Pork Tenderlion Steak In Goan Masala - Keto

This is a perfect low carb protein side dish for a meal . It is a quick, yummy tempting and mouth-watering recipe for all pork lovers.

Ingredients
300 Grams Pork Tenderloin Steaks
A Handful Coriander leaves
8 Garlic cloves
3 Dried Red Chillies
2 green chillies
1" Piece Ginger
1 Small Onion - chopped
½ Teaspoon Turmeric powder
1 Teaspoon Cumin seeds
1 Teaspoon Whole Black Peppercorns
2 Tablespoons Water
2 Tablespoons Vinegar - I used coconut vinegar
½ Teaspoon Salt or to taste
Method
Grind to a coarse paste, a handful of coriander leaves, garlic pods, red chillies, green chillies, ginger, chopped onions, turmeric powder, cumin seeds, peppercorns and little water and vinegar. Marinate the pork steak with 3 tablespoons of the ground masala and keep aside for at least 30 minutes. Keep the remaining masala in a airtight container and can be used to marinate any other meat of your choice.
Next day fry them with little oil or bacon fat on both sides till cooked. Enjoy!!

Beef Dum Ka Pasanda#SundayFunday

This is beef undercut cut in thin steaks! It's creamy delicious and yummy dish.

Ingredients
½ kg Beef Pasanday /Sirloin Steak Slices
1 Tablespoon Raw Papaya paste
Raw papaya 1 tbsp grinded
Tablespoon Ginger garlic 1 tbsp
1 Teaspoon Level Salt
1½ 
Teaspoon Red Chilly powder 
¼ Teaspoon Turmeric powder
Teaspoon Garam Masala powder 
1 Cup Yogurt - whisked 
½ Cup Ghee/Oil 
To Grind  
10 -12 Almonds 
1 Tablespoon Desiccated Coconut
Tablespoons Birista   
For Serving
1 Cup French Fries
1 Medium Tomato  - Slices
Lemon juice 
For Garnishing as required 
Coriander leaves, green chilies, mint leaves
Method
Marinate pasanday with raw papaya, ginger garlic for 30 minutes, beat yogurt, add in all the seasonings, brown onion, mix well, rub in pasanday. 
Heat ghee, arrange the  pasandas in a single layer, cover and put on dum till done. Garnish with chopped greens, serve with fries, tomato and lemon slices.

Keto Fried Beef Steak #SundayFunday

These Keto Fried Beef Steaks are so delicious and yum. They are low crab, quick to make. Half I fried in egg batter and the other half with egg batter, both methods taste delicious. So you can use egg to dip or completely skip this step.

Makes 16 - 18
Serves 6
Ingredients

1/2 Kg Beef (Undercut) - cut into slices
6 - 8 flakes garlic
2 Inch Piece of Ginger
30 Mint Leaves
1/2 Cup Coriander leaves
1/2 Teaspoon Garam masala powder
1 Scallion - Chopped
1 Sour Lime
Salt to taste
Coconut oil as required for frying
2 Eggs  - lightly beaten  

Method
Wash and cut the meat into slices abut 1 inch thick. Lightly beat each slice with a meat mallet to flatten them lightly.
Grind the garlic, ginger, mint, coriander leaves, scallions to fine paste ( do not add water to grind). Mix in the lime juice and salt to the paste. Apply this paste to the meat slices and marinate it in the refrigerator or an hour.
 
Dip each slice in egg. Shallow fry them till golden brown. Serve these as sides to a main course meal or as starters. 
Enjoy hot with chutney or spicy tomato sauce.

Beef Pasanday - Rajasthani Style With A Twist#SundayFunday

The twist in this recipe is that I have used hoisin sauce, which give it a umami flavor. It's a delicious main course dish, do give this a try. I have used undercut meat/tenderloin which cooks very fast. If you are using any other cut of meat than the cooking time will change.

Ingredients
For the Marination

½ kg Undercut - cut into thin slices
2 Teaspoons Ginger Garlic paste
1 Teaspoon Kashmiri Red Chilly powder
½ Teaspoon Red Chilly Paste
¼ Teaspoon Turmeric powder
2 Tablespoons Heaped Tomato puree
2 Tablespoons Heaped Hoisin sauce
4 Tablespoons Yogurt - whisked
½ Teaspoon Pink Himalayan Salt
1 Teaspoon Roasted Cumin powder
Other Ingredients
¼ Cup Oil
1 Tablespoon Ginger juliennes
6 Green chilies - slit in four
1 Capsicum - thinly sliced

Method
Marinated the pasanday/steak slices with all the given ingredients and refrigerate it for at least an hour, I kept it overnight.

Heat a tablespoon of oil in a large pot/kadai, first fry the ginger juliennes, green chillies and capsicum till they are oily and translucent. Remove and keep aside.
In the same kadai add the remaining oil, when it's heated, add the marinated beef pasanday/slices only ( leave out the marination ) fry for 3- 4 minutes on high flame. Add rest the marination mix well. Cover and cook for 10 minutes. Lastly add julienne of green chilies and ginger, capsicum. 
Serve with rice.

Bragoli - Maltese#Improv

I saw this recipe Bragoli recipe on tv,  it's a Maltese recipe,  very flavorful and taste delicious.  It's  the red wine in the gravy that gives an awesome taste to it.
When I, surfed the net seen so  many different variations, so you can alter your bragoli according to your taste.   I made this as seen on tv and altered it as per my taste.
  
Ingredients
2  Eggs - hard boiled and diced
6 Bacon Rashers
4 - 5 Beef Tenderloin Steak - flattened with a meat tenderizer
2  Big Cloves Garlic  - minced
1 Tablespoon Chopped Flat Parsley
2 Tablespoons breadcrumbs
Salt to taste
Red  Pepper flakes to taste
Olive oil for frying
Toothpicks
For the Gravy 
2 Bay leaves
2 Medium Onions  - finely chopped 
1 Green Chilly - finely chopped
5 Medium Tomatoes - blanched, skinned & finely chopped
2  Carrots -   diced
1 Stick Celery  - chopped

½ Cup  Red wine
1  Cup  Green Peas - used frozen

Method
Hard boil the eggs and set aside. Once cooled chop them and the bacon.

In a bowl mix  the eggs, bacon, garlic, parsley, red chilly flakes, salt to taste and breadcrumbs.
Flatten the steak with a meat tenderizer.
Place a tablespoon of the filling  on one end of the steak.
Wrap your meat around the mixture by rolling the meat to make a wrap.
Fasten with toothpicks.
In a deep pan / kadai  heat  oil and add the bay leaves.
Over a medium heat lightly brown your bragoli and set aside.
In the same pan, add  the onions, garlic and green chillies  fry  for 2 - 3 minutes. Add the carrots,  celery and tomatoes and a cup of water cook for 5 minutes on low flame . Add the wine and  place the browned bragoli on top and  bring it to a boil. Simmer on medium low flame for an hour,  keep stirring in between.  
After an hour or so,  if you find that the bragoli are nearly cooked,  add the peas and cook till the peas and bragoli are full done. 
After an hour and a half the bragoli is cooked.
Remove the toothpicks and bay leaves before serving.
Serve with mashed potatoes and steamed french beans, or  asparagus.   I had this with steamed rice.

Chicken Steaks with Mashed Potatoes & Buttered Vegetables #ImprovCooking

These were absolutely delicious, sumptuously moist, flavorful and tender Chicken Steak with creamy mashed potatoes , side of buttered veggies, a complete and filling meal. What else could one ask for more than this!
This month’s Improv Cooking Challenge is Steak And Potatoes – perfect for dinner date for 2. You and your Valentine. Takes hardly 25 to 30 minutes to prepare, provided you have marinated the chicken steaks and done the pre - preparation. 

Make this and enjoy the meal with your valentine in a candle light dinner at home. Sound's so romantic is'n it!!

Ingredients
2 Chicken breast 
¼ Cup Oil
1 ½ Tablespoons Lemon juice
Tablespoon Mustard paste 
Tablespoons Worcester sauce  
Tablespoons Ginger Garlic paste 
Salt to taste
½ Teaspoon Red chilly flake 
Tablespoon Black pepper powder
¼ Teaspoon Cinnamon powder  
For the Buttered Veggies
Parboiled Carrot sticks
Julienne Capsicum
Boiled Corn Kernels 
Butter as required
Salt and pepper to taste
Mashed Potatoes - see recipe below

Method 
Pat dry the chicken breast , then fork it well.

In a bowl mix together oil, lemon juice, mustard paste,  Worcester sauce, salt, black pepper powder, chilly flakes , cinnamon powder and ginger garlic paste. Mix well.

Marinate chicken breast with the mixture, keep aside for 30 minutes to an hour. 

Heat oil  in a grill or frying  pan place the chicken steak and cook on high flame  till its color turn to golden brown, flip the chicken steak and cook the other side.  Now reduce the flame and drizzle the remaining   marinade  a little at a time.  Cover with a lid and cook on low flame till done.
For the Buttered Vegetables

Heat butter in a pan and saute each veggie separately, season with pepper and salt to taste. The buttered veggies are ready.
Serve the chicken steak on a bed of  boiled mashed potatoes and buttered vegetables at the side. Enjoy this  romantic meal your valentine!!  yum yum...


How to Make the Mashed Potatoes

This creamy mashed potatoes recipe is so  good and yummy.
Ingredients

2 Cups Mash Potatoes
¼ Cup Hot milk
50 Gram Salted Butter
Salt to taste
Pepper Powder to taste

Method

Boil the potatoes whole till done. When cooled then peel and mash them well till smooth. 
Place the mashed potatoes on to a sauce pan add hot milk and whisk it well till incorporated, now add the butter and cook it till smooth and the butter melts, continue whisking till it is smooth. Add salt and pepper powder to taste. Serve warm.
My Notes 
Potatoes must be cooked whole (do not chop).
Lots of butter and don’t skip here , it works but it taste incredible with the amount called for.

Hot milk incorporates very well into the potatoes and keeps the potatoes warm.
