Potatoes O'Brien#FoodieHoliday

Potatoes O'Brien is a classic side dish dating back to the early 1900’s made from pan fried potatoes along with red, green bell peppers and onion. Pan fried Potatoes O’Brien make a great country breakfast. Serve these easy breakfast potatoes alongside sausage or bacon for a comforting start to the day.
                         
Serves 2
Ingredients
3 Tablespoons Oil
1 Tablespoon Butter
2 - 3 Large Red Potatoes - chopped into small chunks
1 Medium Onion - chopped
5 Cloves Fresh Garlic - minced
1/3 Cup Red Bell peppers - diced
1 Small Green Bell pepper - diced
1 Small Veg Seasoning Cube
100 Ml Water
2 Teaspoons Finely Chopped Coriander/Parsley
Salt & Pepper to taste


Method
Heat a large pan add the butter and oil. Then add in potatoes, garlic, onions, and peppers. Sauté for 4 minutes. Stir in veg cube and water, coriander leaves, salt and pepper.   
Cover and cook for 10 minutes.
Open the lid after 10 minutes. Stir and continue cooking a few minutes or until liquid absorbs. Serve hot immediately.

Chilean Cazuela#EatTheWorld

Chilean Cazuela is Beef Stew, a comfort food and makes a filling one pot dish meal. According to make recipes read online in this stew certain ingredients are is must to make this stew like potatoes, pumpkin, and corn on the cob. This comfort food can be enjoyed any time of year. This chunky, scrumptious, hearty and flavorful dish is a staple in every home in Chile.

Serves 4 -5
Ingredients 

500 Gram Boneless Beef
2 Tablespoons Olive oil
1 Onion - roughly chopped
1 Teaspoon Oregano
1 Teaspoon Cumin powder
Salt and Black Pepper to taste
2 Cloves Garlic - chopped
1 Medium Tomato - chopperized
8 Baby Potatoes
2 Carrots - chopped in big pieces
1 Red or Green Bell pepper, seeded and cut into quarters
1 Stalk Celery - chopped
4 Big Chunks Red Pumpkin
1 Cup Rice - washed & drained
5-6 Cup Boiling Water
2 Ears Corn - each cut into four rounds
1 Cup Shelled Peas or Green beans - cut into big pieces
2 Tablespoon Chopped Coriander/Cilantro

Method
Cut meat into large pieces. Heat oil in a large pot, add meat and brown well. Add onion, garlic, tomato, oregano, cumin, salt and pepper; stir, and continue cooking over medium heat for five minutes.
Add potatoes, carrots, bell pepper, celery, pumpkin and rice, add enough boiling water to cover the contents completely. Simmer for ten minutes, stirring occasionally.
Add corn, peas or green beans and cook for and additional 10 - 15 minutes. Taste and adjust seasonings to taste.
This warm and comforting dish is delicious.
This stew also freezes well and taste delicious the next day.

Green Gram & Chicken Meatball Clear Soup#SoupSwappers

This Meatball Soup is a hearty, filling. This is a single serving soup. For Soup Swappers this month I am the host and the theme is "Make A Soup With Meatballs".
For this soup I have added fresh green gram which is easily available in this season. 
 I, buy the ones that and covered like pea pods, which we have to clean(see pic).
Single serving 
Ingredients
For the Meatballs

150 Grams Chicken Mince
1 Small Onion - finely chopped
1 Red Chilly - finely chopped
1 Tablespoon Black pepper powder
1 Slice Bread - make into crumbs
Salt to taste
For the soup
500 Ml Water
1 Small Chicken Stock Cube
Salt And Black pepper to taste
1 Tablespoon Tomato -finely chopped
1 Tablespoon Onion - finely chopped
1 Tablespoon Green 
Bell Pepper
1 Tablespoon Red Bell Pepper
1/4 Cup Sweet Corn - boiled
1/4 Cup Fresh Green Gram - boiled
1 Teaspoon Oil

Method
To make the meatballs

Mix all the ingredients well. Make small meatballs and keep aside.

For the soup

Heat oil in a large sauce pan, add the onion and saute till they are translucent and soft. Add rest of the veggies and saute for a minute add the chicken stock cube and water bring it to a rolling boil. When it starts to boil add the meatballs and after a minute reduce the flame to medium low. 
Cover with a lid and let it simmer for 8 to 10 minutes or till meatballs cook and will double in size, will turn pink to white and start to float. 
It's so satisfying soup and delicious! It' makes a complete a meal if you have it with bread sticks for a buttered dinner roll.
