Homemade Deep Fried Nachos With Cheese Sauce#Foodieextravaganza

Since November 6 is National Nachos Day. Our Host Stacy asked us to celebrate it by sharing our favorite nacho recipes, both traditional and creative!

Nachos are my all-time favorite snack of choice. With a good Spicy Nacho Cheese Sauce, made with 2 types of cheese and diced jalapenos, this dip is creamy, cheesy, spicy,  a real pleasure! 

Ingredients

For The Cheese Sauce

1 Cube Cream Cheese
½ Cup Cheddar cheese
1 Tablespoons Homemade Pickled Jalapeno Syrup
1 Tablespoon Chopped Homemade Pickled Jalapeno
2 Tablespoon Milk


Method

For the dough check the recipe here.  It just that, I, deep fried them.  
When the oil is hot add a the nachos triangles and fry till it is just starts getting golden on both sides.
Take it out with a slotted spoon drain all the oil.
Keep aside. Like wise fry the rest of the nachos.

For The Cheese Sauce

In microwave bowl add the milk and both the  cheese  and micro on high at short burst for 30 seconds each till the cheese melts. Once all the cheese are dissolved, add the jalapeno juice  and mix it well this will give the cheese a distinctive and delicate consistency. 
Now stir in the chopped jalapenos and pour this into a serving bowl and enjoy this when still warm with nachos.
Dip the nachos into this sauce and enjoy!!

Roasted Tomato Salsa Sauce - Vegan & Gluten Free

This chunky, smoky,  quite spicy salsa tastes amazing, use this as a dip, with tortilla chips, for wraps, salad or to make burrito's.
Makes  Cup 
Ingredients
1 Tablespoon Olive Oil
A Handful of chopped Basil leaves
3 Large Tomatoes - Roasted
2 Small Tomatoes - finely chopped
1 Medium Onion - finely  chopped
1 Medium Green or Red bell pepper - finely chopped
3 Big Cloves Garlic  - finely chopped
1 Teaspoon Ginger - finely chopped
3 Green chillies - finely chopped
2 Tablespoons Lemon juice
Tablespoons Tomato puree - I used tetra pack
1 Tablespoons Kashmiri Red Chilly paste or
 Kashmiri red chilly powder as per your taste -  I used paste
Salt to taste

Method

Roast the tomatoes on the gas flame till charred.  Peel the skin and wash them clean.  Then blend them, keep aside

Grind the ginger, garlic and green chilly to a fine paste.
In a pan, heat oil, add chopped onion,  ginger garlic- and green chilly paste.  Saute for a minute or two now add   or green bell pepper and  blended tomatoes, kashmiri red chilly paste, finely chopped tomatoes and blended roasted tomato puree, mix well and let it cook till it become a thick sauce.  Turn off the flame add lemon juice  and chopped  basil. 
Mix well and the Roasted Tomato Salsa Sauce is ready to use.
This is a spicy and a deliciously vibrant, earthy, and smoky-tasting salsa sauce you will definitely enjoy.

Spicy Grilled Shrimps With Pea Risotto#FishFriday

I  made this  risotto with sweet fresh peas for a complete yet a light meal  with  Spicy Grilled Shrimps.  Creole spice gives a nice kick to the shrimps. Try and make this and you will love it.
Single Serving
Ingredients

For the Shirmps

1 Tablespoon Oil
1 ½ Teaspoon Creole Spice Blend
1 Tablespoon Lemon juice
200 Grams Cleaned & De Veined Shrimps

Salt to Taste
For the Risotto
1 + 1 Tablespoon Butter
1 Small White Onion - chopped
2 Big Cloves Garlic - minced
½ Cup Arborio Rice
2 Tablespoons White Wine
1 ½ Cups Vegetable broth 

1/3  Cup Fresh Peas
2 Tablespoons Parmigiana Cheese - grated
Salt & Black pepper powder to taste
1 Teaspoon Lemon juice


Method
For the Shrimp

Mix the oil and creole spice blend and marinate the shrimp in it. Keep it aside for 15 minutes. 
After 15 minutes grill the shrimp in a lightly oiled pan until cooked, about 3 minutes per side.
For the Risotto
In a pan boil the fresh peas till done. Drain the water and keep aside.
In a another heat the stock and keep it simmering on low flame.

Melt a tablespoon of butter in large pan. Add the onion and garlic, saute until the onion softens only, for about 3 - 4 minutes. 
Add the rice  
stir to coat with the butter.  
Add the wine, de glaze the pan and stir while simmering until it is gone.
Add 1/2 cup of the stock at a time and stir while simmering until it is gone 
 and nearly absorbed.
Continue until the rice is cooked al dente. 
Mix in the  parmigiana  and remaining tablespoon butter and stir until the cheese, black pepper powder and butter. Stir it  till the cheese melts. 
Mix in the peas and 
give stir it well.
Remove from heat and mix in the lemon juice.
Serve this in a plate with the grilled shrimps on top. 
Enjoy !!!

Mexican Style Sloppy Joes#FantasticalFoodFight

It’s time for Fantastical Food Fight headed up by Sarah Ellis at Fantastical Sharing our theme is "Burgers".
This Mexican Style Sloppy Joes are the perfect easy, full of flavors and make a complete meal which your kids and even adults will love! They are also packed with all kinds of hidden veggies too, which makes them perfect for kids. Have these on nachos, tacos, fajitas or hamburger buns with lettuce, tomatoes, cheese and of course, salsa and sour cream the choices are endless! They’re the perfect alternative to a quick and filling dinner or lunch.

Servings 3
Ingredients
300 Grams  Mexican Chicken  - I used this recipe
3 Burger Buns

For the Filling

Mayonnaise
Mexican seasoning
Lettuce or finely shredded Cabbage
Sliced Tomatoes
Cheese slices.

Method
Add to the mayonnaise , Mexican Seasoning and shredded cabbage mix it well. Keep aside.
Apply the mayo mix lavishly on the one side of burger bun
top it with the chicken mix and then, 
cheese slice
and sliced tomatoes. 
Apply the mayo mix to the other side of the burger bun too.
 Cover it and pierce a tooth pick to hold it together
Enjoy!!

Flaked Fish Tacos#FishFriday

These are healthy and filling tacos. Healthy since they are made without cheese and contain veggies. A taco can be made with a variety of fillings, including beef, pork, chicken, seafood, vegetables, and cheese.
I have used Homemade Taco Shells, check the how to make them here.
Makes 6 - 7 Tacos 
Ingredients 
For the Purple Cabbage Slaw
1 Cup Shredded  Purple Cabbage Or Green  
1 Medium Onion - sliced
1/4 Cup Sour Cream  or as required
1 Teaspoon Lemon Juice 
¼ Teaspoon  Salt or to taste 
For the  Tacos 
150 Grams Boneless & Skinless Fish Fillets
¼ Teaspoon Ground Cayenne Pepper 
¼ Teaspoon Garlic Powder 
¼ Teaspoon Cumin powder 
¼ Teaspoon Salt or to taste
¼ Teaspoon Black Pepper 
To Garnish 
Homemade Corn Tacos Shells as required 
Chopped Coriander Leaves as required
Lemon juice to drizzle as required 
Method
In a large bowl, combine cabbage, onion, sour cream, lemon juice, and salt. Chill until ready to serve. 
In a bowl, mix cayenne, garlic powder, cumin, salt, and pepper. Season each fish fillet on both sides with the seasoning mix. 
Heat a pan with a tablespoon of oil and fry  fish on both sides  until done. 
Flake  the fillets  and keep aside. 
Just  before serving, heat the corn tortillas in Air fryer at 180 degrees for 3 -4 minutes. 
Assemble the tacos shell in a serving dish .
Fill each with the purple cabbage slaw and fish. Garnish with coriander and lemon juice and enjoy as an appetizer or as a main course. These are filling and yum.
