3 Whole Black peppercorns
1 Tablespoons Cumin seeds
3 Tablespoons

Water as required to make a thick soup
Method
Peel the apple and keep the skins aside. Chop the apples and keep aside keep them in water.
Cook tomatoes, apple skins, green chilly, ginger, coconut powder, peppercorns together with a cup water and cook till tomato and apple skins soften cool and then and puree it along with chopped apples. Pour it back into the pan season with salt, and cook further with apple puree.
Garnish it chopped spring onion greens and serve.
Pull Apart Cheese Bread
I baked this beautiful bread
from the remaining dough of this Apple Bread Rolls

Ingredients
1 Round loaf bread
1/2 cups Shredded Cheeza cheese
1 Green onions / Scallions - finely sliced
1/4 cup Unsalted butter - melted
Method
Slice the bread horizontally and vertically into 1-inch cubes. Do not slice all the way through the loaf — leave bottom of the loaf intact with the bread pieces still attached.
Toss the cheese, , green onions and together in a bowl. Gently stuff the cheese into the bread between the slices. Stuff between the vertical slices first, then go back and fill in the spaces between the horizontal cuts. Transfer the stuffed loaf to a sheet of foil. Dot it with softened butter, over the loaf.
Wrap the loaf tightly in foil. Bake the loaf for 20 minutes. Uncover the top and bake for another 10 minutes, until the cheese is totally melted and the top of the loaf is crispy.
Serve immediately.
This was a fantastic combo. Loved it!!

Apple Bread Rolls#BakingBloggers

Sue our host and brain child of Baking Blogger asked us to  "Start the year 2020 off with some sweet rolls".
One Apple will make 6  Rolls with the remaining dough I made a large bowl shaped bread.
These rolls are so soft , fluffy and delightful to look at that my guest couldn't take their eye's off it.

For the Apple Filling

1 Medium Apple
2 Tablespoons Caster Sugar
1 Teaspoon Butter
¼ Teaspoon Cinnamon powder
1 Teaspoon All Purpose Flour
For the Bread Dough
250 Grams Bread Flour
2 Tablespoons Heaped Caster Sugar
½ Teaspoon Level Salt
1 Egg - lightly beaten
100 Ml Milk
15 Grams Fresh Yeast
25 Grams Butter
Water - as required to knead the dough

For the Garnishing
Cinnamon Sticks as required
Pumpkin seeds as required

Method

Slice the apple and dice then into tiny cubes.

In a pan add the sugar , butter, on medium heat cook till the sugar caramelizes. Then add the apple , flour and cook till the apple softens. Do not over cook they should be just soft. Add the cinnamon and take it off flame. Keep aside to cool

For the Bread Dough
For the Sponge
In a bowl add the milk, sugar, 3 tablespoons flour and yeast, mix well and keep aside till it froths/bubbles for about 20 minutes.
For the  Dough

In a food processor add flour, lightly beaten egg and all of the sponge mix , knead this to a dough, if kneaded then add a tablespoon of water till you get a soft and sticky dough. Now add the butter,  again knead till the butter is incorporated. This dough is a sticky dough, so do not be tempted to add more flour. Take the out on to a work surface and knead for about 5 to 8 minutes till the dough does not stick to your hands, it should be soft and smooth. Keep this in a oiled bowl till it doubles in volume.
As the dough is kept aside to rise, let's prepare our tray to make the rolls.
Brush small tart molds with butter and then dust it with flour and arrange them in the baking tray.

Make small stems with cinnamon sticks.  Keep these aside.

Then deflate the dough and divide into 10 small balls. Roll each into a smooth ball, cover keep them to rest for 15 minutes.
After 15 minutes flatten each ball with just a sprinkle of flour, into a circle
Place a heaped teaspoon of apple filling in the center. Bring the ends to together to form bag, pinch the ends well then again lightly roll it into a ball.
Place each into the prepared tart molds.
Take a toothpick and make a hole in the center lightly,
Insert a cinnamon stick, then light apply water to one side and place a pumpkin seed. Keep them covered till they double in volume.
Bake in a preheated oven at 170°C / 340°F for 15 to 18 minutes.
When they are out of oven brush them with butter and take them out of the molds and let them cool on a wire rack for 15 minutes.
Slice and enjoy.
Served these for a Hi Tea Party. These were simply delicious.
My Notes
If you are using instant yeast then add 1¼ teaspoon.

Use green pumpkin seeds, they make these look even more delightful, could not find them in my pantry shelf, used the white ones.

1/8 Teaspoon Cinnamon or Cardamom powder
A Pinch of Salt
1 Tablespoon Vegetable Shortening

Method
Melt vegetable shortening in a pan and saute the oats for a minute or two. Add 4 cups water and bring to a boil. Now add in the jaggery and salt. Let it simmer for 5 minutes, keep stirring in between or else it will burn at the bottom.
Then add the  apple pieces and  cook  the apple on low flame until it softens a little. Keep the apples slightly crunchy ( do not overcook them). Switch  off the  flame , add cinnamon or cardamom powder, I used cinnamon flavor since apple and cinnamon complement each other.
Enjoy this warm, a hearty, light and healthy breakfast to begin your day with.

For the Creamy Vanilla Custard
Mix in vanilla custard 2 tablespoons water or cold milk  till it dissolves.
Heat milk, add sugar and bring it to a boil, keep stirring in between so that is does not burn at the bottom. When it comes to a boil, add the custard powder mixed in cold milk, stirring continuously , cook till sightly thick and creamy . Take off flame and whisk it well to make smooth and silky.
