Mexican Style Sloppy Joes#FantasticalFoodFight

It’s time for Fantastical Food Fight headed up by Sarah Ellis at Fantastical Sharing our theme is "Burgers".
This Mexican Style Sloppy Joes are the perfect easy, full of flavors and make a complete meal which your kids and even adults will love! They are also packed with all kinds of hidden veggies too, which makes them perfect for kids. Have these on nachos, tacos, fajitas or hamburger buns with lettuce, tomatoes, cheese and of course, salsa and sour cream the choices are endless! They’re the perfect alternative to a quick and filling dinner or lunch.

Servings 3
Ingredients
300 Grams  Mexican Chicken  - I used this recipe
3 Burger Buns

For the Filling

Mayonnaise
Mexican seasoning
Lettuce or finely shredded Cabbage
Sliced Tomatoes
Cheese slices.

Method
Add to the mayonnaise , Mexican Seasoning and shredded cabbage mix it well. Keep aside.
Apply the mayo mix lavishly on the one side of burger bun
top it with the chicken mix and then, 
cheese slice
and sliced tomatoes. 
Apply the mayo mix to the other side of the burger bun too.
 Cover it and pierce a tooth pick to hold it together
Enjoy!!

Easy Yummy Cheese Ball#FantasticalFood

April 17th is National Cheese ball Day, for,  fantastical food fight we were asked to prepare a sweet or savory Cheese balls . Made these easy, yummy Cheese balls.

You can make it ahead of time, may be even a week in advance if you want to. Just before serving coat them in nuts, so that they don’t get soft. This cheese ball is perfect as a party appetizer, tailgate parties etc..

Just before your guest arrive take it from the fridge roll them in nuts and set it out with some crackers for your guest to serve themselves.

This is a recipe for four, if you are making it for a party then double or triple it accordingly.

Makes 4
Ingredients
70 Grams  Cream cheese , softened

70 Grams Grated  Cheddar cheese
1 Tablespoon  Finely Chopped Scallion
1/4 Teaspoon Hot Sauce
1/4 Teaspoon Mixed Italian Seasonings
A Pinch of Garlic powder
A Dash Freshly Ground Black Pepper
1/3 Cup Toasted Walnuts -  finely chopped
 

Method
Place cream cheese in a mixing bowl and mix until smooth. Add cheese, green onion,  hot sauce, Mixed Italian seasonings, garlic powder and black pepper, mix well to combine.
Use a  spatula to scrape the sides of the bowl and gather the mixture into one ball. Lightly grease your hands and form the mixture into two round balls. 

Place the walnuts on a plate. Hold the cheese ball in one hand and use the other hand to press the walnuts to the outside of the ball, pressing them in gently and turning the ball to coat all sides.  
Serve with crackers.

Vegan Garlicky Roasted Asparagus And Potatoes#Fantasticalfood

This is a vegan, soy-free, gluten-free, nut-free recipe that take few minutes to put together.

The potatoes  and the asparagus are  all juicy and crispy. 
 The potatoes crunchy on the outside and  just melt in your mouth.  A perfect brunch or dinner.  

Serves: 1
Ingredients

12 - 15 New Baby Potatoes - halved
150 Grams Asparagus
5 Cloves Garlic - minced
1/2 tsp Paprika powder
1 tbsp rosemary (finely chopped. Sub with sage, or, if using dry herbs, use 2 tsp)
Dash  Black pepper  powder
1/2 Teaspoon Salt or to taste
1 Tablespoon Extra Virgin Olive Oil

Method
Preheat the oven to 200 degrees C. 
In a  plastic bag, mix together the olive oil, red pepper flakes, herbs, black pepper, salt and garlic. Toss  the potatoes in shaking it until the herbs have coated the potatoes. Spread in a single layer on a baking tray . Bake for 20 minutes. 

In the same plastic bag toss the asparagus. Keep this aside till the potatoes are done. 
After 10 minutes take the baking tray out and shake it. Place it back into the oven till done.   

When the potatoes are done take the baking tray from the oven, toss in the asparagus along with the remaining marinade  and give the potatoes a stir with the spatula. Place the baking tray back in the oven and bake another 10 minutes or until asparagus is lightly golden-brown. 
Serve warm.

Homemade Moulded Mint Chocolates#FantasticalFoodFight

These chocolates are prefect for gifting or distributing for children birthdays. You can prepare them in flavors that you like. Made these for fantastical food fight event wherein we are asked to make a recipe that contains Mint and Chocolate. 
Ingredients
150 Grams Good Quality Dark Chocolate - chopped
100 Grams Good Quality Milk Chocolate - chopped
3 -4 Drops Oil Based Mint extract or to taste
1/2 Teaspoon Butter
Silicone Chocolate Moulds

Method

Melt the chocolate in a bowl set over a pot of simmering water or in the microwave in 15 second bursts till the chocolate melts. Add the butter to the warm chocolate, stir to combine and smooth. 

Pour into the mould and allow to set until firm, at least 15 to 20 minutes in the refrigerator.
When the chocolates are set, invert onto a parchment- or waxed paper-lined cutting board or a plate.
Wrap them in chocolate wrappers.
Gift them in chocolate boxes or
in a Beautiful Basket.
These will keep in an airtight container at cool room temperature for a month.

Overnight Oats With Grapes & Strawberry's#FantasticalFoodFight

This is an excellent combo that matches so well together. Topped with sliced strawberry's this was a icing on the cake.. an oatmeal beauty.  
Yum Yum, you will definitely love overnight oats. 

Single Serving

Ingredients
¼ Cup Quick Oats
1/3 Cup Milk
5 + 5 Green & Black Grapes - sliced in half
3 Tablespoons Fresh Yogurt
1 Tablespoon Honey
4 Strawberry's - sliced

Method
Add  the oats  and pour the milk in a jar
 Top it with sliced grapes
Pour the fresh yogurt. Drizzle the honey and place the sliced strawberry's
Cover it with spill proof silicone lid and refrigerate overnight.  
The next morning carry it with you to office or enjoy for breakfast, hassle free, healthy and delicious. 

My NotesCan use maple syrup instead of honey.

Shengdana Chikki / Peanut Brittle#FantasticalFoodFight

Peanuts in Maharashtra is also know as Shengdana.  This  chikki  / candy / brittle is a quick and easy snack from Maharashtra a winter special sweet, crisp made with just two main ingredients - peanuts and jaggery. 
This an easy candy is very popular in India during winter months.  It is a perfect snack to gorge on in winters to keep your body warm.  It's made specially during the festival season of Lohri, Pongal and Makar Sankranti.
Ingredients 
200 Grams Peanuts
200 Grams Jaggery
1 Teaspoon Desi Ghee(optional) - this is used to give a shine

2 Teaspoons Water

Method
First keep all the essentials ready. 
Grease the tray or board the rolling pin with oil or ghee and keep aside.
Grate the jaggery and keep aside.
Roast and skin  the peanuts, separate them into two.
Keep a small bowl of water.
Heat jaggery  with  water   in a pan until it melts on medium low flame. 
Boil the jaggery  and keep stirring it continuously until
 it starts to bubble,  changes color and turns into hard crack consistency. (test its consistency by putting a drop in cold water- it should form a ball crack after you take it out).  Add the ghee and peanuts and mix thoroughly.  
Spread the mixture immediately and use the rolling pin, roll  to a centimeter thickness 
give cuts. Let it cool completely 
Take a knife and lift them up then break  into squares.  
Store them in an airtight container.
