Keto Blueberry Yogurt#Improv

This Keto blueberry yogurt is a low-carb with just 3 ingredients. It makes a filling breakfast or snack or have it as a refreshing dessert after a meal. For this I have used my homemade full fat yogurt culture. Do not use store bought yogurt, since it contains sugar and it's high in carbs.

Serves Two
Ingredients 
 
1 Tablespoon Yogurt Culture - Full Fat Milk
300 Ml Full Fat Milk
1/3 Cup Blueberries 

Method
Crush the blueberries in the blender, remove this into a bowl, add the culture and milk, give it good mix. Remove this on to a serving dish/glass. Cover it and let is set on a warm place. When set , refrigerate till chilled.
Enjoy!!

Corn & Peas Pulao With Beer Chicken Tandoori#Foodieextravaganza

This is a complete meal, you will love the flavor of the beer in the tandoori chicken. 

1 Cup = 200 Ml Cup Measurement
Serves 2
Ingredients
To Marinate The Chicken

400 Grams Boneless Chicken - cut into 2" cubes
1 Teaspoon Heaped Ginger Garlic paste
¼ Teaspoon Heaped Salt
1 Tablespoon Homemade Tandoori Masala
2 Tablespoons Hung Curd
1 Tablespoon Heaped Mustard Oil
1 Teaspoon HP Sauce
¼ Cup Ale Beer
Ingredients For The Rice
1 Cup Basmati Rice 
1 Small Onion - chopped
½ Tablespoon Ginger juliennes
3 Green Chilies - diagonally sliced
¼ Cup Boiled Sweet Corn
¼ Cup Boiled Peas
¼ Cup Colored Bell peppers
1 Tablespoon Lemon juice
1 Spring onions - finely - chopped - optional
½ Tablespoon Vegetable Stock powder
¼ Teaspoon Black Pepper powder
¼ Teaspoon Salt or to taste
2 Tablespoons Heaped Oil
1 Tablespoons Coriander leaves chopped
For The Kachumber / Salad
1 Onions - chopped
1 Tomato - chopped
1 Cucumber - chopped
5 - 6 Leaves Butter Head Lettuce
Salt & Black pepper powder to taste
A Sprinkle of Vinegar to taste

Method
Boil the rice in water and salt to taste till 90% done. Drain the rice. When cooled refrigerate the rice ( since the rice should cold) then the rice remains firm and grainy.
Marinate chicken cubes with all the given ingredients, leave it for 30 minutes or overnight for best results, put on skewers, and grill in 2 tablespoons oil until chicken tender. 
It's flavor is simply divine.
To Make The Rice
Heat oil, add chopped onion, fry till transparent, add ginger, green chilies, chicken powder, lemon juice, boiled peas, sweet corn and add in the boiled rice, black pepper powder with ½ cup water lightly give it good mix, taste for salt and add accordingly, mix well. Cover and leave it on dum for 10 minutes on low flame, remove in a platter, top with tandoori chicken skewers, the oil and gravy from the pan pour it over the chicken to moisten it. 
Garnish with chopped coriander leaves.
For The Kachumber/Salad
This is a lovely salad or kachumber mix all onions, tomatoes and cucumber seasoned with salt, pepper and a sprinkling of vinegar, done!

Roasted Cherry Tomatoes & Bell Pepper Soup#Soupswappers

This Italian roasted cherry tomatoes and red bell peppers soup reminds me that winter is in. I love the reddish orange color of this soup and it's the simplicity, a no-fuss cooking that makes it my favorite.

Serves 2
Ingredients 

8- 10 Cherry Tomatoes
1 Large Red Bell Pepper
2 Cloves Garlic cloves – crushed lightly
1 Teaspoon Olive oil
Sea salt to taste
¼ Teaspoon Lemon Pepper Seasoning
3 Cups Vegetable Stock
Crispy Fried Basil leaves – to garnish

Method 
Pre-heat oven at 200°C.
Wash and pat dry ,garlic, tomatoes and pepper. Place them in a foil tray, in a single layer and drizzle ½ teaspoon olive oil . Bake for 30 to 35 minutes, or until the tomatoes break into juice and the bell pepper is charred.
Cool and blend in a mixer to smooth consistency. Remove in a sauce pan, add 3 cups of vegetable stock to thin and bring this to a boil. Add the seasoning of salt and lemon pepper. Taste, the soup, it should smooth and not too thick.
Serve as it is with a few drops of extra virgin olive oil on top, or with fried basil. Enjoy this delicious soup with any crusty bread.

White Hot & Sour Chicken & Prawns Soup#FishFriday

White Hot and Sour soup is a spicy and hot soup made with chicken, prawns and mixed vegetables. Super easy to make and takes 30 minutes from start to finish! It’s got that perfect hot and sour flavor that everyone will love.

Serves 2
Ingredients

500 Ml Chicken Stock
100 Grams Boneless Chicken Cubes
6 Big Prawns - chopped
½ Cup Chopped Cabbage
2 Tablespoons Tofu - tiny cubes
2 Tablespoons Diced Carrots
1 Green Chilly - finely chopped
1 Baby Bok Choy - chopped
1 Spring onion - white and green chopped
Salt to taste
½ Teaspoon White Pepper powder
1 Tablespoon Vinegar
1 Teaspoon Sugar - optional
1 Tablespoon Light Soy
1 Teaspoon Arrowroot powder/ Corn flour
½ Cup Water
1 Egg  -  beaten

Method
Heat a teaspoon of oil in a pot, sautƩ the chicken till it turns pink to white, add the stock and veggies bring it to a boil, reduce the flame and let it simmer for 5 minutes.
Then add all the seasoning and prawns till cook for 4 minutes thicken with corn flour paste and add beaten egg. Lastly add bok choy green and spring onions greens. 
Serve hot, this is delicious and satiating.

Chicken Noodle Soup - Oil Free#Soupswappers

Made this for 2 persons, in one bowl made this clear soup minus the noodles for my friend who is admitted in hospital. For me I added one packet instant noodles packet with masala sachet that we get inside.

Ingredients
For the Stock

300 Grams Chicken with bones
2 Liters Water
1 Bay Leaf
2 Clove Garlic with Skin - wash and then add
1 Scallion - chopped
3 Whole Black Peppercorns
For the Soup
1 Medium Potato - chopped
¼ Cup Fresh Green Peas
1 Carrot - diced
1 Scallion - only green part
10 Small Florets Broccoli
5 Mushrooms- quartered
1 Pack Instant Noodles - I used Veg Noodles 70Grams

Method 
Boil the stock on high flame till it comes to a rolling boil, remove the scum that surfaces two to three time till the stock is clear. Reduce the flame to low and let it simmer for 3 hours or till it reduces to one liter stock.

Strain the stock, shred the chicken and keep aside.
Take the stock in a pot, add all the vegetables and boil till the veggies are cooked. At this stage I removed a bowl for her. In the remaining soup added the shredded chicken and a cup of water, brought the soup to a boil added the instant noodles and the spice mix let the noodles cook and its ready. 
A hearty and delicious soup for a cold winter evening.

Dosa Egg Sandwich#SundayFunday

Dosa Egg Sandwich is a popular street food where the traditional dosa is sandwiched with egg and spices. Egg Dosa is very simple, it comes together in just few minutes and makes for a great breakfast or snack. It is gluten-free and high in protein too. You will see many versions of this dish but the one I am sharing with you today is a twist to a regular dosa.
This dish can be served for breakfast or an evening snack along with chutney or sauce on the side.

Makes 2 Dosa Egg Sandwich
Ingredients

1 Cup Dosa Batter
Oil -as required
2 Large Eggs
1 Medium Onion - finely chopped
1 Green Chilly - finely chopped
1 Tablespoon Chopped Coriander Leaves
¼ Teaspoon Turmeric Powder
Black Pepper Powder as required
Salt to taste

Method
Beat the eggs with turmeric powder and salt, then add the green chilly and onion, give it a good mix and keep aside.
Heat a cast iron dosa tawa or a non-stick griddle over high heat. Once the tawa is hot, reduce the heat to low and splash the tawa with some water. Wipe the tawa with a kitchen cloth. Add a ladle full of dosa batter to the center of the pan and spread it using the back of the ladle to make a thin dosa.
Increase the heat to medium-high. Drizzle oil on the sides and on top of the dosa. 
When done remove this on to a plate (do not make this crispy or brown at the bottom) remove when still white at the bottom.
Again splash the tawa with some water. Wipe the tawa with a kitchen cloth. Add a ladle full of dosa batter to the center of the pan and spread it using the back of the ladle to make a thin dosa. 
Spread half of the egg mixtuer all over the dosa. Sprinkle pepper powder
Cover it with the other dosa gently and lighty press it. Cover with a lid and let the cook till the egg is done. Remove the lid.
 Once the dosa is nicely browned from the bottom, flip it using a flat spatula and cook on the other side for a minute or two.
Egg Dosa is ready. 
Cut it and serve hot with any chutney or sauce. Before making the next dosa, heat the tawa on high heat once again. Splash water, reduce the heat, and wipe the remaining water before pouring the batter. 
This is a perfect breakfast or evening snack which is satisfying and filling.

Creamy Basil Sauce Served With Spaghetti Pasta -Vegetarian#SundayFunday

Creamy pasta is an easy dinner. Pasta served with basil cream sauce is the perfect vegetarian meal and can be ready in 20 to 25 minutes. Creamy delicious sauce so quick and easy to make.

Serves 2
Ingredients

2 Cups Fresh Basil Leaves
4 Cloves Garlic - crushed
¼ Cup Olive oil
¼ Cup Pine nuts
½ Cup Grated Parmesan cheese
Salt and Pepper to taste
200 Ml Fresh Cream
250 Grams Spaghetti Pasta - boiled

Method

Boil the spaghetti as per pack instructions till al dente.
In a blender, combine basil, garlic, run the blender on low speed and pour in olive oil in a thin stream. Process until mixture begins to emulsify. Add pine nuts and Parmesan, then blend for a minute. 
Heat cream in a saucepan over low heat until simmering. Pour ½ of the hot cream into the processor with basil pesto, pulse for 20 seconds to incorporate.
Pour mixture back into cream, and simmer for 5 minutes or until thickened. Serve over boiled and drained pasta.
Garnish it with halved cherry tomato and enjoy. This super delicious , you will make this easy and creamy basil sauce pasta often.

Red Pumpkin Chutney/Poosanikai Chutney#SundayFunday

This delicious, healthy chutney, vegan and gluten free, with no coconut added in this chutney, perfect as an accompaniment for idli, dosa, uttapam, appe or rice and dal. It has a hint of sweet flavor and tasted awesome. You can increase the spice level by adding more number of red chilies according to the sweetness of the pumpkin puree. 

Serves 2
Ingredients

½ Cup Heaped Pumpkin Puree
1 Teaspoon Tamarind Paste
Salt to taste
1 Tablespoon Tur Dal
1 Tablespoon Chana Dal
3 - 4 Dried Red Chilies
½ + 1 Teaspoon Oil
For The Tadka
½ Teaspoon Mustard seeds
A Pinch Asafoetida
1 Red Chilly
3 -4 Curry Leaves

Method
Chop pumpkin into pieces, steam and mash it, then, measure ½ cup.
In ½ teaspoon of oil first roast tur dal, chana dal, separately, when they turn golden then roast the red chilies, till it releases an aroma. Remove them on to a paper to remove any excess oil, let this cool.
Place the roasted ingredient in a small blender jar and grind to a coarse powder. Now add the mashed pumpkin, tamarind paste and salt to taste, grind this well to smooth paste. The chutney is ready, remove this into a serving bowl.
Let's prepare the tadka

Heat a teaspoon of oil in a tadka pan, when hot add the mustard seeds, when they crackle add the asafoetida, red chilly and curry leaves. 
Pour this over the chutney and enjoy!!

Chicken & Pecans Sandwich#Foodieextravaganza

This chicken sandwich is amazing, the combination of grapes with pecans, mixed in with a creamy mixture of mayonnaise, Dijon mustard and honey go so beautiful with perfectly juicy chicken. It's so easy to make and always ready to go, you pack it up and take it to work or school, this can be packed for lunch too. The Sandwich bundt bread is homemade.

Serves 2
Ingredients

½ Cup Shredded Chicken - I used leftover roasted chicken
½ Cup Torn Lettuce Leaves
1 Scallion - greens and white chopped
1 Tablespoon Raisins or Dried Cranberries - I used raisins
¼ Cup Toasted Pecan - roughly chopped
6 Red Seedless Grapes - cut in 4 pieces
1 Tablespoon Hot & Sweet Sauce
4 Tablespoons Mayonnaise
2 Triangle s Cream Cheese (room temperature)
1Teaspoon Dijon Mustard
1 Teaspoon Honey
1 Teaspoon Lemon juice
¼ Teaspoon Black pepper powder
Salt to taste
A Dash of All Purpose Seasoning - garlic powder
For the Homemade Bundt Bread
Ingredients
For The Dough

150 Grams All Purpose Flour
3 Grams Instant Yeast
10 Grams Caster Sugar
½ Teaspoon Sea Salt
2o Grams Butter
1/4 Cup Warm Milk
Warm water to knead as required 
Method
For the Bundt Bread 
Knead dough with warm water and leave it aside covered till double in volume.
When the dough has risen , take on the work surface and deflate it. Roll it into a log and place it in a small greased bundt pan. Bake it in a preheated oven at 200°C for 20 to 25 minutes. Take this out on to a cooling rack. Let it cool completely. After 3 -4 hours then use it to make the sandwich. I baked this bread the previous day.
The next day I sliced this bread to make the sandwich.
Just mix the mayonnaise, honey, cream cheese, lemon juice, Dijon mustard, black pepper powder, all purpose seasoning, salt to taste, well taste and then add any extra seasoning according to your taste if required.
Mix all the lettuce, chicken, scallions, grapes, raisins and pecans well, then add the prepared mayo dressing and toss it well.
Slice the bundt bread and then place the filling in the it.
Serve and Enjoy!!
