Baked Donut Muffins#BakingBloggers

Made these donut muffins for our Sunday evening tea, and they were simply delicious, our guest were delighted to enjoy these. One bite and you would be asking for more. These so simple and healthier to make—certainly much easier than making fried doughnuts.  
Didn't have 10 donuts mould, so, I, also made my own.  There is not need to invest in buying a donut pan, when you can easily make your own from a muffin pan or even individual small bowls.

Makes 10 normal-sized Donut Muffins
Ingredients

160 Grams All Purpose Flour
1 Teaspoon Baking powder
½ Teaspoon Salt
60 Grams Butter - unsalted
75 Grams Caster Sugar
1 Large Egg
½ Teaspoon Vanilla Essence
125 Ml Full Cream Milk
10 - 12 Teaspoons Strawberry Crush
For the Donut Topping

50 Grams Caster Sugar
50 Grams Butter - melted

Method
Preheat the oven to 180°C. 
Grease the donut muffin mould and in the bowl 
I used steel bowl place the covered aluminium marbles in the center. Just wrap the marbles over the aluminum foil as shown above.

In a medium-sized bowl, whisk together the flour, baking powder and salt. 

In a large bowl, with a hand whisk, beat together the butter and sugar for a few minutes until soft and fluffy. Gradually beat in the egg and vanilla extract. Add one-third of the flour mixture with half of the milk and mix well, repeat until both are fully incorporated.
Pour  the mixture in a piping bag and fill the donut mould with a tablespoon or two or it . Add a teaspoon of  strawberry crush.
Cover with more muffin mixture. 
Bake for 20-22 minutes or until well risen and browned on top and a skewer inserted in the middle comes out clean. Mine took exactly 22 minutes to bake. 
Leave the muffins to cool for a few moments, then turn them out on to a cooling rack. When cooled press out the aluminium coated marbles.
Put the caster sugar in a small bowl and the melted butter in another. 
While they’re still warm, roll the tops of the muffins in the melted butter, then the sugar. 
These are best eaten warm but will keep good for two days  if kept in a airtight box.
Enjoy with a cuppa of hot coffee or tea!!

Vegan Strawberry Dream Cake - No Bake

This is one dessert that is so easy to make. I have used virgin coconut oil to make this dream cake and this is an excellent choice of fat for vegans.
Made this for my vegan daughter and her vegan friends. This is delicious cake, made it twice the second time I made a small one for two. 
The first time I made,  it, was hot summer here and  did not refrigerate it overnight.  So after some time the top layer started to melt, so un mould it again refrigerate it till you are ready to serve. Do not remove it early and keep it on the dining table like I did it. 
This dream cake, you must freeze for 3 hours then refrigerate it overnight then only serve it.
Serves 5 - 6
Ingredients
For the Crust

1 Cup Almonds - coarsely minced
200 Grams Medjool Dates or any good quality dates
¼ Teaspoon Sea Salt

For the Filling 
1½ Cups Cashewnuts
2 Tablespoons Lemon juice
Few Drops of Strawberry essence
1/3 Cup Virgin Coconut oil
1/3 Cup Sugar
1 Cup Chopped Strawberries + 1 Tablespoon Sugar

Method
In a saucepan heat boil 2 to 3 cups of water. When the water comes to a boil, add the cashewnuts and take one boil, take off flame let is sit in this water for 5 minutes, Then drain the cashewnuts and rinse them in fresh water well. Soak them fresh warm water overnight or for 5 - 6 hours at least.

For The Crust
Place almonds and dates in a a blender with sea salt and pulse to chop until they are finely grounds. Take a tablespoon of the prepared date mixture for the crust and roll it in your hands. If it holds together, the crust is perfect. Take out crust mixture in a 6 to 7” spring-form pan and press firmly, making sure that the edges are well packed and that the base is relatively even throughout. Rinse the blender well.
In the same blender, add the cashewnuts, coconut oil, sugar,lemon juice. Blend to make smooth paste. Add the essence and pulse it twice.
Pour about 2/3 ( I eyeballed it) of the mixture out onto the crust and smooth with a spatula, cling wrap the pan. Place in freezer until solid or for 15 to 20 minutes. 
In the remaining paste add the strawberries and the tablespoon of sugar, 
blend until smooth. 
Pour onto the chilled layer. Again cling wrap it and place in freezer until solid.

To Serve
Run a smooth, sharp knife under hot water and un mould it, cut into slices and again refrigerate till ready to serve. Serve with fresh strawberries. 
This is a rich dessert and delicious.
This one piece that remained for me which I kept overnight in the refrigerator.  See how well it is set.
Store any leftovers in the refrigerator.

Pink Lemonade Vodka Cocktail

There is nothing too complicated making this Pink Lemonade Vodka Drink.
This Pink Lemonade Vodka Cocktail Drink has such a beautiful, girly color, I'm sure you like to try this?  Pink Lemonade Vodka Cocktail is also it perfect for ladies pajama night, barbecues, parties and baby showers.
Quench your thirst with this gorgeous Pink Lemonade Vodka Cocktail which is simple to make it just takes 5 minutes if you have all ingredients ready. 
Single Serving
Ingredients 

1  Cup Ice cubes
2 Tablespoons Lemon juice
1 Teaspoon Simple syrup  -  I did not add

1 Tablespoon Strawberry Crush
60 ML Pink Vodka
Club Soda or Sprite  as required
2 Slices of Lemon -  cut in half

Method

Mix the strawberry crush in 100 ml club soda and mix well, strain this liquid and keep aside.
Fill a tall glass with ice. Add lemon slices.
Add lemon juice, simple syrup or strawberry liquid, Pink Vodka and top with club soda. 
Enjoy! This cocktail makes me want to sit by the swimming pool or a place surrounded by greenery with some delicious appetizers and keep sipping it.

My Notes

I used ice, lemon juice, simple syrup, club soda, you could just use sparkling water or sprite or just plain water. Instead of simple syrup use could use any pink color juice or just strawberry crush, raspberry or cranberry juice.
Make it in a large pitcher or double or triple the quantity and  serve  to a crowd. Just add half of the ice cubes to the pitcher and the remaining ice between individual glasses, when ready to serve.

Fresh Strawberry Heart Cake#FoodBloggerLove


I’m so happy to participate in the #FoodBloggerLove event this year! This is my first year of taking part in this event organized by Allison of The PinterTest Kitchen!

This Fresh Strawberry Heart Cake is my Valentine’s Day celebration with my trekking friends. It' s my late night baking. This cake cannot be overturned since it's a sticky cake.

Ingredients
100 Grams All Purpose Flour
1/2 Teaspoon Baking Powder

50 Grams Butter - I used salted
110 Grams Caster Sugar
1 Large Egg
1 Teaspoon Vanilla essence
1/4 Cup Milk
1 Tablespoon Yogurt
100 + 50 Grams Strawberries - sliced

Method
In a heart shape 6 inch baking pan butter it well with a tablespoon heaped butter, arrange the slices of strawberries and sprinkle a heaped tablespoon of granulated sugar.
Whisk the milk and yogurt till incorporated.
Finely chop 50 grams of strawberries.
In a bowl sieve the flour and baking powder keep aside.
In a another bowl beat the butter and sugar till light and creamy, add the egg and essence and beat till incorporated. Fold in the flour alternating with the milk yogurt mix till incorporated. Add the chopped strawberries and mix it well.
Pour the batter into the prepared pan arrange the remaining strawberries, sprinkle a heaped tablespoon of granulated sugar. 
 Bake for 25 to 30 or till a tooth pick inserted comes out clean.
Cool and slice it and enjoy with your valentine friends.

Overnight Oats With Grapes & Strawberry's#FantasticalFoodFight

This is an excellent combo that matches so well together. Topped with sliced strawberry's this was a icing on the cake.. an oatmeal beauty.  
Yum Yum, you will definitely love overnight oats. 

Single Serving

Ingredients
¼ Cup Quick Oats
1/3 Cup Milk
5 + 5 Green & Black Grapes - sliced in half
3 Tablespoons Fresh Yogurt
1 Tablespoon Honey
4 Strawberry's - sliced

Method
Add  the oats  and pour the milk in a jar
 Top it with sliced grapes
Pour the fresh yogurt. Drizzle the honey and place the sliced strawberry's
Cover it with spill proof silicone lid and refrigerate overnight.  
The next morning carry it with you to office or enjoy for breakfast, hassle free, healthy and delicious. 

My NotesCan use maple syrup instead of honey.
