Caramel Bread Surprise - No Bake#Improve

An Easy Caramel Bread Surprise makes the perfect dessert. You have to prepare this a day in advance if you want to serve it for a party. It has to set/chill in the refrigerator, then only, you will be able serve it in slices, as this a not bake dessert.
Ingredients
For The Caramel
190 Grams Homemade Dulce De Leche
1/3 Cup Milk
4 Large Bread Slices - trim off the sides 
For The Cashew Caramel Crunch
½ Cup Cashew Nuts
¾ Cup Granulated Sugar
1 Teaspoon Butter
For The Caramel Cream
2 Cups Whipping Cream

2 Tablespoons 
Homemade Dulce De Leche
Method
Dry roast the cashew lightly.
For The Cashew Caramel Crunch
Take a nonstick pan add the sugar and on low flame let is melt do not stir, when the sugar completely melts and starts to 
caramel then stir till it turn light golden, add the butter and switch off the flame
add the cashew and give it quick mix.
Pour this on a greased plate and let it cool. Then break this into pieces and place it in a zip lock bag, crush it with a rolling pin till coarsely powdered.
Keep aside our caramel crunch is ready.
For The Caramel Cream
Whip the cream till it forms soft peaks, add the Dulce De Leche and whip it for a minute or till well blended, if your want a dark color then add more Dulce De Leche. Keep aside
For The Caramel
To make the Dulce De Leche spreadable. Add the Dulce De Leche with the milk and cooked it on low flame till it becomes a little thick but spreadable caramel consistency. Switch off the flame and let it cool.
For Assembling The Bread Surprise
Lightly butter a 6" Pyrex dish.
Pour little thin caramel on the base, arrange bread slice
with a spoon spread the caramel on it then sprinkle the crunch.
Then whipped caramel cream mixture
Again bread slice with a spoon spread the caramel on it then sprinkle the crunch. Again whipped caramel cream Mixture. Drizzle a caramel , sprinkle the crunch on top. 
Cling wrap it and let it chill in the refrigerator over night so that is sets well.
Serve this chilled.

Homemade Dulce De Leche - Pressure Cooker#MultiCookerMonday

There are different ways ways to make Dulce de Leche which is a delicious caramel. Here is a easy and quick method to make this caramel, which is hassle free and requires no attention.

Ingredients
1 Can (14oz) Condensed Milk
Water

Method
In a pressure cooker place the can and cover the cooker with water till the can is submerged and the water is two inches above the can.
Place the cooker on high flame and take 2 whistles then reduce the flame on medium low and let is cook for just 15 minutes. After 15 minutes switch off the flame and let the cooker cool completely. When it cools, remove the can and let this can cool completely, then refrigerate it for at least 3 hours. 
After 3 hours open the can and ta da a quick and easy Dulce De Leche is ready to use.

Dulce De Leche Banana Cake#BakingBloggers

  • Made this cake using all the leftovers ingredients I, had in the fridge. Over ripe bananas, leftover dulce de leche, little fresh cream and 3 triangles of cream cheese. 
    My hubby doesn't eat bananas, but, clever me finds endless ways of giving him this fruit, in smoothies, parathas and cakes. The only thing, I, have to be careful while using it, if he see it going into the dish then he will not eat it. Thinks that he will catch cold and cough if he eat's bananas, tried reasoning with him, but in vain.
     This cake it turns out moist, buttery and delicious. It tastes even better the next day.   You can see flakes of DDL, since it was thick and refrigerated, looks like chocolate chips.
    Ingredients  
  • 150 Grams Butter
    55 Grams Cream cheese
    75 Grams Caster Sugar
    3 Small Eggs
    210 Grams All Purpose Flour
    1 Teaspoon Baking Powder
    ½ Teaspoon Baking soda
    ¼ Teaspoon Salt
  • ¼ Cup Fresh Cream
    1/3 Cup Packed Dulce De Leche
    3 Medium Size Bananas – mashed /blended
    1 Sachet(8 grams) Vanilla Sugar

    Method
    Preheat the oven to 180°C. . Greased and line an 9” round baking pan ( used an 8" pan silicone mould, had leftover batter so made it in a small bundt pan).
    Blend the bananas, you can mash them with a fork too. (had to blend them cause hubby shouldn't see traces of it). 
    In a bowl sieve flour, baking powder, baking soda, vanilla sugar and salt. Set it aside.
    Beat the butter, cream cheese, DDL and sugar on high speed until light and fluffy. Add in eggs, one at a time and mix until smooth. Mix in bananas.
    Slowly add in the flour mixture and  little of cream, blend just until smooth and all the flour and cream is incorporated.
    Pour batter into the baking pan. Bake for 45  minutes or until golden brown and a toothpick inserted in the center comes out clean. 
    The Bundt pan too 20 minutes to bake.
    While baking the house was filled with the fragrant aroma.
    Let the cake cool for 10 minutes in the pan before removing it. Let the cool completely before cutting into it. 
    The big cake I dusted with icing sugar
    the small one got over in one go along with our tea.

Alfajores ( Sandwich Cookies With Dulce De Leche)#BakingBloggers

Welcome to Baking Bloggers event, today we are posting recipes from Central America to South America, from Mexico south to Argentina and all points between.
Made these tender crumbly cookies which are sandwiched with dulce de leche – Alfajores are such delicate kind of cookies that are mouth melting and you will love it.
I have used my homemade dulce de leche to sandwich these tender cookies, it take's these cookies to another level... almost irresistible.. you can't stop at one.. they are too good.
Makes 12 sandwich cookies
Ingredients
100 Grams Unsalted Butter - the butter should be cold
25 Grams Salted Butter - the butter should be cold
50 Grams Powdered Sugar
1 Egg Yolk - only- from the refrigerator
1 Teaspoon Vanilla extract
105 Grams All Purpose Flour
105 Grams Cornflour
1/2 Teaspoon Level Baking powder
1/8 Teaspoon Baking soda
5 - 6 Tablespoons Dulce De Leche - Homemade
Icing sugar or Shredded Coconut for dusting


Method

Sieve the cornflour and all purpose,sugar, baking powder and soda, keep aside.

Grate the cold butter in a big bowl, rub the sieved ingredients into the butter lightly with your hands, add the egg yolk and essence lightly bring it together into a ball. Wrap in cling film and chill for 30 minutes ( chilling the dough is must). Do not knead the dough too much or else the cookies will become hard and loose that crumbly texture.
Once the dough has cooled, roll out the dough between two sheets of parchment paper and using light pressure as possible roll it approximately 1/4 inch thick and it into cut small circles with a cookie cutter. 
Place them on a lined cookie sheet/baking sheet/tray. Repeat with the rest of the dough. Place the tray back into the refrigerator to chill for at least 15 minutes. 

In the meantime preheat the oven to 170 C. 
After the cookies are cold then bake the cookies for exactly 11 to 12 minutes until they are just starting to brown very slightly at the sides. They should still be very pale. Leave to cool for 5 minutes then transfer to a cooling rack. 
When the cookies are cool, put a small spoonful of dulce de leche on one cookie and press another on top lightly (these tend to break if extra pressure is used while sandwiching these) . 
Hold them in the center lightly while sandwiching so that they don't break. 
Dust them with icing sugar.
Enjoy these mouth melting cookies. 

My Notes
If you are using unsalted butter then add a pinch of salt.

The number of cookies is based on the cookie cutter size - I have used  a 2.1/2 cookie cutter and then when a little dough  made small ones with 2 inch cookie cutter. The small ones look cute and are also easier to sandwich they do not break. Would suggest using a 2 inch cookie cutter.


I wanted to roll these in coconut, but my hubby said no, he prefers icing sugar.
