Flaxseed & Corn Poha#Improv

Flax seed is called Alasi in Marathi and Hindi. The Marathi name for this dish is Alasi Ani Makyacha Pohe. Flaxseeds are shiny & nutty seeds, have an earthy aroma which are a great source of omega 3 fatty acids and a host of other health benefiting properties. I love the earthy and nuttiness of these seeds. 
This Poha (beaten rice) is a fusion recipe is made with corn, which is delicious and nutritious. Try this lip-smacking recipe for your friends and family on various occasions like kitty parties, game nights or even road trips. Go ahead because it is worth a try, as it's so wholesome and tasty that you can make it any time of the day, as breakfast, supper or a simple evening tea snack.

Ingredients
2 Cups Poha
1 Cup Boiled Sweet Corn
3 Green Chillies - finely chopped
1 Large Onion - sliced
1 Teaspoon Grated Ginger
2 Dried Red Chillies
A Sprig Curry Leaves
2 Tablespoon Heaped Flax seeds
1 Teaspoon Mustard seeds
2 Tablespoon Lemon juice
1/2 Teaspoon Salt or to taste
1/2 Teaspoon Sugar
3 Tablespoons Oil
2 Tablespoons Desi Ghee
Chopped Coriander Leaves for garnishing

Method 
Wash the poha in a strainer well and set aside.
Heat a oil in a wok/ kadai. Add the mustard seeds, flax seeds red chillies and let the seeds sizzle, then add the onion, ginger and green chilly and curry leaves to it and fry for a few seconds or till onions are translucent.
 
Now add the salt, sugar and corn and fry for a minute. Add the soaked poha and mix well. Cover and cook for another 2 minutes and turn off the flame. Add the lemon juice and mix well.   
Serve garnished with coriander leaves as a snack or breakfast.

Tomato & Peas Poha#SundayFunday

Tomato Peas Poha is a lighter version of breakfast to that of the tomato rice. Delicious and filling breakfast using poha/ flattened rice. It's a super quick fix hot breakfast to quieten the hunger pangs.

Ingredients
1½ Cups Poha/Flattened Rice
1 Onion - chopped
2 Large Tomatoes -chopperized
1/3 Cup Green Peas - I used frozen
1/8 Teaspoon Turmeric powder
½ Teaspoon Red Chilly powder
¼ Teaspoon Garam Masala powder
1 Teaspoon Level Salt
2 Teaspoons Level Sugar
2 Tablespoons Desi Ghee
For The Tadka
2 -3 Tablespoons Oil
½ Teaspoon Mustard seeds
1 Teaspoon Urad Dal
1 Teaspoon Chana dal
A Sprig Curry leaves - optional

Method 
Place the poha in a colander and wash it 2-3 times well in water to remove dust and hand pick any impurities in it. Set aside for 10 minutes.
Heat a broad pan or kadai with oil, add the mustard seeds when they start to splutter add in the urad and chana dal and roast until golden in medium flame. Then add in the finely chopped onion and curry leaves. Fry for a minute or till translucent. 
Now add in chopperized tomato and all the dry spices like chilly , turmeric and garam masala powder, salt and sugar too, give this a good mix cover and cook till oil surfaces 
and the mixture turns glossy. Add the peas and cover and cook for 2 minutes. 
Now add in the soaked and drained poha and mix well. Cook covered for 4 - 5 minutes on medium low flame. 
Switch off flame and fluff it with a fork. Add ghee and garnish with chopped coriander leaves.
Serve & enjoy this hot breakfast with your tea or coffee.

Doodh Poha/Rice Flakes In Milk#SundayFunday

I love to have a warm, balanced and healthy breakfast. Doodh Poha is one of those easy, quick healthy breakfast to make. Doodh is milk,  Poha is rice flakes. This is a delicacy from the Guajarati and Maharastrian  cuisine, which is a satisfying warm breakfast. 

Serves 2 - 3
Cup 250Ml
Ingredients

500Ml Milk
¼ Cup Sugar
½ Cup Poha/ Rice Flakes
A Pinch Cardamom Powder
A Pinch Saffron Strands
Dry Fruits as per your choice
I used Almond, Pistachios, Figs, Raisins, Apricots

Method 
Wash the poha and drain it in a strainer and keep aside.

In a large sauce pan, boil the milk , when it boils let it simmer for 5 minutes. Then add the sugar and saffron strands, stir till sugar melts. Switch off the flame, add the washed and drained poha. Stir it add rest of the ingredients and let it sit till warm. 
Serve into individual bowls and add the chopped dry fruits. Enjoy this warm, a healthy and delicious breakfast which is also light on the tummy.

Soft & Spongy Poha Dosas #BreadBakers

This month Bread Bakers are celebrating Pancakes, our host is, Wendy

Today is Pancake or Fat Tuesday – which is also known as Pancake Day. Pancake Day is celebrated a day before Ash Wednesday.  A day when Christians begin their Lenten Season. I,  remember when we were young, during lent no sweets  or meat dishes used to made or eaten, now of course these are not strictly followed. 

We East Indians also call this day Introz Day , with pancakes a dish of liver or meat  is also prepared, since after this day no meat or sweets are eaten, during lent,  which is still  observed by majority  East Indians.

Already posted a Eggless & Vegan Pancakes  recipe, decided to make something different. Made these soft and spongy Poha / Beaten Rice Dosas.  These are made for breakfast and served with Fresh Tender Coconut Meat Chutney.

Ingredients

2 Cup Idli Rawa
1 Cup Level Poha / Beaten Rice
½ Teaspoon Fenugreek seeds
200 Grams Fresh Yogurt
3 Cups Water
¼ Teaspoon Soda - bi - carb
Salt to taste
For the Fresh Tender Coconut Meat Chutney

1 Tender Coconut Meat
2 Green Chillies
2 Tablespoons Fresh Yogurt
½ Teaspoon Cumin seeds
¼ Teaspoon Salt
A Handful of Coriander Leaves
A few Mint leaves

Method
Make Buttermilk by churning the yogurt and water together.
Soak the idli rawa and fenugreek seeds iin buttermilk. Keep it covered for 4 - 5 hours.
Soak the poha in buttermilk also in a another bowl. Keep it covered for 4 - 5 hours.

First grind Poha buttermilk to a fine paste and then add rawa and grind and run it for just a minute.  This batter should be a little coarse. Allow to ferment overnight. The next morning, add salt and soda, mix well. Keep it aside for 10 minutes.
Heat a cast iron pan or a non stick pan. Brush it with oil.
Pour  ladles of batter and do not spread the batter . 
Cover with a lid and let is cook on medium low flame for 2 to 3 minutes. 
Take off the lid and sprinkle oil all over the it and the sides.
Now flip it if you wish, I did it. Cook for just for a minute or two till light golden spots appear. 
Take it on to a serving plate. Likewise prepare the rest of the dosas.
In the meanwhile as the dosas are being made, lets make our chutney.
Add all the ingredients into a small chutney jar and grind to a fine paste using no water, if necessary add a teaspoon or more of yogurt. It done so simple .. ins't it ! 
Pour this into a serving bowl and enjoy with soft and spongy dosas.
My Notes
There is no urad dal in this dosa. The fermentation is of this batter is the butter milk. So do not discard the buttermilk whiles grinding. If you find that the butter milk is not sufficient for soaking or grinding add little more water.

Vegetable Poha




Poha is a popular Maharashtrian breakfast recipe. My mom used to make poha often for breakfast or for evening tea. Either it used to be made with onions only or with onions and potato.

Poha is the Maharashtrian word for flattened or beaten rice. In Marathi it often said Kande Pohe cha beth - it is understood that a boy coming to see a girl at her house.

This is an easy and quick breakfast to prepare.

Ingredients
1 1/2 Cup Poha
2 Potatoes - cubed
2 Teaspoons Green Peas
2 Teaspoons Peanuts
2 Teaspoons French Beans
2 Teaspoons Carrot - finely chopped
2 Teaspoons Cabbage - finely chopped
1 Capsicum - chopped
2 Onions - sliced
2 Green Chilies - finely chopped
1/2 Teaspoon Turmeric Powder
3 Tablespoons Coriander Leaves - finely chopped
1 Lemon juice
3 Tablespoons Oil
1/2 Teaspoon Mustard Seeds
A spring Curry leaves
Salt to taste
2 Tablespoons Coconut grated

Method
Wash the poha nicely and strain all the water out. Keep it aside.


Heat oil in kadai. Add mustard seeds and peanuts.
When they splutter add onions, chilies, potatoes, carrot, green peas, capsicum, cabbage and curry leaves.


Fry them till the onions turn pink and the vegetables become soft. Add turmeric powder, salt.


Add the poha and stir well and allow it to simmer for five minutes.


Add lemon juice, grated coconut and garnish it with coriander leaves. Serve hot.
