Khameeri Puri #BreadBakers

Khameeri puri is made by using yeast (khameer). Khammer means yeast in Hindi. This dough is very soft, like a bread dough hence these cannot be rolled with a rolling pin, they have to be flattened by hand. If you do not want to make puris, you can make roti / flatbread and use to girddle to bake the roti's .

For this month's bread baker's event Hosted by Stacy Livingston Rushton and Kalyani , the theme is  Whole Grained Holiday Breads. 

Our meals are incomplete with breads, made these puris with Whole wheat flour and All Purpose flour. These Khameeri puris turn out so soft and delcious. I, make these so often most of the times as flatbread. Have these Khameeri Puris hot with jam and Ohh!! you are in heaven, seriously, try and let me know!  They can be had with any gravy or even with a topping of herbed mayo or hummus. 

Ingredients
2 Cups Heaped All Purpose Flour
1 Cup Whole Wheat flour
2 Tablespoon Ghee/ Butter
1 Egg
 1/3 Cup Yogurt - beaten
3/4 Teaspoon Salt
1/4 Teaspoon Baking Soda
1 Teaspoon Instant Yeast
1 Tablespoon Sugar - powdered
1/2 Cup Warm Water or as kneaded
Water as required to knead the dough
Oil for deep frying

Method
Sieved flours and baking soda, keep aside.

Mix warm water ,yeast and sugar, let it stand  for 5 minutes. Then add ghee / butter, yogurt and egg to the mixture and mix it well. 

In a food processor / dough kneader,  add the sieved flour,  salt and yeast mix, run it till the mixture is incorporated, then keep adding warm water little at a time till forms a soft and sticky dough.

Take it dough out on to oiled work surface and knead it  for 10  to 12 minutes by stretching and folding the dough , till it is soft and smooth.   Place it in an oiled bowl and cover it with wet muslin cloth till it double's in volume.  Depending on the room temperature, it may take an hour or more to rise.

Then deflate the dough and divide it into 10 or 12 equal parts.

In the meantime, place and kadai with enough oil for deep frying. Let the oil start heating.   Then start to make the puris.
Take a plastic sheet and oil it well.   Keep on stretching and flattening dough by oiling your hands and make a thick puri. 
 These puris are thick about half an inch, if  you  make thin ones they will not puff well, you  can cut it with a round mold to make them all same size.   
Check weather the oil is hot enough to fry the puri, take a small piece of dough and put into the  hot oil, if the dough rises immediately to the surface, then the oil is ready to fry the khameeri puri.
Now fry the khameeri puri into the hot oil on medium high flame and press them with a slotted spoon so that they will puff up evenly.  

When one side is just light golden, turn the sides and fry till both sides are just light golden.  Take them out on to a  kitchen towel to absorb excess oil. 

Like wise make rest of the puri's.
Enjoy these puffy khameeri puri's with a dip or gravy of your choice  OR   like me with a spoon of jam on each..hehe... enjoy !!

Laadi Pav or Pull Apart Rolls #BreadBakers

Today I, am sharing with your Mumbai's special bread called Laadi Pav or Pull Apart Rolls or slab of bread rolls ( one laadi consist of 6 rolls) or Pao means a ‘small rolls’, these are eggless and pillow soft, these rolls are baked as one big slab and the individual rolls are pulled apart. 
They are perfect accompaniment for Usal Missal, Pav Bhaji, Vada Pav, Dabeli , Burgers or any gravy dish. Actually in Mumbai these are eaten with everything, like for breakfast these are had with eggs,  slated with butter they taste... yum ! I ,believe Laadi Pav were introduced by the Portuguese in India and are always made with all-purpose flour.

Ingredients

2.1/2 Cups Plain Flour  
1 Tablespoon Butter 
1 Teaspoon Rapid Action Yeast
2 Tablespoons Sugar

1 Tablespoon Milk powder
3/4 to ¼ Cup Warm Water – 
½  Teaspoon Salt 

Method
In a food processor whisk together the flour, milk powder and the salt.   Add the yeast,  butter and  mix well, then as the food porcessor is running add warm water little at a time till all the flour comes together and forms into a ball of dough. Take this dough out on a greased surface and knead it into a smooth and soft dough. 
 Grease a large bowl with a teaspoon of oil, turn the dough in the oil so that it is evenly coated with the oil, and cover the bowl. Keep for an hour or till it doubles. Dough should be all airy and puffed up. Poke a finger in the dough and make an indent (or a small hole with your finger) in the dough. If the hole or indent remains and the dough doesn’t bounces back that means dough is ready.
Now deflate and knead the dough for another minute until it makes a smooth dough ball.   Divide dough into  equal  parts  and  shape the dough into balls and set them in the greased baking tin, making sure to leave gap between the balls, because they will expand while they rest.

Loosely cover the rolls with aluminum foil or plastic wrap or keep inside a covered space  to proof. Let the rolls rise for about 30-45 minutes, until doubled. All the raised, proved balls will stick to each other, it is ‘Laadi Pav’! Brush them with milk.
Bake them in a pre-heated the oven at 200 degrees C, for about 15-20 mins till top of the pavs turns golden brown. Keep checking it after 15 minutes. 
Once its golden brown take it out of the oven and  brush them with butter, 
remove the laadi pav from the baking tin and allow them to cool down on a wire rack.  

Just make it or Buy it ..like in Mumbai the Mumbaiets say to the baker -- "Ek  Laadi Pav dena " .   Break into pieces or salter it with butter / jam or enjoy with gravy of your choice.

Sourdough Whole Wheat Flatbreads #BreadBakers

In Indian kitchen's flatbread is a must with every meal. Karen is hosting this month's event for Bread Baker and gave us this theme"Breads with levain (sourdough), biga, poolish, soakers, etc.". Since Flatbread is a must in our house daily, I decided to make flat bread with my sourdough starter. This sourdough bread has an excellent flavor and the smells awesome. Sourdough takes a long time to rise so, if,  you plan to make it for morning breakfast then it should be kneaded the previous night and left in the fridge to rise, next morning your can make them in a jiffy for breakfast.
I kneaded this dough at 09.30 am and covered in a container and let if on my kitchen counter for two hours then refrigerated it.  Made the flatbreads in the night at 7.30 pm. Although these will not puff like the normal chapatti, but, they will taste awesome and all will definitely enjoy the taste and flavor.

I have used freshly ground home made whole wheat flour with salt and active sourdough starter. Usually, never add oil for kneading for flat breads. I, brush them with desi ghee when they are baked. If, you wish can add oil while kneading as you usually knead your chapatti dough. The most important is to see that your sourdough is active. This dough is on the moist and sticky side, rolling it into a flatbread requires a little extra flour.

These are cooked on the stove top in a flat skillet, because of the sourdough they get a lovely pattern of browned spots.

Ingredients
3 Cups Heaped Whole Wheat Flour
1/2 Teaspoon Sea salt
1/2 Cup Active Sourdough starter
1 to 1.1/3 Cup Water
2 Tablespoons Oil  - optional
Dry Flour as required for rolling

Desi ghee for brushing

Method 

In a food processor , add  flour with the salt and pulse it for a minute. Add the sourdough starter,  and again run it for a minute, then from the funnel add water,  little at time as the processor is running, till it form a soft and sticky dough.

Oil the work surface  and with a dough scraper take all the dough on to the work surface and with the scraper just turn the dough dusting it with little flour for 10 to 15 turns till it form a smooth dough.  Oil a bowl and keep the dough in it, let is rest covered for 2 hours  on your kitchen counter and then refrigerate it for at least 8 hours or till it rises .  
After the dough has risen, punch it down and place on a lightly oiled counter. Divide the dough into 6 to 8  equal pieces, and with oiled hands, form each piece into a ball. Rest the dough for at least an hour I kept it for  2 hours.
 Then dust the work surface with dry flour and roll each ball into a round flatbread / chapatti.  Keep this covered on a dusted surface and roll rest of the balls into flatbread /chapatti.  When all are rolled then heat a  skillet/ tava, over medium low heat.

Place the first rolled flatbread  on the hot skillet and allow to cook on the first side for about two minutes, or until it no longer looks moist on top. Flip the bread over, and cook on medium high  until  brown spots appear. Filp again and press it with a dry cloth so that it starts to puff and brown spots appear on this side too.   Take it out on to a dry cloth or 
 tea towel and brush it with ghee or butter cover and keep aside till rest of the flatbreads have baked. 
Serve and enjoy with any vegetable or gravy dish!

Pita Bread # BreadBakers

Pita Bread is also known as Arabic bread or a Middle Eastern bread . This bread is a soft and leavened flatbread which is baked and it's  excellent sandwiches.
Ingredients

500 Grams All Purpose Flour
1 Sachet Instant Yeast
1 Tablespoon Sugar
2 Teaspoons Baking Powder
Salt to taste
1/4 Cup Oil
Luke Warm Water as required to knead the dough

To make the Roasted Red Pepper Hummus
Ingredients

2 Cups Boiled Chick peas / Garbanzo Beans - drained
2 Tablespoon Olive oil
1 Large Red bell pepper - roasted and cleaned
2 Tablespoons Water - used the water that chickpeas was boiled
2 -3 Tablespoons 
Tahini Paste - Homemade
1/2 Teaspoon Ground Cumin
½ Teaspoon salt
¼ Teaspoon Paprika powder
2 Cloves Garlic
Freshly squeezed  juice of  a Lemon

1/2 teaspoon Chilly powder
Method
For the Pita Bread
Take a cup of luke warm water add instant yeast and sugar, mix it well and leave it for minutes to forth. Once it froths, the yeast is ready to use.
Take a mixing bowl ( I used a food processor to knead the dough) add all purpose flour , baking powder, oil, salt, mix it well, add the yeast mixture and mix it well adding more water as required to make a soft smooth dough. Oil a bowl and place the dough in it. Cover the bowl with the plastic cling leave it rise for an hour or until it doubles in volume.

Once it doubles in volume take out it the dough and fold the dough. Roll the dough, make even size balls around 8 or according to the size you desire.

In the meantime , line and oil a tray with aluminium foil or parchment paper . Preheat your oven at 200 degree.
Press each dough with your palm to make a thick circle. Place them in the oven tray. Leave them to rise again for 15 to 20 minutes . 

Bake them in a preheat oven for 10 to 15 minutes. When its done take it out from the oven, brush them with butter or oil and the pita bread is ready to serve.

Serve with hummus or Roasted Red Pepper Hummus

To make the  Roasted Red Pepper Hummus
Wash and dry the red bell pepper the oil it well and roast i on the gas flame or bake it for 15 to 20 minutes until burnt . I roasted the bell pepper on the gas flame.
Then place the pepper in a foil and warp it tightly for 10 minutes or until you are ready with the rest of the ingredients.
Take the bell pepper out of the foil and clean all the burnt skin and wash it under running water. Then cut it and remove the seeds. Chop it and keep aside.
In a food processor or blender, mix the chick peas / garbanzo beans, olive oil, red bell pepper, Tahini Paste - Homemade, lime juice, water, salt, paprika, chilly powder, blend until smooth , add water only if necessary , taste and adjust the seasonings.
Drizzle a little olive oil and ENJOY! with Pita Bread. It taste divine.

Chinese Veg Bao Buns # BreadBakers

When I made the event page for Steamed Buns for Bread Baker this month, was so excited to make  them.  But, every time, I, planned to make it something or the other would crop up and it was kept on the side burner. Just made them yesterday after seeing so many of you posting the links. 
At last they were done and these Bao buns, they were a hit, we enjoyed them hot for dinner minus any extra trimmings. 
I, had eaten these Chicken filled Bao buns in a Chinese restaurant in Mumbai and in Spain at a food event enjoyed delicious Pork Buns  there - fell in love with them, they were on my do to list for long time.  
My first thought was to make a chicken filled bao buns, but then thought of my hubby dear who has not tasted these beautiful buns, so made them vegetarian and as already mentioned above they were worth the effort.    Thanks to Bread Bakers group who gives me a chance to create new, delicious  and innovative bread recipes every month. 

Makes - 7 Buns
Ingredients
For the dough
150 Grams All Purpose Flour
1/4 Teaspoon Salt
1/2 Teaspoon Baking powder
2 Teaspoons Oil
1/2 Teaspoon Rapid Rising Yeast
1 Teaspoon Sugar
75  to 100 Ml  Warm Water
For the topping
Chilly flakes as required
Black Sesame seeds as required

For the Filling
1 Tablespoon Oil
1 Teaspoon Ginger - finely chopped
1 Teaspoon Garlic - finely chopped 
1 Teaspoon Green Chilly - finely chopped 
1 Large Onion - sliced
1 Tablespoon Celery stems
1/4 Cup Coloured Bell Peppers
1/4 Teaspoon Salt 
1/4 Cup  Shreded Purple Cabbage
1/4 Cup Thinly Sliced Carrot
100 Grams Paneer - cut into sticks
1/2 Teaspoon Soy Sauce
1 Teaspoon Chilly sauce
1 Tablespoon Tomato Ketchup
1 Teaspoon Chilly Powder
3 Basil leaves - chopped
1/2 Teaspoon Vinegar

For applying - Sweet Chilly sauce as required

Method 
For the dough
Make a smooth soft dough by adding little water at a time to make the dough.  Keep it covered till it doubles in size. 
Deflate the dough and divide the dough into small balls and knead with dry flour or a oiled surface
to make small thick oblong or round circle, apply oil well on the circle.
Place a oiled parchement paper or use banana leaf as I have done and fold lightly. 
Apply oil on outer sides too sprinkle black or white sesame seeds  and  chilly flakes on both sides.  
Place a on a foil or banana leaf that is  greased well with oil in a steamer and steam on high flame well for 15 minutes. I used the Idli stand to steam the buns.

In the meanwhile let's prepare the filling.
Heat a pan with oil and  add add the sauces, ketchup, chilly powder. salt and mix it well then add the paneer sticks and toss it well coated and the sauces start bubbling, now add all the  veggies just toss everything well do not overcook they should be crunchy. Stuffing is ready

To assemble -- get ready to relish them
Take the hot steamed buns and open it apply little sweet chilly sauce place the stuffing and enjoy...
