough on to a work surface and keep folding and kneading it with a bench scrapper 5 to 7 minutes.
Grease your hands with a little ghee/oil on and start folding the dough till it becomes soft and smooth. Grease a bowl with oil and keep it till it double in volume. 
Now deflate the dough and divide it into two equal balls.
Slightly wet your hands, flatten one into a round disc on a plastic/silicone sheet. 
Place the filling in the center.
Start folding the sides such that the edges overlap each other, Make sure the filling stays inside.
Once all the sides have been pulled in, pinch the edges together to seal well. 
Again wet your hands and spread the ball evenly to flatten to about ½" thick. Lift the silicone sheet from one end and gently take the kulcha off.
Place it on the greased foiled lined tray. Again flatten it with wet, making sure it is even in thickness and also stretch it to make a nice round kulcha. 
Sprinkle chopped coriander leaves and black sesame seeds on top.
Lightly press it. Cover with a damp cloth and leave it proof for about 10-15 minutes.
Preheat the oven at 180°C for 15 minutes.
Bake 10 - 12 minutes, rotating the tray halfway through till they are light golden on top and sound hollow when tapped at the bottom. Brush a little butter, transfer the kulcha on to the wire rack to cool a little.
Enjoy them hot! 
This was our dinner, we had this with a bowl of soup.

Quick Pumpkin Bread#BakingBloggers

This is a quick bread, since it uses a baking powder, it has to be baked immediately, so it can be used for a little bread on holiday mornings. It's a perfect bread when you want to eat something light yet filling. 
You do not require any special baking pan. Since I had a mini pancake pan used it. But it can make only 4 at a time. The remaining I made them on small square parchments paper. You can top it with onions, tomatoes or add any leftover meat, the choice is endless! Since the star ingredient for baking blogger's this month is baking with pumpkin, used it.

Makes 6 - 7
Ingredients

100 Grams All Purpose Flour
50 Grams Bread flour
1 Teaspoon baking powder
3/4 Teaspoon Caster Sugar
1/4 Teaspoon Salt
140 Grams Fresh Yogurt - at room temperature
50 Ml Milk
50 Grams Fried Bacon
60 Grams Boiled & Diced Pumpkin
80 Grams Mozzarella Cheese
Pizza seasonings and Black pepper powder to taste


Method

Preheat the oven at 190°C.
Cut up the bacon and fry it in olive oil.
Boil a pumpkin and cut into small pieces.
Line the Baking tray with parchment paper.
Sieve all dry ingredients in a bowl, add in the yogurt and milk, whisk it together with a hand whisk. 
Scoop the batter onto the lined baking tray. (About 3 tablespoons). 
Top with the boiled and diced pumpkin, fried bacon
Top it with pizza cheese. 
In some, added bacon and rest were vegetarian for hubby dear.
Bake at 190°C for 15 minutes. 
Sprinkle pizza seasonings and pepper powder. 
Enjoy these while its hot!
