Blueberry & Cream Cheese Croque Cake#BakingBloggers

Today at Baking Bloggers are visiting France. Made this croque-cake.  A Croque Cake is layered with white bread slices ,ham, cheese, etc which can be replaced by different ingredients of your choice, this is also know as a giant croque monsieur.  

Ingredients
4 + 3 Big Slices Bread 
2 + 2 Small Eggs 
30 Grams + 30 Grams Granulated Sugar 
80ML + 80 Ml Soy milk - can use normal milk
¼ Teaspoon + ¼ Teaspoon Vanilla Essence
10 Grams + 10 Grams Butter 
120 Grams Cream cheese - cut into tiny cubes 
100 Grams Fresh Blueberries - I used frozen

Method
Line and the sides and grease 7 Inch loaf pan 
Cut the sides of the bread and keep aside.  The white part cut into into 2 parts length ways or to fit your pan. 
In a big bowl beat the 2 eggs at a time add one part of the sugar, essence, soy milk and butter, give it a good whisk. 
First dip the sides of 4 bread slices 
Arrange the sides of the bread slices in the loaf pan length ways. 
Then place the white part of the bread dip in egg mixture on top of it. 
Now  sprinkle the cubes of cheese and blueberries on top.  
Beat the next part of  2 eggs at a time add the remaining part of the sugar, essence, soy milk and butter,  give it a good whisk. Again dip the sides of  the white bread slices, arrange it on top then dip the white cut part of the bread slice and on top of this  sprinkle the cubes of cheese and blueberries on top. 
Again the bread slices dipped in egg mix and pack this well. Pour any remaining egg mix on top. 
Press lightly and bake it in a preheated oven at 200°C for 25 to 30 minutes or till golden top top and skewer inserted comes out clean.
Lift the paper up on to a cooling rack. 
When cooled, dust it with icing sugar on top (this is optional).
Cut into slices on a cutting board and serve. 
Enjoy this beautiful and delicious Blueberry & Cream Cheese Croque Cake. Have with for breakfast like we did or for evening tea.

Alcohol White Christmas Cake

This is rich Alcohol White Christmas Cake, delicious and soft. You will love this cake.
Makes two rectangle cake tins of 10.1/2 x 8 inches.
Ingredients 
500 Grams All Purpose Flour
500 Grams Salted Butter
500 Grams Caster Sugar
1/2 Teaspoons Salt  
12 Eggs
2 Tablespoons Baking powder
1 Teaspoon Mixed Fruit Essence
1 Teaspoon Vanilla Essence
825 Grams Mixed Fruits
100 grams Each Cashew & Almonds  - chopped
4 Tablespoons All Purpose Flour
3 Tablespoon Alcohol
1 Teaspoon Cake Spice - Homemade

Method
These fruits are soaked in alcohol for year, whatever alcohol - can use what alcohol you wish. I soak 800 grams of mix fruits ( cranberries, cherries, mixed peels, black raisins, sultanas and prunes) in alcohol mix of rum, whisky, beer , vodka , bourbon. Pour this in a jar and cover it with alcohol.  If you can,t soak for a year then it should kept in alcohol for at least a month.
Before using this mix I drain all the alcohol and then add 100 grams each of cashew and almonds chopped. Mix it well.
Grease and line 2 baking tins with parchment paper on all sides.
Mix the drained fruits with 4 tablespoons of flour and mix well keep aside.
Sieve the flour, salt, cake spice and baking powder well . Keep aside.

In a bowl break the eggs and keep aside. Add the essence in it and lightly beat them.

Cream the butter till light and fluffy then add the caster sugar in batches and continue beating till the batter turns creamy, add an egg at a time and continue beating till all the eggs are incorporated. Add the sieved flour again in batches and on low speed continue beating. When all the flour is incorporated, add the 3 tablespoons of alcohol, fruits and fold in with a spatula gently till the fruits are well mixed into the batter. 
Pour this into the prepared tins and bake in a pre heated oven at 180 degrees for 40 to 45 minutes or till a skewer comes our clean.
When the cake is out of the oven immediately take a tea strainer ( it spreads evenly over the cake) and pour the drained alcohol 2 -3 tablespoons  over cakes (this is optional). I do it since it keeps the cake moist.  
Let them cool completely and then um mold. Enjoy!!

Orange Chocolate Cake#Choctoberfest

Made this Orange Chocolate Cake for our community Rosary held at my place. It's a moist and soft cake. 
The orange chocolate gives a awesome flavor to the cake.

Ingredients

3 Cups All Purpose Flour
250 Grams Salted Butter
2 Cups Sugar
1½ Teaspoon Baking powder
150 Grams Orange Chocolate - chopped
¼ Cup Milk
1 Cup Buttermilk
½ Teaspoon Orange essence
5 Eggs

Method

Grease and line 10 to 12 inch rectangle or square baking pan. Preheat the oven at 180°C.
Sieve the flour and baking powder, keep aside
In a microwave bowl add ¼ cup milk and the chopped orange chocolate and for 30 seconds bursts till the chocolate melts. Mix it and keep aside.
In a large bowl cream the butter and sugar till light and fluffy, then add the eggs one at a time and continue whisking till it's creamy, add the essence and whisk again. Add the flour and buttermilk , till the flour and buttermilk is incorporated. Divide the batter into two equal parts, to one part add the melted chocolate and mix it with a spatula till well incorporated.

Pour the white batter in the prepared pan and spread it evenly with a spatula. Then pour the chocolate batter and gently spread the batter evenly. 
Bake for 40 to 45 minutes or till a toothpick inserted comes out clean. 
Cool it completely,
slice and enjoy.

Vegan Birthday Chocolate Cake With Coconut Cream Frosting #Choctoberfest

Made this super-amazing, chocolate cake for my vegan daughter's birthday. She was absolutely floored and couldn't believe looking at this vegan decadent frosted birthday cake!
It’s rich, fluffy, moist and very easy to make and moist and even without the use of eggs the rise was excellent and the taste was superb. It’s also a perfect vegan birthday cake! 
I served this cake as a dessert after the dinner party.

Ingredients
300 Ml Vegan 
Almond Vanilla Milk or Soy, etc
A juice of one Lemon
150 Ml  Virgin Coconut Oil
3 Tablespoons Heaped Agave syrup
1 Teaspoon  Instant Coffee powder
275 Grams  Self Raising Flour
175 Grams Caster Sugar
Tablespoons Unsweetened Cocoa powder
1 Teaspoon Level Baking soda
1/4 Teaspoon Level Sea Salt  
Vegan Fluffy Coconut Cream Frosting- see recipe below

Method
Preheat the oven to 180° C. Lightly grease and line two 8 or 9 inch round sandwich baking pans.

Stir the lemon juice into the almond milk and set aside.

In a pan over a medium heat, the virgin coconut oil, syrup and coffee together. Set aside to cool slightly.

Sieve the flour, cocoa, sugar, salt and baking soda into a large mixing bowl. Keep aside

Mix the almond  milk in the 
virgin coconut oil and coffee mix well.  Now mix in the flour mixture and stir well until it becomes a smooth batter. 
Divide the mixture between the two prepared pans and evenly spread them. bake for 25-30 minutes or until an inserted skewer comes out clean.

Allow the cakes to cool in the tins for 5 minutes, then turn out onto a wire rack to cool completely.

Meanwhile, to let's make the icing - see recipe and method below 
When the cakes are completely cold (frosted them the next day). On turntable  place one cake and spread the frosting on it.
Sandwich together with half of the frosting. 
Spread the remaining frosting over the top this. 
 Vegan Birthday Chocolate Cake  is ready.. superb!!
Place it in the back of your fridge at least 4 to 6 hours or overnight. It needs to get cold but not frozen.
After its chilled 
For the Vegan Fluffy Coconut Cream Frosting
This is a delicious frosting recipe, taste yum!! It’s not only  absolutely delicious,but,  gluten-free, vegan!
Ingredients 
14 Oz One Tin  Coconut cream (cream NOT milk ).
1/4 Cup  Melted Chocolate
2 Tablespoons Cocoa powder 

Method
Chill the coconut cream can for at least 24 hrs  in fridge or overnight in the freezer. 
In a microwavable bowl, add the chocolate chips and melt until you have a smooth mixture. Allow it to cool down but make sure it doesn't harden.
Once chilled pour the hardened cream mixture into a bowl. Discard the water portion. 
In a microwavable bowl, add the chocolate chips and melt until you have a smooth mixture. Allow it to cool down but make sure it doesn't harden. 
Add the melted chocolate and cocoa powder and mix until everything is thoroughly combined. Cover the bowl with cling wrap and chill the frosting for 2-3 hours until it firms up. 
Then, remove the bowl of frosting from the fridge and whip it until it becomes fluffy.  And it's  done.  
A super easy frosting Use this  frosting  to frost your cake! 
My Notes 
Frosted cakes should be kept in the fridge since they can easily melt in the heat.

Olive Oil Fresh Orange Cake#Improv

This is an easy recipe fragrant, soft and fluffy tea cake flavored with freshly squeezed orange juice and orange zest.
Ingredients
1 Cup Caster Sugar
1/3 Cup Olive Oil
2 Eggs
¼ Teaspoon Vanilla essence
A Drop  of Orange Emulsion
1 Cup Fresh Juice of Navel Oranges
Zest of 1 Navel Orange
2 Cups Level All Purpose Flour
2 Teaspoons Baking powder
¼ Teaspoon Salt

Method

Beat first five ingredients in a large bowl, add orange juice and zest, stir until combined, mix in the flour, baking powder and salt, add to orange mixture, stir until just moistened, turn into greased pan. 
Bake in pre heated oven at 180°C for 45 mins, leave it in the pan for 10 mins before 
moving to the wire rack to cool and serve.
 Enjoy for tea!!
