Pudina/Minty Shrimp Skewers#FishFriday

Looking for a quick and tasty shrimp recipe? Try Pudina/Mint Shrimp Skewers. With a few ingredients, you can impress your family and friends with this flavorful small bite appetizer.
   
Ingredients  
15 Large Shrimp (Prawns) – cleaned with tail on
A Handful Mint Leaves 
2 Large Cloves Garlic
1" Piece Ginger –
2 Green Chilies or to taste
½ Tablespoons Oil
½ Tablespoon Lime Juice 
1 Tablespoon Yogurt - whisked  
½ Teaspoon Black Pepper  
½ Teaspoon Salt or to taste  
For Frying  
1½ Tablespoon Sesame Oil  
For Garnishing  
Orange Slice
Lime slices 
Salad

Method
Soak the skewers in water for at least 30 minutes
Wash, devein and pat dry shrimps.
Add remaining ingredients into a blender or spice grinder and grind to a smooth paste. Coat Shrimp with ground mixture and marinate for minimum of 15 minutes in the refrigerator.   
Thread them in small skewers on each. Heat a skillet with oil and fry them 2- 3 minutes on each side or till done. 
Squeeze fresh lime juice before serving. Serve hot.

Prawn 65 With Couscous & Braised Veggies Salad#Fishfriday

Sometimes your tired, in no mood to cook an elaborate meal, or you just feel like having something different. This was one day when my hubby was at home , since he is veggie and we wanted something light for lunch, made this veggies salad for him and for me, made Prawn 65 which actually is an appetizer, just topped this on my salad an enjoyed this a meal. It was super duper yummy meal for me. 
Crispy fried prawn 65 with couscous & braised veggies made a heavenly combo ever.

Ingredients
12 - 15 Medium Size Prawns/Shrimps
1 Teaspoon Turmeric powder
2 Teaspoons Kashmir Red Chilly Powder
1 Tablespoon Vinegar
1 Teaspoon Ginger Garlic Paste
2 Tablespoons Level Besan /Gram Flour
1 Tablespoon Level Rice Flour
1 Tablespoon Self Raising Flour
1 Tablespoon Tomato Ketchup
1 Teaspoon Hot & Sweet Chili Sauce
Salt To Taste
A Pinch Orange Red Color
Oil as required for deep frying
A Sprig Curry leaves
2 Green Chillies for garnishing

Method
Wash and clean the prawns properly , then pat them dry.
Marinate the prawns with turmeric powder, chilly powder, vinegar and salt. Keep it refrigerated for 15 minutes.
In a bowl, mix together rice flour, self raising flour, besan, ginger garlic paste, hot & sweet chili sauce and tomato ketchup, color, mix well taste for salt ( add salt if required only). Make a very thick paste . Do not add more water and the consistency must be thicker ( when a finger dipped into the batter it should coat your finger).
Mix this thick batter with the marinated prawns very well.
For best results, the prawn must be fully covered with this thick flour batter.
Heat oil in a deep frying pan/kadai, when the oil is hot, add curry leaves, and drop the prawns one by one and deep fry for 3 minutes then turn the sides and fry for another 2 minutes.
Remove and drain them on a paper towel. Give a slight slit to the green chilles in the center and deep fry them for a minute. Remove this too on to the paper towel.

For the Braised Veggies
Ingredients
5 - 6 Broccoli Florets - blanched
½ Cup Colored Bell Peppers (Red, Yellow, Green) - sliced
1 Small Onion - sliced
Salt & Black Pepper powder to taste
1 Tablespoon Olive Oil
Method
In a pan heat oil, add the onion and sauté till translucent, add all the veggies, sauté on medium high flame till they just start to change color, add salt and black pepper powder to taste. Switch off the flame
In a large bowl mix the couscous and salad dressing well, then add in the braised veggies and toss them well.
Top this with the Prawn 65, curry leaves and green chillies. Enjoy!! this as a complete meal.

CHICKEN IN A BLANKET #BREADBAKERS

A copy cat  of Pigs In A Blanket  - a sausage wrapped in dough, then baked.  It is served as a snack at parties / kitty party since they are one or two bites. They can be served with any dipping sauce. Mostly bacon or pork sausages are used for this. 

Since I, have used chicken cocktails sausage, I have renamed them Chicken In A Blanket.When I made these and tasted them , the sausage was bland but the rolls soft and moist. I felt they required some spice, since the chicken cocktail sausages that are used is absolutely bland. So, sliced the rolls in the center poured a spoon full of spicy hot sauce and served, these were devoured in no time. I am going to make these again and with a variation.

So here goes my Chicken In A Blanket recipe.

Ingredients

3 Cups All Purpose Flour
1 Sachet Fleischmann's Rapid Rising Yeast
1 + 1 Egg
1 Teaspoon Sugar
1 Teaspoon Salt
1 Tablespoon Oil
2 Tablespoon Butter - I used salted butter
Luke Warm Water for kneading the dough as required
Chicken Cocktail Sausages as required

Method
In a large bowl add flour, sugar, salt, oil, yeast and egg mix well. Add in the luke warm water and knead everything until the dough turns soft and smooth. Take it on to a work surface, add the butter a teaspoon at a time by stretching and folding the dough till all the butter is incorporated and the dough is smooth and shiny.

Place the dough in a greased bowl, wrap the bowl with a cling film and keep it to rise double its volume say about an hour and half, depending on the weather and temperature in your kitchen.

Beat the egg,  add a teaspoon of water and a pinch of salt, mix it well. Keep aside  - this is for sealing edges of the rolls and brushing the top.

When the dough rises , punch it down . Take it on to the work surface and divide the dough into 6 equal parts.   

Roll each part into a chapatti of 1/4 inch thickness, trim the sides to make a square.  
Cut it into broad strips.   
Take each strip of dough place the sausage at one end and roll it ( see pic).   
Brush the ends with egg wash.   

Keep this in a greased baking tray - ends down to rise for a another 30 to 45 minutes.   
Then brush it with egg wash and bake in a preheat oven at 200 degrees for 20 to 25 minutes - baking time depends on the size of the rolls. These got baked in 25 minutes.  
When baked immediately brush them with butter or oil,  cool them slice it in the center and pour some spicy hot sauce and enjoy these yummy Chicken In A Blanket.

Chicken Nuggets

Homemade chicken nuggets with the same texture and taste as the store ones. I have seen Nigella Lawson on TV using this method to make the nuggets. This is her recipe.

My daughter loves these nuggets, because they are exactly like the ready to eat ones. You can freeze these nuggets too after coating for 15 to 20 days. Take them out and deep fry them serve them as One Bite Appetizers to your guest.

Sending this to BM#54 week 3 day  2 under the theme " One Bite Appetizers".

Ingredients

250 Grams Chicken breasts, cut into ½ inch cubes
1 Egg - beaten
½ Cup All Purpose flour
1 Teaspoon Garlic powder
1/2 + 1/4 Teaspoon Pepper powder
1/2 + 1/4 Teaspoon salt
Oil for frying

Method

Pat dry the chicken pieces.
Beat egg in a shallow bowl, add the chicken pieces, garlic powder, 1/2 teaspoon pepper powder and 1/2 teaspoon salt, mix well and keep aside for 30 minutes.

In a zip lock bag mix the flour, 1/4 teaspoon pepper powder and salt, shake well so that the seasonings are incorporated.


Take a chicken piece at a time from egg mixture, transfer into the bag, shake the bag well to coat evenly.
Transfer coated chicken on to a plate. Repeat the process till all the chicken pieces are done.

Heat oil in a deep frying pan over medium heat.  Deep fry the chicken pieces in a single layer for  2-3 minutes without  stirring them till done.  Transfer on to a paper towel lined plate. Repeat process with remaining chicken pieces, serve.

Amratsari Fried Fish

For a party we look forward to one bite appetizers, they're easy and mess-free to eat. In the third week of BM#54, the theme is One-Bite Appetizers. I love the fish appetizers that are served in a party. My recipe is exactly that. This one bite will leave your taste buds tingling for more!
For this I used Basa fish , since basa is fleshy, tasty and without any thorns .



Ingredients
For The Marination
250 Grams Boneless fish fillet - cut into thick fingers
½ Teaspoon Salt
1½ Teaspoon Lemon juice
1 Teaspoon Chilly powder
¼ Teaspoon Turmeric powder
Ingredients For The Batter
3 Tablespoons All Purpose Flour
4 Tablespoons Corn flour
2 Tablespoons Rice flour
2 Tablespoon Chickpea flour
1 Egg - lightly beaten
1 Teaspoon Ginger garlic paste
½ Teaspoon Salt
1 Teaspoon Chili powder
A pinch Yellow color
Water to make batter
Oil for frying
½ Teaspoon Chat masala

Method
Wash the fish well and pat it dry with a paper towel.
Marinate fish with salt, turmeric, chilly powder, lemon juice for 30 minutes.

Mix together all the ingredients for batter in a bowl, except the chat masala and make it into a thick coating consistency batter. Dip the fish in it, deep fry to a golden color on low heat till golden and crisp. Sprinkle chat masala, serve hot with chatni or any spicy dip.
