Vánočka/Vanocka - Czech Christmas Bread#BreadBakers

Vanocka/Vánočka is traditionally a braided Christmas bread from Czech Republic and Slovakia. This bread which is often baked during Christmas time. This is a rich bread dough prepared with eggs, butter and this bread dough is almost like Brioche dough. Vánocka has loads of raisins and almonds.
I, added 80 grams raisins and while making the strands it was breaking because of too much raisins. First of all chop the raisins and use only 50 grams of raisins in the bread.
Makes 1 Large loaf
Ingredients
11 g Teaspoon Instant Yeast
80 Grams Tablespoon Sugar
500 Grams All Purpose Flour
¼ Teaspoon Salt
1 Teaspoon Vanilla extract
Zest Of One Lemon
1 Teaspoon Grated Nutmeg
250 ml+- Lukewarm Milk
100 Grams Butter -melted and lukewarm
2 Large Egg yolks
80 Grams Raisins
50 Grams Sliced Almonds
For Brushing
1 Egg Yolk
1 Tablespoon Water
Method
In a large bowl add flour, salt, sugar, instant yeast, nutmeg and lemon zest.
Then add vanilla extract, egg yolk and add milk mix well so that everything combined well.
If the dough is too crumbly, use two to three tablespoons of milk in addition.
Knead for another 10 minutes to get smooth supple dough.
Transfer to lightly greased pan and set aside for double in volume.
While the dough is raising, heat water in bowl and add raisins and bring to boil.
You need to boil until it plums up. Then drain in a kitchen towel or tissue and set aside.
Once the dough is double in volume 
Transfer to lightly floured surface and flatten the dough
Then add the raisins on the top of the dough like this and try to incorporate them well while kneading.
Cover and let this rest for 15 minutes. 
After that divide the dough into 9 equal parts.
For the bottom braid you will need - 4 dough balls. Braid it as shown in the pic below
For the second braids you will need - 3 dough balls. Braid it like a plait.
For the third braid 2 dough balls. Twist this like a rope.
To Assemble the Vánočka
Place  the four braided  on a oiled and line baking pan. With the edge of hand slightly make a depression in the center of the braid. 
Now let's take the 3 braided dough  and place this on top of the 4 braided dough. Again make depression again in the center with the edge of your hand. Now take the 2 dough balls and place this on top of the 3 braided dough and tuck the ends well.  
Cover and let is rise slightly, this will not double in volume cause it a heavy dough. In the meantime Pre-heat oven to 180°C. 
 Then brush the bread with egg wash and stick them with sliced almonds. 
Bake for 35 - 38 minutes. After 18 minutes tent the bread with aluminum foil ( since this tends to brown quickly and it's a big loaf the top with brown quickly and the inside of the bread will be wet). 
 Let it bake for another 20 minutes. When baked place it on a cooling rack. 
When completely cooled slice and enjoy with a cup of tea or coffee. This is a sweet, soft and delicious bread.

Stuffed Cheesy Braided Turkish Kebab Bread Rolls#BreadBakers

This stuffed braided bread recipe is filled with Turkish Spiced Kebabs is absolutely delicious and impresses both with its glossy look and delightful taste. This simple and easy to make and you can serve this mouth watering rolls as snacks at any party.

Make 2 Rolls
Ingredients
For The Dough

150 Grams All Purpose Flour
3 Grams Instant Yeast
10 Grams Caster Sugar
½ Teaspoon Sea Salt
2o Grams Butter
¼ Cup Warm Milk
Warm water to knead as required
1 Beaten Egg - Reserve 1 Tablespoon for Egg wash
Ingredients For The Stuffing
2 Turkish Spiced Chicken Kebabs
Provolone Cheese as required
1 Tablespoon Parsley Leaves
1 Tablespoon Chopped Chives
1 Tablespoon Beaten Egg - for brushing the top

Method
Knead dough with warm water and leave it aside covered till double in volume.

When the dough has risen , take on the work surface and deflate it, cut the dough into 2 equal parts. Take one part and the rest keep covered. 
Roll it into a oval disc. 
Place the cheese in center, place the kebab and sprinkle the chives and parsley on top. With a pizza cutter cut the sides in equal strips on other sides.
Fold each side so they overlap each other (like a braid). Keep going, left to right and right to left till the end. 
When reach the end, leave a tail at the bottom, just for the appearance. Grease a tray and place your bread.
Then bake in preheated oven on 190°C for 20 minutes till it browns on the top.
Right after taking out of oven, brush it with oil or butter let it rest on the wire rack for 5 minutes then cover it in a cling film so that it does not dry out.
Enjoy this yummy bread.

Apricot Braided Breakfast Bread#BreadBakers

This Apricot Braided Breakfast Bread is a sweet, light, tender bread studded with dried apricots. Serve it for breakfast slathered with your favorite jam.

Ingredients
1¾ Cups All Purpose Flour
11/4 Teaspoon Instant Yeast
1 Tablespoons Sugar
½ Teaspoons Salt
½ Cup +- Warm Water
1 Tablespoon Oil
1 Egg - beaten- reserve 1tsbl
2 Tablespoons Dried Apricots - chopped
Egg Wash
Remaining Egg
1 Teaspoon Water

Method
In the bowl of a stand mixer, combine flour, and salt.
In a another bowl add warm water, sugar, yeast, egg and oil mix well to combine then add flour to this mixture. Knead it well to make a smooth dough. Take this dough on to a work surface and knead again till smooth and soft. Then flatten the dough add dried chopped apricots and knead for 5 minutes until smooth and elastic. 
Place dough in lightly oiled bowl and turn to grease top. 
Cover, let rise until dough doubles in size.
Punch down dough. Turn dough onto lightly floured surface. Pat into a rectangle.
Cut into equal piece. Shape each piece into a rope.
Then stretch the rope a little by rolling it.
Twist the ropes together. 
Place on a cookie sheet. Cover, let rise until for 25 minutes or until indentation remains after touching.
Mix the egg yolk and water to make wash by beating together. Coat the top of the loaf with egg wash.
Bake in preheated 200°C oven 15 to 20 minutes. 
Cool completely before slicing.
Slice, Enjoy slathered with your favorite jam or butter.

Nutella Babka Buns#BreadBakers

These Nutella Babka Buns are kind of similar to a braided bread. After braiding the dough, these made into a knot and ends are tucked inside the hole and pinching it together with the other end at the bottom. 
These are incredibly delicious and soft. Try them and you will love these soft and chocolaty buns. Took these for our get together with friends.  
Makes 7 Buns
Ingredients

⅓ Cup Warm Water
2 Tablespoons Honey
1½ Teaspoon Instant Yeast
2¼ Cups All Purpose Flour
1 Teaspoon Salt
1 Large Egg
¼ Cup Milk powder
65 Grams Butter
Nutella as needed- for filling

Method 
To Make The Dough
Mix honey with warm water and then sprinkle in yeast, leave for the yeast to activate. 
In a mixing bowl, add in the rest of the ingredients except butter and nutella. Now add in the yeast mixture. Mix to incorporate and make a soft and smooth dough, knead for at least 10 minutes. While still kneading, add in butter bit by bit. Make sure it's incorporated before adding more. After all butter is added, knead for another 10 minutes.
Form dough into a ball, place in a greased bowl and cover the bowl tightly with a cling film. Leave the dough to rise until double in volume.

Shaping The Buns
Place dough on a lightly floured working surface and lightly knead it into a log. Cut into 7 equal pieces ( I weighed the dough and made equal pieces).
Form each piece into a ball.
Take a ball and press it into a rectangle. Roll it into a 5x8 inch, more or less.
Spread some Nutella on top, leaving the edges empty.
Roll it lengthwise.
Pinch the edges, to seal well.
Cut it lengthwise leaving, not all the way to the top.
Braid the 2 pieces of dough together, making sure the beautiful exposed layers of Nutella is on top. Stretch the braid into 10 inch (25 cm) length, more or less. 
Bring both ends together, overlapping them and creating a hole in the middle. Bring one end into the hole like a knot and pinch it together with the other end at the bottom.
Place on a baking tray with a baking sheet. Repeat with the rest of the balls. 
Rest the dough for 30 minutes or until they puff up a bit.
Bake in a preheated oven at 180ºC for 18 to 20 minutes or until golden brown and fully cooked. 
When they're still slightly warm, brush them with butter. Place them in a cool rack to cool a little.
Serve these warm with a cup of tea or coffee, Enjoy!!
