Chicken Pasta Caesar Salad#SundayFunday

Hearty and satisfying main-course salad, are so delicious and quick. This vibrant salad is so good on it's own that you don’t need to do much to make them into a delicious meal. This salad bowl will brighten up our dinner table with a colorful mix of veggies and greens.
Ingredients
1 Cup Grilled Chicken Cubes or Leftover Boiled Chicken
1½ Cups Macaroni
2 Cucumbers - chopped in tiny cubes
2 Tomatoes seeded & chopped in tiny cubes
2 Capsicum seeded & chopped in tiny cubes
2 Apple - chopped in tiny cubes
2 Tablespoons Vinegar
1 Teaspoon Salt
1 Teaspoon Black pepper
½ Cup Mayonnaise
1 Cup Caesar Dressing - Homemade
1 Teaspoon Mustard paste
2 Tablespoons Ketchup
2 Tablespoons Caster Sugar
1 Iceberg lettuce

For the Caesar Dressing
Ingredients

2 Cloves Garlic - minced
2 Tablespoons Lemon juice 
1 Teaspoon Mustard paste 
1 Teaspoon Worcestershire sauce 
1 Cup Homemade Mayonnaise
½ Cup Grated Parmigiano-Reggiano cheese
¼ Teaspoon Salt 
¼ Teaspoon Black pepper powder

Method
Whisk together the garlic, lemon juice, mustard and Worcestershire sauce. Add the mayonnaise, Parmesan cheese, salt and pepper and whisk until well combined. The dressing will keep well in the fridge for about a week.
Boil the macaroni as per package instructions and keep it aside.
Remove the big leaves of the lettuce. The small one chop it and use it in the salad.
Mix all above together, serve over a bed of iceberg lettuce, chill.

Cheesy Potato Chips Skillet Pie#SundayFunday

There is no better classic combo than potato and cheese. This cheesy potato chip pie is so easy to make, just whisk all the ingredients in a bowl to make a smooth sauce, arrange the potato chips in the base of skillet and just pour all the prepared sauce, garnish and it's ready to bake. No cooking or cutting and chopping.
This pairing is a real crowd pleaser and kids delight no matter whatever form it's made. This recipe uses plain potato chips and 2 types of cheese. I have used cheddar and provolone cheese, you can substitute provolone with mozzarella cheese. Since it is made in a cast iron skillet it requires not plating.

Serves One
5" Cast Iron Skillet
Ingredients

½ Cup Fresh Cream/Cooking Cream
½ Cup Plain Thick Yogurt
½ Cup Mayonnaise -With Egg ** See My Notes
1 Egg
Plain Potato Chips - as required - I used Lay's
½ Cup Shredded Cheddar cheese
½ Cup Shredded Provolone Cheese or Mozzarella
½ Teaspoon Paprika powder
½ Teaspoon Fresh Dill
¼ Teaspoon Thyme
Salt and Pepper to taste
Chopped Scallion/Green Onions for garnish
Butter - as required to grease the skillet
Sour Cream to serve
Method
Preheat oven to 170˚C. Grease a 5-inch pie pan/cast iron pan.
Mix both the grated cheddar and provolone cheese and keep aside.
In a very large bowl whisk together cream, yogurt, egg, mayonnaise and spices.
Arrange the potato chips to fit the base of skillet. 
Pour the creamy sauce oven the chips, lifting the chips gently with a spoon so that sauce seeps to the base of the skillet.
Spread all the cheese on top. 
Sprinkle scallion green on top.
Bake for 25 minutes or until cheese on top is beginning to brown. Allow to cool for 5 to 10 minutes.
Serve with sour cream and En..joyy!!
This serves one as a complete meal and it’s a rich comfort food. This was for my hubby and he enjoyed it!!
My Notes
If you do not have mayonnaise then add 2 tablespoons melted butter.

Chocolate Mayonnaise Bundt With White Chocolate Ganache#BundtBakers

You will definitely love this Chocolate Mayonnaise Cake, it's rich in flavor and a dense cake , but, soft and moist. Mayonnaise makes the cake soft and moist. This can be made with egg based or vegan based Mayonnaise.

1 Cup = 200Ml
Ingredients
Dry Ingredients

2 Cups All Purpose Flour
1¼ Cup Caste Sugar
1/3 Cup Cocoa Powder
2 Teaspoons Baking Powder
Wet Ingredients
1 Cup Mayonnaise- I used Mayonnaise With Egg
1 Cup Water
¼ Teaspoon Salt
1 Teaspoon Vanilla essence
For White Chocolate Ganache
150 Grams  Dark Chocolate -  cut into small pieces
1/3 Cup Heavy Cream
¼ Cup Milk
1 Teaspoon Butter


Method 
Sift all the dry ingredients - flour, cocoa powder, baking powder in a mixing bowl.
In a large bowl add the mayonnaise, salt, vanilla essence and ½ of the water . Whisk in to form smooth batter.
Grease the cake pan and layer it with parchment paper. Pour in the cake batter and tap the cake pan gently to release the air bubbles and it also gets spread evenly.
Bake this cake at 180°C for 30 minutes or till the cake is done.
Do test with a toothpick and it must come clean.
Unmold the cake when completely cooled.
White Chocolate Ganache
Place the chopped chocolate cream and milk in a medium sized sauce pan. Place the sauce on a double boiler , stirring till the chocolate melts. When the chocolate melts, stir it well add the butter, mix it well and allow to stand for 30 minutes or till it thicken a little but still is in pouring consistency ( I placed it in the refrigerator till it thickened a little). 
Pour this into a piping bag and frosted the cake. Let it set completely.
Slice, Enjoy!!

Shahjahani Murgh Handi

This is a very tasty and rich dish. This is called Handi because it is cooked in a Mud pot/vessel. Cooking in a mud vessel give a nutty and delicious aroma to gravy. This is an Awadhi cuisine which is rich and creamy wherein the chicken is cooked in a rich masala made with fried onions and spices.
  
This is a different recipe from the normal Awadhi cuisine,  a twist  to the traditional one, by adding mayonnaise and cheese.  Do try this, its finger licking.

Ingredients

500 Grams Boneless Chicken -  cut into medium cubes
1/2 Cup Yogurt - beaten
4 Tablespoons Mayonnaise With Egg-Homemade
1/4 Cup Cheddar Cheese
2 Tablespoons  Desiccated coconut
1 Tablespoon  Khus -Khus / Poppy seeeds
1 Tablespoon Ginger - Garlic paste
3 Large Tomatoes - finely chopped
5 Kashmiri Red Chillies - soaked in warm water
1 Teaspoon Sugar
1 Teaspoon Salt 
½ Teaspoon Black Pepper powder
1 Teaspoon Roasted Cumin Powder
1 Teaspoon Garam Masala powder
½ Teaspoon Turmeric powder
4 Tablespoons Fried Browned Onions / Birista 
4 Tablespoons Oil
3 Tablespoons Fresh Cream - reserve a tablespoon for garnishing
For Garnishing
1 Tablespoon  Fresh Coriander - finely chopped
1 Tablespoon  Mint leaves - chopped

Method
In a small mixer jar grind the soaked red chilies, poppy seeds and desiccated coconut  to a fine paste. 

In a bowl add chicken, ground paste rest of the ingredients mix well till chicken is well coated with spices.  Then keep it for marinating for at least an hour or two.

After 2 hours heat oil in mud vessel add this marinated chicken, cover and cook on very low flame. Stirring in between after every 3 minutes so that it does not get  burnt at the bottom.  Cook till the chicken is done and oil surfaces. Garnish  with fresh cream, chopped mint and coriander leaves.
Serve hot  with rotis or naan.  
Enjoy  this yummy, juicy chicken pieces in a rich and creamy gravy!!!

Ensaladilla Rusa#FoodieExtravaganza

Welcome to this month's event in Foodie Extravaganza {Party}. We are celebrating World Tapas Day our Host Juli Meyers asked us to prepare Tapas.
This traditional tapas is served throughout every region of Spain, with little variation. Ensaladilla Rusa is easy and simple Spanish salad , a version like the Russian Salad - except in this no fruits are added.  
This colorful salad is served at nearly every tapas bar; it is even served free at times with an order of alcohol.
Serves 3
Ingredients

1 Medium Potatoes - skinned and cubed
1 Carrot -  diced
1/4 Cup  Green Peas - I used frozen

1/4 Cup Chopped French Beans
1 Small Onion - chopped
1 Tablespoon Each Red & Green Bell pepper - diced
3 Tablespoons  
Pickled Gherkins /Dill Pickle - sliced
1 Tablespoon Capers
1 Hard Boiled Egg -  chopped
1/2  Cup Mayonnaise
1 Teaspoon Lemon juice
1/2 Teaspoon Dijon mustard
Freshly ground Black Pepper, to taste
Chopped fresh Parsely, to garnish


Method
In a saucepan, cook the potatoes and carrot in lightly salted water. Bring to a boil and allow to simmer until almost tender. Fold in the peas and beans, and cook until all the vegetables are tender. Drain the vegetables and transfer them into a serving bowl. Add the onion, bell pepper, gherkins,  capers and egg slices.
In a separate bowl,  combine the mayonnaise, lemon juice and mustard  very well. Add this mixture to the serving bowl, mixing well to ensure all the ingredients are coated. Sprinkle with pepper and toss. 
Garnish with chopped parsley and dash of black pepper powder,  refrigerate. Serve this salad cold.
The remaining next day I filled in a crusty bread and had it for breakfast.. it tasted so ooo good.  Yummy..yum.

My Notes
 As any dish made with mayonnaise, ensaladilla should be refrigerated and will not keep for more than 1 to 2 days.

Creamy Italian Dressing With Mayo & Red Wine Vinegar#Improv

This Italian Dressing is so creamy and luscious! It's very easy to prepare, as all you need to do is whisk all the ingredients in a bowl till smooth! Store it in an airtight jar in the refrigerator, where it will stay good for 5 days to a week.
Ingredients
2 - 3 Tablespoons Red Wine Vinegar
¼ Cup Mayonnaise - use store bought
1 Tablespoon Extra Virgin Olive Oil
1 Tablespoon Sour Cream
¼ Teaspoon Italian Seasoning Mix - powdered
¼ Teaspoon Garlic powder or 1 Clove Garlic - minced
¼ Teaspoon Sea Salt or to taste
1 Teaspoon Finely Chopped Parsley
A Dash of Fresh Herbs Oregano, Rosemary and Chives - finely chopped
Method

In a bowl add all the ingredients and whisk it well till creamy. Taste for salt and seasonings. Now add the fresh herbs and parsley. Keep this in the refrigerator and serve cold.
It's mouth-watering, tasty, the red wine vinegar with fresh herbs gives a exquisite touch  and takes this dressing to another level altogether. 

Used this to serve Heart Salmon Cakes For A Romantic Meal

Shrimp Stuffed Potatoes#FishFriday

Taking  stuffed  baked potatoes and piling it high with  shrimps and mayo, makes a delicious light dinner and is also a best way to use up leftovers from the fridge.
Ingredients
4 Small Potatoes
8 Large Prawns / Shrimps - cleaned and chopped
1 Small Onion - finely chopped
2 Cloves Garlic - minced
1 Baby Carrot - finely chopped
1 Tablespoon Flat Parsley - finely chopped
1 Tablespoon Celery - finely chopped
1 Teaspoon Oil
1 Teaspoon Black pepper powder
Salt to taste
4 -5 Tablespoons Mayonnaise - Homemade

Method

Wash and scrub the potatoes and place them in a bowl with a tablespoon water and microwave on high for 3 minutes.
When cooled slightly take them and place them in the air fryer basket and air fryer them at 200 degrees C for 20 minutes. Cool them completely. 

 Then cut each potato into two pieces. With a small spoon Gently scoop out the potato.  Keep the scooped potato keep aside.
To make the filling
In a pan heat the oil add the garlic and onion, saute till softened then add the carrot, stir fry for a minute now add salt, pepper, parsley, celery and the prawns and saute till the prawns are cooked, add in the scooped potato and mix well. Take off flame and cool the mix. 
When cooled mix in mayonnaise and pile it on the potato and enjoy.

FISH N CHIPS WITH SAUTEED VEGETABLES AND SPICY DIP


Today we start our month long Mega Marathon, we blog Monday to Saturday and Sunday we a take rest. This is my second mega marathon in this year, the ealier one that I did was in April. The theme for this Marathon is Buffet on Table. For the first week the theme is Combos from Countries.

Fish and chips is a hot dish of English origin i.e United Kingdom. It is a common take-away and a great comfort food. This is usually battered fried, where in various methods are used to make the batter light like beer, baking powder or baking soda. It is usually served with malt vinegar, lemon, or tartar sauce and vegetables.

Here I, have pan fried it with a twist. My daughter loves fish fried in pesto sauce. Hence, made walnut pesto, chips, a spicy dip and sauteed vegetables. This was her afternoon meal, which she enjoyed.  So let's make this together...



Serves 2
INGREDIENTS



For the Walnut Pesto
1 Cup Packed Fresh Basil leaves
A tablespoon Olive oil
1⁄3 Cup Walnuts - finely chopped
2 Cloves Garlic - minced
1⁄4 Cup Parmesan cheese - grated
1/2 Teaspoon Pepper Powder
A pinch of Salt

Method




Place basil, olive oil, walnuts, garlic and salt in a blender.
Blend until thoroughly combined.
Add Parmesan and pluse it twice. I have added less olive oil and cheese since this is being applied to the fish. If you wish you can increase both quantities to your taste.

For the Fish

4 Slices of Surmai Fish
1 Cup Walnut Pesto
1/2 Teaspoon Salt
Oil for frying

Method
Wash and pat dry the fish with a kitchen towel.

Rub the salt into the fish slices well, then apply the pesto to it and cover it in a cling film , refrigerate it for at least an hour so that the fish is well marinated.




Heat oil in frying pan pan fry the fish till done on both sides.

For the Chips


2 Large Potatoes - cut into fries
3 Tablespoons Cornflour
Salt to taste
Oil for deep frying

Method

In a pan bring water to a boil add the potatoes and salt. Let the water come to a rolling boil again. As soon as the water comes to a rolling boil take off flame and pour this into a colander when the water drains off from the potaotes immediately add the cornflour and toss the potatoes in the colander (do not use your hand or any spoon) twice. Keep aside to cool. In the meantime heat oil in a deep frying pan, when the oil is hot add the potato in small batches and fry on medium flame till done. 




Remove and keep aside.

For the Spicy Dip

1 Cup Mayonaise - Home made
2 Tablespoons Hot Chilli Sauce or according to taste

Method
Mix them together and keep aside.




For the Sauteed Vegetables

1 Large Carrot - cubed and parboiled
1 Cup Peas - parboiled
A Teaspoon of Butter

Method

Heat a pan add the butter, carrot and peas together and toss it till warm. Keep aside.

To Assemble

In a platter, place the fish slices, fries , veggies and dip in a small bowl. Enjoy this dish a leisure..
