Mango Avocado Salsa#EatTheWorld

This mango avocado salsa is an amazing Costa Rican recipe, it's sweet, hot, and tangy! Great with chips for a summer appetizer or a side for grilled pork, chicken, or fish or use this to make tacos or wraps.
This recipe is a favorite, super simple to make, healthy, fresh, and fun, perfect for a relaxing day or for a pool party and everyone like it. The combination of tomato, avocado, and mangoes, makes is recipe simple perfect. Do not use too ripe mangoes; the best result is when using a semi ripped (yellow) mango.

Serves 4 
Ingredients
¼ Cup Chopped Coriander leaves - divided
1 Tablespoon Extra-Virgin Olive Oil
½ Teaspoon salt - divided
1 Large Mango - peeled and diced
1 Medium Avocado - diced
2 Medium Tomato - diced
1 Medium Onion - chopped
1 Green Chilly - finely chopped
1 Tablespoon Freshly Squeezed Lime Juice
2 Cloves Garlic - minced
Method
Combine half of chopped coriander leaves cilantro & salt with the garlic, mango, avocado, tomato, onion, green chilly and lime juice in a bowl. Make sure you don't overmix, since we are using avocado, if you mix it too much you could smash it and change the look of the salsa. 
Garnish with salsa with reserved chopped coriander leaves & sprinkle of salt before serving. This Costa Rican salsa is indeed a delightful and refreshing treat in summer. My favorite way to eat this salsa is with corn tortilla chips, but it is also great with tacos or wraps!

Eggless Mango Semolina Cake#SundayFunday

Easy and tasty egg free mango cake recipe made with no flour, simple pantry ingredients and fresh mangoes. This eggless mango cake is light, moist, and delicious! You don’t even need any electrical equipment such as a stand mixer or electric beater for this recipe.

Ingredients
1 Cup Fine Semolina/Rawa
1 Cup Mango Pulp
¼ Cup Vegetable Oil
¾ Cup Caster Sugar
1 Teaspoon Baking powder
½ Teaspoon Cardamom powder
For Garnish
¼ Cup Chopped Nuts - I used sliced pistachios, almonds & cashew nuts. 

Method
Pre-heat the oven to 170°C.
Mix the semolina, sugar, cardamom and baking powder well.
In a large bowl add oil and mango pulp whisk well with a hand whisk until combined. Then add in the semolina mixture, mix well. Cover and let is sit for 15 minutes.
Pour in a greased round 6"pan. Level the cake and garnish with sliced nuts.
Place in the oven and bake for 30 - 35 minutes. Check after 30 minutes with a toothpick to see if properly baked. If it comes out clean then remove immediately. In my oven it took exactly 35 minutes.
Allow to cool completely.
Slice and serve it's light, moist, and delicious!
My Notes
The mango pulp should not be thick and not too watery.
If you use a pulp that is not thick then let the cake batter stand aside for 20 minutes or until the mango pulp is absorbed by the semolina.
If you place a thin batter directly in the oven it takes a longer time to bake and then browns the cake. You will not get that beautiful, rich yellow color.

Mango Upside Down Cake#BundtBakers

With the king of mangoes in season, I, love, this fruit the most since  they are available only in season, rest all fruits are seen throughout the year. I, have these for breakfast, lunch and dinner

For this month's Bundt Bakers event the theme is -Tropical Bundt. Our host of the month is Sandra Garth.  Thank you Sandra for hosting this month event. 
Then don't you think! This cake is ideal for hot summers. The top has a layer of caramelized mangoes  with a soft and delicious cake at the bottom.  Have used milk essence to make this cake, it gives a nice subtle flavor to the cake.  Do use this essence and you will definitely like it.

Arranging the slices of mango on the butter sugar mixture is painstaking, but, worth the effort once the cake is baked.
The left overs of the cake should be refrigerate or they will spoil.  A piece left on the dinning table did not smell nice the next day. 

Ingredients
For the Base

55 Grams Unsalted Butter
1/3 Cup Packed Brown Sugar

1/4 Teaspoon Milk Essence
A Pinch of Cardamon powder
3 Alphonso Mangoes - sliced
1 Teaspoon Fresh Lemon Juice

For the cake

1.1/2 Cups All Purpose Flour
3/4 Cup Caster Sugar
1 Teaspoon Heaped Baking powder
1/4 Teaspoon Level Salt
75 Grams Unsalted Butter
3/4 Cup Milk
1/4 Teaspoon Milk Essence
1 Large Egg

Method

Sieve the flour with the baking powder, cardamon powder and salt. 
In a 7-inch bundt pan melt the butter on low flame.  When the butter melts add the brown sugar, cardamon and milk essence, mix it well. Remove the pan from the heat and let it cool completely. 
Arrange the mango slices, slightly overlapping them, on the butter-sugar mixture. Sprinkle the mango slices with lemon juice. Keep aside.

Preheat the oven temperature 180 degree C.

In a bowl beat the butter, sugar and milk essence well, then add the egg and beat till well incorporated. Now add the flour and milk alternately till both are incorporated. Pour the batter over the layered mangoes slices and spread well. You may need to smoothen it out over the mango slices to spread evenly.
Bake in the preheated oven for 35 minutes.
 Cool the cake in the pan for just  five minutes and then invert it onto a serving plate.  Let stand for a minute, before removing the pan. 
Serve warm. Beautiful cake, just didn't feel like slicing it.
Hmm this cake is so delicious, soft and yum.. Enjoy  this warm!!

Basic Overnight Oats With Add Ins #Foodieextravaganza

 Overnight Oats are perfect, make-ahead breakfast which is easy and healthy to have in the  morning.  It 's a complete and perfect solution to fuel your day. Make this overnight for the quickest breakfast or for a lazy and no cooking Sunday morning . 

For this month event for Foodie Extravaganza {Party}, our Host  Kathy Altman Walker, choose the theme  " Getting Back to Basics - Starting with Oatmeal! ".  Since I, have not posted this recipe, it was just the right choice to do so now.

Here, am, giving the options/ add ins that you can make for change of taste or according to the taste or nourishment of our child.  If you are lactose intolerant than use soy, almond or coconut milk.



This take's  just  2 minutes to make.  

Makes : One Large Serving Or 2 Small Servings

Basic Overnight Oats
Ingredients
1/3 Cup Plain Greek Yogurt - beaten
1/2 Cup Oats
2/3 Cup  Milk OR Almond / Coconut  / Soy Milk
1 Tablespoon Chia Seeds Or Ground Flax seeds
1/2 Teaspoon Vanilla Extract - optional - I did not add
Pinch Of Salt
1 Tablespoons Honey Or Maple Syrup

Method
Whisk together all ingredients  in a medium mixing bowl. 
Spoon it into a jar with a tight-fitting lid. Pour in the Soy Milk, spoon in the Honey or Maple syrup ( I used honey) Close and refrigerate overnight or for at least 4 hours before eating.

All add ins  should be added in the morning.  Expect for any powder like cocoa that's to be added  with the above basic mix

Add Ins 

Chocolate Overnight Oats
Add  2 Tablespoons Cocoa Powder Or Chocolate Chips.
  
Strawberry  / Strawberry Cheesecake Overnight Oats

Add
1/4 Cup Sliced Strawberries Fresh Strawberries
3 Tablespoons Softened Cream Cheese
Zest And Juice Of 1/2 Lemon

Pineapple Overnight Oats


Add 
1/4 Cup  Sliced Pineapple - tinned or fresh - I used fresh

Banana Overnight Oats
Add
1/2 ripe banana, chopped or mashed
2 tablespoons chocolate chips

I have drizzled a teaspoon of honey so that banana does not change it color.

Coconut Overnight Oats
Add 

1/4 Cup Flaked Coconut 
1/2 Cup Coconut Milk

Tropical Fruits Overnight Oats
Add
1/4  Cup chopped fresh or canned pineapple
1/4 cup chopped ripe mango
1/2 Ripe Banana - chopped or mashed
2 Tablespoons Flaked Coconut

Pumpkin Spice Overnight Oats
Add
1/2 Cup Plain Pumpkin Puree
1/2 Teaspoon Ground Cinnamon
1/8 Teaspoon Ground Cloves
1/4 Teaspoon Ground Nutmeg

Make your choice of overnight oats and enjoy this loaded bowl of super foods and protein.

To make it Gluten Free, use gluten free oats.
