Nutella Babka Buns#BreadBakers

These Nutella Babka Buns are kind of similar to a braided bread. After braiding the dough, these made into a knot and ends are tucked inside the hole and pinching it together with the other end at the bottom. 
These are incredibly delicious and soft. Try them and you will love these soft and chocolaty buns. Took these for our get together with friends.  
Makes 7 Buns
Ingredients

⅓ Cup Warm Water
2 Tablespoons Honey
1½ Teaspoon Instant Yeast
2¼ Cups All Purpose Flour
1 Teaspoon Salt
1 Large Egg
¼ Cup Milk powder
65 Grams Butter
Nutella as needed- for filling

Method 
To Make The Dough
Mix honey with warm water and then sprinkle in yeast, leave for the yeast to activate. 
In a mixing bowl, add in the rest of the ingredients except butter and nutella. Now add in the yeast mixture. Mix to incorporate and make a soft and smooth dough, knead for at least 10 minutes. While still kneading, add in butter bit by bit. Make sure it's incorporated before adding more. After all butter is added, knead for another 10 minutes.
Form dough into a ball, place in a greased bowl and cover the bowl tightly with a cling film. Leave the dough to rise until double in volume.

Shaping The Buns
Place dough on a lightly floured working surface and lightly knead it into a log. Cut into 7 equal pieces ( I weighed the dough and made equal pieces).
Form each piece into a ball.
Take a ball and press it into a rectangle. Roll it into a 5x8 inch, more or less.
Spread some Nutella on top, leaving the edges empty.
Roll it lengthwise.
Pinch the edges, to seal well.
Cut it lengthwise leaving, not all the way to the top.
Braid the 2 pieces of dough together, making sure the beautiful exposed layers of Nutella is on top. Stretch the braid into 10 inch (25 cm) length, more or less. 
Bring both ends together, overlapping them and creating a hole in the middle. Bring one end into the hole like a knot and pinch it together with the other end at the bottom.
Place on a baking tray with a baking sheet. Repeat with the rest of the balls. 
Rest the dough for 30 minutes or until they puff up a bit.
Bake in a preheated oven at 180ÂșC for 18 to 20 minutes or until golden brown and fully cooked. 
When they're still slightly warm, brush them with butter. Place them in a cool rack to cool a little.
Serve these warm with a cup of tea or coffee, Enjoy!!

Waterford Blaas -Irish Bread Rolls#BreadBakers

Waterford Blaas makes large soft and tender Irish Bread rolls to which yeast is added. Blaas bread is perfect with a slather of butter or makes a delicious sandwich bread rolls.

Makes 6 Rolls
Ingredients

150 Ml+ Luke Warm Water
6 Grams Instant Yeast
6 Grams Sugar
250 Grams Bread flour + extra for dusting the rolls
5 Grams Salt
6 Grams Salted Butter

Method
Place warm water in the bowl of the food processor, add the yeast and the sugar, let is sit covered for 5 minutes or till it foams. Add the flour, salt and butter. Give it a good stir, until combined. Knead this into a smooth and soft dough, add water as the food processor is running if necessary ( water depends on the quality of the flour)
Place the dough into an oiled bowl, cover with plastic wrap, and let rise in a warm spot until doubled in size ( depending on the temperature of the your kitchen/country).
Line a 6" x 8" height 2" baking pan with parchment and dust it liberally with flour.
Remove the dough from the bowl and deflate it. Divide the dough into 6 equal pieces (I used a scale to measure, each weighing 69 grams).
Form each piece into a ball, and then press each ball with the palm of your hand to flatten it into a disk. Place each disk side by side into the pan. Cover the pan with plastic wrap and place it in a warm spot to rise till double in size.
When the Blaas have doubled in size, 
liberally dust them with flour. 
Bake it in a preheat the oven @ 200°C, for 22 to 24 minutes.
Lift the parchment out of the pan and place the Blaas on a wire rack. Using a pastry brush, distribute the flour that is already on the rolls evenly over the tops.
These rolls can be served warm or cooled. Cool completely before storing.
My hubby enjoyed these blaas, 2 with butter and jam for breakfast, remaining I made egg & cheese sandwiches for him. These stay well in the refrigerator for 5 -6 days. Wrap them in a kitchen towel and place them in a zip lock bag. Whenever you want just warm them in a cloth in microwave for 20 seconds, they will come out fresh as ever.

Chicken & Pecans Sandwich#Foodieextravaganza

This chicken sandwich is amazing, the combination of grapes with pecans, mixed in with a creamy mixture of mayonnaise, Dijon mustard and honey go so beautiful with perfectly juicy chicken. It's so easy to make and always ready to go, you pack it up and take it to work or school, this can be packed for lunch too. The Sandwich bundt bread is homemade.

Serves 2
Ingredients

½ Cup Shredded Chicken - I used leftover roasted chicken
½ Cup Torn Lettuce Leaves
1 Scallion - greens and white chopped
1 Tablespoon Raisins or Dried Cranberries - I used raisins
¼ Cup Toasted Pecan - roughly chopped
6 Red Seedless Grapes - cut in 4 pieces
1 Tablespoon Hot & Sweet Sauce
4 Tablespoons Mayonnaise
2 Triangle s Cream Cheese (room temperature)
1Teaspoon Dijon Mustard
1 Teaspoon Honey
1 Teaspoon Lemon juice
¼ Teaspoon Black pepper powder
Salt to taste
A Dash of All Purpose Seasoning - garlic powder
For the Homemade Bundt Bread
Ingredients
For The Dough

150 Grams All Purpose Flour
3 Grams Instant Yeast
10 Grams Caster Sugar
½ Teaspoon Sea Salt
2o Grams Butter
1/4 Cup Warm Milk
Warm water to knead as required 
Method
For the Bundt Bread 
Knead dough with warm water and leave it aside covered till double in volume.
When the dough has risen , take on the work surface and deflate it. Roll it into a log and place it in a small greased bundt pan. Bake it in a preheated oven at 200°C for 20 to 25 minutes. Take this out on to a cooling rack. Let it cool completely. After 3 -4 hours then use it to make the sandwich. I baked this bread the previous day.
The next day I sliced this bread to make the sandwich.
Just mix the mayonnaise, honey, cream cheese, lemon juice, Dijon mustard, black pepper powder, all purpose seasoning, salt to taste, well taste and then add any extra seasoning according to your taste if required.
Mix all the lettuce, chicken, scallions, grapes, raisins and pecans well, then add the prepared mayo dressing and toss it well.
Slice the bundt bread and then place the filling in the it.
Serve and Enjoy!!

Zucchini Bread#BreadBakers

In this Zucchini Bread have grated zucchini and an apple. Zucchini does not add any flavor to the bread but give a moist texture to it. This quick bread is easy to make with a crunch of  nut and coconut.
Zucchini, also known as a courgette, has a smooth dark green skin that isn't removed before grating as we want to see its pretty shreds of green running through the bread. 
This bread is very tasty plain/without any frosting, but you may frost with the cream cheese frosting or any other frosting of your choice.
It has a moist texture, a wonderful aroma of ground cinnamon and nutmeg.
Makes One - 9 x 5 x 3 inch loaf.
Ingredients
1/3 Cup Toasted Walnuts - or any other nuts
140 Grams Green Zucchini/Courgette
1 Medium Apple
200 Grams All Purpose Flour
1 Teaspoon Baking soda
¼ Teaspoon Baking powder
¼ Teaspoon Salt
½ Teaspoon Cinnamon powder
¼ Teaspoon Freshly Grated Nutmeg
125 Ml Vegetable Oil
1 Cup (200 Ml Cup) Granulated Sugar
2 Large Eggs
1 Teaspoon Vanilla essence
½ Cup (100 Ml Cup) Desiccated Coconut

Method
Preheat your oven to 180°C , Spray or oil an 9 x 5 x 3 inch (23 x 13 x 8 cm) loaf pan and dust it with flour.
Toast the walnuts for about 5 minutes or until lightly browned and fragrant in the oven. Let cool and then chop coarsely.
Grate the zucchini, and then peel and grate the apple.
In a large bowl, sieve together the flour, baking soda, baking powder, salt, ground cinnamon, and nutmeg.
In the bowl, beat the oil, sugar, eggs, and vanilla extract until well blended (about 1 minute). Add the flour mixture, beating just until combined. Now add in the grated zucchini and apple and beat lightly till combined .Then fold in the nuts and coconut.
Pour the batter into the prepared pan, and tap it lightly. 
Bake it in the preheated oven until the bread has risen ( half way through I found the bread has browned so I tent it with an aluminium foil, about an hour and 10 minutes or until a toothpick inserted into the center comes out clean. 
As this bread was baking a wonderful aroma filled my house.
Place on a wire rack to cool for about 20 minutes and then remove the bread from the pan. 
This bread can be frozen. If, well wrapped, this bread will keep for several days at room temperature (if unfrosted) or for several days in the refrigerator (if frosted). 
This bread was so delicious, that, I, made it twice in a span of 15 days.  
My hubby friends didn't even know that it had zucchini, it was so good.

No Oil Or Butter Fijian Coconut Bread#Eattheworld

This was really easy, one bowl bread, which turned out so  moist and flavorful.  What really  surprised me that this recipe had no oil or butter in it.  Although I was tempted to add a tablespoon or two of oil, but refrained from doing so since I wanted to taste and see how this turns out.  Halved the recipe and tweaked it a little. 
 This recipe  is a keeper, if you love coconut.  I loved it.

Measurement is a 200Ml Cup
Ingredients
1 ½ Cups All Purpose Flour
½ Cup Caster Sugar
½ Tablespoon Baking powder
2  Eggs
½ Teaspoon Vanilla Essence
1 Cup Coconut Milk
½ Cup Grated Fresh Coconut
Method

Preheat the oven to 180°C. Grease and flour a loaf pan.
Let's first toast the grated coconut in a dry pan until light golden.
Sieve the flour together with the baking powder, salt and sugar. Mix in the toasted coconut.
In a separate bowl, beat the eggs, coconut milk, essence  with a hand whisk,  until just frothy.  
Add in the dry ingredients and mix till well combined. 
This is a thick batter, so do not get tempted to add more liquid. 
 Pour into a greased and floured loaf pan and bake for 45 to 50 minutes ( it took exactly 48 minutes in my oven)
or until the top is golden and a toothpick inserted in the center comes out clean.
Perfectly baked.
It's a dense bread, but taste good, especially when warm.
This will keep  good in the refrigerator for a week, just cling wrap it.  Whenever needed slice, toast and enjoy.  
My husband does not like coconut, had a slice when it was just baked. 
So the rest of the I, enjoyed it, one day I even had it with Lotus spread and it tasted great. 
This bread is filling for breakfast, have two thick toasted slices and you're full.
