Rajgira Roti#BreadBakers

Amarnath / Rajgira flour is gluten-free, so it is a little hard to work with. The rolling part is not as easy like our regular roti or chapati. It is a crumbly dough, hence, will not get the smooth edges. So, keep sealing the edges as you are rolling, just be light and gentle while rolling.
Makes 4 Rotis
Ingredients
2 Cups Rajgira /Amaranth Flour
1 Large Potato - boiled, peeled and mashed
1 Tablespoon Ghee
Water as required to make a soft dough
Sendha Namak/ Rock Salt to taste or Normal Salt

Method

In a large bowl add rajgira flour, salt, mashed potato, mix well. Add ghee and mix it, knead dough by adding water, till it comes together and forms a soft dough. Cover it and let it rest for 10 minutes. After 10 minutes, divide the dough into 4 equal portions and make smooth balls. 
Now take parchment paper or plastic sheet on rolling board. Take one ball and flatten it out. 
Roll it very lightly and gently by dusting it with rajgira flour. 
Make slightly thin roti  
With slightly damp hands make it into a round circle 
and smoothen the edges. 
Heat the tawa or skillet on medium high heat. Gently lift parchment paper and put on hot tawa and peel off the paper. 
When once side is golden brown then, flip it. Cook for another few seconds, press gently using a spatula, till this side too is golden brown. 
When done take it out from skillet and serve it hot. Repeat the same procedure for rest paratha. 
These have to be eaten hot, or else, they become chewy.

Yeasted Bhatura#BreadBakers

Chole Bhatura' is a very famous street food in India This Punjabi dish  a combination of Chole and Bhatura, a chickpea gravy served with fried bread. Bhatura's are made with or without yeast. This Bhatura recipe is with yeast, they so very flaky, puffy, super soft and delicious. I served them with Chole. There is nothing more delicious, super tasty than this combo of Chole Bhatura. 
Made for lunch and we, really enjoyed them. 
Makes 13
Ingredients  

2 Cups All Purpose Flour
1/3 Cup Fine Semolina
1 Cup Whole Wheat Flour
1 Cup Club Soda
1 Tablespoon Oil
1 Teaspoon Yeast
1 Tablespoon Sugar
½ Teaspoon Sea Salt or to taste
Oil as required for deep frying

Method 

In a bowl add the sugar, salt, oil, yeast, club soda and mix it. Now add the semolina and give it a good mix. Cover the bowl and let it rest for 15 minutes.

After 15 minutes add both the flours in a bowl. Mix it well add more club soda if necessary and knead it to a soft dough. Take the dough out on to lightly oiled work surface and knead till you get a soft smooth dough for about 10 minutes.
In a big bowl add a teaspoon of oil and club soda each and mix well. Coat the dough with this and let it rest covered till it doubles in volume. This oil and club soda mix, will help to keep the dough moist, since semolina tends to absorb more liquid and the dough should not dry out. Cover the bowl with a lid and keep it in a warm place for 2.1/2 to 3 hours.
After 2.1/2 to 3 hours of fermenting the dough should look like this.
Knead the dough once again for 3-4 minutes and put in the same place for another hour.
Divide the dough into equal pieces.
Make lemon size balls out of it.
Keep the balls covered in a damp cloth.
Rolling one at a time oil the work surface 
Flatten it to 2-3 inches with a rolling pin into an oval shape or round in shape.
Flatten all the balls and keep them covered with a damp cloth.
In the meantime heat the oil for deep frying.
 Starting with the first rolled one put it in hot oil on medium high flame, it will puff up immediately. 
The oil should be very much hot. Flip it when the one side is light golden
Fry them one by one, till all are done.
Bhaturas  are  ready ...

Banana Nut Bread#BreadBakers


Ingredient
3/4 Cup Caster Sugar
2 Cups Flour
2 Eggs
1/2 Cup Oil
1/4 Teaspoon Baking Soda
1 Tablespoon Baking Powder
1 Teaspoon Vanilla Essence
1/2 Cup Curds - beaten
3 Bananas - mashed
1 Cup Walnuts


Method

Mix all the ingredients with an electric beater on low speed until a thick batter forms.


Greased and line the bottom with butter papper, in 9 x 5 inch pan. Serve with custard for ice cream 
Then bake the bread at 180 for 30 to 35 minutes and serve.

Basil Flower Mini Bread Rolls#BreadBakers

This month's BreadBakers' theme is Bake Bread With Flowers and our host is Mireille Roc. Thank you for hosting this month's event.
I, have basil plants growing in plenty, one of my plants blooms with basil flower, decide to make the bread with basil flower infused oil. 
These are vegan mini rolls so soft and spongy. 

Makes 10 Mini Rolls 
Ingredients
300 Grams All Purpose Flour
1 Tablespoon Cornflour
1 Teaspoon Instant yeast
1 Teaspoon Sugar
1 Teaspoon Salt
1/4 Cup Basil Flower Olive Oil
Water to knead
To make Basil Flower Infused Oil
Stalks of Basil Flower
Olive Oil as required to keep the flower stalks submerged 

Method

How to make Basil Flower Infused Oil
Wash and dry the basil flower stalks. Place them in a clean and sterilized jar. Pour the olive oil till they are submerged and an inch of oil over the top of the stalks.  
Cover and keep it for a day or two, then use. This oil is 3 months old, its so flavorful and has a beautiful aroma. 

For the Rolls
In a food processor add all the ingredients expect the water and run the processor till all are mix together . Then keep of adding  water till it starts coming together.

Knead to medium soft dough, take it out of the processor and on to a greased work surface take the basil flower olive oil and knead again till it is smooth and soft. Keep this in a oiled bowl and brush a little oil over the dough. Keep it covered in a warm place to rise for 30 minutes ( since its summer here it took 20 minutes).
When the dough has doubled, punch it down and divide it into 10 parts. Roll them into smooth ball and place it in the mould . 
Cover with a damp cloth and let them double in size. In the meantime preheat the oven to 180 degrees.
Brush them with water or soy milk. 
Once they double in size and bake them  until golden brown, about 20 to 22 minutes.
Remove the rolls from the oven, and brush immediately with the basil flower oil. 
After 5 minutes, carefully transfer them to a rack. 
Enjoy them for breakfast or dinner
