Keto Coleslaw With Keto Thousand Island Dressing#SundayFunday

Keto Thousand Island Dressing is perfect over salad or on top of burgers / wraps etc..!  So simple with just a handful of ingredients! Try this dressing, you’ll never purchase a store bought again! This dressing takes just 10 minutes to prepare and is both low carb and delicious! 
2 Tablespoons of this dressing has 3 grams Carbs. This is a delicious salad made with this dressing.

Ingredients
For The Dressing

1 Cup Mayonnaise
¼ Cup Sugar Free Ketchup
¼ Cup Sugar free Sweet Pickle - chopped
¼ Cup Sugar free Sweet Pickle Juice
1½ Tablespoon Minced Onion
1 Large Clove Garlic - minced
2 Tablespoons Red Bell Pepper , chopped - optional
1½ Large Hard Boiled Egg - pressed through a fine sieve
For The Salad
½ Medium Head Cabbage
1 Small Carrot
½ Cup Shredded Lettuce
2 Tablespoons Heaped Keto Thousand Island Dressing
Salt & Black Pepper to taste

Method  
For The Dressing
Place mayonnaise, ketchup, chopped sugar-free sweet pickle, pickle juice, minced onion, minced garlic, red bell pepper ( I did not add), hard boiled egg in a mixing bowl and mix well to combine.  
Pace all ingredients in a blender and pulse until the ingredients are smooth. If you want a chunky dressing, then pulse it once or twice only. Store salad dressing in refrigerator and use within 7 days

For The Salad 
Mix all ingredients in the bowl and refrigerate for at least 30 minutes so that the flavors infuse. Serve cold.

Vegan Italian Pasta Salad With Basil Dressing#SundayFunday

So flavorful pasta salad with fresh herbs, tomatoes, olives, pickled pepperoncini's, red onion and a basil dressing. It’s perfect for potlucks and picnic's. This Vegan Italian Pasta Salad is quick, easy to put together.

For Pasta Salads, cook the pasta a little longer than the directions given since Al denté is ideal for hot pasta dishes, but for pasta salads it should be a little softer/slightly overcooked pasta. Pasta firms up a lot once it’s cold hence a slightly overcooked pasta works best for salads.
Ingredients 
For The Basil Dressing
¼ Cup Olive Oil 
1 Teaspoon White Vinegar
1 Tablespoon Water
½ Teaspoon Sea Salt or to taste
¼ Teaspoon Garlic Powder
¼ Teaspoon Onion Powder
¼ Teaspoon Sugar
12 -15 Fresh Basil or more to your taste
¼ Teaspoon Dried Basil
¼ Teaspoon Black Pepper Powder
For The Salad
2 Cups Boiled Pasta
1 Cups Cherry Tomatoes - chopped
2 Tablespoons Fresh Herbs (I use basil, thyme & oregano)
⅓ Cup Green & Black Olives - chopped
1 Small Red Onion - chopped
1 Tablespoon Pickled Pepperoncini's - chopped

Method
Cook pasta according to package instructions, but add an extra minute to the cooking time. The pasta should be just slightly overcooked .
While the pasta is cooking , let's prepare the dressing.
Add all of the dressing ingredients to a blender. Blend on medium-high speed until the dressing is a creamy light green with plenty of fresh basil flecks are seen throughout.
Drain the pasta and transfer it to a large bowl. Immediately toss the hot pasta with ⅔ of the dressing (enough to liberally coat). Chill.
Once the pasta is cold, mix in dressing mixture, tomatoes, olives, chopped herbs, pepperoncini's, and red onion. Chill. 
Taste and adjust seasoning before serving.

Grapefruit Chaat Salad Bowl#Foodieextravaganza

This is a simply lip smacking tangy salad bowl. It's so delicious that you will love it, its also low carb, just 2 grams Carb per serving.
This pink-orange citrus fruit is not only beautiful but has a long list of health benefits like rich Vitamin C plus plenty of minerals like calcium, magnesium, phosphorus, and potassium. 
Serves Two
Ingredients

2 Large Grapefruit
1 Teaspoon Chaat Masala
½ Teaspoon Red Chilli powder
¼ Teaspoon Black Pepper powder
¼ Teaspoon Black Salt/Kala Namak
6 - 8 Mint Leaves

Method 
Peel the grapefruit and remove the white pith. Separate into segments, remove the seeds and place in a bowl.

Add red chilly powder, black pepper powder, black salt, chaat masala and mix well. Add mint leaves and mix.
Transfer onto individual serving bowls, garnish with a mint sprig and serve immediately.

Shrimp Pasta Salad#FishFriday

A quick and easy summer salad, shrimp pasta salad comes together quickly and makes a complete meal. For this I used mixed pasta, you can use any pasta of your choice.

Serves 2
Ingredients

1½ Cup Mixed Pasta - boiled
1 Tablespoon Olive Oil
1 Tablespoon Butter
2 Shallots- thinly sliced
4 Cloves Garlic - chopped
A Juice Of One Lime
4 Tablespoons Tomato Puree
1 Teaspoon Cayenne pepper
15 - 16 Shrimps - deveined & cleaned
2 Tablespoons Chopped Parsley
½ Cup Diced Colored Capsicums
Salt to taste
Method
Cook the pasta in boiling water according to package instructions; add a dash of salt olive oil. When the pasta cooks to al dante, remove from the heat drain and keep aside.
Heat the butter and olive oil in a large heavy skillet. Sauté the shallots and garlic on medium high flame for 2 minutes. Now add the tomato puree, cayenne pepper and sauté for 3 - 5 minutes or until it's cooked on medium low flame. Add the shrimp and salt to taste. Cook for just 4 - 5 minutes or until the shrimp turns pink. Stir occasionally so that the shrimp is nicely coated in the sauce. Do not over cook the shrimp. Finally, stir in the colored capsicums and lemon juice, cook on medium flame for a minute or two only. Stir in pasta and parsley give it a good mix, remove from the heat.
Serve garnish with a generous sprinkling of chopped parsley.
Enjoy a complete and delicious shrimp pasta salad as a filling meal.

Mango & Cucumber Salad#Foodieextravaganza

This Mango Cucumber Salad, it’s sweet and crunchy, with a hint of spice, light and refreshing. Mango is a sweet tropical summer fruit can now be part of your dinner too!
.
Serves 4
Ingredients
  
2 Firm & Ripe Mangoes diced
1 Large Cucumber diced
1 Medium Onion - diced
1 Medium Capsicum/ Green pepper - diced
1 Tablespoon Lime Jucie
1 Teaspoon White Vinegar
1 Teaspoon Red Chilly Powder


Method  
Combine mangoes, cucumber, red onion, and green pepper in a large bowl. Add the lime juice, to the the salad. Add vinegar and red chilly powder. Toss to combine. Serve it in a bowl with a sprinkle of chilly powder. Refrigerate and allow to marinate for an hour before serving. 
Enjoy this chilled salad!!

My Notes
Be sure mangoes are ripe. They will be soft to the touch and fragrant.

Colourful Fruit Salad Pudding#SundayFunday

Colourful Fruit Salad Pudding is very quick and easy to make. It is a wonderful recipe that you could make for a family get together or parties. This is a special delight for kids who will love this this fruit salad which is also healthy and it is an easy way to get them to eat plenty/all kinds of fruit at once.
For this you can use any fruit that is readily or seasonal available, but do try this ... it's a delight isn’t it…!!!
Ingredients
Grapes - Green & Black
Pears
Watermelon
Apple
Musk Melon
Boiled Brown Gram
Greek Yogurt/Thick Fresh Hung Curd - whisked
Sweet Date & Tamarind Chutney
Homemade Frankie Masala

Method

Take the fresh curd and drain the water by hanging it over night or 4-5 hrs in the refrigerator. Then whisk it. Keep it in the refrigerator till you assemble the fruit salad.
Chop the fruits in small pieces.
In a bowl layer all the cut fruits and add Homemade Frankie Masala to taste. Mix well. Spoon these into individual serving bowl. Add the whisked hung curd. Add a drizzle of sweet chutney, then again a dash of frankie masala. 
Serve chilled, Enjoy your colourful pudding.

Easy In A Minute Super Thick Mayonnaise#SuperClubSaturday

This super thick mayonnaise is made in one minute! Thick, creamy and super easy to make, homemade mayonnaise is delicious. This recipe is no fail recipe! The color is yellow because I used American mustard paste, there is no difference in taste.

Ingredients
¾ Cup Extra Light Olive Oil
1 Egg Yolk
2 Teaspoons Dijon mustard - I used American Mustard
1½ Teaspoon Apple Cider Vinegar
½ Teaspoon Level Lemon Juice
¼ Teaspoon Sea Salt or to taste

Method

Place the ingredients into a pint-sized, wide-mouth mason jar. Insert the immersion blender all the way to the bottom of the jar. Start blending and leave the blender at the bottom for 10-20 seconds, allowing the mixture to start emulsifying.   
Once the ingredients are incorporated you see it thicken at the bottom then keep processing immersion blender pulling it up and down until completely blended.  
Use a spatula to stir the mayo vigorously after blending to smooth it out.   
Store in the fridge for 4-5 days.
My Notes
If you like a strong mustard taste then increase it by ½ teaspoon.
