Homemade Cream Style Corn

This homemade cream-style corn is naturally sweet, delicious and it is so easy to prepare. This recipe is made with fresh corn and simple seasonings. 

It's a pleasure to make your own cream style corn and enjoy eating a fresh version of this classic dish.



Yields: 1 Tin (14 oz) 
Ingredients

1.1/2 Cup Heaped Fresh Corn
2 Tablespoons Butter
1/3 Cup Water
2 Teaspoons Granulated Sugar
1 Tablespoon Heaped  All Purpose Flour
1/2 Teaspoon Salt
1/2 Teaspoon coarsely ground Black Pepper
1  Cup Milk
Method 
Remove the husks and silk from the ears of corn and rinse well.  Stand an ear on on a wide bowl or plate and with a sharp knife, cut downwards through several rows. Don't cut too close to the cob; cut the corn kernels about 3/4 of the way through. Once the kernels are cut from the cob, scrape the corn with the back of the knife to get all of the "milk" and pulp. 
Melt the butter in a large skillet / pan over medium heat. Add the corn and juices, the water and sugar. Cook, stirring, until the corn is tender and the water evaporates. Stir in flour and saute for a minute or two then add the 2 tablespoons water, blending well so that no lumps are formed. 

Gradually add the milk, stirring constantly till a smooth mixture is formed . Cook for about 2 to 3 minutes. Once your homemade creamed corn is thickened, you can season it with salt and pepper, and it's ready to serve!

  
Cool and store in a airtight container in the freezer.  
Your  homemade cream style corn is ready to use.  


My Notes :
If you want to make it more richer then add one cup of heavy cream. Cook this for about 5 minutes more or until it's how thick you would like it.

Basic Overnight Oats With Add Ins #Foodieextravaganza

 Overnight Oats are perfect, make-ahead breakfast which is easy and healthy to have in the  morning.  It 's a complete and perfect solution to fuel your day. Make this overnight for the quickest breakfast or for a lazy and no cooking Sunday morning . 

For this month event for Foodie Extravaganza {Party}, our Host  Kathy Altman Walker, choose the theme  " Getting Back to Basics - Starting with Oatmeal! ".  Since I, have not posted this recipe, it was just the right choice to do so now.

Here, am, giving the options/ add ins that you can make for change of taste or according to the taste or nourishment of our child.  If you are lactose intolerant than use soy, almond or coconut milk.



This take's  just  2 minutes to make.  

Makes : One Large Serving Or 2 Small Servings

Basic Overnight Oats
Ingredients
1/3 Cup Plain Greek Yogurt - beaten
1/2 Cup Oats
2/3 Cup  Milk OR Almond / Coconut  / Soy Milk
1 Tablespoon Chia Seeds Or Ground Flax seeds
1/2 Teaspoon Vanilla Extract - optional - I did not add
Pinch Of Salt
1 Tablespoons Honey Or Maple Syrup

Method
Whisk together all ingredients  in a medium mixing bowl. 
Spoon it into a jar with a tight-fitting lid. Pour in the Soy Milk, spoon in the Honey or Maple syrup ( I used honey) Close and refrigerate overnight or for at least 4 hours before eating.

All add ins  should be added in the morning.  Expect for any powder like cocoa that's to be added  with the above basic mix

Add Ins 

Chocolate Overnight Oats
Add  2 Tablespoons Cocoa Powder Or Chocolate Chips.
  
Strawberry  / Strawberry Cheesecake Overnight Oats

Add
1/4 Cup Sliced Strawberries Fresh Strawberries
3 Tablespoons Softened Cream Cheese
Zest And Juice Of 1/2 Lemon

Pineapple Overnight Oats


Add 
1/4 Cup  Sliced Pineapple - tinned or fresh - I used fresh

Banana Overnight Oats
Add
1/2 ripe banana, chopped or mashed
2 tablespoons chocolate chips

I have drizzled a teaspoon of honey so that banana does not change it color.

Coconut Overnight Oats
Add 

1/4 Cup Flaked Coconut 
1/2 Cup Coconut Milk

Tropical Fruits Overnight Oats
Add
1/4  Cup chopped fresh or canned pineapple
1/4 cup chopped ripe mango
1/2 Ripe Banana - chopped or mashed
2 Tablespoons Flaked Coconut

Pumpkin Spice Overnight Oats
Add
1/2 Cup Plain Pumpkin Puree
1/2 Teaspoon Ground Cinnamon
1/8 Teaspoon Ground Cloves
1/4 Teaspoon Ground Nutmeg

Make your choice of overnight oats and enjoy this loaded bowl of super foods and protein.

To make it Gluten Free, use gluten free oats.

Alcohol Free Eggnog #FoodieExtravaganza

Traditional eggnog recipes are with eggs, milk, cream, nutmeg, and vanilla, bourbon or brandy. My mother used to make us drink eggnog, during winter and at other times when we were having terrible cold and cough. Sometimes with brandy added to it. My mother however never added cream and used the whole egg to make eggnog. So this my mother's recipe of Eggnog.
Ingredients
2 Eggs
1/4 Cup Sugar or to taste
2 Cups Milk
2 Whole Cloves
Pinch Cinnamon powder
A Pinch Freshly Grated Nutmeg

Method

Heat the milk, sugar and cloves, in a saucepan until the milk nearly comes to a boil.

 
In a large bowl, whisk egg well, keep adding half of the hot milk mixture into the eggs, whisking constantly while you add  all the milk. Strain the mixture through a mesh strainer to remove the cloves. Serve hot with a pinch of cinnamon powder and nutmeg powder.
How much I hated this when my mummy use to make me drink this early in the morning. I made and had this after so many years and enjoyed it. Sorry! Mummy for all the trouble I, gave you when you use to make this for me. Miss you and love you.

Eggless Vanilla Ice Cream

This delicious, creamy and smooth Eggless Vanilla Ice Cream is so quick and easy to make. This ice cream  is a no churn and you do not need of an ice cream machine or ice to make it. In summer ice creams are in great demand. Make this smooth ice cream ...  enjoy... a treat for kids and adults too.

Ingredients


500 Ml Full Cream Milk
4 Tablespoons Level Granulated Sugar
1 Tablespoon Corn flour
2 Tablespoons Heaped Milk powder
1 Teaspoon Vanilla essence
300 ML Whipping Cream

Method





Reserve 1/4 cup of milk and keep  the rest in a heavy bottomed pan on low flame to boil.
Dissolve the cornflour in the reserved cup of milk to smooth slurry and keep aside.

Stir the  milk continuously to prevent it from burning.
Once it reaches near boiling point,  take  4 tablespoons hot milk and mix it with the milk 
powder and make a smooth paste. 
Now add the sugar and stir till the sugar melts and the milk comes to a boil, add the milk powder paste and stir with a whisk,  to mix well, keep stirring for a 3 minutes.
Again stir the cornflour slurry to mix it well and  then add this to boiling milk and whisk continuously till it thickens and coats the spoon. Take it off the flame, add the essence and cool it, then chill it well for a good 2 hours in the freezer.
Beat cream with a hand blender till it forms soft peaks - about 3 to 5 minutes.

Once  the milk is chilled, beat it well with a hand blender till it light and smooth.
Now fold in the whipped milk and cream gently until it's well blended - about 4 - 5 minutes.


It should double in volume (see above pic)
Keep the ice cream in the freezer in a airtight container for 3 - 4 hours. Take out and give it a good churn for about 3 to 5 minutes.

Return to the freezer and  and keep it for 8  hours and again remove and beat it till it's light and fluffy (this fills the ice cream with air which  makes it light,  fluffy, creamy and smooth.)
After the final churn, transfer it to a closed  air tight container and freeze it for 12 or more hours depending on the temperature of your freezer.  This time I set it in a flat air tight container, since it will freeze faster.

Serve it and enjoy ..

My Notes 
Freeze ice cream in air tight containers which are flat  and not tall in  height, as this will freeze it faster which will prevent ice crystal formation.

Fruity Custard #FoodieExtravaganza


This Fruity Custard is pure vegetarian, healthy, filled with fiber. When this months event - Hosted by Wendy Klik , who choose the theme fiber filled, heart healthy recipes for Foodie Extravaganza {Party}, was very happy since I,  had just prepared this sweet dish for my hubby who very rarely eats a full fruit and refuses to eat a banana . He will eat a slice of any fruit .. that's it.  Give it to him in this form and he will eat a bowl full of fruits.  To make him eat fruits, have devise different ways.. since he has a sweet tooth, I try to make sweet dish with fruits and some time add  nuts too.




Most fruits and vegetables are high in fiber, so it's  good  to include them in your daily diet. Here for this recipe,  have not peeled the  apples, and pears since peeling can reduce the amount of fiber in fruits and vegetables, so one should eat the peel of such fruits . According to nutritionist fiber supplements won't provide the same vitamins, minerals, and other nutrients offered by fiber foods.  Thank you Wendy for choosing this theme. Let's go to the recipe...


Ingredients 

For custard
500 Ml Milk - I used full fat milk can use low fat too
4 Tablespoons Heaped Sugar
2 Tablespoons Heaped Vanilla Custard Powder
Chocolate Sauce as required  

Banana -   sliced 
1 Apple - cubed
2 Kiwis - cubed
1 Pear - cubed
1 Cup Cubed Musk Melon 
1 Cup Pomegranate seeds
1/2 Cup Tinned Cherries
1/2 Cup Cubed Papaya
100 Grams Sweet Biscuits  - broken into pieces

Method
Mix in  vanilla custard 2 tablespoons water or cold milk ( I used milk ) till it dissolves.
Heat milk, add sugar and bring it to a boil, keep stirring in between so that is does not burn at the bottom. When it comes to a boil,  add the custard powder mixed in cold milk, stirring continuously ,  cook till sightly thick and creamy (it should be ribbon consistency).  Take off flame and whisk it well to make smooth and silky. Keep aside to cool.



Arrange the biscuits in the base of a serving dish,( have used different sweet biscuits ) sprinkle 2 tablespoons of  tinned fruit syrup, on the biscuits.

Arrange the bananas slices and add the fruits.  
Drizzle  little chocolate sauce.

Pour the cold custard drizzle with chocolate sauce. Then take a fork or tooth pick and swirl it to give a marble look.  Serve chilled... enjoy this healthy and fiber filled dessert.

Kalakand - Homemade


Kalakand is a very traditional and delicious sweet dessert, made with whole milk and paneer, a barfi, it's soft, mouth melting and grainy in texture. This is very  popular  in India and Pakistan.   I made this sweet double the quantity as half the quantity  went to my friends who I, visited during Ganapati festival.



Ingredients
1.1/2 + 1.1/2 Liters Milk.
2 Tablespoons Vinegar or lemon juice
150 Grams Sugar powder
2 Tablespoons Pistachios - sliced
2 Tablespoon Almonds - sliced

Method 

Vinegar or lemon juice mix it in 1/4 cup water, keep aside.

Take a deep heavy vessel to make the paneer and pour 1.1/2 liters milk in it. Keep it on medium flame till it just comes to a boil add the vinegar / lemon juice in it and let the milk curdle Once the solid separates from the milk sieve the mixture with a clean cloth and strain the excess water. After straining the water, wash the paneer in fresh water for 2 to 3 times. Keep it to drain. After the water nearly drains, grate the paneer and keep aside.

In a heavy bottom kadai bring the other 1.1/2 liter of milk to boil. Let this boil till it reduces to half the quantity. . Keep on stirring the milk with a spoon at short intervals so it doesn't stick at the bottom of the pan. The consistency of the milk will become extremely thick once it is reduced to half.

Now add the paneer to the milk and stir it continuously. Cook the mixture till it gets thick and looks like mawa. Add sugar to it and stir the mixture. Cook it till the mixture reaches the consistency of making a barfi.


Grease a tray it with little ghee. Pour the mixture into the tray and let it set. Garnish the mixture with sliced pistachios and almonds.

Your Kalakand is ready. Cut it into desired shape and size and serve ... Enjoy.   These went to my friends who I, visited during Ganapati festival.
