Corn Cutlets

Healthy, crunchy and crisp melt in the mouth cutlets made with corn and mashed potatoes. Corn patties is also famous monsoon snack since they are freshly available at that time. These corn cutlets are really mouthwatering ,yummy instant snack, no onion or garlic, they can be served in kitty parties, birthdays, kids tiffin, high tea parties or as vrat food.

Ingredients 
1.1/2 Cup Packed Grated Boiled Potato
1 Cup Crushed Boiled Corn 
kernels
1 Cup Boiled Corn kernels
2 Green Chilies -  crushed
1/2 Teaspoon Ginger paste
2 Bread slices powdered
1/4 Teaspoon Roasted Cumin powder
1/2 Teaspoon Amchur powder
1/2 Teaspoon Chat masala
1/2 Teaspoon Sendhav Salt or to taste
2 Tablespoons Corn flour
2 Tablespoons Coriander leaves - chopped

Method
Cook corn either in microwave or cooker. In microwave for 8 to 10 mins or in the pressure cooker for 1 whistle. When cooker steam cools off, then remove corn kernels using a knife.

Reserve one cup corn kernels and the rest crush in a mixer slightly by pulsing it. No need to make a smooth paste we want a coarse paste.

Transfer to a mixing bowl . Add boiled & mashed potatoes , corns and rest of the ingredients. Mix everything well, taste for salt and spice and add if anything required. 
Divide the dough to small / medium equal size balls . Shape them into cutlets depending on your choice . You can do round flat disc /oval / heart shape / use any cookie cutter to give special shape . I have used an oval cookie cutter to them shape.
Heat 2 tablespoons oil in pan and shallow fry them till golden on both sides . 
Serve Corn Cutlets hot with ketchup / green chutney.

Instant Onion Bread Uthappam

A simple instant breakfast or an quick easy dinner made with leftover bread, semolina  and buttermilk.

Ingredients 

7 Big Bread Slices - Used the sides slices of bread 
A Pinch Baking soda 
1/2 Cup Fine Semolina 
1/2 Cup All Purpose Flour 
1 Cup Water 
1 Cup Buttermilk 
Salt to taste 
1 Medium Onion - finely chopped 
5 -6  Curry Leaves - finely chopped 
1 Green Chilly- finely chopped  
2 Tablespoons Finely Chopped Coriander leaves 

Method 
Cut the the bread slices into small pieces and grind in a blender to make bread crumbs. Take this out into a big bowl, add pinch of baking soda in the bread crumb mixture and mix well. Keep aside.
In the same blender, add semolina, all-purpose flour, water, buttermilk, salt and grind to make batter to make it lump free. Keep this covered in the blender itself for 30 minutes or more.
After the soaking time blend the breadcrumbs into the semolina mixture to make a nice slightly thick batter. If necessary add more water.
Mix the onion, curry leaves, green chilly and coriander leaves with salt to taste and keep aside. 
Heat a hot griddle and drizzle little oil on it . 
Pour one or two ladles full of batter and spread the mixture gently in circular motion to make round uthappam. 
Immediately spread a little of the onion mix and press it with a spatula. Cover and cook the bread uttappam until done or golden brown at the bottom. 
Drizzle some oil on the sides and over the top of the uthappam.  
Flip the utthappam. and cook till the onion sides browns nicely. 
Serve hot with chutney, yogurt or sauce of your choice. This was our quick easy and light dinner.

Rajasthani Stuffed Mirchi Vada

This is a spicy Indian snack consisting of  potato stuffing, banana peppers is used for making these vadas ( these peppers are not spicy). This is a popular street snack of Rajasthan also known as Jodhpuri Mirchi Vada. 

These make excellent starters. On a rainy day or cold winter evening, these mirchi vadas are most loved and on great demand. 

Ingredients
8 - 10 Large and Fat Green Chillies / Banana Peppers
3 Medium Potatoes- boiled and mashed
2 Green chilies - minced
1/2 Inch Piece Ginger - minced
3 Cloves Garlic - minced

1 Small Onion - minced
1 Tablespoon Coriander Leaves - finely chopped
1/2 Teaspoon Turmeric Powder
1 Teaspoon Lemon Juice
1/2 Teaspoon Salt or to taste

For the Batter

1 Cup Besan / Chickpea flour
A pinch of Chilly Powder
A pinch of Turmeric Powder
For serving
Mint Chutney 
Method
Batter for the coating-

In a bowl add besan, salt to taste ,turmeric and red chili powder and water. Mix well. Make sure there are no lumps. If required you may add more water very little at a time and keep mixing. The batter should thick enough to form a nice coating  on the chillies ( see above pic).

To make the Mirchi Vada -

In another bowl / plate take the mashed potatoes. Add the turmeric powder, green chilies, garlic, ginger, coriander, onions, salt to taste and lime juice, mix well. Keep aside.
In the meantime heat oil in a deep frying pan / kadai. The heat should be on a medium low.
Slit the green chillies in the center, remove the thread with seeds and wash them well and drain them.
Then stuff the potato mixture into the each chilly by pressing it nicely. Fill all and keep aside. 
To fry
Once the oil is hot enough to fry the vadas, dip the stuffed chillies into the batter. Leave them very gently and carefully in the oil one by one.

Fry them turning the sides only after one side is cooked and golden. Repeat the process for the rest of the chillies.

Transfer them to a paper towel to remove excess oil.

Serve hot with Mint Chutney or Kethcup... enjoy.. they are so  yummy.

Ribbon Pakoda / Ola Pakoda


This is another addictive savory snack. Ribbon Pakoda is a snack that I enjoyed in my young age and still love eating it. When my daughter was schooling this was a regular snack that was in her tiffin. This is also called Ola Pakoda in Tamil. During festival eating to many sweets one gets tried,  you want something spicy and this snack balances that sweetness. Try this addictive and super easy snack.

Ingredients

2 Cups Chickpea flour / Besan
1 Cup Rice flour
A pinch Asafoetida
1 Teaspoon Red chilly powder - adjust to taste
1 Tablespoon White butter
1 Teaspoon Salt or to taste
Oil for deep frying

Method

Sieve the rice flour and besan thrice. 

In a bowl mix all the above ingredients together, add water little at a time and knead it into the  soft dough. 


Make the dough a little soft so that the it can be squeezed easily from the murukku maker.  This is plate that is used to make the ribbon / ola pakoda.


Heat oil in a kadai.  

Grease the inside of murukku press with oil.  Make a ball and put in the murukku press and press it directly in the oil. When  they turn light golden brown, flip the side and cook till light golden.  Remove pakoda and place it on a tissue paper to drain the excess oil. 


Let it cool completely and then store it in an airtight container.  Repeat the same for the remaining dough too. You can keep this for a month and enjoy this as a tea time or tiffin snack.

Vada Pav (Mumbai Style) - Street food

Vada Pav is a hugely popular street food in India and has its origins in the state of Maharashtra. Vada Pavs are common to find in every part of India and is sold by roadside vendors and some shops. The first Vada pav was first sold in Dadar, Mumbai around 1970.

Vada pav is  served with a with different types of chutneys.

This dish was initially started as the most cheapest form of a meal for low income group, but due to its taste, this dish became so popular that many sophisticated hotels also have started dishing out this dish at extra cost. The Vada Pav is still regarded as a humble dish, and many people have it as their meal too.  My daughter loves Vada Pav, when she was in Brussels and we were visiting her, she asked me bring for her  Vada Pav.

This is recipe on day 3 which I choose from here.

Ingredients2 Big Potatoes - boiled and mashed lightly
1/2 Teaspoon Chilly powder
½ Teaspoon ground green chilly garlic paste
1/4 Teaspoon Turmeric powder
¼ Teaspoon Asafoetida
1/4 Teaspoon Lime crystals or 

1/2 Teaspoon Amchur powder - I used this
¼ Cup chopped coriander - chopped finely
Salt to taste
1 Teaspoon Oil

Oil as needed for frying

2 Green chillies for frying

For the Batter
¼ cup chickpea flour
2 Tablespoons Rice flour
1/4 Teaspoon Chilly powder
Salt to taste
Water as needed

To Serve
Pav/ Bread as needed
Green Chutney

Mash the potatoes and add the chilly powder, ginger- chilly paste, turmeric powder, amchur powder, coriander and mix well. 
In a pan heat oil, add mustard seeds when they splutter add curry leaves, asafoetida and pour on the mixture and mix well. Make vada's and keep aside.  
In the meantime heat the oil in a kadai on medium flame.

To make the batter 
Mix all the batter ingredients and add water as needed to make a thick batter, as soon as water it added to the flours, it starts becoming lumps, so mix it with hand to remove lumps or use a whisk. Do not make it too thin, the coating does not hold on to the stuffing it is too thin.

Making vada 
Dip the vada with a spoon into the batter and put it into the oil and fry till cooked. Fry green chilly also lightly and sprinkle salt a little keep aside.
To serve  

Slit the pav. Add dry lasun chutney on one side and on the other side green chutney place the vada.  
Press and serve with fried green chilies.
