Apricot Braided Breakfast Bread#BreadBakers

This Apricot Braided Breakfast Bread is a sweet, light, tender bread studded with dried apricots. Serve it for breakfast slathered with your favorite jam.

Ingredients
1¾ Cups All Purpose Flour
11/4 Teaspoon Instant Yeast
1 Tablespoons Sugar
½ Teaspoons Salt
½ Cup +- Warm Water
1 Tablespoon Oil
1 Egg - beaten- reserve 1tsbl
2 Tablespoons Dried Apricots - chopped
Egg Wash
Remaining Egg
1 Teaspoon Water

Method
In the bowl of a stand mixer, combine flour, and salt.
In a another bowl add warm water, sugar, yeast, egg and oil mix well to combine then add flour to this mixture. Knead it well to make a smooth dough. Take this dough on to a work surface and knead again till smooth and soft. Then flatten the dough add dried chopped apricots and knead for 5 minutes until smooth and elastic. 
Place dough in lightly oiled bowl and turn to grease top. 
Cover, let rise until dough doubles in size.
Punch down dough. Turn dough onto lightly floured surface. Pat into a rectangle.
Cut into equal piece. Shape each piece into a rope.
Then stretch the rope a little by rolling it.
Twist the ropes together. 
Place on a cookie sheet. Cover, let rise until for 25 minutes or until indentation remains after touching.
Mix the egg yolk and water to make wash by beating together. Coat the top of the loaf with egg wash.
Bake in preheated 200°C oven 15 to 20 minutes. 
Cool completely before slicing.
Slice, Enjoy slathered with your favorite jam or butter.

Soft and Fluffy Croissants Bread Rolls#BreadBakers

These are  Homemade Croissants Bread Rolls are soft fluffy and buttery. Perfect to slather with cream cheese, butter or jam. Perfect to make sandwiches too!

6 Bread Rolls
Ingredients

250Grams All Purpose Flour
20 Grams Sugar 
¾ Teaspoon Salt  
2 Tablespoons Non-Fat Dry Milk Powder
115 Grams water
8 Grams Fresh Yeast
1 Whole Egg - lightly beat and then take half it and the other half keep for brushing the buns.
25 Grams Unsalted Butter
For The Egg Wash
The Remaining Beaten Egg +1 Teaspoon water or milk

Method
Combine water and yeast and set it aside till bubbly.
Combine the dry ingredients and mix together with a whisk. To this add the yeast, egg mixture and knead to a soft dough . Take this on to a work surface and knead for 10 minutes. Add butter and knead for another 5 minutes . Place this ball into an oiled bowl and then leave it at a warm place until it doubles in volume.
Deflate the dough , divide it into 6 pieces and roll them into balls. Cover them with a damp cloth and leave them for 15 minutes.
After resting, deflate with your hand, and make a leaf shaped roll. 
With a rolling pin stretch it in length shape it the same way.
Roll it into a croissant.
Once all the croissants are rolled 
Place the dough seam-down a baking tray lined with parchment paper or aluminum foil leave it at a warm place until they get twice in size.
Brush buns with egg wash.
Preheat the oven at 230℃, bake for 12 to 15 minutes.
Place it on a wire rack to cool. 
Slather with cream cheese, butter or jam. Perfect to make sandwiches too!

    Bermuda Johnny Bread#EatTheWorld

    Bermuda Johnny cakes are a popular traditional Bermudian breakfast snack. A scone like sweet breads which are cooked in a cast iron pan over the stove and served up with butter and jam or cheese. There are many Bermudian’s who also fry their Johnny cakes, however the majority of them half cook them in a floured cast iron pan then bake them so that they are fully cooked inside.
    This sweet bread has a golden-brown exterior and tender, fluffy crumb. For my recipe, I baked the bread for a few minutes after frying.

    1 Cup =250Ml 
    Makes 8 breads
    Ingredients
    2 Cups All Purpose Flour
    50 Grams Caster Sugar
    1 Tablespoon Baking powder
    ¼ Teaspoon Pink Himalayan Salt
    58 Grams Salted Butter - chilled & cubed
    100Ml +- Whole Milk
    1 Large Egg

    Method

    Preheat oven to 200°C. Line a baking sheet with parchment paper or a silicone mat.
    In a large bowl, whisk together flour, sugar, baking powder, and salt. Using a pastry blender, cut in cold butter until mixture is crumbly. In a small bowl, whisk together milk and egg. Gradually add milk mixture to flour mixture, stirring just until dry ingredients are moistened.
    Them lightly spread the dough with your hands and fold it. Do this three to four times. Lastly again flatten and cut it into 8 equal portions. Shape each portion into a ball and gently flatten to ¾ inch thickness.
    In a 12-inch skillet, heat a tablespoon of butter or oil over medium heat. Place Johnny bread in skillet; cook until lightly browned, about 2 minutes per side. Transfer to prepared pan.
    Bake in a preheat oven until centers are set, 10 to 12 minutes.
    Serve warm with honey, jam, butter or any main course meal or boiled potatoes, bananas, and codfish. Store in an airtight container for up to 1 week.

    Broccoli & Oats Sandwich Bread - Gluten Free#BreadBakers

    This is a delicious and healthy bread. Perfect for sandwiches . This bread taste so good and quick to make. You just required 3 florets of broccoli and oats, quick grind and your will have a beautiful healthy bread baked in minutes. This bread is so often made by me. Do try this quick recipe!
    Ingredients
    3 Broccoli Florets
    3 Eggs
    Salt to taste
    60 Grams Gluten Free Rolled Oats
    ½ Teaspoon Baking powder

    Method
    In large blender jar add the salt, baking powder and oats. Blend this well till the oats are powdered. Then add the broccoli florets, eggs and pulse the blender once or twice only. The batter should be well mixed.
    Pour this into a greased and lined loaf pan and level it well. 
    Bake it in a preheated oven at 180°C for 20 -25 minutes or till a toothpick inserted comes out clean. 
    Once baked lift the paper and place it on a wire rack to cool. 
    When cooled slice it into two halves each half into two slices and use this to make an healthy sandwich.

    Keto Pretzel Bites#BreadBakers

    These Keto Pretzel Bites, are so addictive, there’s something about their density and dough-ness mixed with some salty crunch that lights up the taste buds and you can't stop eating. Even before I took a pic half of them were over.
    This recipe is a Fat Head style dough that can be made for pizza crust, rolls and more, but it's done in such a way that distinctly gives it the identifiable pretzel flavor that makes it so much more than simply "bread."

    Ingredients
    1½ Cups Whole Milk Mozzarella - shredded
    1 Tablespoon Cream Cheese - softened
    1 Large Egg
    1 Cup Almond Flour
    ½ Tablespoon Baking Powder
    ½ Tablespoon Coarse Salt Kosher or Sea Salt - optional
    1 Egg - beaten - to brush the pretzels

    Method

    Preheat oven to 190°C & Line a large baking sheet with parchment paper or a silicon mat.
    Add shredded mozzarella and cream cheese to a large microwave-safe bowl. Fully cover the cream cheese with mozzarella. Melt cheeses in the microwave on high in 30 second intervals. Stir after each 30 seconds and continue cooking until cheeses are completely melted and form a uniform cheese dough. This should take around 1-1½ minutes total. Do not try to melt it all at once.
    In a small bowl, whisk together almond flour and baking powder. Set aside.
    Add to cheese, eggs and almond flour mixture mix it well to form a dough. The dough will be quite sticky, which is normal.
    Wrap a cutting board with plastic wrap or a silicon mat. This will keep the dough from sticking to the board. Lightly coat your hands with oil and divide dough into equal parts. 
    Roll each dough into long pieces about 1 inch thick.
    Using a sharp knife, slice dough into 3/4 inch wide pieces. 
    Place onto a baking sheet lined with parchment paper.
    Brush surface of pretzel bites with egg wash. 
    Bake pretzels for about 12 minutes in the middle rack of your oven, or until pretzels are a light golden brown. Set your oven to a low broil and cook for about 2 minutes. 
    This will crisp up the exterior of the pretzel. Watch your oven carefully during these 2 minutes as you don’t want to burn or overcook your pretzels.
    These are so addictive, you can't stop eating them.
