Bread Pizza Margarita#Foodieextravaganza

Quick and Easy Slice Bread Slice Margherita Pizza is probably one of the easiest recipes you can make for breakfast, a light and quick dinner or as a evening snack. Made these bread pizzas for the physically challenged children who I, spend time with pretty often. They were so thrilled to make these. In batches of 4 each , each batch was given do one task. One batch applies the butter, the other sauce, the next will grate the cheese on it and then last batch of children will garnish arrange the olives.
When these were ready and each one was served in a paper plate along with a glass of juice, they were so thrilled to eat what they had made. Seeing the smiling and joyful faces, taking a second and third helping, gives me immense satisfaction, joy, to be and spend time with them.
Here the recipe is of a small quantity, but for 30 children I, made in large quantity.. used three medium packs of brown bread, 650 grams of pizza sauce and nearly a kg of mozzarella / pizza cheese and pics are of all the remaining that I could take. I am sure these mini bread pizzas, will be loved by you, especially the kids.  
If you are craving for pizza and don't have time to prepare the dough and then this is best solution. Easy, quick and really, really delicious. It takes no more than 15 or 20 minutes, you can also choose your favorite pizza toppings or with, ingredients you have in house. Can make many other variations according to your tastes and it's done, ready to be served.  
The recipe here is one simple option You can add various vegetables like peppers, onion, garlic, olives or meat like ham, prosciutto, tuna, pepperoni even other type of cheese. You can never get bored with this dish.
Give it a try I am sure you and your kids will love these. The 
Ingredients
6 Bread slices
1/3 to 1/2 Cup Pizza Sauce
1/2 Cup Mozzarella Cheese - grated
1 Teaspoon Dried Oregano
5-6 fresh basil leaves, chopped
Sliced Green or Black Olives - as required

Method
Preheat oven to 200°C with both the elements on.
Butter both the sides of the bread lightly. Arrange bread slices on a baking tray lined with parchment paper.
Spread pizza sauce on each slice of bread. Sprinkle dry oregano, and grated cheese. Top it with sliced black or green olives and chopped basil leaves (by the time I could make these for pics all the olives were over).
Bake for 10 minutes or until the cheese melts. Serve immediately.

Nutella Hot Chocolate#SundayFunday

Easy, creamy Nutella Hot Chocolate is a quick to make cup of heavenly taste! It's a tasty twist on the classic hot chocolate. It’s chocolaty, creamy, and nutty – a perfect combo of hot milk and nutella.

Serves One
Ingredients

1 Cup Hot Milk - Full Fat
2 Tablespoons Nutella
1 Tablespoons Unsweetened Cocoa Powder
1 Teaspoon Sugar or to taste
Toppings
2 Tablespoon Toasted Almonds - slivered
Few Marshmallows
Extra Nutella

Method
Heat milk in a medium sized saucepan on medium-high heat until beginning to warm and steam. Add the nutella, cocoa powder, sugar and whisk until dissolved and combined. Bring to a gentle simmer while stirring and take off heat.
Serve with your desired toppings.

Pudina/Mint Pulao#PotluckParty

Mint Pulao is a healthy rice recipe which can be prepared within minutes and it's so fragrant, spicy and delicious. Pudina' in Engilsh is Mint. A perfect main course dish which can be had as a complete meal. This can be prepared with leftover boiled rice too.

Ingredients
2 Cups Basmati Rice - soaked
4 - 5 Green chilies - chopped
1½ Teaspoon Salt
1 Vegetable Stock Cube
½ Cup Packed Mint
½ Cup Coriander Leaves
1 Tablespoon Level Ginger Garlic paste
¼ Cup Oil
2 Tablespoons Desi Ghee
A Sprig Curry Leaves
Mixed Whole Spices
4 Green Cardamoms
4 Cloves
1" Piece Cinnamon
1 Bay leaf
For Garnishing
2 Tablespoons Brista/Fried Onions
1 Carrot - caramelized
1 Large Potato - cut into wedges & deep fried
2 Hard Boiled Eggs - cut into wedges - optional

Method
Boil the rice with the whole spices , salt till done but the grains should be firm. Strain the rice in a colander and let it cool a little
Grind the green chillies, ginger garlic paste, coriander and mint leaves to a fine paste with a tablespoon of oil, add water if necessary , only a tablespoon or two ( when you add oil whiles grinding the mint and coriander will not turn black/oxides) .
In a wok heat oil and ghee, then add curry leaves then the ground paste and fry for a minute or two, add the vegetable stock cube and ¼ cup water, mix well and bring this to a boil. Add the boiled rice and toss, till all the masala is coats the rice well. 
Cover and reduce the flame to low, let this cook on low flame for 5 minutes or till the rice is nicely heated. Serve garnished with fried onions, caramelized carrots, fried potatoes and boiled egg.
Enjoy this delicious and flavor full rice.
My Notes
If you are using leftover rice then add the whole spices along with the curry leaves.

Eggless Gajar Halwa Cake /Carrot Halwa Cake#SundayFunday

This Indian Gajar Halwa is famous and when in season you it's a must for even function or party. This is made in my house at least 3 times during the winter season, since my hubby and son in law loves it. My hubby was going to attend his music group get to gether and he wanted me make an eggless cake to take. Had made this gajar halwa, so decided to try this cake. It was a hit.
In this gajar halwa then is no khoya/mawa or milk powder the milks evaporates and forms in mawa itself.  You will love this gajar halwa.

Ingredients 
For The  Cake
½ Cup Fine Semolina / Rawa - not roasted 
¼ Cup Caster Sugar
1 Teaspoon Level Baking powder
½ Teaspoon Level Baking soda
1½ Cup All Purpose Flour
A Pinch Cardamom powder
½ Teaspoon Milk Essence
3 Tablespoons Butter
3 Tablespoons Oil
¼ Teaspoon Salt
¾ Cup Prepared Gajar Halwa
1/8 Cup Pistachios - chopped
⅓ cup Condensed milk
¾ Cup+- Milk
¼ Cup Yogurt - beaten
For The Gajar Halwa
1 Kg Red / Winter Carrots - grated
¼ Cup Desi Ghee
1½ Liters Milk ( Full Fat)
⅓ Cup Heaped Granulated Sugar
½ Teaspoon Cardamom Powder
A Pinch Of Saffron Strands
For The Compote
4 Strawberries - slice
1 Tablespoon Granulated Sugar
½ Of Red /Winter Carrot - julienned
½ Teaspoon Lemon juice

Method
For The Gajar Halwa
This halwa does take time but in the intial stage till the sugar is not added you need not stir. You can leave this on the flame and after every 10 minutes come and give it a stir. No fuss gajar halwa. Only once you add the sugar you need to keep on eye on it, stir it continuously till the sugar melts. Worth the effort and trouble.
Heat ghee in a kadai, add grated carrots. 
Cook till they are soft. 
Add milk and saffron strands, 
let this cook on slow flame till all the milk is evaporated.
Then add sugar in it. Now keep an eye on the mix and stir it continuously till the sugar melts and the mixture thickens.
Add the cardamom powder and mix well, 
switch off the flame.
Gajar Halwa is ready. Keep the halwa on room temperature. Let it cool then only use it to make the cake.

For Eggless Gajar Halwa Cake
Butter a pan ( I used two square ones) well then line the bottom with a parchment paper, dust it with flour, keep a side ( the ideal pan is a round one 6" with height, gives a nice height and looks beautiful). Since this was going for my hubby's music group party, had to make many slices so used a square one. The cake was flat but so delicious.
Preheat the oven to 180°C
In a bowl, add all dry ingredients semolina, sugar, baking powder, baking soda, flour and cardamom powder mix it well. Add butter and oil in the dry mixture and mix well with a hand whisk. Add gajar halwa, pistachios and condensed milk in dry mixture. Now, add milk, yogurt, essence, cardamom powder in the mixture and mix it well. 
Transfer the batter in the cake tin. Place it in a the preheat oven for about 25 to 30 minutes depending on the size of the cake. 
Check the cake with a toothpick inserted in the center, comes out clear take the cake tin out of oven. Let it cool on the wire rack.
For The Compote
Heat a pan add sliced strawberry, sugar and julienned carrot in it. Cook if for 3-4 minutes and then add lemon juice in it. Switch off the flame.
When the cake cools un mold and spread the prepared compote. 
The cake is ready to serve.

White Hot & Sour Chicken & Prawns Soup#FishFriday

White Hot and Sour soup is a spicy and hot soup made with chicken, prawns and mixed vegetables. Super easy to make and takes 30 minutes from start to finish! It’s got that perfect hot and sour flavor that everyone will love.

Serves 2
Ingredients

500 Ml Chicken Stock
100 Grams Boneless Chicken Cubes
6 Big Prawns - chopped
½ Cup Chopped Cabbage
2 Tablespoons Tofu - tiny cubes
2 Tablespoons Diced Carrots
1 Green Chilly - finely chopped
1 Baby Bok Choy - chopped
1 Spring onion - white and green chopped
Salt to taste
½ Teaspoon White Pepper powder
1 Tablespoon Vinegar
1 Teaspoon Sugar - optional
1 Tablespoon Light Soy
1 Teaspoon Arrowroot powder/ Corn flour
½ Cup Water
1 Egg  -  beaten

Method
Heat a teaspoon of oil in a pot, sauté the chicken till it turns pink to white, add the stock and veggies bring it to a boil, reduce the flame and let it simmer for 5 minutes.
Then add all the seasoning and prawns till cook for 4 minutes thicken with corn flour paste and add beaten egg. Lastly add bok choy green and spring onions greens. 
Serve hot, this is delicious and satiating.
