Keto Stir Fry Bok Choy With Garlic Dim Sum Sauce#SundayFunday

Bok Choy Dim Sum with crunchy baby bok choy in a garlic dim sum sauce. Every bite is burst with flavor, just like the dim sum you get at your favorite Chinese restaurant.
Serves 2
Ingredients

400 Grams Baby Bok Choy - cut into half
2 Tablespoons Coconut Oil or Sesame Oil

For The Garlic Dim Sum Sauce
4 Cloves Garlic - finely chopped
2 Scallions - green & white chopped
2 Tablespoons Coconut Aminos
1 Tablespoon Toasted Sesame seeds

Method
Cut the baby bok choy into two and clean it under running water well, to remove any dirt.
Bring a large pot of water to boil. Add the baby bok choy blanche it for 2 minutes. The vegetables should still be very crunchy. Plunge them in cold water to stop cooking. Set them aside to drain then place on a serving plate.

For The Dim Sum Sauce
In a heated skillet, add oil. Sauté garlic and scallion white part till fragrant, for about 1 minute. Add in coconut aminos, stir to combine the sauce.
Spoon the sauce over bok choy. 
Garnish with toasted sesame seeds and serve at room temperature or chilled.

White Hot & Sour Chicken & Prawns Soup#FishFriday

White Hot and Sour soup is a spicy and hot soup made with chicken, prawns and mixed vegetables. Super easy to make and takes 30 minutes from start to finish! It’s got that perfect hot and sour flavor that everyone will love.

Serves 2
Ingredients

500 Ml Chicken Stock
100 Grams Boneless Chicken Cubes
6 Big Prawns - chopped
½ Cup Chopped Cabbage
2 Tablespoons Tofu - tiny cubes
2 Tablespoons Diced Carrots
1 Green Chilly - finely chopped
1 Baby Bok Choy - chopped
1 Spring onion - white and green chopped
Salt to taste
½ Teaspoon White Pepper powder
1 Tablespoon Vinegar
1 Teaspoon Sugar - optional
1 Tablespoon Light Soy
1 Teaspoon Arrowroot powder/ Corn flour
½ Cup Water
1 Egg  -  beaten

Method
Heat a teaspoon of oil in a pot, sauté the chicken till it turns pink to white, add the stock and veggies bring it to a boil, reduce the flame and let it simmer for 5 minutes.
Then add all the seasoning and prawns till cook for 4 minutes thicken with corn flour paste and add beaten egg. Lastly add bok choy green and spring onions greens. 
Serve hot, this is delicious and satiating.

Vegetable Chilli Garlic Soup#Soupswappers

This simple and easy vegetable chilli garlic soup and it tastes incredible yum! It's soothing on cold winter evening or a rainy day. 
Serves 3 
Ingredients
1 Teaspoon Sesame Oil
3 - 4 Cups Vegetable Stock
1 Tablespoon Red Chilli Garlic Sauce
1 Tablespoon Soy Sauce
1 Teaspoon Chilli Vinegar
½ Teaspoon  White pepper
A Pinch of Sugar
Salt to taste
1 Teaspoon Hot & Sour Sauce
½  Cup  Sliced Carrots
½  Cup  Red, Green, Yellow Bell Peppers - diced
3  Cloves Garlic -  minced
½ Teaspoon Minced Ginger
2 Scallions -  finely 
chopped  with greens and separated
2 Tablespoons  Cornflour mixed with 1/3 Cup Water
1 Small Tomato  - de seeded and diced
4 Basil leaves  - torn
MethodHeat a teaspoon of sesame oil in a wok. Fry the garlic until it starts to leave an aroma but before it burns. Add the onion and fry for another minute. Pour the stock, sauces and pepper and bring to a boil. 
Add the vegetables and salt and boil for 2 minutes or longer until the vegetables have cooked but still crisp. Now add the cornflour paste and allow it to thicken. When thickened then add  the  scallions,  tomato, basil and the chilli vinegar  to the soup, just take a boil.  Take off flame.
Serve the soup with a drizzle of  chilli oil and enjoy it  piping hot.

Chicken Ramen Soup#Foodieextravaganza



Since November 12th is National Chicken Soup for the Soul Day. We are asked by our host Stacy to create our chicken soup recipe. 
My niece who often visit's Dubai is famous for posting her favorite Ramen Soup pic.  Inspired by her love for this soup, here is my take on the Ramen Soup. Though I, have never tasted this soup, made it as per the pic she post. It was simple to make yet very delicious and soul comforting. Loved having it.
Serve 2
Ingredients

1 Chicken Breast
5 Button Mushrooms- sliced
1  Bok Choy - chopped
1 Celery stem - chopped
2 Cups Chicken Stock
2 Tablespoons Light Soy sauce or according to your taste
A Dash of Chilly Flakes
Salt And Pepper to taste
1 Teaspoon Parsley
1/4 Teaspoon each Butter & Sesame Oil
2 Soft Boiled Egg
2 Small Packs Ramen Noodles

Method

Heat a grill pan with butter and on high flame sear the chicken breast till it changes color  and get grill marks on both sides
In the same pan add the mushrooms and saute for a minute.
In another sauce pan add the stock, celery stem, bok choy, parsley, the chicken and mushrooms bring this to a rolling boil. Cover and let it simmer for 5 to 7 minutes on medium low flame. Now add the soy sauce, sesame oil, salt, pepper and chilly flakes mix this well and let it simmer on low flame again for 3 -4 minutes.
In the meantime boil the egg and noodles. Keep aside.
When the soup is done serve it hot.
First arrange the noodles in the center arrange the chicken slices and egg slice as shown in the pic and pour in the broth and enjoy.  This is a healthy and filling soup, does not require any accompaniment.
