Keto Coconut Flour Pancake & A Sandwich Burger#SundayFunday

This Keto sandwich uses pancakes as the bun and it’s filled with amazing soft scrambled or fried egg, sausage patty or any leftover chicken with cheese slice. One sandwich is just sufficient with a salad at the side to fill your tummy. Feel satisfied and happy after eating this meal. In the batter you can add fresh or dried herbs of your choice.
Makes 4 Pancakes & 2 Sandwich Burgers
Ingredients
2 Large Eggs
2 Tablespoons Coconut Flour
2 Tablespoons Parmesan Cheese
1/8 Teaspoon Baking Soda
1/8 Teaspoon Baking Powder
1/8 Teaspoon Salt
1/8 Teaspoon Dried Chives
1/8 Teaspoon Dried Parsley
4 Tablespoons Milk - I used Full Fat Milk
1 Tablespoon Butter
Method
In a bowl, mix together all the dry ingredients. Then add the eggs and milk, stir until there are no lumps. Let it sit for a minute (the batter will get a little fluffier).
Melt ½ tablespoon butter in the pan, and pour two small sandwich sized “pancakes” ( about 2 - 2½ tablespoons each) into your pan on medium heat. It will only spread a little bit. 
When the tops start to bubble and the sides look brown, check to see if the bottom is brown, and if so then flip them both over.
Now let's assemble our Sandwich Burgers
To make a grilled sandwich you can add filling of your choice.
 
One I made with leftover grilled chicken
and a cheese slice. Place the filling on one pancake the leftover chicken, the cheese slice
now place the second pancake on top with the un-done side up.
Flip when the bottom is brown, and continue cooking till the cheese is melted
and the sandwich is done!
Now make the other 2 pancakes like wise with the remaining ½ tablespoon butter. 
As I mentioned earlier I made this with a fried egg and slice of cheese. 
This sandwich is not crunchy like regular bread when made into grilled cheese. 
It has a great flavor and wonderful bread-y texture. I had half of the egg and half of the chicken. The other half's I refrigerated for another meal. The extras will keep in the fridge for a day or so (you can toast them or heat them back up in the pan… or eat them cold!).

Cal 137, Total Carbs 6g Net Carbs 3g, Fiber 3g, Fat 8g, Protein 10g.

Hunter Beef Sandwiches#Foodieextravaganza

These Beef Sandwiches are incredibly delicious and filling. A perfect meal to carry for your office lunch or kids school lunch box. You can cut up beef roast in smaller portions, repackaged it and send this as a gift to your loved ones or carry them for a party.

Ingredients
Hunter Beef  - sliced / shredded
Cheese slices - as required
Mayonnaise - as required
Dijon Mustard - as required
Romaine Lettuce - as required
Pickled Radish Slices - as required
Tomato Slices - as required
Butter as required to Toast
Hot Dog Buns/Bread Slices

Method
Slice the Hunter Beef thinly or shred it whatever way you wish. I have made burger's as well as sandwiches with this.

For the shredded Hunter Beef sandwiches 
I, shredded the beef and then buttered the slices , topped it shredded hunter beef and enjoyed.
For the Hot Dog Buns
Applied butter to the hot dog buns then toasted it, slathered it with mayo then Dijon mustard, then placed a lettuce leaf, arranged the hunter beef slices, tomato slices and pickled radish on top, placed a slices of cheese, closed the buns.
Serve and enjoy!!

Mexican Style Sloppy Joes#FantasticalFoodFight

It’s time for Fantastical Food Fight headed up by Sarah Ellis at Fantastical Sharing our theme is "Burgers".
This Mexican Style Sloppy Joes are the perfect easy, full of flavors and make a complete meal which your kids and even adults will love! They are also packed with all kinds of hidden veggies too, which makes them perfect for kids. Have these on nachos, tacos, fajitas or hamburger buns with lettuce, tomatoes, cheese and of course, salsa and sour cream the choices are endless! They’re the perfect alternative to a quick and filling dinner or lunch.

Servings 3
Ingredients
300 Grams  Mexican Chicken  - I used this recipe
3 Burger Buns

For the Filling

Mayonnaise
Mexican seasoning
Lettuce or finely shredded Cabbage
Sliced Tomatoes
Cheese slices.

Method
Add to the mayonnaise , Mexican Seasoning and shredded cabbage mix it well. Keep aside.
Apply the mayo mix lavishly on the one side of burger bun
top it with the chicken mix and then, 
cheese slice
and sliced tomatoes. 
Apply the mayo mix to the other side of the burger bun too.
 Cover it and pierce a tooth pick to hold it together

Paneer Burger with Eggless Burger Buns and Strawberry Jam with Eggless Butterless Wholewheat Flaxmeal Dinner Rolls - A Combo Post



This is a combo post for the Blogging Marathon - Taming the yeast challenge. Our host Srivalli suggested that two days we make the bread and on the third day we do a combo post for the breads prepared.


Homemade Strawberry Jam with Eggless Butterless Wholewheat Flaxmeal Dinner Rolls.



 We had the Butterless Wholewheat Flaxmeal Dinner Rolls with Homemade Strawberry Jam . Slice the bread spread lots of jam and have it with a mug of coffe or tea.  Thats great na!!



Paneer Burger with Eggless Burger Buns


To Make the Paneer Tikki.

Ingredients

400 Grams Paneer
2 Large Onions - pureed
7 Tablespoons All Purpose Flour
1 Teaspoon Mixed herbs
2 -3 Drops of Capsico sauce
Salt to taste
For Coating
Fine Bread Crumbs
1/2 Teaspoon Mixed herbs + a pinch of salt

Oil for frying

Method

Cut the paneer into a square and thick slice ( see pic). I got only four thick slices after trimming the sides.

Mix the  ingredients for the coating and keep aside.

Keep oil for heating while the preparation process is on.  The oil should be very hot for frying the paneer slices.  I shallow fried the paneer in a small cast iron kadai so, used very little oil.

 Mix the onion puree, all purpoise flour, salt, capsico sauce  and mixed herbs well.  Take each slice of paneer and coat it with this marination. 


Then coat with bread crumbs.


Fry on high flame till the brown on one side then turn and brown the other side.  Be careful while turning the paneer or it will crumble. Let is cool a little so that handling is easy.  


Butter the burger bun on both sides and toast it lightly.

Then add  the paneer tikki, ketchup or mayonnaise ( I added ketchup) and then top it with lots of finely chopped salad leaves and  few drops of capsico sauce .


Serve.  We enjoyed this burger for our dinner. The coating of onion on the paneer gives a awesome and crispy taste.



Preparing burgers at home is really cheap and healthy, since the oil is never recycled.  When I prepared the paneer buns we had one each and were full.   Do try it.


I made  milk mayonnaise but somehow the texture and taste that is required for mayonnaise was not there so I did not use it.  But will try again with some additions and subtractions.  This mayonnaise  I will use, not let it go waste.  Will post a recipe soon.
