Keto Big Mac Chaffle Burger#SundayFunday

This Keto Big Mac Burger Recipe is made with juicy homemade burgers, homemade Keto Big Mac Sauce, chaffles, pickles, onion, cucumber, tomato and cheese for the perfect copycat homemade Keto Big Mac.
Big Macs were always a favorite of mine and this low carb version on a soft, fluffy chaffle is absolutely perfect for a low-carb lifestyle and that’s sure to become a regular on your meal plan! The Big Mac sauce takes these over the top delicious!
Ingredients
For The Chaffles

2 Large Eggs - beaten
2 Tablespoons Almond Flour
2 Tablespoons Mayonnaise
¼ Teaspoon Baking powder
For The Big Mac Patties
500 Grams Beef Mince
¼ Teaspoon Pink Himalayan Salt
¼ Teaspoon Black pepper powder
2 Slices Cheddar Cheese
2 Tablespoons sugar-free Thousand Island dressing
¼ Cup Shredded Lettuce
2-3 Pickle Slices
For The Copycat McDonald's Sauce
½ Cup Mayonnaise
2 Tablespoons Sugar Free Ketchup
1 Tablespoon Vinegar
1 Tablespoon Minced Dill Pickle
1 Teaspoon Sugar Free Sweetener - optional
1 Teaspoon Finely Diced Onion
Salt & Black pepper to taste
Method
To Make The Chaffles

Preheat the waffle maker.
In a bowl, mix all the ingredients together until well combined.
Pour half of the mixture into the preheated waffle maker and cook until crispy, about 3-4 minutes. Repeat with the remaining mixture to make chaffles.
For The Copycat McDonald's Sauce
Mix all the ingredients well to form a sauce and refrigerate it till all components are ready.
To Make The Beef Patties
In a skillet over medium-high heat, heat oil.
Mix in the beef with salt and pepper well. Divide it into equal portions and shape into patties.
Fry the patties with just a little oil on both sides till browned and cooked. Top each patty with a slice of cheddar cheese and let it melt.
To Assemble The Big Mac Chaffle Burger
Spread one or two tablespoons of the sauce on each chaffle.
Place one beef patty on one chaffle.
Top  this with shredded lettuce, pickle slices, tomato, cucumber and the second beef patty.
Cover with the third chaffle to form a sandwich.
Serve the Keto Big Mac Chaffle Burger immediately while hot and enjoy your keto-friendly meal!

Keto Tuna Melt Chaffles#FishFriday

These tuna melt chaffles are so quick and easy to make them than the tuna patties, than it does, take to make a keto chaffle recipe. These are so delicious and make a sandwich out of it, makes a complete filling meal. Chaffles are very filling, with avocado, tomato, lettuce, cheese... what more would you want when you follow a low crab diet.
This recipe makes two tuna melt chaffles. You can also substitute in or change any of the flavorings/seasonings as you like.

Serves One
Ingredients

1 Tablespoon Almond Flour
¼ Cup Shredded Cheddar Cheese - I used shredded Gouda
1 Large Egg
¼ Teaspoon Minced Garlic
½ Teaspoon Lemon Juice
A Dash of Salt & Pepper
1 Can (128 Grams) Tuna - drained
½ Tablespoon Finely Chopped Dill Pickle
½ Tablespoon Finely Chopped Onion
1 Tablespoon Finely Chopped Celery

Method
In a small food processor, pulse the almond flour and cheddar until it resembles panko bread crumbs. Add the egg, garlic, lemon juice, salt and pepper and blend/process for 10 seconds.
Transfer to a mixing bowl or Pyrex measuring cup, then add the tuna, pickle, onion, and celery. Mix thoroughly with a fork or spatula.
Split the batter between two waffle compartments of a waffle maker and cook for approximately 5 minutes 
or until there is just a whisper of steam coming out of the waffle maker. 
I then flipped them and closed the waffle maker and kept it for 2 minutes, to make them very crispy and golden.
Transfer to a plate or cooling rack and allow to cool for a couple of minutes before serving.
Serve with mayo, lemon or make a sandwich with them.

Nutritional information is based on the entire recipe - two chaffles.

Keto Chaffles - Low Carb No Cheese No Sweetners#PotluckParty

What is a Chaffle?
It’s a waffle made with cheese hence the play on the word waffle starting with a ch instead of a w. There have many variations, all over the internet for Keto chaffle which is also a keto version of a wonder bread. All who follow a Keto/Low Carb diet do not incorporate flour which is high in carbs. Instead of having regular flour bread and other goods, it's always flourless in keto. Flour's made from coconut, almond , cashew, flaxseed, chia seeds ..to make bread's etc.  
Chaffles have overtaken the Keto world by a storm? You will find numerous variations of the same on the internet.. be it Facebook, Google or YouTube, every Keto follower will make their own version to enjoy in their keto diet. When you are on a keto diet, bread, pancake, cakes etc.., are things that one craves for after sometime, so for every normal flour goods you will find a keto replacement.

In my version of Chaffles, I have not used cheese or any type of keto sweeteners. I have used this to make sandwiches...check this recipe here.
If you are following a Keto Diet then this recipe is perfect for you. These are light and delicious. You will not miss Waffles.. that I can assure you. 

You can use chaffles for a Keto hamburger bun, Sloppy Joes, hot dog bun or to make a sandwich. It also make fantastic breakfast sandwiches and a whole lot more as well. 

I have seen many using a Dash mini waffle maker, which is the perfect size for the Chaffle recipe. Since I already have a regular waffle iron, I did not want to invest in buying one just to make Chaffles, might as well use what you already have. 
The best part of making Chaffles is that they freeze very well. They stay good in the freezer for more than a month to three months. These come handy just when you want them. You can reheat them in the waffle maker or microwave or a pop up toaster. I reheat them in my air fryer, they are crisp and fresh to use on reheated. These take just 30-45 seconds to reheat. 

Makes 7 Chaffles
Ingredients

6 Eggs - beaten
1/3 Cup Keto Pasteurized Mayonnaise 
½ Teaspoon Baking powder
2 Tablespoons Coconut flour
½ Teaspoon Salt to taste Seasonings of your choice!
¼ Teaspoon Garlic Powder
¼ Teaspoon Onion Powder
¼ Teaspoon Cinnamon powder

Method
Whisk the eggs well, then add in the mayonnaise and whisk until well combined, then add in baking powder, coconut flour and mix well. Then goes in all the seasonings, like salt, black pepper powder, onion , garlic and thyme powder. Can add whatever other seasonings of your choice.
Heat the waffle maker and when heat, grease the waffle iron with olive oil or butter. Pour the batter ( do not overfill or will the overflow and it will messy to clean). Fill all the gaps/holes and close the waffle maker.
It takes about 3 - 4 minutes for the chaffle to reach a golden brown color ( depending on the waffle make). Once it is done, it should be easy to remove from the waffle maker.
Don't have a waffle maker, or do not wish to make chaffles then use the same batter and make pancakes using a non stick pan.
These are light and delicious.

Keto Irish Scrambled Eggs With Chaffles#SundayFunday

This is a Keto/low carb recipe, decided to make these for my brunch, you can have these for breakfast too. These scrambled eggs were amazing, buttery, creamy and delicious. I enjoyed them with Keto Chaffles( Waffles), a fantastic combo. 
Serves One
Ingredients
 
2 Large Eggs 
Salt & Black pepper powder to taste 
1 Tablespoon Butter 
2 Tablespoons Heavy Cream

Method
Crack two eggs into a bowl, add salt and pepper to taste, and mix with a fork.
Beat the cream, add eggs well.
Add butter, in a frying pan, over low heat, when the butter foams, add the egg mixture and stir constantly with a wooden spoon until eggs are set {they look about 75% cooked and slightly wet}.
Serve with a sprinkling of chopped scallion green or chopped parsley, and enjoy immediately with a chaffle, slice of cheese, some crisp ham slices and slices of tomato and cucumber.
This was my satisfying brunch.
