Spiced Apple Struesel Cake#BundtBakers

My hubby comes from office late in the evening and very quietly tells me, bake a cake for me with pleading eyes. I want to take it tomorrow for our department picnic. I could not refuse him, had 2 apples lying in the fruit basket, decided to bake this Spiced Apple Struesel Cake. This is my late night baking. 
This delicious apple cake is filled with a mixture of chopped apples and a sprinkle of toasted almonds and streusel. It makes a fabulous picnic cake or dessert.

It's posting day for our Event for Bundt Bakers the theme is Bundt Cakes for Picnics and our Host is Sue Lau. Thank you Sue for hosting this event.

Ingredients
For Cake Batter 

250 Grams All Purpose Flour
200 Grams Butter
1 Cup Caster Sugar
2 Teaspoons Vanilla essence
1 Tablespoon Baking powder
3 Eggs
For  the Topping 

2 Medium Apples - thinly sliced
1 Tablespoon Lemon juice
1 Teaspoon Cinnamon powder
¼ Teaspoon Clove powder
¼ Teaspoon Nutmeg powder
½ Cup Toasted Almonds - chopped
For the Streusel 

50 Grams Butter - melted
100 Grams All Purpose
2/3 Cup Caster Sugar

Method 

Sieve the flour and baking powder, keep aside.
For the Streusel 
Mix butter, flour and sugar together with your hands until it forms small crumbles. Keep aside
For  the Topping
In bowl mix the sliced apple, lemon juice and spice and keep aside.

Now that the topping and streusel are ready let's preheat the oven and start making the cake batter.
Grease a 10 inch ring pan with butter well. 
In a large bowl beat the butter and sugar till light and creamy add the eggs one at a time till incorporated, and continue beating, add the essence and mix well. Now fold in the sieved flour little at a time till all is incorporated. This batter is thick so do not add any extra liquid.
To assemble the cake
Pour this batter a greased ring pan and spread it evenly with a spatula. 
Top it with apples by arranging the slices. 
Then sprinkle the chopped almonds
Then spread the struesel on top.
Bake at 180 degrees for about 55 to 60 minutes or till a skewer inserted in center comes out clean.
Cool it in the pan then un mould. 
I had to slice and pack the cake when hot,  
cause early in the morning he had to take it, so soft and moist
Packed  in a air tight box and ready to carry for the picnic

Honey & Nuts Fruit Salad#Improv

For October Improv Cooking Challenge, hosted by Nichole Little, theme for month is " Honey & Nuts". Made a healthy and delicious complete meal salad for this event.
We had this for our dinner and was light on the tummy yet filling and sugar free too.
Ingredients2  Apples - thinly sliced 
10 - 12 Black Grapes
10 - 15 Walnuts - lighlty toasted and  chopped
10 - 15 Almonds - lighlty toasted and  chopped  
1 Cup Pomegranate kernels
2 Scallions - chopped
Salt to taste
1 Teaspoon Crushed Black peppercorns 
1/2 Tablespoon Mustard paste
2 Teaspoons Vinegar 
2 Tablespoons Extra virgin olive oil 
2 Tablespoon Honey
8 - 10 Iceberg lettuce leaves - torn
Feta cheese for garnish
Method
To make the dressing 
Combine scallions , salt, crushed peppercorns, mustard paste, vinegar, olive oil and honey in a bowl. Tear lettuce leaves and add to the dressing. Add apples, grapes  pomegranate kernels, and add to the salad. Add almonds, walnuts and toss to mix. Transfer salad into a serving bowl. Break the feta cheese and place on top. 
Serve immediately.

Black Bottom Apple Bundlets#BundtBakers

Today for Bundt Bakers I, am posting these beautiful and delicious Black Bottom Apple Bundlets. These are so cute, they do not require any icing or extra trimmings, they are so yum on it's own. 
By the way these are suitable for any occasion, a formal affair,  to a breakfast treat or will make an excellent dessert too, top them up with a scoop of ice cream - of your choice and serve.. yum yum..surely whoever part takes of this dessert are lucky to enjoy this.
For our event this month the theme is "Apples" and our Host is Wendy Thank you Wendy for hosting this event.

Few I, made in a aluminium bundt molds, these had to be loossend from the sides then unmold, the silcions one are the best for these Black Bottom Apple Bundlets.  

If you have any bundts remaining then refrigerate them. These taste yum even when cold.

Makes 12 bundlets
Ingredients
For the Apple topping
2  - 3 Big Apples - skinned and cubed
¼ Cup Brown Sugar
1 Tablespoon Heaped Unsalted butter

For the Cream Cheese topping
150 Grams Cream cheese
¼ Cup Brown Sugar
1 Large Egg 

½ Teaspoon Vanilla essence 
For the Black Bottom
¾ Cup All Purpose Flour
½ Cup Apple Juice
3 Tablespoons Oil
¼ Cup Brown Sugar
3 Tablespoons  Cocoa powder
1½ Teaspoon Apple Cider Vinegar
½ Teaspoon Vanilla essence
½ Teaspoon Baking soda
½ Teaspoon Cinnamon powder
¼ Teaspoon Salt

Method

For the Apple topping
In a pan cook apples, brown sugar and the butter , Cook, stirring once, 5 minutes or until apples are caramelized.
Let cool.
For the Cream Cheese topping
Meanwhile  in a bowl beat cream cheese, brown sugar, vanilla essence and the egg until smooth, light and fluffy . Set aside.
For the Black Bottom
In another bowl place the remaining  brown sugar, cinnamon powder, cocoa powder, flour, baking soda, salt, vanilla essence, apple cider vinegar, apple juice (except cooked apples) and whisk until well blended.

Divide evenly among  the bundts - at the bottom add a 
tablespoon cocoa mix then a heaped tablespoon cream cheese mixture, top each with a tablespoon apples.
These beauties are ready to go into the oven. 

Bake 20 to 25 minutes in a preheated oven at 180 degrees C or until cheese mixture has puffed and set.
Ready and out..hmmm
Cool them on a wire rack completely,  before removing from  the moulds.
Enjoy them with a cuppa or tea or coffee.
  Serve them as a dessert with a scoop of ice cream of your choice.. yum yum.

Sparkling Apple And Watermelon Lemonade Spritzers


Cool down and get refreshed with this fresh, tangy, glass of lemonade with a twist of apple and watermelon to quench your thirst.

Ingredients

2 Cups Seedless Watermelon  ~ cut into chunks
1 Apple  ~ skinned and chopped
¼ Cup Fresh Lemon Juice
500 ML Sprite or Club soda - I used Sprite
Mint Leaves and Lime slices ~for garnish


Method
Puree watermelon and apple in  a blender until smooth. Add the lemon juice and pulse it 2 or 3 times.   Pour  this mixture  into  pitcher.  Cover and refrigerate for at least 2 hours .

When ready to serve, fill  glasses with ice cubes and 1/2 cup of the  mixture; top with sprite and garnish with lime slices and mint leaves. Get refreshed ....

Mini No-Bake Apple Pies


When browsing the internet for no bake recipes,  came across this site.   Liked this recipe and decided to try it.  It turned out excellent and we all loved it.  You can have this with vanilla ice cream  and it taste yum...

Ingredients

250 Grams Apple
½ Cups Powdered sugar
1/2 Teaspoon Cinnamon
1 Tablespoons Wheat flour
1 Egg
1 Tablespoon Milk
1/2 Teaspoon Vanilla extract
10 Slices of bread  - I used whole wheat bread

Method

Peel apples and cut into small squares.



Place the  cut apples into pan over medium heat, add 1/3 cup of water.  Let them cook for about 10 minutes till apples are soft.



Then add the sugar



While apples are cooking, mix Wheat flour and cinnamon into a bowl.  Stir  this into apples and  mix.



This is how it should be.




Prepare two slices of bread by putting them into the microwave for 15-20 seconds. This makes it so that the bread doesn't "break" in the next steps.



Add a spoonful of filling to one of the slices and cover with the other




Use a cutter (smaller than the bread size) and press firmly down while rotating to tear through bread.




You should be left with this small bread capsule.




Add the Egg, Vanilla Extract, and Milk into another bowl. Whisk with a fork.



Dip bread into the mix.  It isn't meant to soak too much.
Add to buttered pan.




Wait until nicely browned and then flip over to its other side.




Once both sides are done.




Serve and  Enjoy!
