Roasted Corn Fritters


According to wiki, 'Corn fritters' are a traditional savory Southern USA snack. They can be deep fried, shallow fried or baked. These fritters are so easy, quick and they make a delicious snack.

My first for the this recipe for this week BM -- under the theme --Bring on the Fritters.

Ingredients
1 1/2 Cups Corn kernels
1/4 Cup Spring  onion -  finely chopped
1/4 Cup Capsicum - finely chopped
1 Tablespoons Jalapeno  - finely chopped
2 Tablespoon Corinader leaves  - 
chopped
2  Eggs  - beaten

1/3 to 1/2 cup flour
2 Red Chillies  - finely chopped
1/2 Teaspoon garlic powder 
Salt to taste
1/2 Teaspoon Sugar
Oil for frying

Method
Place  the corn kernels on a hot pan with a a teaspoon of oil  and roast until caramelized.  Remove and cool.

In a bowl combine roasted corn, green onion, capsicum, jalapeno and coriander, red chillies. Stir in beaten eggs. Add 1/3 cup flour and stir. Add only as much flour is needed to hold ingredients together, say  up to 1/2 cup. Season with garlic powder and salt. Add sugar. 

Heat  oil in a pan.  Drop spoonfuls of batter to make fritters. Cook slowly over medium heat until golden brown, crisp and cooked through.   Drain on  a paper towel. Serve piping hot with sour cream.

One Bite Sandwich


These sandwiches are good when children are playing or watching tv.  Keep a plate full of these with ketchup and they will vanish in minutes.  These can be packed as tiffin or served as party pleasers. 

Ingredients
8 Bread Slices
1 Cup Boiled Sweet Corn - crushed
1 Small Onion - finely chopped
1/2 Teaspoon Black pepper powder
Salt to taste
1.1/2 Tablespoon Cornflour
1/2 Cup Water
Butter as required
Cheese as required

Method



Trim the sides of the bread and with a rolling pin flatten it lightly. Keep aside.



In a bowl mix together water, a pinch of salt and cornflour to a thin paste,  keep aside.

Heat a pan add a teaspoon of butter, onions and fry till translucent.  Add the sweet corn, pepper powder and salt to taste.  Stir fry  for a minute add a teaspoon of cornflour paste and fry till it comes together.  Remove and cool.



To assemble

Keep a griddle / tawa on low flame to heat.



On a rolled slices of bread, sprinkle little cornflour paste till bread is lightly moist.  



Place the filling, sprinkle grated cheese,   cover it with another moist bread slice.  



Apply butter on the top of the bread.  



Place buttered side down on the tawa and press with a spatula lightly for a minute only,  apply butter on this side too and flip it  press again for a minute and remove on to a plate.  Cut and serve with kethcup.




My  Note :

Do not toast the sandwich to brown it or make it crisp.

Cheese Corn Tomato Soup - A bowl of Goodness


Tomato soup is my all time favorite soup and you if you serve me this soup daily for dinner I, will happily enjoy it. This soup is very satisfying and filling, very easy to make. Most of us think that making soup at home is very cumbersome and time consuming, so avoid making and buy a packet of ready soup and have it. But this is a misconception, making soup at home is very easy, healthy and without any preservatives you have a bowl full of goodness in 1/4 the price of the packet and that too 2 servings.  So here goes the recipe.


Ingredients

1 Tablespoon Butter
1/2 Tablespoon All purpose flour or Whole wheat flour
1/2 Cup Milk
1/2 Cup Water
3 Tablespoons Sweet corn - boiled
6 Large Ripe firm Tomatoes - cut in large pieces
1/4 Cup Beetroot - cut into small cubes
2 Flakes Garlic.
Salt and Pepper powder to taste
Cheese according to your taste



Method

In a pressure cooker add the tomatoes, beetroot and garlic and take 3 whistles. Cool, then blend and strain, keep this aside.

In another pan add the butter, flour and stir on low flame cook for a 2 minutes then add the milk and whisk well till you get a smooth liquid. Add the water and mix well when the sauce starts to thicken add the a teaspoon of cheese and mix well. Then add tomato puree then stir and let it cook on slow flame till starts boiling adjust the thickness of the soup according to your taste by adding water. Switch off the flame add the corn, salt and pepper to taste. Serve hot, with some cheese on top. We enjoyed this with the Tomato Basil loaf, you have it with the bread of your choice.

Corn Methi Masala - Jain Recipe - No Onion No Garlic

I always thought that cooking without onions and garlic the dish would be tasteless and this myth is completely gone from by mind. The food is so delicious, you will never know that no onion and garlic has been used in this dish.  I, have now decided whenever onions and garlic prices increase, will cook food without using them.  Am, sure if we all boycott onions and garlic in weekly shopping these prices will automatically come down.
Ingredients

1 Cup Corn kernels - boiled
1 Cup Methi - finely chopped
2 Tablespoons - Tomato puree
1 Teaspoon Cumin seeds
1 Teaspoon Red Chilly powder
1/4 Teaspoon Turmeric powder
1/2 Teaspoon ginger - chopped
2 Green chillies - chopped
10 Cashewnut pieces
1/2 Teaspoon Garam masala
1 Teaspoon Sugar
Salt to taste
1 Tablespoon Butter 

 3 Tablespoon Oil

For Garnishing
1 Teaspoon Cheese - Grated
1 Teaspoon Butter

Method
Grind the green chillies, ginger and cashewnut pieces together using a little water to a fine paste.

Heat the a Teaspoon butter and a teaspoon oil in a pan fry the methi on medium flame till soft and cooked, remove and keep aside.


In the same pan heat the remaining butter and oil, add the cumin seeds when they brown add the ground paste and fry well till oil leaves the sides of the pan, then add the tomato pure, chilly, haldi and garam masala powders and fry well till oil starts leaving the pan. Then add the corn, sugar and a cup water and stir, cover and cook for 5 minutes on slow flame. After 5 minutes add the methi and salt to taste. Give it a quick stir. Switch off the flame. Remove in a serving bowl and garnish it with cheese and a butter, serve hot.

Corn Cheese Sandwich

My fourth recipe for the Blogging Marathon #43: Week 2 - Day 3. This sandwich is very healthy  you can have it any time.



Ingredients

8 Slices Bread
1 Cup Corn  - boiled
1/4 Cup Capsicum - finely chopped
1 Small Onion - finely chopped
Pepper and Salt to taste
1/3 Cup Cheese - grated
Butter  as required


Method
In a pan heat butter and saute the onion till translucent add the corn, capsicum, salt and pepper and give a quick stir, switch of the flame, add the cheese mix well, keep aside.

Apply butter to the  bread slices on both sides lightly.
Apply the corn filling to one slice of bread and cover with another slice.  Grill it in a sandwich maker till done. Cut into triangles and serve this sandwich hot.

Sweet Corn Cheese Balls

My second recipe for the Blogging Marathon #43: Week 2 - Day 2. My beta was delighted to see the cheese oozing out and just enjoyed them with ketchup. 




Makes - 16 Balls
Ingredients
200 Grams Paneer  - grated
3 Slices Bread -  powdered
1 Large Potato  - boiled & mashed.
2 Tablespoons All Purpose Flour
1 Tablespoon Capsicum  -  finely chopped
2 Tablespoon Yogurt
3 Green chilies - finely chopped
1/2 Teaspoon Soda- bi- crab
2 Tablespoon Coriander - finely chopped
1/3 Cup Sweet corn -  crushed in a chilly cutter
Salt to taste
Cheese cut into small squares




For the coating
2 Tablespoon Corn flour
Fresh Breadcrumbs 




Method


Make a slurry with water and keep aside.
Mix all ingredients well. Make 16 equals balls. Take a ball flatten it like a puri, place a small piece of cheese, and roll it into a ball. Dip the balls in corn flour slurry and roll in breadcrumbs. Deep fry in hot oil on high flame.

Corn Appe


My frist recipe for the Blogging Marathon #43: Week2, Day 1.
This is an easy and quick recipe.  My kid who is 10 years old just loved this snack and finished it in a jiffy.



Ingredients
 1 Cup Sweet Corn
 1 Cup Fine Semolina
 ½ Cup Oats flour
 ¼ Cup Urad dal flour
 2 Nos Green Chillies
 1/4 Teaspoon Ginger Paste
 1/4 Cup Coriander leaves  - finely chopped
1 Sachet Fruit Salt 
Salt to taste
Oil / Ghee

Method

Soak the semolina in a cup of water for 10 minutes and keep aside.
Grind the corn and green chilies in the mixer to form a coarse paste. Mix corn paste, semolina, oats and urad dal flour, ginger paste, coriander leaves, salt to taste and mix well. Add the fruit salt and mix well.  Add little water if required to make the paste consistency.

Heat the aappe pan and sprinkle little oil in each slot .  Add the corn mixture to this cover and cook on medium flame for 2 minutes, when light brown on the bottom side turn the aappe again sprinkle little ghee and cook till this side too is light brown in color.  The ghee in this aappe give an awesome taste.  Remove and serve hot with sauce. Enjoy!!!


Note:  The consistency of the batter should be  like the idly batter for best results.
