French beans and chana dal tossed together with chillies and curry leaves. Beans Patoli is a traditional South Indian recipe, widely famous in Andhra and Tamilnadu. The main ingredient of this recipe is chana dal, which is considered to be a high source of protein.
Ingredients
1 Cup French beans - chopped
1 Large Onion - chopped
2 Green chillies - slit length wise
A sprig curry leaves
1/2 Teaspoon Mustard seeds
1 Teaspoon Urad dal
1/2 + 1/2 Teaspoon Cumin seeds
2 Dry Red chillies
1/2 Teaspoon Ginger - chopped
2 Tablespoons Chana dal - soaked in water for 2 hours
1/8 Teaspoon Turmeric powder
1.1/2 Tablespoon Oil
A Pinch of Asafoetida
Salt to taste
Method
Wash, cut the french beans and blanche them in salted water
Grind the soaked chana dal with ginger, dry red chillies, 1/2 tsp cumin seeds and salt to a coarsely without adding water.
Heat oil in a pan, add mustard seeds and let them splutter. Add 1/2 teaspoon cumin seeds, urad dal, asafoetida and curry leaves, fry for few seconds. Add the green chillies and onions, fry till transparent. Add turmeric. Now add the blanched french beans, fry for 3 minutes. Add the ground paste, mix well, cover and cook stirring once in a while for 12-15 minutes.
The patoli should have a dry saute look, like a stir fry. This can be had with steamed rice, sambhar or rotis and a dash of ghee.
We enjoyed this vegetable with sambhar, rice and a dash of ghee.
