Pound Cake Grilled Cheese & Strawberry Sandwich#FoodieHoliday

Get ready for grilled cheese sandwich like you’ve never had before! Dessert Grilled Cheese Sandwiches are made with pound cake, chocolate, fresh strawberries, gooey and melting cheese!

Speaking of pound cake, I had some left over from the April fool's chicken nuggets and used this to make a gooey dessert sandwich for hubby dear who has a sweet tooth.
Soft pound cake, crispy edges grilled in butter. Melting chocolate fudge sauce, just oozing out the sides of the sandwich. Fresh raspberries releasing their juices, and mixing with the luscious, cream cheese. A dessert sandwich you can't forget... yum..yum...delicious!

Ingredients 
2 Thick Slices Pound Cake
2 Teaspoons Butter
2 -3 Tablespoons Cream Cheese,
A Drizzle Chocolate Sauce-used Homemade Chocolate Fudge Sauce
4 -5 Strawberries - sliced
A Dlollop Whipped Cream

Method  
Heat a cast-iron pan or griddle , a panni press or sandwich toaster. 
Cut the pound cake into thick slices.
Add the cream cheese on both slices. Place the strawberries on top in one of the slices, drizzle homemade chocolate fudge sauce. 
Invert the other slice. 
Place the sandwich on the toaster add a teaspoon or more of butter on both side of the sandwich.  
Grill the sandwich till grilled. 
Transfer to a plate. 
When slightly cooled add the whipped cream on top, decorate with a few slices of strawberries and drizzle of chocolate fudge sauce.   
Serve immediately and Enjoy!!

Brown Bread Carrot Cabbage Sandwich#SundayFunday

There are times when kid's make a fuss over eating veggies. Make a delicious creamy simple veggie sandwich and kid's will enjoy these. Sandwiches are never boring if you make different fillings. In my house we can enjoy sandwich for a light dinner too.
Ingredients 
1 Cup Packed Shredded Cabbage
1 Cup Packed Shredded Carrots
1 + ½ Cup Herbed Eggless Mayonnaise
1 Teaspoon Hot Chilly Sauce
1 Teaspoon Tomato Ketchup or to taste
Salt to taste
¼ Teaspoon Black pepper powder
Brown Bread slices

Method
Shred the cabbage and carrot.

In a large bowl , mix in the sauce, tomato ketchup, a cup herbed eggless mayonnaise, black pepper powder, mix well to make a smooth sauce. Taste, add salt and if required you can adjust the seasoning accordingly.
Now add in the sauce to shredded veggies, fold them in the sauce and mix well until they are coated properly. The sandwich spread is ready. 
Take bread slices and arrange them on a board.On one slice spread the herbed eggless mayonnaise and on the other slice lavishly apply the prepared veggie spread. Cover with mayonnaise spread bread slice. Like wise prepare rest of the sandwiches. Cling warp and refrigerate for at least 2 -3 hours.
Then when ready to serve take them out from the refrigerator and with a sharp knife cut off the sides of the sandwiches. Cut into shape of your choice.
Serve & Enjoy!!

Grilled Peanut Butter & Jelly Sandwich#Improv

This is peanut butter and jelly with a twist. The kids and adults will love it!
Serves 2
Ingredients

2 Tablespoon Butter
4 Slices White Bread
2 Tablespoons Any flavor fruit jelly - used Strawberry
2 Tablespoons Peanut Butter - I used Sugar Free

Method 
Heat a griddle or skillet.
Spread butter on one side of each slice of bread. Spread jelly on the unbuttered side of one slice of bread; spread peanut butter on the other unbuttered side. Place bread slices together, so peanut butter and jelly are in the middle. 
Grill on the preheated griddle until golden brown and heated through, about 3 - 4 minutes per side.
Serve hot enjoy with a cup of tea or hot cocoa!

Lobster Melt English Muffin Sandwich#FishFriday

These cheesy lobster melts are my favorite with a creamy lobster mixture. They’re wonderful when you want a little something different for brunch or a snack and it take a few minutes to make from a few simple ingredients. Here I have used ready to used lobster bites.

Serves Two
Ingredients
2 Tablespoons Heaped Mayonnaise
1 Tablespoon Celery - finely chopped
2 tablespoons Onion - finely chopped
1 Clove Garlic - minced
½ Teaspoon Tabasco Sauce
4 -5 Lobster Bites - minced
2 - 3 Tablespoons Shredded Cheddar Cheese
Chopped Fresh Parsley, Fresh Thyme & Oregano
1 Teaspoon Oil
2 English Muffins - split - these are homemade

Method
To make the lobster mixture
Sauté a small onion in a teaspoon of oil, add the minced lobster bites ( you can used canned is fine, or use fresh lobster meat if you have access to it), add chopped celery and tabasco sauce.   
When it's well heated switch off the flame. Let it come to room temperature. Mix in the mayonnaise, cheddar cheese, fresh thyme and oregano, 
then spread the mixture on split English muffins and enjoy!!

Keto Coconut Flour Pancake & A Sandwich Burger#SundayFunday

This Keto sandwich uses pancakes as the bun and it’s filled with amazing soft scrambled or fried egg, sausage patty or any leftover chicken with cheese slice. One sandwich is just sufficient with a salad at the side to fill your tummy. Feel satisfied and happy after eating this meal. In the batter you can add fresh or dried herbs of your choice.
Makes 4 Pancakes & 2 Sandwich Burgers
Ingredients
2 Large Eggs
2 Tablespoons Coconut Flour
2 Tablespoons Parmesan Cheese
1/8 Teaspoon Baking Soda
1/8 Teaspoon Baking Powder
1/8 Teaspoon Salt
1/8 Teaspoon Dried Chives
1/8 Teaspoon Dried Parsley
4 Tablespoons Milk - I used Full Fat Milk
1 Tablespoon Butter
Method
In a bowl, mix together all the dry ingredients. Then add the eggs and milk, stir until there are no lumps. Let it sit for a minute (the batter will get a little fluffier).
Melt ½ tablespoon butter in the pan, and pour two small sandwich sized “pancakes” ( about 2 - 2½ tablespoons each) into your pan on medium heat. It will only spread a little bit. 
When the tops start to bubble and the sides look brown, check to see if the bottom is brown, and if so then flip them both over.
Now let's assemble our Sandwich Burgers
To make a grilled sandwich you can add filling of your choice.
 
One I made with leftover grilled chicken
and a cheese slice. Place the filling on one pancake the leftover chicken, the cheese slice
now place the second pancake on top with the un-done side up.
Flip when the bottom is brown, and continue cooking till the cheese is melted
and the sandwich is done!
Now make the other 2 pancakes like wise with the remaining ½ tablespoon butter. 
As I mentioned earlier I made this with a fried egg and slice of cheese. 
This sandwich is not crunchy like regular bread when made into grilled cheese. 
It has a great flavor and wonderful bread-y texture. I had half of the egg and half of the chicken. The other half's I refrigerated for another meal. The extras will keep in the fridge for a day or so (you can toast them or heat them back up in the pan… or eat them cold!).
Macros Per Pancake Sandwich Without The Filling & Without Butter:
Cal 137, Total Carbs 6g Net Carbs 3g, Fiber 3g, Fat 8g, Protein 10g.

Pulled Chicken & Celery Sandwiches#SundayFunday

Pulled Chicken & Celery Sandwiches are delicious and filling. A perfect meal to carry for your office lunch or kids school lunch box, serve these as party pleasers. What I love about sandwiches that they are shelf stable for at least 4 -5 day's in the refrigerator. Prepare them in advance and enjoy whenever you are hungry. For this you can use any leftover chicken.
Ingredients
4 - 6 Big Slices White Sandwich Bread
1 Cup Pulled Leftover Chicken
½ Cup Grated Cabbage
1 Carrot- grated
2 Tablespoons Finely Chopped Celery With Leaves
2 Tablespoons Finely Chopped Salad Leaves
1 Tablespoon Chopped Pickled Jalapenos
1 Tablespoon Chopped Pickled Gherkins
1 Tablespoon Sriracha Sauce
½ Cup Mayonnaise
3 Tablespoons Grated Cheese
Butter as required

Method
In a bowl add mayonnaise, cheese, Sriracha sauce mix well to combine, then add in the chopped cabbage, carrot, jalapenos, gherkins , finely chopped celery with leaves, salad leaves , and pulled chicken mix well, Sandwich filling is ready .

Butter both the sides of the bread.
In one slice of bread , place 2 -3 tablespoons of the prepared filling and press to level it well.
Cover it with a another slice of bread. Like wise prepare the rest of the sandwiches and cling wrap them well. Refrigerate it for at least 3 -4 hours.
then trim the sides and cut into small triangles. 
Serve, Enjoy!!

Hunter Beef Sandwiches#Foodieextravaganza

These Beef Sandwiches are incredibly delicious and filling. A perfect meal to carry for your office lunch or kids school lunch box. You can cut up beef roast in smaller portions, repackaged it and send this as a gift to your loved ones or carry them for a party.

Ingredients
Hunter Beef  - sliced / shredded
Cheese slices - as required
Mayonnaise - as required
Dijon Mustard - as required
Romaine Lettuce - as required
Pickled Radish Slices - as required
Tomato Slices - as required
Butter as required to Toast
Hot Dog Buns/Bread Slices

Method
Slice the Hunter Beef thinly or shred it whatever way you wish. I have made burger's as well as sandwiches with this.

For the shredded Hunter Beef sandwiches 
I, shredded the beef and then buttered the slices , topped it shredded hunter beef and enjoyed.
For the Hot Dog Buns
Applied butter to the hot dog buns then toasted it, slathered it with mayo then Dijon mustard, then placed a lettuce leaf, arranged the hunter beef slices, tomato slices and pickled radish on top, placed a slices of cheese, closed the buns.
Serve and enjoy!!
