Savory Aloo Masala French Toast Rollups #SundayFunday

Desi version of the Savory French Toast Rollups filled with a flavorful potato masala is easy to make, delicious, and perfect for Sunday brunch or an high tea party, or even more so pack these for your kids tiffin.

Ingredients
For filling

1 Large Potato - boiled and mashed
½ Teaspoon Oil
1 Small Onion - finely chopped
1 Green chilly - finely chopped
A Pinch of Turmeric powder
Salt - to taste
A Dash of Black Pepper powder
2 Tablespoons Finely Chopped Coriander Leaves
½ Teaspoon Mustard Seeds
A Sprig Curry Leaves
Other Ingredients
6 Bread slices
2 Eggs
2 Tablespoons Milk
Salt & Black pepper - to taste
2 Tablespoons Finely Chopped Coriander Leaves
Oil for frying as required
Mint Chutney for serving

Method
For the filling
Boil the potatoes, peel them and mash well. Set aside.
Heat oil in a skillet over medium heat, add mustard seeds, when they splutter add the curry leaves, onions and green chilies. Sauté till onions soften and turn translucent. Now add turmeric, salt and pepper, mix well. Add in the mashed potatoes, combine everything well to make sure there are no big lumps. Well well mixed take off flame, mix in the coriander leaves and let the filling cool. 
In a bowl beat the eggs in a shallow plate and keep aside.

To make the rollups
Remove the crust from all the bread slices. 
Roll each slice of bread with a rolling-pin to flatten it. 
Place a tablespoon or more of filling on one end of a slice of bread and roll it up tightly. 
With a pastry brush apply egg on the other end of the bread slice to seal the edges nicely. Place on a large plate or tray, with sealed side down. 
Make all of the rollups the same way. Cover these with a damp cloth and keep aside Now in the remaining egg add, milk, salt, pepper and coriander leaves in a shallow plate. 
Heat oil in a large skillet over medium heat. Dip each rolled up bread slice in the egg mixture and place in skillet, seam side down. Fry on each side for 2-3 minutes or till golden and crisp on medium high flame. Remove to a plate and keep warm. 
Do the frying in batches if you have to, dipping the bread only just before frying them.
Serve hot with Mint Chutney Oh! these are so yum, delicious taste awesome.

My Notes
You can prepare these rollups a day in advance and keep them in an airtight container in the refrigerator. Just before serving remove them out, dip in egg mixture and fry.

If you want to make them without egg. then prepare a slurry of a teaspoon of all purpose flour, 2 tablespoons of corn flour, water, make a thick slurry then add all the seasonings. Stir this mix before coating the rollups in it.

Honey Chicken Wings In Potato Baskets#Foodieextravaganza

These honey chicken wings are deep fried till crisp, golden and then coated in a  honey glaze sauce.  These are so addictive and delicious.
Ingredients
300 Grams Chicken Wings
For the Marination
1 Tablespoon Hot & Sweet Sauce
1 Tablespoon Dark Soy Sauce
1 Tablespoon Worcestershire Sauce
1 Tablespoon Hot Sriracha Sauce
½ Teaspoon Ginger Garlic Paste
½ Teaspoon Himalayan Salt
All Purpose Flour - for coating
Oil as required to deep fry

For The Honey Glaze
¼ Cup Honey 
1 Tablespoon Water
1 Tablespoon Hot & Sweet Sauce
1 Tablespoon Soy Sauce

For The Potato Baskets
2 Medium Potatoes - grated
1 Tablespoon Corn Flour
Salt to taste

Method
For the Marination
Wash and rinse chicken wings and pat dry.
Marinate the chicken wings in the given ingredients under marination. Keep this marinated chicken wings in the refrigerator overnight or for at least an hour.
Dredge them in flour. 
Deep fry them on medium low flame till crisp and golden.
                             
Perfectly fried crispy wings
For The Honey Glaze
In a small sauce pan add all the given ingredients and cook till it comes to a boil. Cool and serve it along with the chicken wings.
For The Potato Baskets
Grate the potato and place them in water for an hour. Wash it in fresh water twice. Then squeeze out all the water. Add cornflour and salt to taste. Mix well. 
Take two tea strainers. Press a ball of grated potato mix on to one strainer, make a thick baskets by pressing it on the walls of the strainer. 
Deep fry on medium high flame till golden.  
Dip each wing in the sauce.
Serve the chicken wings in potato baskets.

Tandoori Chicken 2 Ways with Homemade Tandoori Masala

Ask any Indian what's your favorite grilled chicken dish they will promptly say "Tandoori Chicken" that's how much this is loved by all, now it's not only in India but abroad too, it's become a loved one of all. This leaves amazing taste in your mouth, from the very first bite to the last, "Dil Mange More".
Marinate the chicken, you can bake/broil or even pan fry and they are fantastic. That’s how simple it gets. The ready-made masala is expensive and even for that you have to add  ginger-garlic paste,  yogurt etc., So then why spend money on the package? Just make your own, with all ingredients that use in your daily cooking, it's preservative and gluten free! It’s tasty, simple and you choose the amount of spices as to what goes into the marinade!

Ingredients 
For the Homemade Tandoori Masala 
4 Teaspoons Kashmiri Red Chilly powder
2 Teaspoons Coriander powder
1 Teaspoon Turmeric powder
1 Teaspoon Cumin powder
½  Teaspoon Citric Crystals
1 Teaspoon Salt
½  Teaspoon Cinnamon powder
1 Teaspoon Garam masala powder
1 Tablespoon Kasuri Methi
1 Teaspoon Salt  

½ Teaspoon Tandoori color 
For the Pan Fried  Chicken Tandoori Bites

550 grams Boneless Chicken
3 Tablespoons level Tandoori Masala
3 Tablespoons hung curd
2 Tablespoons Heaped Ginger Garlic paste
1 Tablespoon each Vinegar and Lemon juice
1 Teaspoon Salt
A pinch of Tandoori color 

2 Tablespoons Butter or Olive Oil 
For the Baked Tandoori  Chicken Legs 

400 Grams Chicken Legs - I go two
1 Tablespoon HP Sauce - optional
2 Tablespoons Level Tandoori Masala
2 Tablespoons Hung Curd
1
½  Tablespoons Heaped Ginger Garlic paste 
1 Tablespoon each Vinegar & Lemon juice
½  Teaspoon Salt

2 Tablespoons Butter or Olive Oil 
Method
For the Homemade Tandoori Masala
 Mix all the ingredients well and your homemade tandoori masala is ready. 
Quick and simple isn't it! All ingredients that you have at home. 
For the Pan Fried  Chicken Tandoori Bites
Mix all the ingredients and rub it into the chicken cubes, marinate it overnight in the refrigerator.
Heat a grill pan with oil and fry the chicken cubes are done on one side
then flip and fry till done on the other side.  
Serve with toothpicks on lettuce leaves.
  Enjoy!! 
For the Baked Tandoori  Chicken Legs
Give cuts to the chicken leg, wash and pat dry.
Mix all the ingredients and rub it into the chicken legs, marinate it overnight in the refrigerator.
Preheat the oven to 200°C for 10 minutes.   
Place the chicken legs along with the marinade in a lined tray, bake it for 35 - 40 minutes.  
After 20 minutes change the side, just brush it with oil and bake again till done.  If you want this tandoori effect on it then broil it for 5 minutes or more accordingly.  
Enjoy!!  
My Notes

Add HP Sauce to the marinade give a smoky flavor to the tandoori chicken, do add it if you have.

This will last for year or so without loosing it's taste or color if refrigerated, in a zip lock bag.

Crispy Cheese Prawn Pancakes#FishFriday

These Prawns pancakes you will die for, asking for more.
Ingredients
8 Large Cleaned Prawns

For the stuffing

2 Tablespoons Parmesan cheese
2 Tablespoons Cheddar cheese
2 Tablespoons Finely Chopped Green chilies
2 Tablespoons Finely Chopped Coriander leaves
For the batter

1 Large Egg
3 Tablespoons Milk
2 Tablespoons Hot Sriracha sauce
3 Tablespoons Heaped Self Raising Flou
For the Coating

1/2 to 3/4 Cup Self Raising Flour
Panko Bread crumbs as required


Method

Open prawns like butterfly.
Let's make the Stuffing and the Batter

Mix all the ingredients together and make a thick coating batter, keep aside.

Mix all the ingredients for filling together. Keep aside.

To Stuff the Prawns
Take the prawns unto a kitchen towel, pat them dry to remove any excess moisture

Take a  teaspoon of  the filling , place it in the center of the  prawns. 
Dredge them in seasoned flour and then dip it in batter, then again in flour  and in the batter. Then press them in panko bread crumbs. Keep this in the freezer for at least 2 -3 hours cling wrapped in a single layer. 
Shallow  fry in a broad frying pan for 2 -3 minutes on each side.
Serve with sweet chili sauce.
Perfect party pleaser...

Fried Bombils / Bombay Ducks With Temprado Masala#FishFriday

Our Theme this month for Fish Friday Foodies is Inspired By Your Travels and our host is Camilla M. Mann
Goan are basically fish eater's and they love to eat fish every day. I have visited Goa umpteen number of times. What I, enjoy eating most is their fish preparations, tangy, spicy .. mouth watering. This is one of the recipes of Goa, a simple and spicy fried fish with Temprado Masala- Homemade, some call it Green Recheado Masala or Green Masala. 
Bombils have a lot of water content and the secret to perfect crisp fried bombils is to remove as much moisture as you can from the fish before frying them. Makes a great appetizer as they taste the best from pan to the plate!

Read My Notes and follow each step carefully before you start - to get a crispy and tasty Fried Bombils.

Ingredients
10 Fresh Bombils /Fresh Bombay Ducks
3 Tablespoons Heaped Temprado Masala- Homemade
½ Teaspoon Salt
1 Cup Heaped Fine Rawa/Semolina or as required
¼ Cup Heaped Rice Flour or Corn flour - I used rice flour
Oil as required for frying


Method 
Wash and clean the Bombils.
 Slit each of the bombil lengthwise. 
Open up each of the fish and flatten them with your hands. 
Place them on the kitchen platform.
 Take another plate and cover the fish
 Keep some weight over that plate. (This is done to remove all the water from the bombils). for 30 to 45 minutes.
 Pat them a fresh kitchen towel ( I use an old cloth which I can throw away ). 
They should be absolutely dry.
Rub salt. Apply the Temprado Masala- Homemade , individually on all sides using your hands. Keep this aside to marinate for at least 20 minutes or more in the refrigerator.
To Crumb Coat
Mix the rawa and rice flour well, spread it in a plate and keep aside.
Now tilt the plate in which the Bombil is marinated to remove excess water. Take each Bombil and press it into the rawa - rice flour mix on both sides nicely by pressing to crumb coat well.
Keep the crumb coated Bombils aside covered and refrigerate them for at least 15 minutes. 
Heat a pan with a tablespoon of oil and place only 3 Bombils in a pan to fry at a time. (see My Notes for frying ). 
Fry till golden brown. Serve this with tomato slices or any green salad with a drizzle of lemon juice.  
So yummy and finger licking.

My Notes 
Do not add too much oil in the pan to fry the Bombils or else they disintegrate. 
Do not crowd the pan with too many Bombils at a time.
Fry one side on high flame for 2 minutes then reduce the flame to low and leave it to golden brown one side, then flip and just drizzle a teaspoon of oil on the pan and fry this side on low flame only till golden brown and crisp.
Do not flip the fish too many times, the Bombils will disintegrate. 
Wait till one side is perfectly golden brown done, then flip it carefully, tenderly with love.
