Homemade French Onion Dry Soup Mix

This is a Vegan and Gluten Free  French Onion Soup  Dry Mix. Watched this recipe on a Cookery show was  excited to make it home.  

This is the powdered version of soup mix.
Onion soup mix is very versatile and can be used in number of things, like soups, pot roast, meatloaf, burgers chicken, dips etc. 
Let's make the - Homemade French Onion Soup Mix

Ingredients
½ cup Dried Onion Flakes / Dehydrated Onion flakes
3 Cubes of Chicken / Veg  Stock Cubes
1 Tablespoon Onion Powder
1 Tablespoon Garlic Powder
1 Teaspoon Celery
1 Teaspoon Ground Black Pepper
1½ teaspoon Dried Thyme
1 Tablespoon Dried Parsley
½ Teaspoon Sea salt
½ Teaspoon Turmeric powder

Method

Mix all ingredients and store in a jar.
 I have also used this french onion mix on a meat loaf  and it tasted so good - check this post to see the  recipe soon.

DIY/Homemade Cream Of Soup Mix / Condensed Soup Mix

This is a super delicious and easy way to make your quick creamy soup.  Just mix this in milk or water and you will have creamy soup ready in minutes.
250 Ml Cup measurement
Ingredients 
1 Cup Level Dry Milk Powder - I used Full Cream
3/4 Cup Level All-Purpose Flour
1 Tablespoon 
Dehydrated Onion Flakes -Homemade
¼ Cup Level Potato Starch 
¼ Teaspoon Heaped Dried Herbs 
¼ Teaspoon Heaped Dried Thyme
¼ Teaspoon Heaped Dried Basil
¼ Teaspoon Heaped Dried Parsley
 ¼ Teaspoon Heaped Black Pepper powder 
Method
In a blender add all the ingredients and just pulse it once or twice.
When you are ready to make your condensed soup mix 1/2 Cup level of the mix  for Cream of Mushroom Soup
My Notes
 Label and store this in the refrigerator.  It stay's good for months.
To Make it Gluten free use Gluten Free All Purpose Flour.
To Make this Vegan / Dairy Free, use Coconut Milk Powder instead of Milk Powder,
If you do not have Potato Starch Powder then use Corn Flour Powder

Ginger Butter Cookies#FantasticalFoodFight

Made these cookies for the Fantastical Food Fight wherein the theme for the month is: Gingerbread . These cookies are eggless, mouth melting and crisp. 
You will definitely love the addition of ginger powder in it.
Ingredients  
1 Cup All Purpose Flour
1/3 Cup Icing Sugar
100 Grams Salted Butter
13 Grams Vegetable Shortening
2 Tablespoons Milk
2 Tablespoons Custard powder
1 Teaspoon Vanilla essence
1 Teaspoon Dry Ginger powder - Homemade
¼ Teaspoon Level Baking powder


Method

Take all dry ingredients in a bowl except sugar mix well and keep aside. 
Take butter, shortening and sugar in a bowl and mix till light and fluffy. Add vanilla essence, milk and mix again. Now  fold in the add all dry ingredients and  mix it well. Mix everything well together with a help of a spoon or spatula. 
Take a piping bag with  big size star nozzle and fill it with cookie dough. Line a baking try or pan with parchment paper and pipe the cookies on it at little distance. Bake at 180 degrees for 15- 20 minutes. 
Baking time may vary depending on Oven. 
Once done take out them on a cooling rack serve when completely cools down.

How to make Air fryer Dehydrated Ginger Powder at home.
Ingredients  
500 Grams Ginger

Method
Remove the skins and wash the ginger and pat them dry.
Then using a grater or a chopper, I used my V slicer to cut into fine slices.
Then place these in the basket of the Air fryer at 80 degrees. Then no need to preheat the Air Fryer. It will take around 40 to 45 minutes.
Every 15 minutes give it a good stir so that they are evenly dried and crisp. If necessary keep it for another 10 to 15 minutes more. 
Dry the ginger slices on a cloth and leave it for about an hour or two so that they are cool and dry completely.  
Then powder them in a blender or a coffee grinder. 
Store it in a air thight container and keep this in your kitchen cabinet.
Ta Da.. Ginger Powder is ready..

Kacche Kele Ke Kebab / Raw Banana Cutlets#FantasticalFoodFight

Vrat means "fast" and these kebabs are designed specifically for those who are fasting. Though these kebabs are specially meant for vrat, you can enjoy them any time you wish. These are No Onion & Garlic kebabs , have them yogurt or Mint & Coriander Chutney. These are very delicious and easy to make.
When Sarah our host gave us Banana as a theme for this month, I,  was very happy, since this is right time to prepare these kebabs.  

In India we celebrate the  Shravan, which is fasting month for Hindus. All types of fasting food is enjoyed during this month and these kebabs are apt for fasting.

Ingredients 
2 Rawa Bananas- Boiled and grated
¾ Cup Boiled Green Peas - mashed
2 Tablespoons Heaped Coriander leaves- finely chopped
½ Teaspoon Salt or to taste
1 Tablespoon Heaped Roasted Gram powder
1/3 Cup Dehyrated Spinach Leaves - see recipe below
¼ Teaspoon Garam masala
1 Teaspoon Amchor /Mango powder
1 Teaspoon Minced Ginger
2 Green Chillies - minced
Oil  as required for frying

Method

Boil the raw bananas with the peel.  Place the bananas in a container and steam it in a pressure cooker on high flame after the first whistles , reduce the flame to medium low and keep it  for 10 minutes .  Then cool the pressure pan.  Remove the bananas and cool them completely,  then peel them and grate them.
Mash the peas in a small chopper or small mixer jar.
Mix all the ingredients well to make a nice dough. 
Then pinch equal size balls and shape into small flat kebabs. 
Heat a tablespoon or two of oil in a broad frying pan and fry them till golden brown on medium high flame.
Serve hot with ketchup, chutney and salad.

How to make Airfryer Dehyrated Spinach/Palak Leaves at home.
Wash and dry the leaves and keep spread them on a tea towel to dry.  When dry.  Place them in a airfryer not on the basket but below the basket or else they will fly while the airfyer is running.
Dehyrated them at 80 degrees C for 45 minutes after every 20 minutes just toss them.  Then crush them with your hands they are done. Store  it in a zip lock bag in the refrigerator.  Use whenever required.

Air Fryer Dehydrated Onion Flakes & Homemade Sun-dried Onion Powder

Onion flakes, are used in various food preparations such as dry soups, sauces, vegetable mixes, fast foods, etc. The dehydrated onion flakes has same flavor and taste as the freshly chopped onions.

The Onion powder is made by drying sliced onions in the hot sun for 4 -5 days.

But these Onion flakes made in the Air Fryer are quick and easy, got ready in an hour. They were not browned or burnt.

Ingredients
1 Kg Onions each for Flakes & Powder

Method

For the Onion Flakes


Remove root, top, and skins and wash the onions and pat them dry. 
Then using a grater or a chopper, I used my V slicer to cut into fine dices.
Place the diced onions on a clean muslin cloth to dry for 2 to 3 hours at least .
Then place these in the basket of the Air fryer at 80 degrees. Then no need to preheat the Air Fryer. 
Every 15 minutes give it a good stir so that they are evenly dried and crisp. If necessary keep it for another 10 to 15 minutes more.
Ta Da.. they are ready..

I loved making these in the Air Fryer since it is so easy and hassle free. No tension of it getting burnt. Place these again in the dry cloth and leave it overnight so that they are cool and dry completely. Store it in a zip lock bags in the refrigerator.


Use this to make French Onion Soup Mix and this Soup

For the Onion Powder
For this I finely sliced the Onions on my V Slicer. Spread them on a big plate or woven basket and sun dry it for 4 to 5 days, Before drying it the next day toss them well and set it to dry. 
When you find that some have dried, start crushing them with your hand. 
Once dry powder it in a blender. Store in an airtight container.

If it's summer it will get dry in four days or may take more day depending on how strong the sun heat is.
