100% Whole Wheat Veggie Calzone#BakingBloggers

I love these Whole Wheat Calzones. They make an easy lunch box or a main course for weekend dinner, since you can prepare these in advance and freeze it.  When you want to have them just heat it in the microwave in minutes and enjoy them. 
Wrap these in a foil and place it in their lunchbox and give it with your kids as tiffin to school.

These are always made by me for a  weekend dinner,  these cheesy, full of veggies make a complete meal.

250 ML Cup Measurement
Ingredients
For Dough:3/4 Cup Warm Water
1/2  Teaspoons Rapid Rising Yeast
1/2  Teaspoon Granulated Sugar
2 Teaspoons  
2 Teaspoons Olive oil
1 Cups Whole Wheat Flour
1 Teaspoon Vital Wheat Gluten 
1/4 Teaspoon Heaped Sea Salt
1 Tablespoon Milk for brushing
For the Filling

1/2 Cup Capsicum
1/2 Cup Mushrooms
1/2 Cup Carrot
1/2 Cup Broccoli
1/2 Cup Fresh Peas
1 Medium Onion
2 Cloves Garlic
2 Tablespoons Heaped Cream Style Corn - Homemade
1/4 Teaspoon Cayenne pepper
1/4 Teaspoon Red pepper flakes
1/4 Teaspoon Italian seasoning
1/4 Teaspoon Dried Rosemary
1/2 Teaspoon Level Sea Salt
Grated Mozzarella & Cheddar cheese as required
2 Teaspoon Olive Oil

Method

For Dough:

In the bowl , combine yeast, flour, vital wheat gluten,2 teaspoons olive oil salt and sugar. Mix it well and then slowly add the water to make a soft and sticky dough ( used exactly 3/4 cup warm water ). Take this dough on to lighlty floured work surface. The remaining 2 teaspoon oil pour it into a bowl. Oil the bowl well and keep oiling your hands in and knead the sticky dough for a 20 to 25 turns or till it forms a smooth ball. Place dough in the oiled bowl, cover loosely with a towel, and let rise for 30 minutes in a warm place.
In the meantine let's make the filling

Chopperize all veggies finely and keep aside.
In a pan heat oil, add the garlic saute for a minute 
add the onions when it softens 
add the peas, carrot and broccoli, saute for a minute. Cover with a lid and cook it for 2 minutes. 
 Open the lid add rest of the veggies and seasoning saute well and let it cook again for 3 minutes. 
Now add the cream style corn and saute till all the moisture evaporates and the filling is dry. Taste for salt and seasoning if necessary adjust according to your taste.
Filling is ready.  Take off flame and let it cool.

Preheat oven to 200 degrees C for 20 minutes.

After 30 minutes you have a beautifully risen dough, deflate it on a floured surface.  
Cut into 5 equal size balls.
Roll each ball into a round circle, 1/4 inch thick 
place the filling on one side 
Top it with grated mozzarella & cheddar cheese 
Close it like a turnover 
Press the edges with a fork even a few on the top to release the air while baking. 
Keep this in a greased baking tray. Like wise make rest of them and brush them with milk. Place them in the preheated oven for 30 to 35 minutes or till golden brown and when tapped it gives an hollow sound. 
Cool them on a wire rack. 
When cooled enjoy with any dip or sauce of your choice.

Mushroom Do Pyaza

Mushroom do pyaza uses the onion in double the quantity hence the name "do pyaza".   This mushroom dish is tasty and can be made in a jiffy.

Ingredients

500 gms mushroom (quartered)
2 Tablespoons Oil
1/4 Teaspoon Cumin seeds
1 Capsicum - sliced
12 Baby White Onions
1 tomatoes (chopped)
1 Medium Onion - sliced
1.1/2 Teaspoons Kacha Masala
1 Cube Veg seasoning
1 Teaspoon Sugar
1/2 Teaspoon Salt
1 Teaspoon Lemon juice
1 Tablespoon Coriander leaves -chopped
Salt to taste

Grind to paste

1 Large Onion
2 Medium Tomatoes
8 Black Pepper Corns
4 Cloves Garlic
1 Inch Piece Ginger
Method
Heat oil in a pan, add cumin seed and when it starts to splutter add the sliced onion . Fry till the onions are translucent.
Then add  the ground paste and  Kacha Masala, mix all the ingredients well and saute till oil  leaves the sides.

Add tomatoes and cook, till tomatoes are little pulpy and oil 
 leaves the sides.

Add the baby onions, sugar, veg cube and capsicum, fry till capsicum is little soft.

Now add the mushroom pieces along with salt to taste  fry for 2 minutes then add 1/2 cup water bring it to a boil. Cover it with a lid and cook till done. Cook on low flame.
When mushrooms are cooked add finely chopped coriander leaves and lime juice. This is a semi dry gravy and goes very well with chapatis or parathas.   Granish with suate onions and capsicum.  Serve hot.

My Notes : 
If you do not have white baby onions then use shallots or ordinary onions(cut them in big pieces) .

Mushroom And Carrot Soup #soupswappers

This month's event for Soup Saturday Swappers the theme is Root Vegetables, our host is Wendy , thank you dear for hosting this event.

Since we had use root vegetables to make the soup, I, decided to make this satisfying, hearty and low cal vegetarian soup with carrot, mushrooms and gave it a punch of garlic. This is a little spicy soup since carrot and mushrooms have a bland taste. 
Serves 3
Ingredients:
2 Big Carrots  -  chopped
1 Small Onion  chopped
2 Medium Tomatoes  chopped
6 Cloves Garlic   chopped
8 Button Mushrooms  chopped
1/2 Teaspoon Chili flakes
1 Teaspoon Corn flour - if required (I did not add) 

1/4 Teaspoon White Pepper Powder
Salt to taste
6 Cups Water
1 Veg Soup Seasoning Cube
1 Teaspoon Olive Oil or Butter
Bread Croutons  or Garlic Bread for serving




Method

In a pressure cooker add water onion, tomato, carrot and garlic, cook for on high flame for a whistle. Reduce the flame and then let it cook for 5 minutes. Take off flame and let the cooker cool. Once the pressure is released separate veggies and water. Retain the water for later use. Grind veggies to fine paste. Add retained water. Strain mixture and set aside.
In a sauce pan add a teaspoon of olive oil, sauté mushroom slices with a pinch of white pepper powder and chilly flakes for 2 to 3 minutes till they get soft. Add the strained mixture, seasoning cube with chili flakes, salt and pepper powder or according to your taste . If the soup is thick then add additional water if required. Let is simmer  for 5 to 10 minutes or till you get the required thickness.



 Serve hot with a few bread croutons or  slices of garlic bread. Enjoy this delicious, easy soup, it warms and comforts you after a long day.

Baked Mushrooms

Mushrooms are one of my favorite veggies. These are baked in its own juices with freshly grated cheese – my ultimate weakness ! This is another recipe that I make quite often when I’d like some nice looking yumminess on the table that is healthy, easy to prepare and is ready in a jiffy.  Although it is “only veggies” it is quite satisfying.

Ingredients
1 Box of Mushrooms
1 Small Onion - finely chopped
4 Flakes Garlic - finely chopped
1 Tablespoon each Red, Yellow & Green Capsicum finely chopped
1 Tablespoon Sweet Corn - boiled and lightly crushed
1/2 Teaspoon Chilly flakes
1/4 Teaspoon Pepper powder
Salt to taste
1 Tablespoon Oil
1 Cup Grated Chesse


Method

Wash and skin the mushroom remove the stems. Chop the stems finely, keep aside.

Heat oil in a pan, add the garlic and chopped onion, saute for a minute.
Add the chopped stems of the mushroom and rest of the ingredients except the chesse. Saute these for 3 -4 minutes. Remove from heat. 

Add 2 tablespoons of chesse and mix well this will bind the mixture together.

Fill the mushrooms with the mixture and place a sweetcorn on top.
Sprinkle the chesse on top and bake in the oven at 180 degree for 15 minutes.

Serve hot. Enjoy!!!!!
