Homemade Cherry Pie Filling#FoodieHoliday

No store-bought pie filling because today we’re making cherry pie filling completely from scratch with fresh cherries and preservatives free. The flavor of the cherry pie filling with few drops of vanilla and almond extracts add richness and depth and a touch of lemon juice keeps the overall flavor fresh and bright. 
I used stevia to reduce the sugar in this pie filling and it taste so good. Homemade cherry pie filling that uses fresh or frozen tart red cherries is easy to make on the stovetop in 15 minutes with just 3 simple ingredients. My cherry pie filling recipe is the thick, juicy cherry pie filling. 

Ingredients
2 Cups Cherries - pitted & halved
2 Tablespoons Sugar
1 Teaspoon Stevia
1 Tablespoons Corn Flour
1 Tablespoon Lime juice
1 teaspoon Vanilla extract
3 -4 Drops Almond extract
¼ Cup Water

Method
In a large sauce pan, add the cherries, sugar, water , lemon juice, together until thoroughly combined. Place this on medium low flame and let is cook for 10 to 15 minutes or until the cherries soften . Then add the cornstarch cook till the filling thickens. Switch off the flame add the vanilla, and almond extract and let it cool. Used the stick blender to make a slightly chunky pie filling. Cover filling and place in the refrigerator and use whenever you want. 
You can freeze this pie filling for 6 months too. It stay good in the freezer.

    Pound Cake Grilled Cheese & Strawberry Sandwich#FoodieHoliday

    Get ready for grilled cheese sandwich like you’ve never had before! Dessert Grilled Cheese Sandwiches are made with pound cake, chocolate, fresh strawberries, gooey and melting cheese!

    Speaking of pound cake, I had some left over from the April fool's chicken nuggets and used this to make a gooey dessert sandwich for hubby dear who has a sweet tooth.
    Soft pound cake, crispy edges grilled in butter. Melting chocolate fudge sauce, just oozing out the sides of the sandwich. Fresh raspberries releasing their juices, and mixing with the luscious, cream cheese. A dessert sandwich you can't forget... yum..yum...delicious!

    Ingredients 
    2 Thick Slices Pound Cake
    2 Teaspoons Butter
    2 -3 Tablespoons Cream Cheese,
    A Drizzle Chocolate Sauce-used Homemade Chocolate Fudge Sauce
    4 -5 Strawberries - sliced
    A Dlollop Whipped Cream

    Method  
    Heat a cast-iron pan or griddle , a panni press or sandwich toaster. 
    Cut the pound cake into thick slices.
    Add the cream cheese on both slices. Place the strawberries on top in one of the slices, drizzle homemade chocolate fudge sauce. 
    Invert the other slice. 
    Place the sandwich on the toaster add a teaspoon or more of butter on both side of the sandwich.  
    Grill the sandwich till grilled. 
    Transfer to a plate. 
    When slightly cooled add the whipped cream on top, decorate with a few slices of strawberries and drizzle of chocolate fudge sauce.   
    Serve immediately and Enjoy!!

    Potatoes O'Brien#FoodieHoliday

    Potatoes O'Brien is a classic side dish dating back to the early 1900’s made from pan fried potatoes along with red, green bell peppers and onion. Pan fried Potatoes O’Brien make a great country breakfast. Serve these easy breakfast potatoes alongside sausage or bacon for a comforting start to the day.
                             
    Serves 2
    Ingredients
    3 Tablespoons Oil
    1 Tablespoon Butter
    2 - 3 Large Red Potatoes - chopped into small chunks
    1 Medium Onion - chopped
    5 Cloves Fresh Garlic - minced
    1/3 Cup Red Bell peppers - diced
    1 Small Green Bell pepper - diced
    1 Small Veg Seasoning Cube
    100 Ml Water
    2 Teaspoons Finely Chopped Coriander/Parsley
    Salt & Pepper to taste


    Method
    Heat a large pan add the butter and oil. Then add in potatoes, garlic, onions, and peppers. Sauté for 4 minutes. Stir in veg cube and water, coriander leaves, salt and pepper.   
    Cover and cook for 10 minutes.
    Open the lid after 10 minutes. Stir and continue cooking a few minutes or until liquid absorbs. Serve hot immediately.

    Spicy Cabbage Masala#FoodieHoliday

    This vegetable is so tasty and is prepared in a breeze. I assure you that if anyone in your house does not like cabbage even they will love it.
    Ingredients
    3 Teaspoons Oil
    1/2 teaspoon Mustard seeds
    1/2 teaspoon Cumin seeds
    pinch of Asafoetida
    5  Cloves of Garlic
    1 Large Onion sliced
    1 Teaspoon Garam masala
    1 Teaspoon Red chilli powder
    1/4 Teaspoon Turmeric powder
    1 Teaspoon Coriander powder
    1 Large Tomato chopped
    2 Cups Cabbage shredded

    1/4 Cup Peas (optional)
    1/4 Cup Coriander  finely chopped 

    Salt to taste

    Method
    Heat oil in a pan, add mustard seeds, cumin seeds when they splutter, add the asafoetida, garlic and cook garlic till it changes its color. Add sliced onion and cook till it becomes soft. Then add turmeric powder, garam masala, chilly powder, coriander powder, and stir fry for 2 minutes. Add tomatoes, cook till tomatoes get soft. Add sliced cabbage, peas and mix well. Then add salt, cover and cook till cabbage is tender. Garnish with chopped coriander and serve hot with chapati or rice!
