Moroccan Rghaif#BreadBakers

Rghaif is a squared flatbread usually eaten in Morocco for breakfast or tea time. You can have them plain or stuffed, sweet or savory, their texture is very soft. It’s richer, but also crispy and super comforting. I have made a vegan version of this bread. This is also made with a meat, caramelized onions filling and there’s many ways to prepare this bread. Traditionally they are individually pan-fried but we can also bake them.
Ingredients
For The Dough
1 Cup Heaped All Purpose Flour
2 Tablespoons Semolina
¼ Teaspoon Salt
2 Tablespoons Oil 
For The Stuffing
2 Tablespoons Oil
1 Cup Sliced Onions
Salt to taste
2 Chopped Olives
2 Chopped Jalapenos

Method 
Prepare The Dough
Mix the flour and semolina together. Add oil and mix well, then keep adding little water at a time and knead to a stiff dough. Keep aside covered for at least 15 minutes.
In the meantime let's make the stuffing
In a pan heat oil, add the onions with add a pinch of salt and sauté until light golden brown/caramelized. 
Transfer the onions in bowl add olives, jalapenos and mix well.
Divide the dough into 4 parts and roll each into a round circle about ¼ inch thick. 
Place the filling in the center and now fold it like an envelope to make a square. Lightly roll it to make it slightly thin and to even out the stuffing.
Fold it into a square parcel.
Roll this square rghaif to flatten it a little.
Heat a skillet with oil and fry these on low flame until golden on both sides. 
Serve hot with pickle.

Turkish Stuffed Pogaca With Cheese & Potato#BreadBakers

This is a stuffed Pogaca which is made in a cast iron skillet and taste delicious. You can have this with a soup, makes a filing and complete meal. You can also shape them in buns/rolls and stuff the filling.

Ingredients
150 Grams Bread Flour
50 Grams Whole Wheat Flour
¾ Teaspoon Instant Yeast
1 Teaspoon Heaped Sugar
½ Teaspoon Sea Salt
Milk as required
1 Egg - beaten ½ Egg in the dough & remaining for brushing
½ Cup+1 Tablespoon Milk
For the Filling
3 Medium Potatoes - boiled & mashed
¼ Teaspoon Red Chilly Flakes
½ Teaspoon Mixed Herbs
1 Small Onion - finely chopped
1 Pepperoncini - finely chopped
1 Tablespoon Oil
Salt to taste
Grated Cheese as required

For The Topping
Nigella Seeds
Sesame Seeds 
Remaining Egg for brushing

Method
Knead the dough like a soft bread dough. Let it double in volume
In the meantime let's make the filling
In a cast iron skillet heat oil sauté the onion and pepperoncini till translucent. Then add the red chilly flakes, salt to taste, mixed herbs, chopped parsley. Mix well then add the mashed potatoes. Let this cool.
Divide the dough into two parts. 
Oil a cast iron 8 inch skillet well.
Roll one part of the dough into a circle to fit the pan.
then evenly distribute the filling 
then place the cheese. 
Cover with the other circle and tuck the edges below to seal the edges.
Then place a small glass and
cut into circle then cut it into equal pieces.
Brush with egg wash and sprinkle the seeds.
Bake at 180°C in a preheated oven for 35 minutes. 
They smell so tempting when they are still warm that I can't wait until they cool completely. 
They are so soft and cheesy.. just irresistible!

Cheesy Halloween Breadstick Bones#BreadBakers

Make a spooky snack to your Fright Night bash with a quick and easy recipe for soft Cheesy Halloween Breadstick Bones.

Makes 6 Breadstick Bones
Ingredients
100 Grams Bread flour
8 Grams Caster Sugar
1.5 Grams Salt
1.5 Grams Instant Yeast
65 Ml + - Water
8 Grams Butter
Shredded Cheese as needed

Method
In a bowl add the flour sugar, salt, yeast and mix well, then add the water mix well and knead to a soft smooth dough. Then add the butter and stretch the dough and fold it till butter is fully incorporated and the dough is smooth and soft. Cling wrap the bowl and leave to rise till double.
Deflate the dough and divide it into 6 equal pieces 
roll it into a smooth ball and cover , leave it aside for 10 minutes to rest.
Line a baking pan with parchment paper.
Lightly flour your work surface.
Roll each ball into rope slightly larger on the ends. Arrange the breadsticks, spacing them at leas 2 inches apart.
Using scissors, cut a 1-inch slit on the ends of each breadstick and gently stretch each of the cut pieces apart to form the ends of the bones. 
Like wise make all and place them on the lined baking tray. 
Let it rise till double in volume, brush water.  
Sprinkle shredded cheese on top. 
Bake 190°C for 15 minutes. 
Remove the breadsticks from the oven and serve them warm with marinara sauce for dipping or along with a soup of your choice.

Coconut Flour Banana Bread - Gluten & Sugar Free#BreadBakers

This is a gluten free banana bread so light and delicious. Use over ripe bananas. I made it without any additional sugar coz my bananas were so ripe and the result came out well and its too good! 
If in case the bananas are not over ripe then you can add ¼ cup caster sugar. Weigh the bananas without the skin then mash it up.

Makes 7 -8 slices
Ingredients

3 Eggs
70 Grams Coconut Flour
2 Teaspoons Baking powder
1/8 Teaspoon Salt
65 Ml Coconut Oil
200 Grams Mashed Bananas

Method
Grease a pan size - 18 x 13cm.
Mash the bananas well. Beat the egg , add the oil and salt beat well. then add the coconut flour and fold it in with a spatula. Add in baking powder and mashed bananas. Fold it well. 
Pour this into a greased pan. 
Bake in a preheat oven at 180°C for 40 minutes. 
Ta da.. a delicious gluten and sugar free bread is ready to.

A Rustic Homemade No Knead Bread#BreadBakers

This is an easy Homemade No Knead Bread which is rustic and flavorful! It’s a no knead Dutch oven bread that tastes like a loaf of artisan bread made from a high end bakery. The bread is super delicious it can be enjoyed slathered butter or with soups or stews. 
I made this in my mud style Dutch Oven and it turned so beautiful with a crispy top.

Makes One Loaf
Ingredients

350 Grams All Purpose Flour
280 Ml Water
1 Teaspoon Salt
1 Tablespoon Honey
1 Teaspoon Instant Yeast

Method

Into a bowl, add in the lukewarm water, add in the honey, salt and yeast. Mix until the ingredients get dissolved in water.
Now tip in the flour. Combine everything together with a back of a wooden spoon to form a shaggy mass of dough,  
making sure there are no dry patches.
Our bread dough is ready. Cover the bowl with a cling film and let the dough sit and proof for an hour.
The Next Step
To transform this dough into a well structured dough.  
After one hour of proofing , dip your finger in water and shake your hands to remove any excess water. Place your hands lightly underneath the dough and lift it up like a light stretch and fold the dough on to it self, rotate the bowl and from all the sides , do the same. Again rest the dough for half an hour covered .
After half and hour do the same stretch and fold method. Rest the dough again for half an hour. Again stretch and fold the dough. Total stretch and folds are done 4 times after every half an hour.
Dust a parchment paper with a mix of rice and whole wheat flour well and place it in a round bowl. If you have Benetton basket then dust that with the flour mix.
After the half an hour of the last fold. Transfer this dough
onto another bowl lined with parchment paper. Just lightly wet your hands and place one hand on the dough and the other under the bowl and lightly transfer this on the bowl lined with the parchment paper.  
Cover the bowl with a plastic film and let the dough rise for 30 minutes.
As the bread is kept to rise, let's preheat the oven with the Dutch oven at 225°C. After 30 minutes , your Dutch oven is pretty hot and the oven. So take the Dutch oven out carefully with gloves on.  
Place the risen dough along with the parchment paper into the hot Dutch oven. With a blade slash it on top. 
Close the pot with lid and place it in the oven. Bake bread for 25 minutes. After 25 minutes remove the lid and reduce the temperature to 180°C and bake for another 10 minutes.
The more you bake at this point, the more crispy the crust become.  
This extra baking will give that outer crust of the bread to get a more crisp and caramelized golden brown color and a nutty flavor.   
When baking these last few minutes, heat is directly acting only on the surface of the bread. 
So reducing the temperature will help not to over burn the crust and at the same time will make it more crunchy.
Cool this dough on a wire rack for at least an hour before you slice it.
